[tscii]Dear friends, here is a sweet recipe to start
Kugan's Kitchen 4.

SUGAR ATHIRASAM

Ingredients:
Ingredients:
400 grms raw rice soaked for 1 hour
250 grms sugar
1 tbs kas kas
½ tsp cardamom powder
Ghee

Method:
Drain the rice in a colander. Spread it on a paper and let it dry partially.
The rice should be slightly wet. Grind the rice and sieve it once.

Add one cup of water and make the syrup. Before it comes to boil, filter it.
Boil again stirring frequently. When the syrup is bubbling, slow the fire.
To test wheather it has come to the right stage ( patham ) , drop a little
Syrup in a cup of water. You can gather the syrup into a smooth ball. (not stiff ball)
You have to test this method several times after the syrup has come to a boil.
Off the stove. Sprinkle the flour mixed with the cardamom powder, and kas kas, littlt by little
and mix well. The batter must not be very stiff, a bit soft. If we make a ball from it
It must be smooth, and should not break or crack.

Pour the batter into a greased bowl. Pour about 1 ½ tbs of ghee on top of the batter
And keep. You can make the athirasam the next day. (normally I keep for 4 days)
On the day of making athirasam, you remove the batter and knead well.
Incase your batter has harden, just sprinkle a little hot water and knead well.

Heat oil in a wok on a medium flame. Pat the dough in your palm into a disc.
, and deep fry. The athirasam should puff up when you fry.
It will be a bit crisp on the first day. The next day it will become soft.
The taste of sugar athirasam will differ from brown sugar athirasams.
Well with pratice only , one can make perfect athirasam.

[tscii]We make all kinds of sundal.
Try this for a change. Kugan98


PEANUT SUNDAL

Ingredients:

2 cups raw peanuts
1 medium onion chopped
½ a carrot grated
½ tsp minced ginger
3 green chillies chopped
1 sprig curry leaves
½ tsp mustard seeds
½ tsp urad dal
1 tbs of fresh coconut scrappings (optional)
½ tsp oil
Salt to taste.

Method:
Wash the raw peanuts and soak it in water for about 2 hours.
Then pressure cook with salt for 2 whistles.
Or boil it in a pot till it is cooked.
Strain the water and keep aside.

Heat a wok with the oil, add in the mustard and urad dal.
Let it splutter, add in the curry leaves, onion and sauté well.
Now add in the green chillies, ginger and stir well.

Now add in the boiled peanuts, carrot and the coconut scrapings.
Stir till all the ingredients are mixed well.
Remove and serve hot.

Suvai nga, Dev's corn chat and corn soup recipes

Try panni paarungga.


Suvai nga ungga vegetable kurma, I made for
idli in the evening. Super poongga.
Here is the recipe:

SUVAI"S VEGE KURMA:
Vegies needed:
Carot 1
Peas -1 kai alavu (enaku peas romba pidikum) lol
Beans - about 7 cut into half
Potatoes rendu kai alavu ( cut into pieces nalla perisa kooda podalaam)
tomatoes - 1 (bit) or2 (small) - cut into 4
Butter beans about 12 of them ( iruntha ilaina paravilai athaan peas podaromey Wink
neraiya kothamalli podisa narukikonga
karuvepilai - about 5 sprigs

Ginger & Garlic paste - 1 1/2 teaspoon each or more as per your wish.

sambar powder - 2 to 2 1/2 tsp ( or according to your taste for kaaram - everyone's sambar powder has different spice level).

Tamarind water - about a small lemon size or oru periya nellikai alavu (big gooseberry size) Keep in mind u r adding tomatoes too. so lessen the puli accordingly.

