Hi guys

Here i started a new thread in cooking because of you all,those appreciated me a lot.

Cookin is my passion, If i am in STRESS i used to cook for relaxation,
it works well.

here i am posting the recipes which tried out by me

Hi to all,
i live near TRIPLICANE
i used to go to Ratna cafe since my school days, every sunday morning 10.00 AM i will be there, i love sambar idly with GHEE.

i am also intrested in cooking, and i tried to make a SAMBHAR like this over 2 years and i found the way to make a SAMBHAR like this
which sounds good, and one of my friend tasted it and says its like RATHNACAFE sambhar, so that every one know wts the secrate.

Here is the RECIPE (SERVES 3 PEOPLE)

TRIPLICANE RATHNACAFE SAMBHAR

STEP 1:

1. BIRIYANI RICE (or) RICE - 2 tsp
2. RED CHILLIES - 2 nos
3. CORAINDER seeds - 3 tsp
4. BESAN DHAL - 2 tsp
5. VENTHIYAM(dont know english word) - 2 tsp
6. Perungayam - 1/2 tsp


Now heat a KADAI with 2 tsp of gingely oil and fry the above incredents in the order given below
first redchillies,coriander seeds,rice,besan dhal,venthiyam,perugayam

turn off the flame when venthiyam got light brown, allow to cool down ,and mix it and make powder ,kept it asaide

STEP 2:

1. PUMPKIN - a small piece

Boil the pumpkin and mash it, allow to cool and keep aside

STEP 3:

1, Small onion : 15 nos
2, Bangalore TOMATO : 2 nos (cut in to large pieces)
3, TOOR DHAL : 125 gms
4, Mong DHAL : 75 gms
5, CORIANDER leafs and stem : 1 small bunch
6, REDCHILLI POWDER : 3/4 tsp
7, GREEN CHILLIES : 2 (cut half in straight position)
8, TAMARIND JUICE : 2 tsp
9, TURMERIC POWDER : 1/2 tsp
10, KARIVAPILAI : 10 leafs

11. MUSTERED seeds for finalising

12. JAGGERY (or) VELLAM powder : 3/4 tsp
13 . SALT as needed


Now mix TOOR DHAL and MONG DHAL ,put it in a cooker, add 600ML water ,turmeric powder and 1 tsp oil ,boil them for 2 WHISTLE or 5 minutes, after boiling make the flame low ,add 200 ML of water allow to heat,add small onions cook for 1 minute, then add tomatos cook for 1 minute, now add MASHED PUMPKIN(step 2) cook for 1 minute,add REDCHILLI POWDER, TAMARIND JUICE, CORIANDER STEM,
GREEN CHILLI , SALT cook for 2 minutes,now add the powder (STEP 1) and allow to cook for 2 minutes ,add small amount of water for thickness of Sambar, add the JAGGERY cook for 1 min.

Now add KARIVAPILAI in sambar cook for 30SECS

FROM here itself u smell the taste, now add the CORIANDER LEAFS

NOW OFF the FLAME and FINALISE WITH MUASTURD

allow to cool for some time, and eat (IN TOO MUCH HEAT YOU CANT TASTE
THE SAMBAR)

RECIPE # 2

SANDWICHS

Making Sandwich Chuttney

Coconut - 3 big pieces
Greenchilly - 2 nos
Tamarind - Very small amount or 1 1/2 tsp of juice
garlic - 2 nos
Coriander leaf - small amount
Salt - 3 tsp

(put some salt extra compare to normal chuttney)


Grind all the above with small amount of water


Vegitable Sandwich

bread - 2 slices
chuttney - 2 tsp
cucumber - 5 slices
onion (big) - 1 slice
tomato - 1 slice

Apply the chuttney in the bread slices ,arrange the vegitables in side the bread,Enjoy eating

Egg cheese sandwich

bread - 2 slices
chuttney - 2 tsp
cheese - 1 piece
Egg - 1 no (Make omlette with onion)


Apply the chuttney in the bread slices ,place the omlette and 1 cheese inside the bread,Enjoy eating

