Dear friends, I am sure all of you all remember that, after my F.I.Law's death, my grandmother too passed away after about 30 days. Well her thithi falls on 24.4.2010

I have another marathon cooking to be done, again for 100 people.

Here is the menu: White rice, seasoned dal and ghee,
mysore rasam, tayir, appalam, parippu prathaman.
pusini sambar, karunai kilanggu masiyal, gonggura kadaiyal,
tomato cucumber patchadi, inchi puli, banana chips.
bitter gourd chips, cauliflower manchurian, tofu sweet sour,
brinjal sambal, snakegourd kutoo, long beans poriyal.


I will be busy again, but will drop on and off to the thread.

[tscii]Got this recipe from a caterer in Singapore.

VEGE BALLS IN SAUCE

Ingredients:
Cut all these veges very fine
¼ cup mushrooms
¼ cup cabbage
¼ cup beans
¼ cup carrots
¼ cup cauliflower

½ cup bread crumbs
2 tbs corn flour
1 tbs soy sauce
½ tsp pepper powder
Salt to taste
1 pip garlic crushed
Oil

For Sauce:
7 pips garlic very finely chopped
2 shallots very finely chopped
½ tsp ginger finely chopped
3 green chillies, remove seeds, finely chopped
2 spring onions chopped finely
¼ cup tomato sauce
2 tbs soy sauce
1 tsp pepper powder
1 tsp sugar
1 ½ tbs corn flour
Salt to taste
1 tbs oil

Method:
Heat 1 tsp of oil in a wok, add in the crushed garlic.
Sauté well, add in the chopped vegetables, salt.
Stir fry for about 5 minutes. Remove and let it cool.
Now add in the bread crumbs, corn flour, pepper powder,
and the soy sauce. Crush with your hands, sprinkle little water
if needed. Shape them into small balls.
Deep fry these balls and keep them aside.

The sauce:
Heat oil in a wok,, add the finely chopped garlic.
Sauté and then add in the shallots, ginger and green chillies.
Fry for 2 to 3 minutes,lower the flame, add in the tomato sauce, soy sauce, sugar, pepper powder, salt and enough water.

Now add little water to the corn flour to make a thin paste.
Add this corn flour mixture slowly while stirring.
Keep stirring till the sauce thickens, about 5 minutes.
Add in the spring onion and remove.
Dip these balls into the hot sauce just before serving.

hello nga kugan.....thithi menu looks grand & super. I have no doubts that you will have out the spread on perfect time. I sincerly hope u have few more helping hands in the kitchen.

While in Singapore, a family served us this oats in curds.
The smell of ginger and chillie, and it was ver tasty.


OATS IN CURDS

Ingredients:
½ cup oats
½ cup water
½ cup curds
½ cup water
1 green chillie seeded and chopped finely
½ tsp young ginger chopped finely
¼ tsp oil
Salt to taste

Method:
Dry roast the oats for about 2 minutes.
Then grind it coarsely.
Add ½ cup water and cook it. Remove.
Dilute the curds with the ½ cup of water.
Add to the cooked oats and mix well.
Add salt to taste.

Now heat the oil, add in the chopped chillie and ginger.
Sauté a little, pour it on the cooked oats.
It makes a very good break fast or drink.

Note: I did not have green chillie, I used red chilis

Dear friends, the function went on smoothly, with all your good wishes and God's blessings.

Food was just nice for the 100 odd people that turned up.
Very tiring as usual.
I asked a friend to take the pictures.
She took pot by pot.
I am sure it will be a burden for NOV anneh to upload.

Yesterday i tried manjula's aloo stuffed naan....& I have say it came out perfecto!!!! the naan is still soft even this afternoon...i would surely recommend to u all as there is no frying involved....& despite that....it turned out very yummy! ;-)

As requested by Mrs K :) i'm reposting soem recipes using milkmaid (or any other condensed milk) here ... diabetes illaathavangalukku mattum thaan :lol:


Easy doughnuts (i've tried them before and they turned out well):
150g plain four
2 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1/2 tsp ground nutmeg

Mix all the above in a mixing bowl. Make a well at the centre and add :

2 tbsp cooking oil
2 tbsp milkmaid condensed milk
2 tbsp hot water and 1 egg

and mix thoroughly.
On a lightly foured board, knead the dough until its free from cracks. Roll out thinly and cut with pastry or doughnut cutter. Srt aside for at least 30 mins.

Heat oil in a wok. Drop the doughnuts carefully into the hot oil and fry over low heat until golden brown (abt 3 mins). take them out, drain and roll the warm doughnuts in sugar/cinnamon mixture and serve.

Coconut candy :
2 1/2 cups grated coconut
1 can of milkmaid (397g)
1 cup sugar
30 g butter
1/2 tsp vanilla essence
a few drops of coloring of yoru choice
and some pandan leaves (if you have any)

Lightly grease a 20cm square pan.

Tear the pandans into strips and knot them.
Fry coconut until its partially dry. Add milk, sugar and pandan. Cook under low heat, stirring continuously until mixture leaves teh sides of the pan (approx 30 mins). (check : you can drop a little mixture into very cold water and it should form a soft ball which falttens on removel from water).
remove the pan from the heat, discard the pandan. Stir in butter, essesnce and food colouring. Transfer to the greased pan and at lightly into place.
Allow to cool and cut into squares. Store in an airtight container.

Steamed sponge cake :
180g plain flour
2 tsp baking soda
1/4 tsp ground nutmeg
a pinch of salt
150 g butter
4 eggs
1 1/2 cans of milkmaid milk
1 tsp vanilla essence
caramel sauce (optional)

Lightly grease and flour a 22cm round pan.

In a container sift together the flour, soda, nutmeg and salt.

