Someone answer me- is it ok to keep them mixed, in the refridgerator for say a week? Will diary develop Bacteria?

yes alan, if you mix , it will develop bacteria.
Individually you can store khoya for less than 5 days and you need to be checking on it regularly.
Its not advisable to store malai..but you can store upto 2 days max.