Recipe #3

Onion Capsicum PIZZA

Pizza base - 1 no (Available as readymade in stores)
Tomato ketchup - 3 tsp
Muastard sauce - 2 tsp
Onion - 1 no
Tomato - 1 no
Redchilli powder - 1 tsp
Garam masala - 1 tsp
Mosseralla cheese grated (Available as readymade in stores)

Salt to taste

Apply (Tomato ketchup + Muastard) in the pizza base, mix onion,tomato,chilli powder,garam masala and place in the
pizza base , On the top place the gratted cheese, Bake it in the MICROWAVE oven for 10 minutes

hi newyorker, thx for feed back,

one thing i have to tell, In SAMBAR you have to adjust the ,CHILLI POWDER, SALT AND TAMARIND depends on the taste, it sounds good,
becoz the DHAL we using is different one i am using FOOD WORLD's SPL TOOR DHAL

and on samosa can u plz tell me where the shop locates i will first taste the samosa, and give you the recipe

RECIPE # 4

THAKAALI KAAI KOOTTU (GREEN TOMATO KOOTTU)


This recipe is my MOMs special, every one try this, its a mouth watering dish, once u taste this , you never let this dish

It suits with Chappathi, Dosa, and for rice

Incredents

Thakaali kaai - 4 nos
Thoor dhall - 10 gms
Moong dhall - 40 gms
Green chilli - 2 nos
Salt as needed
Mustard,coriander and curry leaves for seasoning

Boil THOOR DHALL + MONG DHAL + THAKAALI KAAI + GREEN CHILLI

with 200 ML of water in COOKER for 5 minutes or 2 whistle

after boiled completely MASH the TOMATO and DHALL, add salt now for taste

Season with mustard and curry leaves

enjoy eating

Dear Newyorker,

Here is the recipe you asked

RECIPE # 5

IRANIAN SAMOSA(Veg type)

Ingredients

4 large white potatoes, boiled, peeled and mashed
1/2 cup boiled and drained green peas
1 1/2 tsp cumin seeds
1 tsp amchoor(mango powder)
1 tsp red chilli powder
1/2 tsp saunf(fennel)powder
1/2 tsp garam masala powder
1 tablespoon chopped cashewnuts
Salt to taste
3 cups maida(all purpose flour)
1/2 cup maida, for rolling out
1 tablespoon heated ghee or oil
Oil for deep frying the samosas
1 tablespoon ghee(clarified butter) for the stuffing
1 small bowl of cold water


Heat the ghee for the stuffing and add the cumin seeds and
cashewnuts.
When the seeds splutter add the dry powders and fry for 10
seconds.
Add the mashed potatoes and green peas and mix well.
Mix in salt to taste.
Fry on a low flame for about 10 minutes.
Set aside.
Prepare the cover for the samosa by combining
the maida, hot ghee or oil and salt to taste.
Add enough water and knead the dough.
Set aside for about 10 minutes.
Divide the dough into round portions.
Take each portion and coat it with some maida so that
it does not stick to your hands.
Roll it into a not too thin perfect round.
make 2 semi circles with the round.
Take one half circle. Dip your index finger into the cold water
and apply it to the straight edge of the semi circle.
Now hold the semicircle in your hand.
Fold the straight edge , bringing together the watered edges.
Seal the watered edges.
You should now have a small triangular maida pocket.
Stuff it with the potato mixture and now water-seal the
upper edges.
Repeat for the rest of the dough.
Deep fry in oil till golden brown and serve
with mint chutney.
Do not overheat the oil, since this will cook only the
outer maida covering and the inner layer will remain
ncooked even if the samosa has turned dark brown
on the outside.

yep ofcourse i will give the links,
But that is the iranian samosa,
i asked friend (who is a chef in PARK HOHEL,CHENNAI) he only give that link to me
and did it myself last weekend ,after that only i posted it.

Sorry to disagree with you. This recipe is all over the net . I have found many Indian blogspots featuring this recipe.
It cannnot be Iranian due to this fact.