In a bowl, cream butter until its light and fluffy. Add eggs one at a time, beating well after each addition. Beat in the Milk and essense. Fold in the flour mix. The mixture should have a batter consistency. Pour the batter into the prepared pan and steam over high heat for 30 mins. reduce to moderate heat and continue to steam for a further 15 mins or until ta cake tester inserted in cake comes out clean .
Cook it and cut into slices. If desired, top it with caramel sauce and serve.


Caramel sauce :
Cook 1 cup sugar with 1/4 cup water over low heat until sugar caramelizes and is light brown. Add 1/2 cup water and stir to dissolve the caramelized sugar. remove from heat and use as desired.

I really salute you ! cooking for 100 ppl. Inga enga 2 + 1/2 -ku cook pannavE iduppu navunthuruthu! Inneikki i cooked a few different vege dishes as it was prathOsham and a public holiday for us here .. emmadiyO! i think i'll be flat out tonite!

Namma own creation. turned out good.

Thai style chapathi: :roll:

4 leftover chpathis torn into pieces. mix it with 1-2 tbsp curd or milk or coconut milk, 1 tbsp thai red curry paste, salt & pepper pwd. I used curd. let it soak for a max of 5 mins.

Heat oil. saute 1 onion cut into strips,1 green chilly slit. once transparent, add in 1 m. tomato chopped & saute for a min. needn't become pulpy. let it hold shape.

Now add in 1 tbsp red curry paste & mix well.

Add in the chapathis(pirichu vittu podanum. else it'll all stick together). mix gently for a min or 2 until the chapathis gets heated up. throw in some spring onion greens. mix & serve.

these chapathis will be soft for a long time as it's soaked in liq(curd/milk) for some time.

Enggapa, Malaysia veetill ellam dish washer use panrathillai.
Even in US I did not use it, hand wash thaan.

recipe...seems very very simple....try pannitu solaren..;-)

Here is a suvaiyaana Potato Pudhina Recipe:
Baby potatoes about 1/2 kg ( boiled till 3/4 is cooked)
Puthina leaves one handful
chilli powder 1 tsp or more to yr taste
jeeragam 1 tsp
dry fry 1/2 or 1 tsp jeeragam & poweder it. ( this is seperate from the above jeeragam.;-)
oil 2 to 3 tblspn
salt

In a pan pour oil & add the 1tsp jeeragam & then potatoes fry this for about 3 to 4 mins. Then add chilli powd/salt & cover it with a lid & let it simmer on low fire for some more mins. Now add in the chopped pudhina leaves & cook them some more.
when potatoes are fully done add the freshly made jeeragam powder.

& then eat 'em hot with rice / rasam or any sambar or thaalicha thayir saadam.
absolutely yummy.....enjoy ;-)

Friends, my cooking is not over yet.
In the middle of May, we are having bajans in our house.
Light dinner for 50 of them.

I have already made up the menu.
Little dishes only.

Idly, sambar, tomato chutney.

Chapathi, green peas and brinjal curry.

Rice noodles (meehoon) fried, red chillie sambal.

Custard or agar agar

Coffee and tea.


I will be posting the green beans or patchapayir,
and brinjal curry, tomorrow.
My friend gave me the recipe, let me know what you all
think about it. I do not want to cook the same chick peas curry. Thanks. Kugan98

dev - my amma used to make a type of baked cake using leftover bread, milk and cream crackers - yummy-yah irukkum. I'll ask her and post it here since i didn't know there's a following for leftovers :lol: I do that most of the time ... i've just made 1 - kathamba leftover kulambu - :lol: - mix all the left over curries - vengaaya kulambu plus soya chicken curry plus a bit of the keerai kadaiyal .. 2 plastic containers michcham .. :lol: eppadi irukuthu-nu theriyala....naalikku solren :lol:

Thanks NM, I cannot remember any left overs in our house.
What my grand mother will do is, she will have a clay pot.
Every day she will pour 1 big karandi of kulambu whatever she cooks in the pot.
She will do this for a week, she will heat the contents daily.
End of the week, she will heat the whole contents well, all combined so well.
There will be all kinds of kulambu with all kinds of veges mixed so well.

Then she will mix the kathamba kulambu into steaming hot rice.
shape them into balls, and all of us will have one ball.

I tell you the kulambu will taste like heaven.
So tasty, we all will enjoy the food.

My father-in-law always will make noise that it is bad for health. Well now no grandmother, to make and no father-in-law to make noise :cry2: :cry2:

[tscii]Dear Friends, this chicken recipe used to be my favourite before. It was taught by a Sri Lankan friend. when I visited her few years back.
Try it , something different and tasty. Kugan98


SRI LANKAN CHICKEN

A
4 pcs chicken breast , cut into halves
½ tsp ginger paste
½ tsp garlic paste
½ tsp tumeric powder
little salt
oil for frying

B
1 big onion sliced
4 red chillies slit into half with stalk intact
3 tbs chillie powder ( more or less as to taste )
1 tsp ginger paste
1 tsp garlic paste
1 tsp aniseed powder
1 tsp white pepper powder
½ tsp tumeric powder
3 tbs lime juice
2 tbs tomato sauce
2 pcs lemon grass smashed
2 I” cinnamon sticks
2 cloves
2 star anise
3 cardamons
2 eggs beaten with a pinch of salt
2 tbs onion crisps
little coriander leaves
water about 1 cup
3 tbs oil or little bit more

Method
Marinate everything in group A for an hour. Then fry till half cooked
Heat a wok. Add about 3 tbs of oil, or little bit more.
Add in the spices,cardmons,clove,cinnamon sticks, star anise.
Then add in the onions, ginger garlic paste, smashed lemon grass, the slit chillies, and fry.
Mix a little water to chillie,tumeric,pepper, and aniseed powders to form a paste.
Then add in the paste to the wok and fry nicely.
Then add in the half fried chicken and fry for a minute.
Then add in about a cup of warm water, tomato sauce,lime juice,salt and cook on slow fire till the chicken is done.
Add in the beaten egg all over the chicken . Let the egg set.
Once set, turn over the chicken pieces slowly without much stirring.
Dish out the pieces and garnish with onion crisps and coriander leaves.
Note: This dish should not be very dry. It would look a bit oily.

