Friends thanks for all the nice posts.
I have bought a very big bag of potatoes :lol:
to try out all the potato recipes.

O.K friends for a change here is a cookie recipe.

ALMOND CHOCO COOKIES

Ingredients:

400 grms soft butter
350 grms castor sugar
50 grms almonds chopped a little coarse
Little vanilla essence

500 grms plain flour
100 grms full cream milk powder
100 grms cocoa powder
1 tsp coffee powder
1 tsp baking powder
1 tsp baking soda

Method:
Sieve all the dry ingredient twice.
Beat the sugar and the butter till fluffy.
Add in the flours gradually, also add in the essence.
Knead the mixture till it forms a soft dough.
Add in the chopped almonds mix well.

Roll out the dough and cut into desired shapes.
Arrange on greased baking trays.
Bake in a preheated oven at 150 deg C for 25 minutes.
Remove cool and store.

Note: If you find the dough a bit stiff, just add in little more butter.

Immm no response for the sprouted green peas kulambu.
Actually the ANNAMA was telling me,
konjam ithu, konjam athu, oru killu ithu,
arai kai ithu. Well I took down each and every word.
Came home and made it into a recipe.
Tried and it tasted very nice, very nutritious also.
She gave me another version of dry sprouted green peas
recipe also. Not only that, a very good multi paruppu podi also.
Very good with steaming hot rice and a spoon of gingelly oil or ghee. Thanks, Kugan98.

Just joking Dev, I will soon post the recipes.
There are many ways and different ingredients
used in these kulambus.
Some use black eyed beans, some use dal.
Some do not use any at all.

Let me confirm with my aunt for the recipe.
Since it is a Iyengar special, worried it might
not be authentic.

You are right ara puli is less puli,
and iru puli is tamarind and curds.
Look out for the recipes soon.

Suvai nga ennnoda mould for the biscuita kettinggana
sirippingga, bottle cap nga Suvai nga :lol:

I have lot of small biscuit moulds for biscuits.
Annaiki etho intha bottle cap was handy.

I also made Soya 65 :lol: today.
Suvai nga I cook simple simple kalantha saatham for the
kids to take to school. I will post them also.

This is the multi paruppu podi, ANNAMMA gave me.

MULTI PARUPPU PODI

Ingredients:
1 cup toor dal
4 tbs urad dal
4 tbs channa dal
4 tbs pasiparuppu
4 tbs horse gram (Kollu)
10 black pepper
5 dried red chillies (more or less)
Little asafoetida powder
Salt to taste

Method:
Dry roast each ingredient to a golden colour,
Except the asafoetida and the salt.

Cool all the ingredients, using a dry grinder,
Grind all the ingredients to powder.
Add the salt and asafoetida powder.
Store in a dry air tight container.

Serve this podi with steaming hot rice.
Add a dollop of ghee or gingelly oil and serve.
It comes handy when you are in a hurry
and not able to make any gravy.

Soya 65 was served in the wedding in Singapore.
it was a semma hit.

SOYA 65

Ingredients:

200 grms soya balls
1 tbs all purpose flour
1 tbs corn flour
1 tsp ginger paste
1 tsp garlic paste
1 tsp chillie powder
1 tsp tomato sauce
Salt to taste
Oil
2 sprigs curry leaves for garnishing.

Method:

Put the soya balls in boiling water with little salt.
After about 10 minutes, squeeze out the water.
Add more water and squeeze out the second time.

In a bowl, add in the soya balls, all purpose flour,
corn flour, ginger garlic paste, chillie powder,
tomato sauce and salt.
Mix every thing well and marinate for about 30 minutes.

Heat the oil in a wok, add in the curry leaves.
Fry them for a second and remove and keep aside.
Now add in the marinated soya balls and deep fry them.
Remove to a kitchen towel.
Arrange on a plate and garnish with the fried curry leaves.

It can be served with sauce as a starter or as a side dish.

ohhhh myyyyy slurpyyyyyyyy slurpppppppppp...kugan nga....the podi looks veryyyy tempting & so does the soya 65.......kandipa pannidaren.......last nite....i made two types of thakaali sadam one that dev gave & one that kugan gave....both differed in taste....konjamaa thaan senjen......& it came out very well....both recipes are keepers & avasarathuku rendumey porunthum...kugan/dev :thumbsup: :thumbsup:

Suvai nga I am so happy that you liked the tomato rice.
Nowadays I have to learn how to make simple rice
to give the children in the lunch box.

This is a new headache after becoming vegetarians.
This morning made simplified brinjal rice for them.
They usually take some fruits, yogurt and either a rice, noodles,
sandwiches and things like that.

[tscii]Here comes my aunty's version of potato chops.


POTATO CHOPS (my aunty’s)

Ingredients:
300 grms potatoes.
1 tsp red chillie powder
1 tsp corn flour
Little salt
Oil for frying

2 big onions sliced fine
1 tomato chopped fine
1 tsp ginger paste
1 tsp garlic paste
1 heaped tsp chillie powder
½ tsp turmeric powder
½ tsp corn flour
¼ tsp gram masala powder
A pinch of jaggery
Salt to taste
1 tbs oil

Method:
Wash and peel the potatoes.
Cut them into long strips.
Add in the chillie powder, corn flour
and salt. Marinate them for about 30 minutes.
It will ooze out lot of liquid.
Drain and semi fry in oil. Keep aside.

Heat a wok with oil, add in the sliced onions.
Sauté well, add in the ginger and garlic paste.
Sauté again, add in the chopped tomatoes.
Stir nicely till it becomes mushy.
Add in the chillie powder, turmeric powder,
garam masala powder, corn flour , salt and jaggery.

