Hi,

Pls share some snake gourd recipes. I jus make snake gourd curry with coconut.. Am getting fresh tender snake gourd in the vegetable market here .

1.Pachadi

cut snake gourd into small pieces.

Heat oil.Add jeera,green chilli.Add turmeric,salt,snake gourd and chilli powder.Fry nicely till done.Switch off.add curd.

2.Fry

Oil - onion - turmeric,chilli powder,salt - snake gourd pieces.

3.Snake Gourd Rice.

Oil - onion - green chillies - ginger garlic - snake gourd pieces - fry nicely - salt - [fry and grind dhaniya seeds,coconut,urad dhal to smooth paste] - cooked rice.

Herez my fav snake gourd recipe which we make it all the time. Its my mom's family recipe and its very delicious.Hope u like em too.

Snake gourd tayir pachadi

snake gourd desseeded & cut into peices
tumeric 1/2tsp
dry red chillies 3
curry leaves 3
hing a pinch
salt
mustard seeds & urad dal for seasoning
oil 1tsp
fresh curds 1cup

Method
Take a kadai,
add oil,and then the seasonings. next add the tumeric,curryleaves,redchillies and hing. saute for a min. add the snake gourd & salt.
cover and cook until it is soft and tender(not too mushy)cool it completely
Mix with the curd the above after its cool.
garnish with coconut and corriander leaves.
a very delicious side for vatha khozumbu or kara khozumbu.

Take the seeds of snake gourd out. Heat oil add 2 tsp of urad dal, 2 to 3 red chillies, 1 sprig of curry leaves, hing. Once done, add the seeds and stir them till the water is absorbed. Grind them with salt & tamarind.

Yummy thuvayal is ready!!

You can even prepare pudulangai paruppu usili, poritha kootu, ordinary kootu.

For ordinary kootu, cook the veggies with a handful of channa dal; grind coconut 2 tbsp, red chillies 2 & jeera 2 tsp. Season in oil with mustard, urad dal, hing & curry leaves. Mix all of them, boil. If necessary, add 1 tbsp of rice flour.

For poritha kootu, fry 2 tsp of urad dal, 1 tsp of pepper, 1 tbsp of dhania, 2 nos. of red chillies and grind with 1 tbsp of coconut and a tsp of jeera.

cook the veggie with a handful of moong dal and mix the above mixture. Do seasoning with mustard, urad dal & curry leaves in oil.

You can prepare the above like kuzhambu or kootu(thick or thin).

Another variation of poritha kootu is to avoid red chillies and coconut completely. Increase dal qty. Proceed with the rest.