Coconut - grated oru kai alavu
kasa kasa - 1 Tblspoon
Fennel seeds - 1/2 to 3/4th teaspoon ( i prefer half)
Pattai - 1 1/2 inch piece
cloves - 2
turmeric - 1/4 tsp

first powder the kasakasa,fennel, cinnamon,cloves & then add it to the coconut & grind it with enough water to give u not too thick or not too watery consistency. ( Keep this aside)

cut one big onion lengthwise thinly & keep aside.(use half for frying)

Method:
In a vessel....add about all the cut vegies including the peas & butter beans,
cut tomatoes,
raw sliced onions (half),
ginger garlic paste,
sambar podi
Tamarind water
Kothamalli (especially thandu plus ilai ofcourse potta nalla vaasanaiya irukum)
karuvepilai
Enough salt
Then pour enough water to be about 1 inch higer than the vegies ( about 3 to 4 & half tea cups of water)..the water should be enough to allow the vegies to boil freely as well as cook.
Ellaam onna pottu....nalla sambar pachai vaasani pogum varai & allow it to boil. ( vegies should have boiled well by now).

Once the raw smell goes now add the ground coconut & keep stirring for about 5 to 7 mins till the gravy thickens. ( After adding the coconut...it should not over boil - I suggest one should lower the heat ).

Now in a pan add about 1 & half Tablespoon of oil.....when hot...add little black mustard seeds & jeera seeds (1tsp each maybe) then add the other half of the sliced onion fry this till the onions become limp & light brown....add karuvepilai to this....& pour it over the masala kuzhambu.

POTATO BRINJAL MIX

Ingredients:
300 grms brinjals chopped into small cubes (immerse in water)
1 potato chopped into cubes (immerse in water)
1 big tomato Chopped
1 onion chopped
1 tsp tamarind paste
¼ tsp jaggery
A pinch of tumeric
Salt to taste
Little coriander leaves chopped

2 tbs oil
½ tsp mustard seeds

Dry roast and powder:
2 tsp channa dal
1 tsp urad dal
6 dried red chillies
1 tsp coriander seeds
¼ tsp fenugreek seeds
1 tbs sesame seeds
½ tsp cumin seeds

Method:
Heat a wok, add in the oil and the mustard seeds.
When it splutters, add in the chopped onions.
Sauté well, add in the tomatoes, and tumeric powder.
Stir well, add in the potatoes and brinjals.

Add I cup of water, salt cover and cook on low flame.
Stir occasionally to see that it does not get burnt.
Sprinkle more water if the brinjal and potatoes are not cooked.

Mash up the mixture a little with back of your spoon.
Add in the tamarind paste and jaggery.
Add in the ground powder, mix everything well.
The mixture should be soggy and not too thick or watery.
Taste for salt, tamarind, and sweetness.
Remove and garnish with coriander leaves.
Goes well with roti and rice.

Kandipa suvaika.

Actually suvaika,amma vara munnadiye nan appadi thaan plan panni vachu irunthen.Niraiya recipes post pannanumnu ellam plan panni iruthen.But pranayoda fever onnum panna vidama aakiduchu.

But irukura 2 to 3 days use panni maximum post panna try panren suvaika.

This is also a disappeared delicacy I believe.
People think its troublesome to do.
Its aroma will be so sweet, just out of the steamer.


ELLAI ADAI

Ingredients:
1 cup raw rice
1 cup brown sugar
2 cups fresh scrapped coconut
2 tbs of ghee
A pinch of cardamom powder
A pinch of salt
10 banana leaf pieces cut into 6 7 inch squares

Method:
Soak the rice for about 4 hours.
Then grind in a blender with just enough water, and pinch of salt
to make a thick batter. Keep aside.

In a heavy pan melt the brown sugar with 1 tbs of water.
Stir in the coconut and cook for about 10 minutes on low heat.
When the mixture thickens, add in the ghee and stir well.
Remove from the stove and let it cool well.

Toast the banana leaves one at a time over the flame.
The leaves will become pliable.
Spread a small ladle full of the batter over the toasted leaf.
Place a tablespoon of the sweetened coconut over this.
Spread the coconut evenly.
Fold the banana leaf in the middle and press in the sides to close well.