Mix nicely till the oil seperates, add in the fried potatoes.
Take care and turn the potato slices slowly.
The gravy will thicken and coat the potato slices.
Keep on turning the slices till they look dry and with
a rich brownish red colour.
Dish out and serve.


Note: I think Selviem's mom's version would be more tastier
with the pottu kadalai flour and cashew paste.

[tscii]Well this is my friend's version of potato chops.
It has a sweet and sour taste.
It goes well with chapathis.


POTATO CHOPS (my friend’s)

Ingredients:
300 grms potatoes boiled and diced

Spices:
½ tsp turmeric powder
½ tsp cumin powder
2 tsp chillie powder
1 tsp coriander powder
¼ tsp garam masala powder

Tempering
2 tbs oil
½ tsp mustard seeds
½ tsp cumin seeds
1 big onion chopped
1 tomato chopped fine
3 pips of garlic chopped
1 sprig curry leaves

½ cup water
¼ tsp tamarind paste
½ tsp jaggery
2 tbs chopped coriander leaves.

Method:
Heat oil in a wok, add in all the tempering ingredients.
Stir them around in a medium heat.

Now add in all the spices, and sauté for few seconds.
Add in the cubed potatoes, and sauté for a minute.

Now add in the water, tamarind paste and jiggery.
Stir nicely and allow to boil on medium heat.

Stir now and then till the gravy thickens.
The potato cubes should be coated well with the gravy.
Remove and garnish with coriander leaves.
Goes well with chapathi or rice.

Suvai nga I have to thank you very much.
You started the subject of potato chops, by asking
Sudha ma for the recipe.

Well now we have so many types of recipes to
cook the potato.
I remember our cook in India.
She would boil the potatoes, cube them.
Then she will temper cinnamon stick, cardamoms and aniseeds in oil. later add little curry leaves.
Then she will satue finely sliced onions in the oil.
when the onions slightly brown, she will add in chillie powder and turmeric powder. At once she will pour 1 cup of water.
She will add in the boiled potatoes and salt.
She will cook till the water evaporates.
Dish out and serve. This was the only method cooked
in our house in India.

Now we have so many methods to cook the simple potato.
I hope all our friends will post simple recipes that are cooked in their homes. Then we will have many varieties

Selviem, I would be very grateful, if
you can advise me on what you give your
children in their lunch box.

Our children leave early morning at 6.20 a.m
They come home at about 5 p.m
After school they have extra curriculum which
is compulsory in their school.

I have to give them snack for the interval,
and food for lunch.

I usually make this simple baked potato.
It has to be russet potatoes for a good
fluffy baked potato.
Imm, taste will be yummy with a dollop of butter
and and a dash of pepper powder.

SIMPLE BRINJAL RICE

Ingredients:

2 cups of cooked cold rice

200 grms brinjals cut into cubes
50 grms tomato chopped
1 tbs roasted ground nuts
1 tsp chillie powder
½ tsp coriander powder
¼ tsp turmeric powder
¼ tsp garam masala powder

¼ tsp mustard seeds
½ tsp urad dal
½ tsp ginger paste
1 sprig curry leaves
2 tsp oil or ghee
Salt to taste
Little coriander leaves for garnishing

Method:
Heat the ghee or oil in a wok.
Add in the mustard seeds, urad dal.
Let them splutter, add in the ground nuts
and the curry leaves and stir for a minute.

Add in the ginger paste and the cut brinjals,
And the chopped tomatoes.
Add in the chillie powder, coriander powder
and the turmeric powder.
Mix nicely and allow the mixture to cook.
Do not over cook the brinjals.

Add in the salt and garam masala powder.
Stir nicely, add in the cold cooked rice.
Mix well and dish out.
Garnish with the coriander leaves.

paniyaram with appam batter, uthappam, veg uthapppam, onion uthappam, podi dosa roll, dosa-potato bhaji roll, paneer dosa roll.

idli - chilli idlis, podi-idli sandwich, idli-green chutney sandwich.

noodles - veg noodles, masala noodles, chinese veg noodles, chicken noodles, paneer noodles

macroni same varieties like noodles

veg kothu parotta, chilli parotta, paneer kothu parotta.

appam-sugar roll

uppma - semiya , semolina with vegetables.

chapathi - all types of stuffing, paneer parotta, spinach parotta, masala chapathi(gujarathi chapathi).

sandwiches, patties - veges

french toast - egg, milk, pepper -jeera powder , a pinch of salt then dip the bread and toast.

then once in a while chicken nuggets.

i dont give sausages,burgers to school.

but i pack homemade patties as burger. same stuffing, i roll and cook in tawa, roll inside chapathi and pack for school.

pav bhaji (bhaji i prepare thick and stuff inside bread).

puri roll.

my kids dont take rice, afternoon around 1.15 they reach home.

rice means all types of vairety rice, fried rice.

snack box- biscults, wafers, chocos, honey loops, fruits.
sometimes cheese slices.

juices.

no chips for school on regular basis. only for picnic or for the class party they carry chips with them.

[tscii]Here is the green peas sprouts.

SPROUTED GREEN PEAS (DRY CURRY)

Ingredients:

1 cup sprouted green peas
1 onion sliced
1 tomato cut fine
3 green chillies sliced
½ tsp ginger paste
¼ tsp turmeric powder
½ tsp mustard seeds
½ tsp cumin seeds
A pinch of asafoetida powder
1 tbs oil
Salt to taste

Method:

Heat oil in a wok, add in the mustard seeds and cumin seeds.
Let them splutter, add in the sliced onions.
Let the onions brown a little, add in the tomatoes.
Also add the ginger paste, green chillies. Sauté well.
Let the tomatoes turn a bit mushy.

