Pls give delicious Curd recipes, like tyrusaadam, Dahi vada etc.
The doc has asked me to take lots of curd (Ref:Infertility treatment)

Drink:

Fruit smoothie:

Take any fruit or combinations of fruits like Orange, plum, banana, etc
1/3 a glass of milk
1/3 glass of fresh curd
a spoon of honey or sugar

Blend it well and your fruit smoothie is ready!


Snack:

Fruit & Nut yoghurt

A bowl of curd
any combination of fruits & nuts
a spoon of honey (optional)

Chop fruits & nuts into small pieces and mix them with the curd, leave it the fridge for a while and eat cold

Dessert:

Shrikand

Fresh curd made out of two liters of milk
1 1/2 cups sugar
Elaichi powder


Empty fresh curd into a cloth and hang it till all the excess water drains out (just like you do it for paneer, but don't press the water out). It takes a good few hours for the water to drain.
Once water is drained, mix the curd and powdered sugar (if you want it less sweet, reduce the amount of sugar). Add elaichi powder and beat well. If you want you can add safron to this too.
You can make mango shrikand by adding mango pulp (we get mango pulp in cans here, it should be available there too) to the milk while making curd.

This goes as a dessert or it can be eaten with chappati like the Gujarathi's do

Starter:

Thayir vadai (Dahi vada)

I guess you know how to make normal medu vada (made out of Urad dal).. if not let me know and I will post the recipe for that too.

Fresh curd 3-4 cups
Salt
grated cocunut a small cup
2/3 green chillies
Grated carrot, coirander leaves
chat masala powder

Beat the curd well, make a paste of coconut and green chillies and mix with curd and add salt. Stick it in the fridge for a while
Make vadas, and drop them into a vessel containing warm water, take them out in a couple of minutes and then drop them into the curd.
Leave it for an hour or so before adding grated carrot & coriander leaves and they are ready to eat! You can season the curd with mustard and curry leaves if you want.

Main dish:

Curd rice

Well cooked rice
curd
salt
mustard
ginger
corriander leaves
green chilli
hing
curry leaves
mOr miLagai (the spicy chilli soaked in butter milk & salt and dried), cashew nuts, onion, grapes, grated carrot, grated cucumbber, grated mango (all of them are optional)

There are many different ways to make curd rice, here is one of my recipes
For curd rice, season with mustard & hing (you can either use oil or ghee), you can add green chilli and grated ginger either fresh or fried in oil, I tend to fry it up in oil, depending on my mood I tend to fry the onions as well. chopped up spring onions are great!
If I add cashew, I fry that as well. add all this to the well cooked rice + curd and salt. I like to add a couple of mOr miLagai fried up and made into small pieces for the flavour (if you are doing this add less salt as this has salt in it as well)
Garnish this with corriander leaves and curry leaves. If you like you can add grated carrot, grated cucumber or mago to this!

Side Dish:

Raita

You can always make raita with curd and just onion, chilli, corriander leaves and salt or you can add tomato to this...
Some other variations include chopped tomato, mashed up potato , grated cucumber, chilli, corriander leaves & salt
or just boondi & curd... etc! Just get creative :)

I tried your frut & nut Yoghurt yesterday- it was just too yum!!!!

Pls can you clear this doubt for me? Is Yoghurt made of unboiled milk while curd is made of boiled milk- is that the difference?

Also, I need to know if taking in fresh curd & curd in curry has the same effect? I guess not!

btw, I am not sure if there is any difference between curd & yoghurt... curd is called yoghurt in this part of the world and again here people don't boil milk like we do in India, so may be you are right in the fact that yoghurt is made from unboiled milk!

MORU

buttermilk - 200 ml
finely grated ginger - 1/4 tsp
cumin powder - a few pinches
coriander powder - a few pinches
salt
green chilli - optinal
coriander leaves - optional

mix together, leave for 10 minutes. strain and enjoy.

eggplant with yogurt

In a teaspoon of oil, saute 1 tsp. minced garlic, 1 small red onion chopped, and 2 small eggplants, skin peeled and chopped.
add chilli powder and salt to taste.

when cooked, add to 1 cup beated yogurt.
sprinkle cumin and coriander powders.
garnish with coriander leaves.

FRUIT YOGURT

1 cup fresh yogurt
1 kiwi
2 tsp honey

blend the above.
mix in cubes of pineapple 1/2 cup and serve garnished with chopped mint leaves.

white pumpkin curd pachadi

1 cup white pumpkin cut into thin 1 inch pieces
1/2 a cup grated coconut
3 green chillies
small piece ginger
1/2 a cup thick curd
1/2 a teaspoon mustard seeds
for seasoning mustard seeds, curry leaves and red chillies, coconut oil.

cook pumpkin with very little water and salt.
grind coconut, chillies and ginger into a very fine paste using curd(dont add water) finally add mustard seeds and grind for only few seconds
add this paste to cooked pumpkin and heat . ( add more salt now if required) . when it jus start to boil (bubbles form) remove from fire and season it using coconut oil.