As K said, amma used to make sunda vecha kulambu by accumulating leftover curries,dhals & vegs for few days... dailyum adha currya nalla sunda kaachanum... it'll taste soooo good with rice & dosai... Ippolam she doesn't make it & naangalum ketkiradhillai... yennu theryalai...:thinking:

i took in a sportive way. participation is very important. (which i use to tell my children always).

as u all said, tastewise it was so good. but may be it is not that much attractive like non-veg.

my kids told there only, surely judges will select non-veg.

For this competition what i thought was, i should be an example for my kids,

not to hesitate in participating. either loss or win we should accept it.

I want to cook it for chapathi on the bajan day.
The taste was o.k for me.
Please give me your opinions , also any other suggestions for gravy for chapathi. All suggestions are welcome.

PATCHAPAYIR KATHARIKKA MIX

Ingredients:
1 cup patchapayir soaked over night
2 medium brinjals chopped into small pieces
1 big onion chopped
5 pips of garlic chopped fine
2 tsp of finely chopped young ginger
½ tbs sambar powder
½ tsp chillie powder
¼ tsp turmeric powder
2 tsp tamarind paste in 1 cup of water
Salt to taste

To grind to a fine paste:
2 tbs fresh coconut
4 green chillies
1 tsp cumin seeds

To Season:
½ tsp mustard seeds
½ tsp fenugreek seeds
¼ cumin seeds
1 sprig curry leaves
1 dry red chillie cut into small pieces
1 tbs ghee

2 tbs of finely cut coriander leaves.

Method:
Boil the patchapayir till well cooked, not very mushy.
Heat a wok with the ghee, add in all the seasonings.

After the spluttering, add in the garlic, ginger and onions.
Sauté well, till the onions are limp.
Add in the chopped brinjals and sauté well for few minutes.
Add in the sambar powder, turmeric powder and chillie powder.
Stir well and cook on low heat for few minutes.

Now add in the tamarind water, salt and let it come to a boil.
Cook till the brinjals are soft, add in the ground paste, boiled
Patchapayir, enough water to make a thick gravy.
Let it boil for about 5 minutes. Remove, garnish with coriander leaves.
Serve with rice or chapathi.

Hi Mrs K,

For chapati, i used to make these as well :)

Potatoe with green peas/mix vege and
keema but with minced mushrooms.. both tasted yum.

For the potatoes :

You will need

A : 4-5 peeled and cubed (1cm cubes)

B : Some frozen mix vegetables containing sweet corn, cubed carrots and green peas (alternatively, if you prefer, cube some carrots very small, take some sweet corn, grean peas) - for 4-5 medium potatoes, you will need about 4-5 tablespoons of this mix vege.

C : Masala mix (1tsp cumin powder, 1/2 tsp fennel powder, 1 tsp coriander powder, 1/2 tsp turmeric and chilli powder to your taste)

D : 1/2 tsp mustard seed, 1 cinnamon stick, 2-3 cloves, 2-3 star aniseed,

E : 1 whole onions - sliced or chopped, 1 full tsp grated/chopped ginger, dried chillies 3, curry leaves 1 sprig, 2 chopped tomatoes

Salt

In a pan, put some oil and thaalichhi the spices in D and add in the onions, ginger, dried chillies and curry leaves. Saute till you have a nice fragrant and the onions begin to caramelize. Add tomatoes. mix and leave for 1-2 mins, Add water, mix and cook till the tomatoe is soft.

Now add the potatoes, sprinkle the masala mix (C), add water to cover the potatoes and leave to cook until potatoe is fully cooked (you may need to add water in between so it doesn't dry up).

After the potatoe is cooked, add in B and salt and mix well.
Cook for another 5 mins.

You can lightly mash the potatoes as you're mixing the mxi vege to give it a thick texture and potatoe is not 'bulk'.

It is now ready to be served.

You may also try this without the chillie powder.

It has no oil and tamarind in it.
The taste is super like our paruppu rasam.
Try it once friends. Kugan98.

HEALTHY RASAM

Ingredients:
¼ cup toor dal soaked
Salt to taste

To Pound Coarsely:
1 tsp cumin seeds
1 tsp black pepper
5 pips garlic
A very small piece of asafetida (not powder)

To blend:
2 ripe tomatoes
A handful of coriander leaves
½ tsp turmeric powder

Method:
Boil the dal in 1 litre of water till well cooked.
The dal should be very well mashed.

Now add the blended ingredients into the dal water.
Add also the coarsely pounded ingredients into the mixture.
Add salt and crush well with your hand.
Pour it into a pot and let it come to a slow boil.
When you see it frothing up, remove and serve.

Friends, here is Suvai nga's maadan kuzambu.
Very nice with a different taste.


SUVAI'S MAADAN KUZAMBU:

okay here is a another simple recipe from my kitchen:
maadan kuzhambu :

Thuvaram parupu about 2 tblspn
perungayam oru chinna piece
fry the above till golden brown

coconut about 1 handful (no need to fry this)
now add it to the above & grind them all together & keep aside.

any veg like : murungai/pooshani/red pooshani/ ethaavathu oru kaai

tamarind about a small lemon size karaichi vaikavum

so to this tamarind water add the cut veg/turmeric/ sambar powder/ salt pottu nalla kothika vidunga...pachai vaasanai pogum varai.

now add araithu vaitha thengaai ...ithai pottu let it boil for another 2 to 3 mins...kuzhambu sernthu varum...apo turn off the heat & in a little oil add kadugu/vendhayam/lots of karuvepilai...ithai kuzhambil serthu...add chopped kothamalli too.....