Add in the turmeric powder, asafoetida, stir well.
Add in the sprouts, sprinkle some water.
Cover and cook for about 5 minutes.
Remove cover, add the salt, mix well.
The sprouts should not be over cooked.
Remove and serve with rice or roti.

EASY WAY TO SPROUT:
Soak the green peas in water over night.
Drain the soaked beans, place the soaked beans
in a muslin cloth. Gather the four corners of the
muslin cloth and place it in a colander.
It will take about 10 hours for the sprout to appear.
Just sprinkle little water, and you can use the next day.

[tscii]Dev, here is the pickle.
The recipe belongs to my akka Ammani.

GOOSEBERRY PICKLE

Ingredients:

500 grms gooseberries
2 tbs gingelly oil
Salt to taste
1 1/2 tbs red chillie powder
1 tsp mustard seeds
1 tsp dry roasted fenugreek powder
Little asafoetida
2 sprigs curry leaves.

Method:

Wash and dry the gooseberries.
Heat 1 tbs gingelly oil in a wok.
Pan fry the gooseberries for about 10 minutes.
Remove from the stove and keep aside.
When it is cold, remove the seeds.
Mix the chillie powder, salt to the pan fried gooseberries.
Keep aside for about half an hour.

Heat the remaining oil, add in the mustard seeds.
When they splutter, add in the fenugreek powder,
Asafoetida powder and the curry leaves.

Add the mixed gooseberries to this tempering.
Mix well and remove to a glass container.
The pickle will be ready to serve in 2 days.
Store it in a fridge.

It will take about 10 hours for the sprout to appear.
Just sprinkle little water, and you can use the next day.


K, u can place the soaked beans in a hot pack directly without using muslin cloth.

Dev, the pickle will keep well in a fridge.
I have kept it for months, till good.


Dev, I have not tried hot packs.
I usually use muslin cloth, or any cloth that
will hold little wettness will do.

[tscii]Another simple way to cook macroni for lunch box.


SIMPLE MASALA MACRONI

Ingredients:

100 grms macroni
1 onion sliced
1 tomato chopped
2 tbs carrots cut into matchsticks
¼ tsp garam masala
1 tsp chillie powder
2 tsp tomato sauce
1 tsp oil
Salt to taste

Method:

Boil water, add little salt and oil.
Add in the macroni, boil till cooked.
Drain , wash in cold water, keep aside.

Heat oil in a wok, add in the onions, tomatoes.
Sauté well, add in the cut carrots.
Mix well, add in the chillie powder, garam masala
powder, tomato sauce and salt.
Mix nicely so that it is cooked well.

Now add in the cooked macroni and mix well.
See that the macroni is well coated with the gravy.
Remove and serve.

You can sprinkle little grated cheese if you like.

SIMPLE BABY CORN RICE

Ingredients:

1 cup rice washed and soak for 10 minutes
6 baby corns cut into small rounds.
1 onion sliced
1 tomato chopped
½ tsp ginger paste
½ tsp garlic paste
3 green chillies sliced
2 cups of warm water

1 small stick cinnamon
2 cardamom pods
2 cloves
¼ tsp aniseeds
1 tbs mint leaves
1 tbs coriander leaves
1 tbs ghee or oil
Salt to taste

Method:

Pour the ghee in a pressure cooker.
Add the cinnamon stick, cloves, cardamom,
and aniseeds. Let them splutter.
Add in the onions, tomatoes and green chillies.
Sauté well, add in the ginger garlic paste.
Fry till the raw smell goes.

Add in the baby corn, mint and coriander leaves.
Mix well, add in the salt, drained rice and 2 cups of water.
Close the pressure cooker and cook till 1 whistle.
Then keep the flame in very low sim for 10 minutes.
Remove and after the pressure is released,
Mix the rice slowly and serve with onion raitha.

macaroni....looks very simple but never have i tried with garam masala... :mrgreen: pannidaren

Dev, thanks for your nice feed back.

The recipe pho bo is a Vietanamese noodle soup.
They add lots of meats and herbs to make the soup.
Well a vegetarian version can be done.

Dev, my M.I.Law used to help in a hospital as a volunteer.
There are lot of ladies who come from different embassies
to serve in the hospital.
So she has gathered lot of recipes from different countries.
One of those is this pho bo noodle soup.

I will post the recipe soon.

Aiyoh Suvai nga, I could not remember the spelling
for the word julienne at that moment.
I could have written strips, athuvm memorikku varaleh :lol:
So the next alternative was matchsticks :D

Mrs K : I tried the soya pulao and soya 65 - both were super duper hit! The pulao was defcious and finger licking good! My Anni and son loved it, not to mention Ananthiy. I didn't use chillie as the 2 yound ones don't take hot/spicy food yet. I added mushroom and some mix vege instead :) YUMM! Thanks for the recipes.

Here is the kalkandu ponggal requested by the friend.


KALKANDU SAATHAM

Ingredients:

200 grms raw rice
200 grms kalkandu crushed
500 ml milk
200 ml water
10 cashew nuts
10 raisins
4 cardamoms crushed
2 tbs ghee
A pinch of salt
A pinch of pachai karpuram (optional)

Method:
Wash the rice, add the milk and water.
Cook on a low heat till the rice is nicely cooked.
(you can use a masher and mash the rice nicely)

Add the crushed kalkandu and keep sauting till completely dissolved.
The ponggal will now be in a semi solid state.
It will become thicker as it cools.