RECIPE #: 6

BHEL PURI

SWEET CHUTNEY

Dates - 5 nos
Tamarind - A small amount (or) 2 tsp of juice
Jeggary - 1 tsp
Cummin - 1 tsp
red chilli powder - 1/2 tsp


Mix all the above in mixie with small amount of water, u will find a fine paste


MINT CHUTNEY

Mint leaves - a small amount
Corainder leaves - a small amount
Green chilli - 4 nos

Mix all the above in mixie with small amount of water, u will find a fine paste



Incrdents for BHEL PURI

Puff rice - 1 cup
Puri - 10 nos (buy as readymade)
redchilli powder - 1 tsp
Cucumber - 1/4 cup Grated
carrot - 1/2 cup Grated
Sweet chutney - 2 tsp
Mint chutney - 2 tsp

Green mango - a small amount grated
(or )
Lemon juice - 1 tsp

salt to taste

Now, mix cucumber and carrot first, now add chilli powder,sweet chutney,mint chuttney and crushed puries and mix well

finally add puff rice and mix

add chopped coriander leaves finnaly and serve

PANI PURI

MAKING OF PANI

incredents

Mint leaves - 1 small bunch
coriander leaves - 1 small bunch
Green chilli - 5 nos
jeggary - small amount (or) 1 1/2 tsp
cummin powder - 1 1/2 tsp
pepper - 1/2 tsp
salt to taste


Mix all the above incredents to a fine paste, now add 700 ml of water in it , mix well and filter, now the pani is ready

Making of Masala

Potato - 3 nos (baked and mashed)
red cilli powder - 2 tsp
salt to taste

mix all the above


PANI PURI Incridents


Puries - 1 packet (readily available in market)
Potato masala - as needed
pani - as needed

make a small hole in the puri,stuff the masala potato inside,and fill with pani.

This recipe is my Mother's favourite evening snacks,

CREDITS GOES TO MY MOM

RECIPE #: 8

VEGITABLE CUTLET



Incredents

Potato - 2 nos
onion - 1 no (big size)
Carrot - 1 no (medium size)
caggage - 1/4 size of a full cabbage
beetroot - 1 no (small size)
Green Peas - a small amount (OPTIONAL)
RED Chilli powder - 2 tsp
Garam masala - 1 tsp
turmeric powder - 1/4 tsp

Salt to taste
Oil to fry - 4 tsp

Bread crumps (or) Rusk - 1 cup

Method

First boil the potatos, peel off and mash it, keep it aside

now, boil Carrot,cabbage,beetroot,Greenpeas and keep it aside

now add oil in the thava in a medium flame, fry the finelly chopped
onion until it turns light brown,now add turmeric powder,chilli
powder,garam masala and salt as needed, fry for 30 sec, now add
the boiled carrot,cabbage,beetroot,Greenpeas and fry for 1 min in
low flame,now remove from fire and allow it to room temerature

Now add the fried vegitables to mashed potatos and mix it lightly
now add 1/4 cup of Bread crumps and mix it

now make the mixture in the shape as you needed (fro the above quantity you may get 10-12 pieces)

now put the PAN in the fire, dip the pieces in the balance bread crumps, and roast it in pan,

Serve it with tomato sauce


CHICKEN CUTLET AND FISH CUTLET

the above same procedure is for both chicken and fish cutlet

what we have to change is

instead of using CARROT,BEETROOT,CABBAGE,PEAS , we have to use BOILED BONELESS CHICKEN AND BOILED FISH (mash in to small pieces)

dev, you pointed out well, that ginger-garlic paste will give you a hard taste and make the dish as heavy,but if you want you can add a little bit


Hope u try the brinjal recipe...:)

RASAGULLA


Incredents


Milk - 1 litre
Lemon - 1 no.
Sugar - 200 gms or 2 cups
water - 2 cups
Maida floor - 1 tsp (to get extra softness CREDITS : CHEF Ramesh, PARK)
Cardamom - 3 pieces
Rose essence - a drop


Method



Boil the milk in a bowl,while the milk boiling heavely turn the flame low, now add lemon juice slowly and stir constantly,
now the cheese extracted from milk water, drain the cheese in a cloth and allow it to cool in the running water, and keep it in
fridge for 30 minutes

Now boil the water with sugar for 15 min in Medium flame and keep it asaide

take the cheese from fridge add 1 tsp maida and fold gently, make it as small balls (or which shape u like,you get 14-16 pieces)

now again heat the sugar water in medium flame add powdered cardamem, and put the cheese balls in it ,allow to heat for another 10 minutes in low flame

after heating allow it to cool to room temperature now add rose water (if you add rose water in heat ,the dish get spoiled CREDITS :CHEF Ramesh)

and keep it in fridge for 1 hour

ITALIAN EGG BREAKFAST



incredents :

4 eggs
1 onion finely chopped
2 potatos
1 tsp white pepper
salt to taste


Method :

Bake the potatos, and slice it thinlly (u may get 10 -12 slices) , keep it aside

Beat the eggs finely , mix the finely chopped onion ,pepper, salt, put the mixture in a pan shaped bowl, and now place the sliced potatos in the mixture one by one, Bake it in MICROWAVE medium for 15-20 minute..