This will go well with rice...& sepangkizhangu or potato or vazhakaai roast.....slurpy slurp!!Wink

oh dont forget to eat it with appalam...

Grind together the followng to a paste:
3 tbsp pottu kadalai(chutney kadalai/roasted bengal gram)
4-5 tbsp coconut
4 dry chillies
tamarind-small gooseberry sized or to taste
a sprig of curry leaves

heat a tbsp gingelly oil. Add in 1/4 tsp mustard seeds, 1 tsp peppercorn. Let it start to splutter.

Add 10-12 brinjals(violet variety-choose the tiniest available) slit into 4 as u do for ennai kathirikkai kuzhambu. Keep mixing gently until the brinjal is 3/4th cooked.

Now add in the paste, req water, salt and let boil for 5 mins or until the brinjals are cooked through. this curry should be medium thick.

Serve with rice.

Konjam kastam nga, ahnaal ruchi o ruchi


Ok here is a simple katharikaai poriyal:

This is like a roast but with less oil if u do it on very low fire...enna onnu....time edukum...but worth it! Wink

katharikaai small round ones....about 10 or 12 wash & slice them into 4 & put them in water.
(Drain just before putting them in a flat frying pan)

In a flat frying pan add about 1 tblspn or more oil.
Add in the drained / cut katharikai
stir to coat with oil & spread it out....now dont be touching it....low fire la...let it cook & brown well on one side & only then to turn them to brown on the other.......again no touching....only seeing... Mr. Green ....after browning on both sides...add...idly milagaai podi to it....Wink & give it a stir or two...thats it.....Smile
soooper o soooper taste......trust me u all will surely love it....romba velaiyum kidaiyaathu.

variation...u can do the same for urulai but u have to thalichi kottufy with Kadugu/ulutham paruupu (lots)/karuvepilai.....then add boiled cut potatoes..nalla roast aaganum..l & then in the end add idly milagaai podi....yummy taste...this is a cross between kalyana urulai kizhangu & verum fry with plain chilly powder.....enjoy! with all 3 course meals...Wink

have you tried capsicum with chapati?

a fijian friend introduced me to this recipe - from her Indian Mom-in-law:)

I tried it :

5 capsicums, cubed into not more than 2cms in size (you can mix red and green)

sliced or chop 2 onions

masala powder (meat masal if preferred)
mustard seeds, cinnamon, nutmeg, dried chillies, star anise

frozen peas (2 table spoons, if desired)

In a pan, add oil and thalichi the usual - mustard seeds, nutmeg, star anise, cinnamon, 2 dried chilled and onions - fry till its fragrant.

Add masala powder (3 tablespoons) - i used meat masala although this is a vege dish :twisted:

mix altogether, add the capsicums, mix and add a bit of water.

Let it cook, stirring now and then, adding hot water if it dries up until the capsicum is soft. Add salt to taste. When you're stirring and checking, is the masala looks mild or gravy looks thin, you can add more masala if you like. I like it thick with rice but thinner with chapati. When its all cooked, you can add the peas and cook till it is just cooked.

The capsicum is now ready to be served with pita or chapati :).

I dint get to see the thread so .. i couldnt see the stuffed brinjal yet ,,, i will check out and do it at the earliest

Guys yesterday my roomie tried a new style of biryani . Probably many would know it , but taste was just awesome . Lemme post it for all of you
Ingredients
3 cups basmati rice
5 chillies slitted
chilly powder - 1 tsp
star anise , bay leaf , cloves and cinnamon - 2 each
oil
tomatoes -2
onions - 2
ginger garlic paste - 2 tsp
Vegtables - cauliflower florets , fried paneer , lima beans, carrot (cut
length wise) , potato- All of these about 1/4 to 1/2 cup

To grind
shredded coconut - 2 to 3 tsp
cashews (about 20 )
water

Method
Heat oil in a pan and add biriyani masala items , followed by onions. ginger garlic paste ,green chillies and tomatoes until they ooze the oil out
Now add the grinded paste and a little red chilly powder
At this stage and the half cooked or partially cooked vegetables (jus to lessen the cooking time )

Add enough salt at the end
Measure around 3.5 cups of water

and keep it in cooker for 1-2 whistles
when done transfer to alumium tray(sealed) and bake it in oven for
10-15 mins (This time may be varied) at 400 degree

Finally garnish with chopped coriander .

Let me know how it worked out. In our house it was a super bumper hit .

CAULIFLOWER IN PASALAI KEERAI

Ingredients:

300 grms pasalai keerai
200 grms cauliflower florets
1 ripe tomato finely chop
Salt to taste

To Season:
1 tbs oil
½ tsp cumin seeds
2 bay leaves

To grind to a fine paste:
2 big onions
1 tsp ginger paste
1 tsp garlic paste
3 green chillies

Powders:
1 tsp chillie powder
¾ tsp coriander powder
¼ tsp garam masala powder

To Grind to a Paste:
1 tbs cashew nuts
1 tsp kas kas
1 tbs fresh coconut

To Garnish:
2 tbs of fresh cream (optional)
Little cut coriander leaves

Method:
Clean the pasalai keerai leaves and chop them.
Heat a pot with little oil, sauté the leaves well.
Add a pinch of sugar to retain the greenness.
Add little water and cook the leaves well.
Let it cool, blend it well and keep aside.

Clean the cauliflower florets, stir fry in little oil till a bit brown.
Keep aside.

Heat a wok, with the oil, add in the seasonings, stir well.
Add in the onion, ginger, garlic, green chillies paste.
Sauté well till the onion browns a bit.

Now add in the cashew, coconut kas kas paste.
Sauté well, add in all the masala powders.
Stir well add in the chopped tomatoes, and salt.
Cook till the tomatoes turn mushy.