Slightly fry the cashew nuts and raisins in a little ghee.
Now add the fried cashews, the remaining ghee, crushed cardamoms,
pachai karpuram, salt to the cooked rice.
Mix everything well and remove from the stove.
The kalkandu ponggal is ready.


NOTE: Some people like to add 50 grms of
roasted moong dal along with the rice before cooking.
The ponggal will look slightly yellowish in colour,
when the moong dal is added.

MIXED VEGETABLE BIRYANI

Ingredients:

Rice:
2 cups basmati rice
1 two inch cinnamon stick
2 star anise
3 cloves
2 bay leaves
4 cups of water

Veges:
50 grms cauliflower florets
50 grms peas
50 grms diced carrots
50 grms French beans cut into lengths

To Make Paste:
2 big onions
3 green chillies
1 tsp garlic paste
1 tsp ginger paste
2 tbs poppy seeds
2 tbs coriander leaves
2 tbs mint leaves

To Fry:
2 big potatoes peel, slice into small cubes and deep fry
3 big onions sliced and fried until golden brown

¼ cup of cashew nuts fried in ghee
¼ cup of raisins fried in ghee


½ cup tomato puree
½ tsp turmeric powder
1 tsp garam masala powder
1 tsp chillie powder


3 tbs ghee
1 inch cinnamon stick
2 bay leaves
3 cardamoms
3 star anise
2 tbs mint leaves
5 stalks of coriander leaves chopped
¼ cup milk
Salt to taste

Method:

Heat a pot with 4 cups of water, add the washed rice and all the spices
with little salt. Bring to a boil, then simmer until the rice is
¾ cooked. Drain and allow to cool. Keep aside. Remove the spices.

Steam the veges until barely tender, keep aside.

Grind all the ingredients under paste and keep aside.

Fry the potatoes and sliced onions, keep aside.

Roast the cashew nuts and raisins, keep aside.


Heat a wok with the ghee. Add in the cinnamon stick, bay leaves
and star anise. When they splutter, add in the ground paste.
Sauté until fragrant, add in the tomato puree, turmeric powder,
garam masala powder and chillie powder. Add in salt mix well.
Now add in the steamed veges and mix well. Remove.

Take a pot and grease it with some ghee.
Spread half the rice into the pot.
Sprinkle the fried onions on to the rice.
Followed by the fried potatoes.
Now sprinkle the fried nuts and raisins.
Now spread the vege curry as evenly as possible.
Top it with the chopped coriander and mint leaves.
Lastly spread the remaining rice.
Drizzle little ghee and also the ¼ cup of milk.

Cover the pot tightly and put it on dum on sim for about 20 minutes.
Remove from stove and keep aside for some time.
Now fluff up the rice gently and serve with onion raitha.

MUTTON CHOPS

Ingredients:

Marinate:
10 pieces mutton chops cleaned
3 green chillies made into paste
1 tsp ginger paste
1 tsp garlic paste
1 tsp red chillie powder
2 tsp coriander powder
½ tsp black pepper powder
¼ tsp cumin powder
¼ tsp turmeric powder
½ tsp garam masala powder
1/2 cup of low fat curds
A pinch cinnamon powder
A pinch cardamom powder
1 tsp ghee
Salt to taste


1 egg
Little salt
2 sliced onions
1 sliced lime
Oil for shallow frying

Method:
Marinate the chops in the above ingredients for
About 1 hour.
Put the mutton chops in the pressure cooker.
Add in 1 cup of boiling water.
Pressure cook for about 2 whistles.

Remove the cover and cook over moderate heat
till the mutton is tender and the gravy very thick.
Cook until all the water content is all absorbed
The chops must be very dry.

Beat the egg with little salt using a beater.
Heat oil in a shallow pan.
Dip each mutton chop piece in the beaten egg.
Shallow fry the mutton chop, until browned on either side.
Drain on clean paper towels to remove excess oil.

Arrange on a plate and garnish with sliced onions and sliced lime.

[tscii]I grew up few years in Karur.
This how they made their mutton kulambu.


MUTTON KULAMBU


Ingredients:

500 grms mutton
2 big onions sliced
3 red tomatoes chopped fine


To Grind to A Fine Paste:

10 shallots
8 pips garlic
1 tsp ginger paste
1 tbs coconut scrapings
3 tsp coriander powder
2 tsp red chillie powder
¼ tsp turmeric powder
1 tsp aniseeds
5 cashew nuts
1 tsp pottu kadalai
1 tsp poppy seeds
1 tbs coriander leaves

To Temper:
2 , one inch cinnamon sticks
3 cloves
3 cardamom pods
½ tsp aniseeds
1 sprig curry leaves
2 tbs oil
Salt to taste

Method:
Clean and cut the mutton into small pieces.
Grind the ingredients into a fine paste.
Need not roast anything.

In a pressure cooker , heat the oil.
Add in the aniseeds, cinnamon sticks, cloves , cardamom seeds and curry leaves
Now add in the sliced onions and sauté till it turns golden brown.
Add in the cut tomatoes and cook till mushy.

Now add in the ground paste and the mutton pices.
Stir nicely all the ingredients till the raw smell goes.
Add about 1 ½ cups of water and salt.
Cook on medium heat for 4 whistles.
Let the steam supside, remove the cover.
Mix nicely and your kulambu is ready.

When I was posting lyrics in MOY section RR wrote a script for sorting the lyrics posted in alphabetic order provided you fill up the subject line as required by the script. Later I used it in classical music section also. The script does not seem to work now. You might want to ask RR to fix the problem. Then you can update all the subject lines and post the link to the sort routine in the very first post. All people have to do is to click on that link to see the list. You can see that MOY and classical music sections. You wont see it alphabetical order ! :(

Dev, I am posting the vegetarian version of the pho bo.
Actually the taste and sweetness comes from the beef, knuckle and leg bones with the bone marrow.
I have used fried tofu instead of the meat.
Actually, you need an acquired taste to enjoy this meal.
Most of these types of dishes will be bland.

