:) Hi! I am an American woman happily married to an South Indian man (from Kerala). I love fixing indian dishes and have recently mastered making Idli! Not a big deal for you.......but definitely for me! :) I am now wanting to make a nice dish with a korma sauce. Is there a generic recipe for a korma that I can use on meat as well as on vegetables? Stop Laughing!! I am truly showing my American ignorance for Indian recipes.....and I do love Indian foods!

have the receipe of Vegetable Kurma

Carrot 1 1/2 cup
Potato 2
Peas 1/4 cup
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Onion 1
Tomato 1
Coconut milk 1/2 cup
Coriander leaves small bunch
Ginger paste 1 tsp
Garlic paste 1 tsp
Fennel seeds 1/2 tsp
Bay leaves 2
Salt
Oil

Method:
Heat the pan with the oil and add fennel seeds, green chili, coriander leaves, ginger, garlic fry all these ingredients well. Grind well with little water.Cook the carrot, potato and peas separately and keep it aside (do not drain the vegetable cooked water - broth).
Heat the another pan with the oil and add bay leaves when it becomes brown add chopped onion fry the onion until it becomes golden brown.Then add the chopped tomato and fry well, then add the ground masala and fry well until the aroma comes out.
Now add the cooked vegetables with water and add the salt, mix well.Then add the coconut milk and bring to boil in the medium heat for 8 min.
Serve it with chappathi or rice.

heres a recipe for khorma ...can be used for all meats and vegetables too!!

1. oil - 1 tbsp
2. onion - 2 large, ground
3. tomato - 2 , ground
4. ginger paste - 1 tbsp
5. garlic paste - 1/2 tbsp
6. turmeric - 1/4 tsp or less
7. red chilli powder - 1 tsp (add more or reduce, depending on ur taste)
8. coriander powder - 2 tsp
9. cumin powder - 1/4 tsp
10. salt - to taste
11. green chilli - 1 no. slit( if u like it more hot)
12. coriander leaves - chopped, for garnish
13. one green cardamom + 3 cloves + 1 small cinnamon stick --- dry roast on a non stick pan, cool and powder.
14. coconut milk powder - 3 tbsp in 1/4 cup water
(if using fresh coconut , grind , add warm water and strain - 1/4 cup)
15. almond paste - 1 tbsp
16. lamb/mutton/beef/prawns /mixed vegetables - 250 gms

method:
1. heat oil, add onion paste and fry till light brown. take care not to burn it.
2. add the ginger and garlic pastes, fry a minute more.
3. add tomato paste and all the spice powders.
4. add salt and fry till the tomato is cooked.
5. add the meat/ vegetables;keep frying on medium heat.
6. add 1/2 cup water, cover and cook.
7. when the meat is cooked, add the coconut milk and almond paste, simmer for a few minutes.
8. adjust seasoning and consistency.
9. remove from fire.
10. garnish with coriander leaves and serve with pulao or roti.
