Has anyone tried this recipe? Is it worth taking all the trouble or should I decide on something else(Paneer dish) for the weekend? :D

once when I made the korma with the ready made frozen paneer, it turned out rubbery.....till today i dont understand why? :)
with the same type of paneer all my other dishes were good

:) Oh I see- I don't freeze Paneer- I only refridgerate them.

try this one!!

Paneer Bahar

crumbled paneer - 250 gms
boiled , mashed potatoes - 250 gms
cumin powder - 1/4 tsp
turmeric powder - a pinch
salt
chilli powder - 1/4 tsp
combine all these and make small balls, coat with plain flour and deep fry till golden brown.

for gravy:
oil - 2 tbsp
onion - 2 large, chopped
tomato - 2, chopped
cumin powder - 2 tsp
turmeric - 1/4 tsp
chilli powder - 1 tsp
salt
butter - 2 tbsp
cream - 1/4 cup
coriander leaves - chopped, for garnish

1. heat oil, fry onions till brown, add tomato and the spice powders. fry till tomato is cooked.(add little water if needed)
2. lower heat add butter and the paneer-potato balls.
3. simmer a few minutes, then take off the heat, add cream and garnish.
4. serve hot with rotis.

u can make a variation
by adding ginger- garlic paste to the gravy while cooking
by adding ginger strips to the paneer while making balls
by garnishing with small green, seedless grapes, and/or pineapple cubes, etc

Paneer reminds me..can somone tell me the fat content of paneer.Its supposed to be low in fat though I have no clue why :?
I love paneer as does my hubby but we dont make it often coz its afterall cheeze :(

ayesha,ur recipe looks awesome..but instead of deep frying is there a healthier alternative like baking them or pan frying them..I dont mind if its not round balls,I can make do with flat discs.

Paneer is low in fat & high in protein- an ideal "meat" meal for Vegetarians. This is a misconception that Paneer is fattening.

The fat content of paneer would be equal to the fat content of the milk from which it is made...
for ex as per http://food.sify.com/fullstory.php?id=13251486&page=3:100 gms of paneer made from cow' milk provides 18.3gms of protein, 20 .8 gms of fat.

You can try making paneer from low fat milk if you wish to use paneer on a regular basis.

was expecting this question from a lot of hubbers dev but you were the only one :D.
Earlier my location was "moving to NY" .Now I am in New Jersey which is on one side of NY.My office is on this bank of the hudson..not in new york city.Thats why :D.

i havent tried anything but frying...may be u can make flat patties , grill them and use...but i cannot assure the taste will be as same as frying :)

CHAMANI QALIYA
a kashmiri paneer dish


paneer cubes - 1 kg
Milk - 1 Cup
Ginger - 1 tbsp
Aniseeds whole - 1 tsp
Salt to taste
Asafoetida - a pinch
Turmeric - 1 tsp
yogurt - 1 cup
Aniseed Powder - 2 tsp
Dry Ginger Powder - 1 tsp
Mustard oil - 1 tsp
Cumin Seeds - 1 tsp
Cloves - 5 nos
Caraway Seeds - 1/2 tsp
Green Cardamom - 6 nos
Cardamom powder , Cinnamon powder and Black Pepper Powder - 1/2 tsp each

Traditionally, earthenwares are used to cook, copper or brassware can be used; but nowadays non stick pans will do the work :)

1. Deep fry the paneer cubes till golden. drain on a kitchen napkin.
2. Now, place the fried paneer, in a litre of water, along with Milk, Ginger, aniseed , Turmeric, Salt and half a pinch of Asafoetida. simmer to half.
3. Strain the Soup through a muslin cloth. Keep the paneer pieces and throw away the boiled Ginger, Aniseeds and other sediments.
4. To the strained Soup, add the yogurt, Aniseed and Ginger Powders. Resume heating it, and keep on stirring , so that the yogurt does not curdle. Add the paneer.
5. Heat oil in another pan and add Cloves, Cumin Seeds, and the remaining half pinch of Asafoetida. Add this to the soup.
6. Add Caraway Seeds, Green Cardamoms, Cardamom, Cinnamon and Black Pepper Powders. simmer on very low heat for another 10 minutes.

'Chamani Qaliya' is ready. Serve it piping hot, with hot Plain Cooked Rice.

Whenever I deep fry Paneer cubes, it gets stuck to the bottom of the frying pan- is there any way to avoid this?

dont put the whole lot to fry; fry them in batches

paneer doesnt need to be cooked while frying.....the only motive is to get the brown colour....so heat the oil well enough to immediately turn them into browns in a less time, take out and drain

Why should Paneer be brown in colour? Is it for taste or appearance?

I made Paneer Bhurji yesterday for chappatis. Came out really tasty!!!

Paneer Bhurji

200 gms Paneer
1 tbsp Oil
1/4 tsp Cumin seeds
2 Green Chillies
1 Big Onion
1/4 tsp Turmeric Powder
1/2 tsp Garam Masala Powder
1 tsp Ginger-Garlic Paste
1 medium Tomato
1/2 tsp Salt
Broken cashews- a handful

Preparation:

Chop the onions, tomatoes and chillies finely.
Heat oil in a deep bottomed pan, add the cumin seeds, cashews, chopped onions and the ginger garlic paste, fry till brown.
Add the chillies and tomatoes and fry till they are soft and pulpy.
Add turmeric powder, garam masala powder, salt and little water so that all the masalas are well combined.
Add grated paneer and fry for 5 minutes till the paneer blends into the masala.
Garnish with chopped coriander and serve hot.