VEGETARIAN PHO BO SOUP

Ingredients:

For the broth:

1 small onion unpeeled and quartered
2 shallots unpeeled halved
8 garlic pips unpeeled halved
1 inch ginger unpleed coarsely sliced
2, 3 inch cinnamon sticks
2 star anise
4 cloves
6 cups of clear soup or water
3 tbs light soya sauce


For the bowl:

400 grms of dried rice noodles
8 pieces of fried tofu sliced
3 scallions thinly sliced
1 cup fresh bean sprouts
4 stalks of coriander and mint leaves cut into 2 inches in length
1 lime cut into wedges
3 fresh red chillies sliced
3 tbs of hoisin sauce
4 tbs of red hot chillie sauce.

Method:
Heat a large pot over medium heat.
Add all the ingredients for broth, except the soup and soy sauce.
Dry roast all the ingredients till the onions and things begin to char.
Add the vege stock and soya sauce.
Cover and simmer on low heat for about 30 minutes.
Mash the ingredients lightly, strain into a clean pot.
Taste for salt, add soy sauce if needed
Add the fried sliced tofu into the broth, cover and keep aside.


Place the dried rice noodles in a bowl, pour boiling water over the noodles.
Cover for about 10 minutes, remove strain and keep aside.

To assemble:
Heat the broth again.
Arrange little cooked rice noodles in a bowl.
Using a slotted spoon scoop out few fried tofu on to the noodles.
Ladle the hot broth over the noodles.
Serve the bowls of pho bo with the scallions, bean sprouts,
lime wedges, sliced red chillies, mint and coriander leaves,
hoisin sauce and red hot chillie sauce in a separate plate.
So each and every one garnishes the soup as they please.

[tscii]Try this simple Malaysian kuih.


GLUTINOUS RICE WITH COCONUT TOPPING
(PULUT INTI)

Ingredients:
2 cups glutinous rice soaked for 6 hours
1 tsp salt
2 pandan leaves
250 ml thin coconut milk
200 ml thick coconut milk
Few banana leaves cut into 4x6 inches and blanched in hot water.

The Topping:
2 cups fresh grated coconut ( white only)
½ cup palm sugar (gula Melaka)
2 tbs sugar
4 tbs water
2 pandan leaves

Method:
Mix the glutinous rice with the thin coconut milk and salt.
Put into a greased metal container, add the pandan leaves.
Steam for about 20 minutes till all liquid is absorbed.
Stir in the thick coconut milk, steam for another 5 minutes.
Remove the pandan leaves. keep aside.

The Topping:
Dissolve the sugars ,add the grated coconut and pandan leaves.
Cook till the mixture is soft and dry.
Remove from heat and let it cool.

Now put 1 big spoonful of the cooked glutinuous rice in the
middle of the banana leaf.
Top with a generous dollop of coconut filling.
Fold banana leaf into a neat pyramid shape.
You can even serve it on a plate.
Good for breakfast or tea.

It tastes really good.


IRU PULI KULAMBU

Ingredients:

2 brinjals cut into little big cubes.
2 tbs coconut scrapings
1 tsp tamarind paste mix in 1 cup of water
½ cup slightly sour curds
Little turmeric powder
Salt to taste

Dry fry:
5 dried red chillies
½ tsp fenugreek seeds

To Temper:
½ tsp mustard seeds
1 sprig curry leaves
Little asafoetida powder
2 tsp gingelly oil

Method:
Grind the red chillies, fenugreek seeds and coconut
into a fine paste. Keep aside.

Heat a pot with the oil. Add in all the tempering items.
Let them splutter, add in the cut brinjals. Saute well.
Add in the tamarind water turmeric powder and salt.
Let it cook till the raw smell goes and veges cooked.

Mix the ground paste well with the curds.
Now add the curd mixture to to the vege mixture.
Slow the fire and allow the contents to blend well.
Taste for salt and remove. Tastes yummy.

Kugan sis,

My friends and I tried your kalkandu sadham. I was really hoping that it will turn out like the one in the picture you posted. Ours turned out to be dry. It was my mistake- I might have cooked it longer than I was supposed to :oops: Anyway, the birthday boy loved it. He said that the pongal tasted exactly the way he liked it, but I should have known better. It wasn't sweet enough. We might have not put in the right amount of kalkandu, I guess.
I'll try it again the next time around. Hopefully it will turn out the way yours did :D

P.s: Thanks for sending me the recipe at the right time. We would have been lost without you. Thanks again.

SINGAPORE FRIED MEEHOON

Ingredients:

300 grms meehoon soaked in water till soft.
4 shallots minced
2 pips garlic minced
½ carrot cut into strips
3 dried mushrooms soaked and cut into strips
150 grms beansprouts
2 Chinese cabbage leaves cut into strips (optional)
1 tbs oil

(A)
½ cup vegetable stock or water
1 tbs vegetarian oyster sauce
1 tbs light soy sauce
¼ tsp pepper powder
1 tsp sesame oil
A pinch of sugar
A pinch of salt.


Garnish:
1 fresh red chillie sliced
1 tofu fried and sliced
Little spring onion sliced
Little lettuce cut into strips.
1 slice of lime wedge

Method:

Heat oil in a wok. Add in the minced garlic and onions.
Sauté until lightly brown.

Now add in the mushrooms, carrots, beansprouts and cabbage.
Give a good stir. Add in the soaked drained meehoon.