Now add in the keerai paste and stir well.
When it boils add in the fried cauliflower florets.
When every thing boils, remove and add the cream,
and the cut coriander leaves. serve

I will try and post vegetarian version of some.

Layer cake is impossible, as it contains lot of
egg yolks. You can smell it along with the spices.

Nasi ayam penet is like our chicken rice.
Main ingredient is the chicken.

The other recipes can be modified.
So wait for my recipes.

Simple Butter cake

Ingredients

250g butter

210g castor sugar

4 eggs

1 tsp vanilla essence

200g self-raising flour, sifted with 1/2 tsp salt

4 tbsp fresh UHT milk


Method
Grease and line a 20cm cake tin with greased greaseproof paper. Preheat oven to 170C.

Cream butter and sugar until light and creamy. Add eggs one at a time, beating well after each addition until mixture is light and fluffy. Add essence.

Fold in sifted flour gradually to mix. Finally stir in milk. Mix until well combined.

Turn out mixture into prepared tin. Level out mixture at the sides but allow a shallow well in the centre. This is to enable the cake to level up evenly during baking.

Bake in preheated oven for 55–60 minutes or until cooked through when tested with a skewer.

ORANGE CAKE

Ingredients
275g flour
1 tsp baking powder
175g butter
175g castor sugar
3 eggs

Combine:
100ml milk
125ml orange juice
1 tsp lemon juice
1 tsp vanilla essence
3 tsp grated orange rind

Method
Sift flour and baking powder together. Preheat oven to 180 ºC. Grease the sides of a 23cm round or square cake tin and line base with non-stick parchment.

Beat butter and sugar until creamy, light and fluffy. Add eggs one at a time, beating well after each addition. Add in orange rind.

Fold in sifted dry ingredients, alternating with the combined liquid mixture. Pour mixture into prepared tin and bake in preheated oven for one hour or until a skewer inserted in the centre of the cake comes out dry.

Cool cake in tin for five minutes before turning it out onto a wire rack.

Cake looks really Yummy. Here is how I cake cake at my home. My friends and kids love it.

2 sticks of butter-roughly 115 gms
1 1/4 cups of flour
1 tsp baking powder
1 1/4 cup of sugar
1 tsp vanilla essence
4 eggs
1/4 cup or a little less honey

Method
Beat together egg whites, sugar and butter. Nalla noorai poonga. Mix baking powder with flour and add a pinch of salt. I normally sieve 3 times. Now slowly add the flour to the egg mixture and beat till mixed well. Add egg yolks, essence and honey and mix well. Pour into in a well greased pan and bake at 350 C for 40-50 mins. A skewer inserted in the middle should come out clean. Cool cut and serve.

Hi Folks,
A fish curry I learnt from my friend from Andra.
1-2 lb of fish (I normally use cat-fish or white fish steaks)
2 Large onions roughly chopped
1 tsp methi
4-6 cloves of garlic sliced
Juice obtained from a big lemon sized tamarind
2 tsp chili powder
4 tsp dhania powder

Method
In a pan add oil. Add methi seeds, onions and garlic and saute them till the onions become limp. In a separate bowl mix together chili powder and dhania powder with a little water and make it into a paste. Add the paste in the oil and fry till the oil comes up. Now add tamarind water, turmeric powder and salt to taste. Let it boil. Do not close the lid. Once the raw smell is gone add the cleaned fish and cook till done. This curry is on the hotter side. Taste good the next day. Refrigeration alters the taste. Best left at room temp. Curry leaves can be added. Post your comments. Thanks.

I wish we have the 'search for' or ' keyword search' facility to serach through the list of long recipes :( ........

We have to make the vegetarian fish.
My family did not like the fish, so I dropped the idea.
I will try and modify again and see.

for every egg, replace it with 1 tbs flaxseed powder mixed with 3 tbs of water.
Or for every egg replace it with 1/4 cup of apple sauce.
For apple sauce you can use only 3/4 cup the maximum.

Anyway, enough of my woes :).

Vegetarian fish recipe :)
....

if you like the mock fish, take some slices made of soya (300g) or if you are not keen, lightly fry some sliced tofu (hard tofu).

You need 5 Tbsp sweet chilli sauce, one large onions sliced or a handfull of shallots; 5-7 dried chillies, 2 ripe tomatoes chopped, 1 1/2 tsp of mixed spices (perunjeeragam, sirunjeeragam, kadugu, venthayam and ulunthu); some coriander if you like, 2 sprigs of curry leaves, salt and oil

In a pot, heat some oil and throw in the spices until the mustard seeds splutter, add dried chillies, onions/shallots and saute until its fragrant. Add the curry leaves and tomatoes. Mix and leave it to cook until tomotoes soften. Add the tofu slices or the soya fish slices and mix well. Leave it to cook for about 10 mins, adding hot/warm water( not too much).

Add the sweet chillie sauce and mix them together. Add water if the mixture is too dry. Let the mixture simmer for about 5-10mins for the tofu/soya to soak in the sweet chilli. Add salt to your taste.
teh gravy should not be watery - the sauce should cover all the soya/tofu. Add coriander and serve hot.

Another variation is to boil some potatoes. Mash it. Add salt. saute some onions and chop some green or red chillies. Add the onions and chillies to the mashed potate. Add a little bit of flour (wheat flour plus 1 tsp of cornflour). make them into round cutlets, deep fry them and substitute the soya fish/tofu with this potatoe cutlets.

I am a potatoe and tofu lover, so for me anything with potatoes is great :). Try this and let me know... the trick is in the sweet chille sauce and onions......

If you want to make curry,

do not use sweet chillie sauce or dried chillies.
Add masala powder instead (i use baba's :) ). but add it before adding the tofu/soya/potatoe cutlet.
And add a bit a kadalai maavu to make the gravy thicker just 5 mins before you stop cooking. I use this instead of coconut milk.