Hi tharuna, i also tasted the grand sweets Thattis,and kottu murukku they sounded good, i try to do thattais only 60% i succeed in there taste, no idea about "kothu murukku",

if you want i will post the THAtti recipe, u try by your self

RECIPE #: 11

Hyderabadi Dum Briyani

Incridents

For rice (part 1)


500 gms Basmathi rice (soak it for 15 minutes)
water - 1 1/2 times of basmathi rice (if normal rice 2 times)
10 tsp Ghee
2 cloves
2 cardamom
1" pattai
1tsp fennel
10 nos cheshew nuts
10 nos raisens
3 green chilli
salt to taste

For Chicken (part2)

500 gms Chicken
3 onions - finely chopped
2 tomato- finely chopped
coriander leaves 1 bunch
mint leaves 1 bunch
10 pieces cheshew nuts
2 cloves
2 cardamom
1" pattai
1tsp fennel powder
2 tsp garam masala
200 ml curd
5 pieces of coconut
2 tsp ginger garlic paste
5 tsp of redchili powder
4 tsp of coriander powder
salt to taste

METHOD

FOR RICE (Part1)

heat the ghee in the heavy base cooker, add fennel,cloves.cardamom, cheshew nuts,raisen,green chilli
(cut vertically into half),fry for 1 min, now add soaked rice , fry for 2 minutes in medium flame , add water ,add salt to taste, cook the rice to almost done stage.. (keep it asaide)

FOR CHICKEN (part2)

Grinding

Grind COCOnut, curd ,ginger garlic paste,cashew nuts (keep it asaide) -- (A)



Add oil in thava,fry clove,cardamom,pattai,add onions , fry the onions as it turns light brown, add chilli powder
add coriander powder, garam masala , now add tomato and fry for 1 minute , add Chicken and fry for 3 min (till chicken almost done, oil will seperate), now add mint and coriander leave fry for 1 minute

now add the GRINDED PASTE(A) , add small amount of water and salt to taste , allow to cook for 3 minutes till done..

FINALISING

Now take the boiled rice , split in two parts , place one part of rice in the bottom of cooker, put the CHICKEN GRAVY above the rice , now coat the gravy with BALAnCE part of rice, above the rice put balance gravy, cover the cooker in a plate and place a heavy stone in the top, Cook this in VERY LOW FLAME for 15-20 minutes

Vegetable Pulao


Incredents

250 gms Basmati Rice (soak for 15 minutes)
Vegetables (Carrots,beans,peas,cauliflowers,Babycorn)1 cup
1 no Big Onion
1" pattai (Cinnamon)
2 no Cloves
1 no Bay leaf
5 tsp Ghee
Mint i bunch
Coriander leaves 1 bunch
2 tsp curd
4 nos green Chillies
2 tsp ginger-garlic paste
2 pieces of Coconut
Salt to taste
7-8 nos cashew nuts
Water 1 3/4 amount of the rice

METHOD

GRINDING

Grind the coconut,curd, 2 green chilli,3 cashew nuts, a small amount mint leaves and coriander leaves (keep it aside) - (A)

Preparation :

Add ghee in the Heavy base cooker, add cloves,cardomom,cinnamom , bay leaves , cashew nuts
fry for 2 minute, now add onion fry for 1 minute ,add 2 green chilli fry for 30 secs, add vegitables and cook to almost done ,add mint and corainder leaves, add the GRINDED PASTE(A) now, fry for 2 minutes , now add soaked rice ,water and salt to taste, cook it for 10 minutes in medium flame.. allow steam to reduce..