Bring water to boil in a idli steamer.
Place the stuffed banana leaf flat inside.
Steam for about 15 to 20 minutes.
As it cooks the ellai adai absorbs the aroma of the toasted banana leaves. Remove them from the steamer, peel off the the banana leaf
wrapper and serve.

Aiyoo Kugan....I am so hungry after seeing the lovely adai. Its one of my favourites. My late aunty used to do it.

I ate once another adai made out of sugi flour....and the filling is coconut+white sugar + cardomom powder. It was very tasty. But when I tried it out the taste was there but it was hard. The ones that aunt (fren) made was soft and it was white.

Now I am wondering whether she had made the dough with both sugi/rice flours.. She didn't want to give the recipe....and she has since passed away. Her recipe is gone with her coz her children are not into our traditional cooking - very westernised in their way of life. :(

Have you made it before? We must keep up with our old traditional recipes and shd not let it disappear.

The batter has to be very fine.

Aarthii, you can keep the doughnut for the next day.
No problem. Fried bananas is you dip the bananas,
in a thick batter of flour, salt little baking powder.
Then you deep fry it. It's like frying bajii.

sausages are made of minced meat.
It is sold ready made in supermarkets.
You can boil it or fry it and give with some sauce.
Its not good to take too much of sausages,
nuggets, fried fish balls and so on.

[tscii]This is a very simple dish, which is a must in
all Kerala feasts.

OOLAN

Ingredients:
1 cup ash gourd cut into half inch cubes
½ cup black eyed beans soaked and boiled till cooked
4 green chillies slit and cut across
2 cups coconut milk
Salt to taste

1 tbs coconut oil
1 sprig curry leaves

Method:
Place the cut ash gourd and green chillies in a saucepan.
Pour enough water to cover the vegetable.
Add salt and cook over medium heat till the ash gourd is cooked.

Pour in the coconut milk, the boiled beans, and bring to a slow boil.
Reduce heat and simmer for 5 minutes.
Remove from heat and garnish with coconut oil and curry leaves.
Stir gently and keep covered for ten minutes,
to allow the flavors to blend. Serve hot with plain rice.

[tscii]Aarthii, this is how we do our fried bananas,
Or what they call pazham pori.

FRIED BANANAS

Ingredients
1/2 cup self-raising flour
1/4 cup corn flour
1 tbsp rice flour
Pinch of salt
1/2 tsp baking powder
180ml water or just enough to make thick batter
1½ tbsp oil
5-6 bananas, halved
Enough oil for deep-frying

Method
Combine the various flours, salt and baking powder in a mixing bowl. Pour in water and combine into a batter. Add in oil to mix.

Coat banana halves in batter and deep-fry in hot oil for three to four minutes or until crispy and golden brown. Remove and drain on crumbled kitchen paper.

This is my menu for the 24th.

Morning breakfast: Rava kitchadi, kaara chutney, akravadisal and filter coffee.

Lunch: Paal payasam, green peas pradhaman
ulunthu vadai, channa dal vadai
appalam and plantain chips
beans poriyal, cabbage poriyal valakkai podimas
chow chow kutoo, keerai kadaiyal, yam masiyal
tofu sambal, ladies finger puli mandi
cucumber patchadi, maampala patchadi
paruppu and nei, sambar, vengaya kulambu
thalicha moor, mysore rasam

Three of my cousins have volunteered to help.
Murugan thaan tunai.

Have to get all the things ready, and also must clean up
everything for I will be leaving for Singapore on the 25th
early morning.

Since today is sunday, I decided to make it for lunch.
I served with cucumber raitha and soya prettal.