I'm sure everyone knows how to stir fry noodles.
A friend of mine introduced me to a vegetarian stir fry i.e instead of using eggs, she used mashed tofu.

So, in oil, when you fry the onions and pounded garlic, throw in some mashed tofu and fry together. You can then add in the bean sprouts, choy sum and mix together. Cube and deep fry some tofu.
Add this to the above mixture and stir together. And then you add the sauces (soya sauce, chilli sauce), and add the noodles.

Mix altogether. Add salt. Garnish with some fried onions and serve.
For those who likes crunchy bean sprouts, add this after noodles.
For those who loves prawns like me, add it together with the onions and garlic. :wink:

Do you have a recipe for making a good curry powder base? I am using Baba's but would like to make my own masala base - i did one once but it had too much coriander and mustard powder!!

NM, so sorry to hear that.
Ligament torn can be very painful.
It can reoccur if you are not careful.

Thanks for the vegetarian fish.
It sounds more of a sweet sour fish.
Will try it out. Every recipe has its taste of its own.


Thanks too for the fried noodles recipe.
I too will use scrambled tofu in the noodles.
I am posting a noodle recipe for Suvai nga.
Its a Sarawak recipe called Mee kolok.
Modified to vegetarian.

My palm sugar layer is not that clear

THREE LAYER TEA

Ingredients:
1 tbs thick palm sugar syrup
2 tbs of evaporated milk or more
¾ glass of plain tea chilled
Few ice cubes.

Method:
First pour in the palm sugar syrup.
Slowly pour in the evaporated milk.
Lastly very slowly pour in the plain tea.
Only then you will get the three layers.
Put some ice cubes and serve with a long spoon.

[tscii]Suvai nga, here is the vegetarian version of the kolok mee.


VEGETARIAN KOLOK MEE

Ingredients:
2 pkts of instant noodles
3 pips of garlic chopped fine
1 stalk of mustard leaves, cut into 1 inch in length
1 tbs oil
1 tsp soy sauce
1 tsp of chilli paste
Little white pepper powder
Salt to taste


To marinate for half an hour:
1 tofu crumbled
½ tsp soy sauce
A dash of white pepper
½ tsp corn flour

To Garnish:
1 stalk of spring onions chopped
1 tofu cubed and fried
1 fresh red chillie sliced
Small limes

Method:
Add the noodles to a pot of boiling water.
Cook till almost done, drain it in a colander,
and run it through tap water. Keep aside.

Heat a wok with oil, add in the chopped garlic.
Sauté well till there is a nice aroma.
Add in the chillie paste, fry well.
Add in the marinated tofu , fry well.
Add in the cut mustard leaves.
Stir fry for a second.

Now add in the noodles, soy sauce, pepper powder.
Add salt if necessary, stir fry on high heat.
Remove and garnish with the fried tofu, fresh red chillies,
spring onions, and small limes. Serve hot.

[tscii]A simple radish poriyal.

RADISH PORIYAL

Ingredients:
1 big radish, clean and grate
1 small onion sliced
1 garlic pip crushed
1 green chillie sliced
A pinch of asafetida powder
¼ tsp mustard seeds
¼ tsp urad dal
½ tsp channa dal
1 sprig curry leaves
2 tbs grated coconut
1 tsp oil
Salt to taste

Method:
Peel and grate the radish, squeeze out little of the liquid.
Heat a wok with the oil, add in the mustard seeds,
Let it splutter, add in the urad dal, channa dal and curry leaves.
Add in the garlic , green chillie and onions and sauté well.

Add the grated radish, along with the sasfoetida powder and salt.
Cook for about 5 minutes. Sprinkle little water if needed.
Now add the fresh coconut, mix well with the radish.
Stir fry once and remove. Serve with rice as side dish.

this goes for all the items above.

Friends, now I know the power of friends.
My close friend went to the idiappam factory and talked to two ladies. They have agreed to come, We have to prepare the dough. They will churn out the iddiappams and steam for us in our house.

A North Indian friend agreed to bring her friends to my house to roll out the chapathis.

Well since 9th is Mother's Day, I was asked to make a cake, not only that, we are giving away a small tray with a packet of manchal, kungumam, glass bangles and the scared thread. On top of that a laddu and a rose for all the mothers.

Well, tomorrow is laddu making day, I have no other time.
Please friends take care of the thread :cry:

I will try to sneak in when ever possible.
I still owe Suvai nga 2 recipes.

Our SONU GOPI is missing for a long time.
Hope everything is fine with her.

My Dear Friends, I would like to thank each and every one from the bottom of my heart for keeping the thread going.


As you all know I have not come out of the tiredness yet.
The function was a huge success by the grace of God and of course from all the sincere wishes from you all my dear friends.

I will post the pictures to your mails, as the recipes are all posted before, except the cheese cake.
I will post the cheese cake recipe soon.

The function ended about 11.p.m, and few of us had to go to a very close relatives house, as someone passed away.
I was very busy with the arrangements there.

So my dear faithful friends do bear with me, I will be back to my normal self soon.

Please help my Tamby Shivan with the recipe menu.

I am really overwhelmed by all your love.

So here is the cheese cake.


CHILLED LEMON CHEESE CAKE

Ingredients:
200 grms oreo biscuits or digestive biscuits
100 grms melted unsalted butter

Cheese Fillings:

250 grms cream cheese
150 grms castor sugar
½ tsp vanilla essence
1 tbs lemon juice
1 tsp grated lemon rind
240 ml heavy whipping cream

Method:

Line the base of a 23 cm round spring- form pan with
aluminum foil.
Break biscuits into a food processor and whizz until
crumbly in texture. Add melted butter and mix well.
Press the biscuit mixture firmly onto the base of prepared
pan and chill for about 20 minutes.