Now combine (A) and pour on the meehoon.
Do not stir, cover the wok and cook for 10 minutes
on medium heat.
Remove the cover and stir fry until well mixed.
Dish out on a serving plate.
Garnish with the sliced chillie, sliced tofu, spring onion
Lettuce and lime.

Here we refer to this rice noodles as meehoon or beehoon.
Sorry I forgot that you do not know the terms.
I used noodles made from brown rice.

Hello Mrs K : must try the iru puli kulambu.
Mee Hoon looks yum! I've tried adding scrambled tofu as well - it tastes good with mee hoon, plus its so easy to get fresh mushrooms, so i use fresh ones ... very nice.
I've bought oyster mushroom and will make the mushroom briyani this weekend :).

NM meehoon is a simple dish where you can
add any vege of your choice.
Still you will have a tasty meehoon dish. :lol:

Of course fresh mushrooms are very tasty.
Its very expensive here.

[tscii]There are many ways to cook this famous Curry Mee.
Normally big pots of the curry is made, and it will be simmering hot. The mee and garnishes are put into a bowl, and the very, very hot gravy will be poured on the mee.
You will perspire eating this hot curry mee.
I have made a very simple method with instant noodles.

SIMPLE VEGETARIAN MEE CURRY

Ingredients:

1 piece of instant dry noodles
1 ½ tbs of curry paste
1 big onion sliced
2 pips garlic smashed
2 long beans cut into 1 inch in length
2 tbs beans sprouts
½ cup of fried tofu chunks
1 piece of “ assam keping” its like kodampuli (optional)
2 ½ cups of vege stock or water
½ cup low fat milk or evaporated milk
1 tbs oil
Salt to taste

1 fresh red chillie sliced
Little chopped spring onions

Method:

Heat a wok with the oil. Add in the smashed garlic.
Sauté it well, add in the sliced onions, let them brown a little.
Now add in the Thai red curry paste, sauté well till oil seperates.

Now add in the vege stock, add in the assam keeping if using.
Add also the long beans, let it come to a slow boil.

Now add in the instant noodles, it will be cooked in 2 minutes.
Add in the fried tofu and the beans sprouts.
Add in the salt, and the milk.
Let it boil once and remove.
Serve hot garnished with the sliced chillies and spring onions.
Curry mee is one pot meal which is quite rich and spicy.
It tastes best when is hot and steaming.


Note: You can add any vege of your choice.
Like thin strips of carrots, small cauliflower florets and so on.
For garnishing you can even use thin strips of cucumbers.

Normally coconut milk is used for this curry mee.
I like to use low fat or evaporated milk.



VEGETARIAN CURRY PASTE:

100gm red chillies(deseed)
20gm dried red chillies(soak in lukewarm water)
3 pips garlic
4 shallots
20gm coriander seeds
10gm turmeric root
little galangal
Little sugar
1 tsp tamarind paste
2 stalks lemongrass
¼ cup oil

Method:

First step prepare the vegetarian curry paste. Combine all the ingredients in a blender or food processor and blend to a fine paste,adding a little water .Pour in a wok with heated oil and fry fragrant .If the paste is too dried you can add a little more oil. Saute until oil floats on top.You need 1 ½ tbs of the paste only.Left over paste can be refrigerated and used to saute with vegetables.

thambi - over here, the vietnamese chilli is really hot, Onnu rendu pOttalE pOthum. anga? the ones in malaysia are much milder in comparison...I think mRs K used chilli only for garnishing. if you want it really hot and mixed well pound or grind them and saute in oil well. that will give you the ooooooooomph! :lol:

You know normally they will give you a hot chillie sambal, made with prawn paste called "belachan" in our language.

For other types of meehoon, we will add chillie paste in oil, along with the smashed garlic and onions.
Thats what our NM has told. (she is a Malaysian :o )

You can even add chillie paste along with this Singapore noodles.

Our mamak mee (noodles) also has a paste of its own for the oomph.

Mom adds sugar/sugar+ banana slices to her upma... hate tht combi though... banana + upma is okay...I also like banana with puli sadham...

I've seen people eat jilebi/kesari with curd rice...

Ingredients:

3 cups of thosai flour
1 cup of shredded soya
1 big onion chopped
2 green chillies chopped
¼ tsp cumin seeds
¼ tsp mustard seeds
2 tsp oil
Little chopped coriander leaves
Salt to taste.

Method:
Soak the soya balls in boiling water.
Clean and squeeze out the water.
Put it in a blender to make into shreds.

Heat 2 tsp of oil in a wok, add the shredded soya.
Stir fry well and remove.
Heat another tsp of oil, add in the mustard and cumin seeds.
When they splutter, add in the onions and green chillies.
Sauté well, add all these and the soya shreds in the thosai flour.
Add salt and mix well.

Heat a thosai kal, pour the flour into a thick oothappam.
Sprinkle with the cut coriander leaves.
Pour little gingelly oil around the oothappam.
Flip over when one side is done.
Serve hot with any chutney of your choice.
I love onion chutney.

kugan yesterday i tried ur china grass, in 2 different colours. but didnot make layers. it came out nicely.

[tscii]Dev, here is your spicy mamak mee.


SPICY MAMAK MEE

Ingredients:

500 grms fresh yellow noodles
2 pieces tofu fried and cut into pieces
1 potato boiled peeled and diced
1 stalk mustard greens cut into 1 ½ inches in length ( can use cabbage instead)
A handful of bean sprouts

1 big onion sliced
2 pips garlic smashed
1 ripe tomato chopped
2 tbs chillie paste
2 tbs oil
Salt to taste

Sauces:
2 tbs light soy sauce
2 tbs thick soy sauce
2 tbs tomato sauce

Garnish:
1 stalk spring onion sliced
2 red chillies sliced
1 lime wedge

Method:
Put the noodles into a colander and rinse under warm water.
Drain thoroughly and set aside.