RECIPE #: 13

Baked potatos (PIZZA CORNER SPECIAL)

Incridents

Potatos - 2 big size
Cornflour - 3 tsp
Butter - 2 tsp
pepper - 1 tsp
Cummin powder - 1 tsp
Garam masala - 3/4 tsp
Garlic paste - 3/4 tsp
Salt to taste
Method :

Peel off the skin of potato, cut the potato as you need (Julin cut is preferred)

mix butter,cornflour,pepper,garlic paste,cummin and garram masala,salt...
make it as a paste.. now apply the paste in the potatos
and allow to dry for 5 minutes

Now bake the potatos in the Microwave owen..
bake it for 10 minutes in microwave LOW and 30 seconds in micro HIGH or in GRILL...

take it out, serve with sauce you preferred..

Enjoy eatting..

This will taste like heaven...

RECIPE #: 14

French Fries

French fries are the lovable snacks these days.. its very easy to make but in a proper procedure, here is the recipe

Incridents

Potatoes - 2 big size (cut verically, in shape of small finger (julian cut) )
salt to taste
oil 250 ml
Rice flour / Plain Flour - 2 tbsp (OPTIONAL - for crispness)

Method

Normally when we fry the potatoes in oil its shape will gone.. to avoid that..

Soak the cutted potatoes in the water, add little bit of salt in the water and keep it in friedge for 30 minutes..

after that drain the potatoes and dip it in the rice flour / maida flour (OPTIONAL)

Fry 1

Heat th oil in medium flame.. fry the potatoes till the color of potato turns Flare WHITE.. , soon after this take the potatoes away and allow to cool for 5 minutes

Fry 2

Now again heat the oil in high flame... again fry the FRIED (fry1) potatoes till the color of the potato turns to GOLDEN BROWN..
now take the potatoes away...allow it to cool for 5 min (to get the CRISPNESS) , Serve with tomato sauce...

I assure that i am posting this recipe after did by myself, and it was not taken from any WEBSITE

RECIPE #: 15

PALAK PANEER


Ingredients:

Spinach - 250 grams
Paneer - 50 grams
Onion - 1
Butter - 2 tbsp.
Bay leaves - 1 big leaf
garam masala - 1 tsp
Cumin seeds - 1 tsp.
Black pepper powder 1/4 tsp.
Ginger-garlic paste 3/4 tsp.
Green chilli paste 1/2 tsp.
Salt to taste

Method


step 1:

Cook spinach till done

step 2 :

Heat oil in a pan. Fry the paneer pieces on medium heat till they turn slightly brown. keep it aside.

step 3:

Heat 2 tbsp. of butter. Fry bay leaves and cumin seeds. Add chopped onion. Fry until it turns golden brown , add ginger-garlic paste, green chilli paste and fry for 30 secs.. now add cooked paneer and fry for 2 minutes, add 1/2 cup of water and allow to heat.. , now add cooked spanich , salt and garam masala.. , cook for 3 minutes...(until the gravy thicken..)

now add black pepper powder.. fry for 30 sec...serve HOT...

Enjoy eating...

Neem appears to be an appropriate treatment for numerous dermatologic indications. RECIPE #: 16

GOBI MANCHURIAN

Ingridients

Cauliflower- 1
Onion - 1 no. cut in to big pieces
ginger-garlic paste - 3 tsp
Red chilli powder - 1 tsp
Kesar color - 1 pinch
Green chillies - 4 nos..
Corn flour- 5 tsps
Plain flour- 3 tsps
Ajinomoto- 1/4 tsp
Soya Sauce- 4 tsp
Tomato Sauce- 4 tsp
Sugar - 1 tsp
spring onion- 3 tbsp (chopped)
Capsicum - 2 tbsp (julian cut..)
cornflour mixed water - 4 tsp ( mix 1 tsp of cornflour in 3 tbsp of water)
Salt to taste


Method

1. Cut cauliflower and semicook it with hot water (allow it to cool)
2. Grind the 2 nos. of green chilli with 1 tsp ginger-galic paste and salt - (A)
3. Now mix corn flour,plain flour,ginger-garlic-chillipaste,red cilli powder, kesar color
and finally semi cooked cauliflower with very small amount of water,The mixer must be very thick