In a bowl, beat the cream cheese until smooth.
Add in the sugar and beat until light and fluffy.
Scrape down the sides of the bowl, and beat in the essence,
rind and the lemon juice.

In clean bowl, beat the whipping cream until soft peaks form.
Gradually fold in the whipping cream into the cream cheese.

Pour the filling over the chilled biscuit base.
Smooth the the top, you can make swirls with a fork.
Now refrigerate the cake for 3 to 4 hours.
Its best to leave it over night.

You can decorate with fruits, jam or what ever you fancy.

Note: You can leave out lemon juice if you are not making
a lemon cheese cake.

I placed few biscuits here and there before pouring the other half of the mixture.

Biriyani with onion or mixed raitha
Plain rice
Dhal with ghee or sambar
vathal kulambu or brinjal puli kulambu or london vatha kulambu(they also serve saiva meen kulambu in some weddings)
Rasam
Curd
poriyal
aviyal or kootu
manchurian- cauliflower/babycorn
varuval-potato or yam or vazhaikai
mudhiri or badam cake or any sweet
payasam- wheat or mixed fruit or ada pradhamam
vadai
appalam
pickle or puli inji

And then they serve banana, ice cream and badam paal or sukku coffee just outside the dining area.

DAL TOMATO CURRY

Ingredients:
(A)
250 grms ripe red tomatoes cut into 4
250 grms green tomatoes cut into 4
100 grms toor dal soaked
1 tsp red chillie powder
1 tsp coriander powder
¼ tsp turmeric powder
½ cup water
Salt for taste

(B)
To Grind To Paste:
2 tbs grated coconut
2 green chillies
1 tsp garlic paste
1 tsp ginger paste
½ tsp cumin seeds.

(C)
To Season:
1 tsp oil
1 big onion chopped
½ tsp mustard seeds
1 sprig curry leaves
2 dry red chillie cut into pieces

Method:
Put all ingredients in (A) into a pressure cooker.
Cook till 3 whistles, remove and let the steam subside.

Add in the ground ingredients to the pressure cooker.
Let it boil well so that the raw smell goes.

Heat a pan, add in the oil, and the ingredients for seasonings.
Sauté well and pour it into the pressure cooker.
Let it boil once and remove.
Goes well with rice, chapathi or idli.

STEAMED MOTHAGAM OR MODAK
Ingredients:
1 cup pan fried broken green peas, boiled and mashed roughly.
1 cup brown sugar
cup grated coconut
2 tbs ghee
a pinch of cardamom powder
cup oil
2 cups rice flour

Method:

Fillings:
Melt the brown sugar with 2 tbs of water
Sieve for dirt. Boil again the syrup,
Add in the ghee, grated coconut, and the boiled green peas.
Cook over medium heat, stirring continuously.
Add in the cardamom powder.
It will thicken and start leaving the sides of the pan as you stir.
Remove and cool.

The Dough:
Heat 2 cups of water in a pan. When it starts bubbling,
Add the oil and the rice flour in a slow stream, stirring
Continuously. When all the water has evaporated and
The dough thickened.Remove and let it cool.
Knead the cooled dough nicely.
Grease the palm of your hand. Take a little dough
And shape it into a cup. Place enough fillings
In the middle of the cup, and shape it like a ball,
with a small cone on the top.
Do this to the rest of the dough.
Steam for about 20 minutes. Serve warm.

Kuganka,made ur simple butter cake in my new OTG.It came well.

The cake didnt raise at all kuganka.will send u the snap thru mail.
The taste was very soft and good.I used a square cake mould.One more thing i used normal white flour insted of self rasing flour.would that be the reason for not raising.Can u plz clear me in this.

Aarthii ma, for a cake you have to use either self raising flour,
or you have to add baking powder to the flour.
Other wise your cake will NEVER rise.

Tips for good cake making:
Sieve the flour 2 to 3 times.
This makes the flour airy.

First cream the butter and sugar until pale and fluffly.
Always beat the butter and sugar in one direction only.

Then add one egg, beat well till it is well mixed.
Then only you add in another egg
You add the eggs only one by one.
If you find the egg, curdling, add in little flour and mix.
Curdling means, the egg will seperate from the butter.

Now fold in the flour little by little by folding method.
Do not beat the mixture or you will drive away all
the air in the mixture.

Your oven should be preheated, when you place in the cake,
it must start cooking straight away.
Also your measurements must be right.

Try again Aarthii, I have posted a moist chock cake before.
Its very easy and tasty. I will post it to your mail.

To start off with, let me tell you that I am the poorest cook in the history of cooks....enakku endha dishum seriya seyya varaadhu.. atleast not without mummy's help.... this dish is the only thing which has ever come out well...its pretty simple and i have no idea of its origins... edho kaila kedachadhellaam pottu oru simple and small item I made without even mummy's advice.....

GOLDEN FRIED BABYCORN....(i guess)

Ingredients

Babycorn - 10 pieces
Oregano - according to taste
Chilly flakes- 1 tsp
Salt - according to taste
Chilly powder - 1/2 tsp
Oil - as required

Method:

Heat oil in a wok(as usual) cut up the babycorn as per desire and add to the heated oil. Let fry for sometime. Add the oregano, chilly powder and salt, mix well and leave it for a little more time. Add the chilly flakes last and stir fry till babycorn turns nice and golden brown.....

[This is just something I made....babycorn goes with just anything so we can add accordingly any kind of herbs or spices according to taste....]