Heat the oil in a wok, add the smashed garlic.
Sauté until nice aroma comes.
Add in the sliced onions and sauté well.
Add in the chopped tomato and cook till it turns mushy.
Now add in the chillie paste and cook till oil rises.

Add in the three sauces, mix well.
Now add in the mustard greens, bean sprouts, cook for a second.
Now add the drained noodles and stir fry over medium heat for
About 3 minutes, mixing well.

Add the potato, sliced tofu and stir fry to heat through
about 1 minute. Taste for salt, add more soy sauce if needed.
Now transfer the noodles to a large serving dish.
Scatter the spring onions and the sliced red chillie.
Serve hot with a lime wedge and additional chillie sauce if needed

The vegetarian chillie paste:

15 dry red chillies soaked
3 shallots
1 pip garlic
1 tsp tamarind paste
Little salt
Little sugar
2 tbs oil

Method:
Grind everything to a fine paste.
Heat oil and sauté the paste till oil rises.
You can keep this paste for a month in the fridge.


Note:
In mamak stalls they add very fine dry shrimps to the paste.
They are called “udang geragau” or in Tamil as senakuni.
They also add aji-no-motto
So mamak stalls mee are NEVER- NEVER vegetarian

ARA PULI KULAMBU

Ingredients:

100 grms fresh sundakkai, smashed and washed
1 tsp tamarind paste
1 ½ cups water
½ tsp mustard seeds
Little asafoetida powder
1 sprig curry leaves
Little turmeric powder
1 tsp oil salt to taste

Masala:
6 dried chillies
1 tsp urad dal
½ tsp fenugreek seeds
Little oil


3 tbs coconut scrapings

Method:
Fry all the masala things in oil.
Add the coconut and grind to a fine paste.

Heat a wok, add in the oil, add in the asafoetida,
mustard seeds, let it splutter, add in the curry leaves.
Add in the tamarind paste water, turmeric , salt and sundakkai.
Let it boil till the raw smell goes and the vege cooked.

Now add in the ground paste and let it mix well .
Boil nicely and remove.

SPICY MAMAK MEE

Ingredients:

500 grms fresh yellow noodles
2 pieces tofu fried and cut into pieces
1 potato boiled peeled and diced
1 stalk mustard greens cut into 1 ½ inches in length ( can use cabbage instead)
A handful of bean sprouts

1 big onion sliced
2 pips garlic smashed
1 ripe tomato chopped
2 tbs chillie paste
2 tbs oil
Salt to taste

Sauces:
2 tbs light soy sauce
2 tbs thick soy sauce
2 tbs tomato sauce

Garnish:
1 stalk spring onion sliced
2 red chillies sliced
1 lime wedge

Method:
Put the noodles into a colander and rinse under warm water.
Drain thoroughly and set aside.

Heat the oil in a wok, add the smashed garlic.
Sauté until nice aroma comes.
Add in the sliced onions and sauté well.
Add in the chopped tomato and cook till it turns mushy.
Now add in the chillie paste and cook till oil rises.

Add in the three sauces, mix well.
Now add in the mustard greens, bean sprouts, cook for a second.
Now add the drained noodles and stir fry over medium heat for
About 3 minutes, mixing well.

Add the potato, sliced tofu and stir fry to heat through
about 1 minute. Taste for salt, add more soy sauce if needed.
Now transfer the noodles to a large serving dish.
Scatter the spring onions and the sliced red chillie.
Serve hot with a lime wedge and additional chillie sauce if needed

The vegetarian chillie paste:

15 dry red chillies soaked
3 shallots
1 pip garlic
1 tsp tamarind paste
Little salt
Little sugar
2 tbs oil

Method:
Grind everything to a fine paste.
Heat oil and sauté the paste till oil rises.
You can keep this paste for a month in the fridge.


Note:
In mamak stalls they add very fine dry shrimps to the paste.
They are called “udang geragau” or in Tamil as senakuni.
They also add aji-no-motto
So mamak stalls mee are NEVER- NEVER vegetarian

Try this Sri Langkan dish.

SEENI SAMBAL

Ingredients:
800 grms onions sliced.
500 grms Maldives fish..pounded to tiny bits, with a pestle.
6 tbs chillie paste
1 cup tamarind juice
1 cup coconut milk
1 cinnamon stick
1 star anise
few cloves
2 sprig curry leaves.
2 lemon grass braised
1 screw pine leaf cut into 2 inch length
2 tbs oil
salt to taste
sugar to taste.

Method:
Heat the oil and saute the spices before adding the lemon grass and screw pine leaves.
Once fragrant, add the onions and keep stirring.
When the onions turn brown, add the chillie paste.
Fry till oil rises, add the cleaned fish, and tamarind juice.
Allow the fish to cook, add salt and sugar.
Lastly add the coconut milk, and let it cook dry.

My own tip... soak the pounded fish in boiling water.
Wash and clean, to get rid of the smell.

When I was posting lyrics in MOY section RR wrote a script for sorting the lyrics posted in alphabetic order provided you fill up the subject line as required by the script. Later I used it in classical music section also. The script does not seem to work now. You might want to ask RR to fix the problem. Then you can update all the subject lines and post the link to the sort routine in the very first post. All people have to do is to click on that link to see the list. You can see that MOY and classical music sections. You wont see it alphabetical order ! :(

Ada Devuda! seeni sambal vegetarian nah?