4. Now heat the oil in a kadai, fry this in medium flame (deep fry) , keep it aside

5. Now heat 4 tsp of oil in a kadai,add the onion fry for 30 sec.., now add the remaining green chillies(cut vertically)
ginger-garlic paste,ajinomoto,sugar,salt, fry for 1 min.now add the spring onion,capsicum fry for a 2 min
now add fried cauliflower.fry for 30 secs.., now add tomato sauce , soya sauce fry for 15 secs.. now add
cornflour mixed water.. and allow to heat in medium flame.. stir a while.. when the gravy thicken.. turn off the flame

NOTE :

1. You can use BABYCORN insteed of CAULIFLOWER (BABYCORN MANCHURIAN)
2. You can use IDLIES (cut in the shape you needed) insteed of CAULIFLOWER (IDLY MANCHURIAN :noteeth: )

i used frozen french fries instead of fresh
garlic powder instead of paste
cut off the butter
added a little chilli powder also
and baked in a conventional oven

one thing i have to share , it has to be done in conventional oven ,but i dont know how many of them is having OVEN with CONVECTION AND GRILL (IN india non convectional models available) , so i post in other method... :smile:

Chinese Vegitable Fried rice

Ingridients

Boiled rice - 1 cup (250 gms) (PACHARICI - prefferred)
Onion - 1 small size (finely chopped)
Spring onion - small amount (optional)
Oil - 8 tsp
vegitables - 1 cup (carrot,beans,cabbage,Green bellpepper ( capsicum) , etc...)
Ginger garlic paste - 1 tsp
aginamotto - 1/4 tsp (optional)
tomato sauce - 3 tsp
soya sauce - 1 1/2 tsp
Green chilli sauce - 2 tsp
Black pepper - 2 tsp
salt - as needed
sugar- 1/2 tsp

method

1. Heat the Oil in the frying pan , medium flame

2. Add onions.. fry for 30 sec , add the vegitables and fry for 1 minute..
make sure the vegtables half cooked

3. add ginger-garlic paste, aginomoto, tomato sauce,soya sauce , chilli sauce, salt , sugar and fry for 2 minutes.. add a bit oil if nesasary

4. now add the boiled rice and fry the whole for 1 minutes..

5 . Add pepper powder and fry for 30 sec..

Enjoy eating... :)

For chicken fried rice :-

Add the cooked chicken pieces along with vegitables..

For egg fried rice..

1. Fry the egg and make it as small pieces..

2. Follow the procedure 1-4 of veg fried rice..., now add the egg pieces along with pepper...

noodles - 100 gms

Method


1. Boil the noodles with little salt added keep it aside..

Noodles with Macaroni pasta

Ingridients

noodles - 100 gms

Macaroni- 1 cup (100 gms)
water - 1 1/2 cup
onion - 2 medium size (Grind to paste)
tomato - 2 medium size (Grind to puree)
ginger-garlic-greenchilli paste - 1/2 tsp
red chilli powder - 1/2 tsp
garam masala - 1/2 tsp
turmeric - 1/4 tsp
aginamotto - 1/4 tsp
soya sauce - 1/2 tsp
salt and oil as needed
coriander leaves - small amount
oil - 5 tsp


Method

1. Boil the noodles with little salt added keep it aside..

2. heat the oil in cooker pan, add onion paste fry for 30 secin medium flame

3. now add ginger-garlic-greenchilli paste ,redchilli powder ,garam masala
turmeric powder, aginomotto, soyasause fry for 30 sec in medium flame

4. Now add tomato puree and fry for 30 secs...

5. add water and salt and allow it to boil for 1 min..

6. Now add macaroni and close the cooker lid WITHOUT WHISTLE.. allow it to
cook for 2 min in high flame and 4 min in low flame..turn of the stove now..

7. Open the lid now, u see the semi gravy macaroni pasta...

8. Now add the noodle in the pasta and heat it for 1 min...

9. Decorate with Coriander leaves..AND SERVE hot

i tried your gobi manchurian recipe and it came out good. I did make a few subtractions and additions. can i know what ajinomoto is? i had no idea what it is so i didn't make use of it, and I also didn't add kesar. While boiling i added very little milk while boiling to make it boil faster. thanks for your recipe :)