One small help selvika,intha brownie recipela,for cooking choclate is there any substitutes selvika.Here am not getting cooking choclates.
What is that selvika?



i tried brownie , it came out very nicely. This is very easy to make and everybody at home and friends enjoyed it.
For this we don't need convention oven, normal basic oven is enough. This receipe was given by one of my friend.
Brownies:
=========
Self Raising Flour - 1 cup
(option - if we use maida, then take maida - 1 cup and baking powder - 1/2 tsp.)
egg - 2
Castor sugar - 1 cup (option - make sugar powder at home , 1 cup powder)
butter - unsalted 90 gms
choclate - 100 gms (cooking choclate)
instant coffee powder - 1 tsp
vanilla essence - 1 tsp
walnuts - 1 cup (blanch walnuts remove skin, chop finely or just coarsely grind it in the blender)
Procedure:
---------
1. Melt butter in the microwave.
2. Beat eggs with the spoon and mix it with butter.
3. To the above add powdered sugar and mix.
4. Melt choclate in the microwave and add it above.
5. Now add the self raising flour little by little to the above.
6. Next add instant coffee (can be mixed in 10ml of warm milk ). If we add instant coffee directly lumps of coffee can be seen in the batter. To avoid this, it can be mixed with the warm milk.
7. Add vanilla essence and the chopped walnuts to the batter and mix .
No need to use the beater or mixer to mix all the above ingredients. Everything can be mixed with the spoon.
Now grease a tray with butter, then pour the batter and keep it in the microwave, cover the tray with another plate. (plate should be upside down, this is very important), so that the batter will not raise and come out.
Set it for 7 minutes and cook. After 5 minutes check and continue cooking. The time may vary according to the microwave. In my microwave it took only 7 minutes.
Then it is ready to eat.
Full preparation takes only 20 minutes.

Kuih Koci is a Malaysia desert . I would like to share this easy recipe with all of you.

(A)

Banana leaves cut into 6 in X 4 in pieces (20 pieces) and scald in boiling water. Take out and dry.

(B) - For the filling

1 cup shredded coconut (white only)
1 cup dark brown sugar
2 tabsp sugar
1 cup water
pinch of salt

Boil water, add sugar and salt. When syrup becomes thick add coconut and cook for about 3 minutes until mixture thickens. Dish out and cool.

(C)

300grm Glutinous(Pulut) rice flour
1 1/4 cup thick coconut milk
2 tabsp granulated sugar
1/2 tsp salt
2 tabsp vegetable oil

In a large bowl mix all the ingredients in C until you get a soft dough. If dough is dry, add a little water (only slightly).

Make into 20 equal portions. Spread a little oil on your palm so that dough doesn't stick. Take one portion and flatten it like a saucer. Put in 1 tsp of coconut filling and close the dough back into a ball. Take one piece of banana leave and put the ball on it and join the two ends and fold back. Do the same for all.

Steam over rapidly boiling water for 15 - 20 minutes or until cooked. Served when cool.

regarding brownies, u can even use choclates without nuts. eg. dairy milk. in this case u have to reduce the measurement of sugar.

actually i dont have idea of oven for the brownies, coz i never made brownies in the oven. u can try with less temperature for more time. keep an eye on it, so that the brownie should not burn in the bottom.

i tried cakes in the oven, it will turn out very nicely.

There they use fried chicken, chicken broth, prawn paste and anchovies.
I have substituted every thing with vegetarian items.

NASI AYAM PENYET VEGETARIAN

The Rice:

2 cups rice washed and drained
3 pips of garlic
1 one inch cinnamon stick
2 cardamom pods
2 star anise
1 tbs butter
4 cups of vegetable broth
Salt to taste

The Sambal:
3 tbs chillie paste
3 birds eye chillie pounded
3 big red onions sliced
3 pips garlic smashed
3 ripe tomatoes chopped
1 tbs tamarind paste
Sugar to taste
Salt to taste

Fried Tofu:
4 firm tofu, prick holes with a fork

¼ tsp cumin seeds powder
¼ tsp aniseed powder
½ tsp coriander powder
Little turmeric powder
Little white pepper powder
½ tsp ginger paste
¼ tsp garlic paste
Salt as per taste
Oil for frying
Little water

For Sup:

2 cups of vegetable broth
Cinnamon stick
Star anise
2 pips garlic smashed
Pepper powder
Little turmeric powder
Salt
Coriander leaves
Spring onion leaves
Oil

To Garnish:
Cucumber slices
Salad leaves

Method:
RICE:
Heat a rice cooker with the butter,
Add in all the spices, add in the smashed garlic.
Sauté for a minute, add in the drained rice, vegetable broth,
and salt. Cover and cook the rice.

SAMBAL:
Heat a wok with the oil, add in the smashed garlic.
When the nice aroma comes add in the sliced onions.
Sauté till the the onions browns a little.
Add in the chillie paste and the birds eye chillie.
Stir and cook till oil seperates, add in the chopped tomatoes,
And the tamarind paste, cook till the tomatoes are mashed.
Add little water, salt and sugar and cook till the sambal
is thick and cooked. Remove.

FRIED TOFU:
Add all the ingredients for the tofu and marinate for
about 30 minutes. Deep fry and slice them.

FOR SOUP:
Heat a pot with the oil, add in the garlic and the spices.
Add in the vegetable broth, white pepper, turmeric powder.
Let it boil nicely, add in salt and remove.
Garnish with the coriander leaves and spring onions.

Now put some rice in a plate, add in the sambal.
Arrange some tofu slices, and cucumber slices.
Also some salad leaves. Serve with a bowl of soup.

Note: I did not have the salad leaves.

Dear friends, for some time, I have stopped using all kinds of MOCK mutton , prawns, chicken and so on.

So during the bajan cooking, I wanted to make a hot sambal to go with chapathi, idli or even idiappam.
I used mushroom stems that resemble anchovies.

Would you all believe, that was the HOTTEST dish of the day.
Many asked if they can take home some, and all wanted the recipe. This shows that the people of this world are not
ready to become vegetarians yet :roll:

Yes, Dev, since they have everything to replace non-veg items, anchovies is made with mushroom stems.
It is called mock anchovies.
They make sambal with it.