I can only think of adding deep fried very very small strips
of tofu or panner to this sambal.

This sambal is eaten with rice cubes called kiribath.
Its like our nasi lemak, or coconut milk rice.
only that they cut the rice into cubes.


I miss their boiled pana kilangu.
A sweet appam made with ripe panapalam juice.

Their famous seafood kool made with the flour of the panam kilanggu :oops: no more :lol:

I made the onion sambal today. It was good. But I made very small quantity. I reduced the chillies to make small quantity, so the dish was not spicy. Felt it would have been better if I had added two more chillies.

Will make it once again, as now I know how it looks and tastes.

Kugan sis, kiribath must be the Malaysian version of ketupat- rice dumplings which are cut into cubes and wrapped with coconut leaves. Best taken with satay :wink:

Today, since a friend wanted to come for lunch and requested for our nasi lemak. (coconut milk rice)
So I made the rice , onion sambal, fried peanuts, cucumber slices and stir fried a vege called kangkong
This is the combo for our nasi lemak.

For tea I made china grass jelly, local kuih kosui, pumpkin bajji,
and mysore bonda. I also had a little of the coffee cake made the previous day.

O.K Sudhama, today I also made your dish.

Sudha's Recipe


Planning to make milagu kootu ?
After frying the ingredients for grinding, the power goes off.....
No way to grind....

Here is a way out. Now kootu making made more simple...

The way I made today......

Palak keerai cut well (there was one small bangalore kathrika also which I added) and boiled.

Thuvaram paruppu boiled. Keep aside

Add required salt (and little manjal) to the keerai and boil till cooked. Add required pepper powder and paruppu podi (ready mix) and add the paruppu when cooked.

Kadugu, jeeragam, perungayam and curry leaves thaalikkavum.

Super kootu ready in just 5 mins.



Note: I too took the easy way out by using the paruppu podi. Current cut vaalga :lol:

Kuih Kosui

A popular Malaysian dessert.

Ingredients
Gula Melaka syrup (A):
250g gula Melaka (palm sugar)
50g soft brown sugar
500ml water
2 pandan leaves, shredded and knotted

Cake mix (B):
100g tapioca flour
180g rice flour
450ml water
1 tsp alkaline water
1/2 grated coconut, use only the white flesh (i.e. do not grate close to the shell)
1/2 tsp salt

Method
Bring gula melaka, brown sugar, water and pandan leaves to a boil to dissolve the sugars. Strain the syrup.

Mix both types of flour and water in a mixing bowl. Stir the syrup into the flour mixture. Add alkaline water. Cook the mixture over a gentle low heat into a slightly thickened batter.

Spoon batter into a greased tray. Steam over rapid boiling water for about 1/2 an hour or till cooked.
It is cooked if you insert a knife and it comes out clean.

Mix grated white coconut with salt and steam for four to five minutes. Remove and spread on a big plate to cool.

Leave the steamed kuih kosui to cool completely before cutting it into cubes. Toss kuih kosui in grated coconut and serve.

Jay and PS tamby, here is the recipe for kiribath.

Kiribath



Ingredients:.

500 grms medium grain rice
4 cups coconut milk
pandan leaves, and salt
banana leaf or aluminium foil.

Method:
Bring the coconut milk, pandan leaf, salt and rice to boil.
Cover tightly with lid.
Turn heat very low and cook for about 40 minutes
untill all milk is absorbed.
Remove the pandan leaf.
Stir vigorously with a wooden spoon.
Then press the rice in a cake tin to a depth of about 2.5 cm.
Use the aluminum foil to cover the surface of the rice.
Put another plate on top. Press down very firmly the plate.
Put a weight on top and leave at room temperature for few hours.
Remove weight, plate and aluminium foil.
Use a wet knife to cut the rice into 5 cm squares.
Serve with spicy seeni sambal.

This dish was served to us when we visited our friend in Sri Lanka. Its similar to our ketupat and anchovy sambal.

Do you know how to make 'Thai' food?
I had Thai food for lunch it was just :slurp:

They had loads of dishes with Tofu, had no idea what they were though :roll:

PUMPKIN BAJJI

Ingredients:

300 grms not so ripe firm pumpkin
1 tsp red chillie powder
½ tsp salt

The Batter:
1 cup gram flour
¼ cup rice flour
1 tbs all purpose flour
1 tsp red chillie powder
¼ tsp turmeric powder
¼ tsp cooking soda
¼ tsp asafoetida powder
Salt to taste
Oil for frying

Method:

Skin the pumpkin and cut them into slices.
The slices should not be thick nor too thin.
Mix the chillie powder and salt.
Keep aside for about 20 minutes.

Add the ingredients for batter in a bowl.
Heat a tbs of oil and pour it into the batter.
Now add water and make it into a thick batter.
Like idli batter.

Heat oil in a wok, when the oil is hot,
Dip few slices of the cut pumpkin and lower into the oil.
Keep the flame to medium high, fry till golden colour.
Remove to a kitchen paper.
Serve hot with coconut chutney.

As you said try it for a party.
It tastes good because of the marination.
We can try that method even for, potato, brinjal

Yes kuganka,had a very nice time.
Yes kugnaka,so many recipes are there in our thread within 1 month.Have to go thru all the recipes one by one.

Pranay is doing good selvika.

Yes exactly u r right selvika,frm airport inge veetuku carla varum pothu he was telling that daddy veetuku poga venam,again aachi veetuku povomnu.Poor boy! wat to do selvika.

He was fully upset for two to three days.
In order to make him feel happy,we went a short two days trip to near by place immediately.
