A few months ago, when I had gone for a buffet, I had seen & tasted Potato Salad- It was boiled & mashed Potatoes, with lors of chopped onions, tomatoes , a dash of pepper & a lil cream.

I was wondering if I could eat this Potato Salad for a meal( minus the cream) if I can skip the rice one day ( so that there is no excess carbohydrate intake). Health Expert Hubbers, pls advice. :)

300 g potatoes boiled peeled and mashed
1 oinion cut into small and thin strips
1 tomato cut into small cubes
2 boiled eggs (take away yolks if you are in diet)
4 tablespoons of olive oil
1 spoon of vinegar
1 teaspoon of garlic paste
coriander leaves chopped
bread crumbs
salt
pepper

In a wok saute the onions in a bit of oil until they turn brown, add this to the mashed potatoes, add tomatoes, eggs and mix well.

In a bowl add the olive oil, vinegar, garlic paste, salt pepper and beat well until it forms a sort of cream and pour over the potaoes mixture and mix well add bread crumbs coriander and serve. This is good light calorie potatoe salad

mashed potato salad

boiled mashed potatoes - 2 cups
finely chopped celery - 2 tbsp
whipped cream - 2 tbsp
finely chopped onion - 2 to 4 tbsp
milk - as required if too dry
vinegar - 2 tsp
finely chopped green capsicum - 2 to 4 tbsp
chilli powder, salt and pepper - to taste

combine all together and serve.

instead of vinegar, u can add sour cream
also, mayonnaise :) , if u like

:) just cut off the cream from the recipe..if u like it a bit more wet, add skimmed milk...

chopped garlic, tabasco sauce, chopped parsley, chopped boiled eggs, lemon juice, etc etc etc.... just add anything to the mashed potatoes...they are yummmm...

Potato is a vegetable and is good like all other veggies.......just make sure you include the potato skin as well in your diet. But don't overdo it and yes it can be a substitute carbohydrate, but not on a regular basis.

Btw how is your diet program going on Alan?

Thanks, dsath- My diet programme is going ok- But haven't lost more than 3 kgs- So, need to exercise more & also do Yoga.

I don't miss the oily snacks, now that I've realised how harmful they were for my body!

Alan, have u considered taking up some game like squash or swimming. You can burn a lot of calories........

I have no time for outdoor sports- I work in a private firm- I go at around 9 & come back by around 7:30 -8. I have some time in the morning which I try to utilize on the tredmill.

Can I skip the olive oil dressing- I don't like its flavour at all.
