most recipes in books (and on forums) don't mention which type of chilli to use in a particula dish. Is this because it really doesn't matter? or that the originator hasn't given it much thought?
Which varieties do you use in your region's cooking, and why?

hi waaza,

broadly,it depends on the recipe country of origin. there are so many chili varieties.but there are standard ones too which are commonly used unless otherwise stated.more important is whether fresh chili,dried chili or chili powder needs to be used.


so if the dish is very indian/asian i use small green thai chili,kashmiri red chilli powder and dried red finger chili for reasonably authentic results.(the qty.can be decided on your taste for fire!) but if it's just for seasoning then pepper or chili flakes.

but i am sure there are lot of people who experiment on this successfully!