MUSHROOM BIRYANI

Ingredients:

300 grms button mushrooms quartered
3 cups of basmati rice soaked for 30 minutes. drain
1 big onion chopped
2 tomatoes chopped
2 potatoes cut into cubes and fried
5 green chillies slit
1 tbs garlic paste
1 tbs ginger paste
1 tsp coriander powder
1 tsp chillie powder
½ tsp garam masala powder
¼ tsp tumeric powder
2 tbs fresh curds
2 tbs ground cashew nuts
2 tsp lime juice
3 tbs ghee
3 tbs chopped coriander leaves
10 cashew nuts and 10 raisins fried in ghee
Deep fried onion crisps

Seasonings:
2 cinnamon stick, 3 cardamom pods, 2 bay leaves.
1 sprig curry leaves.

Method:
Heat a heavy bottomed pot with the ghee.
Add in the seasonings, and curry leaves.
Add in the chopped onions and sauté well
Now add in the ginger garlic paste, and green chillies.
Stir nicely, add in the chillie, coriander, tumeric powders.
Mix nicely, add in the tomatoes and cook till they turn mushy.

Add in the garam masala, fresh curds, and cashew nuts paste.
Mix well so that you have a thick gravy.
Add in the mushrooms, salt and lime juice..
Stir well so that the mushrooms are well coated with the masala.
Add in the soaked rice, fried potatoes add about 3 ½ cups of water.
Close with a very tight lid. Keep the flame very very low.
Let it cook on a sim till the water is fully absorbed
and the rice is cooked. Keep it close for some time.
Later fluff up the rice and garnish with the coriander leaves,
Cashew nuts, raisins and deep fried onion crisps

This vangi bath upma was served in my friends house.
Give it a try, for a change. Kugan98


VANGIBATH UPMA

Ingredients:
1 cup roasted rava
2 big brinjals cut into cubes
1 big onion sliced
2 tbs vangibath powder
10 cashew nuts roasted in ghee
3 tbs chopped coriander leaves
little coconut scrappings (optional)
2 tsp lime juice
A pinch of sugar
A pinch of tumeric powder
Salt to taste

To Season:
2 tbs ghee
½ tsp mustard seeds
1 tsp urad dal
1 tbs channa dal
1 red chillie broken
1 sprig curry leaves

Method:
Heat the ghee in a wok, add all the seasonings.
Sauté well, now add in the sliced onions with a pinch of sugar.
Sauté till the onions turn pink, add in the brinjal pieces.
Stir and cook, till the brinjals are a bit soft.

Add in the tumeric powder, salt and vangibath powder.
Stir well, add in 2 ½ cups of water, let it come to a boil.
Low the flame, add in the roasted rava, give a good stir.
Close with a lid and let it cook on its steam.

Open the lid in few minutes and stir the upma well.
Add in the roasted cashew nuts, lime juice, coconut scrappings and the coriander leaves.
Give it a good stir and remove.
Serve it hot with chips or raitha.


VANGIBATH POWDER

Ingredients:
1 tbs coriander seeds
1 tbs channa dal
1 tbs urad dal
½ tsp kas- kas
1 tsp sesame seeds
4 dry red chillies
1 sprig curry leaves
2 tbs coconut scrapings
½ an inch cinnamon stick
2 cloves
A small piece of asafetida
1 tsp oil

Method:
Heat a tsp of oil, roast all the ingredients well
till they give off a nice aroma.
Cool and powder coarsely.
You can keep this powder in a tightly closed container
in the fridge for about 3 months.

sorry i forget to post soya granules patties.

here is the receipe for u.

boiled and mashed potatoes - 3 medium
wholemeal bread - 2 dip in water, squeeze and keep
soya granules - 1 cup
cabbage - 1 cup chopped
carrot - 1 medium , chopped
beans - 10 to 15, chopped

(Vegetable quantity is depends, how much u want u can have. )

steam cabbage, carrot, beans in the microwave (w/o salt)

in a kadai, add 2 tblsp of oil add coarsely ground sauf powder - 1 tsp, 3 big onion finely chopped and 1 green chilly finely chopped, saute for few minutes, then add 2 tsp of ginger garlic paste stir for 2 minutes. then add mutton masala powder 2 tsp , salt.
stir for 2 minutes, then add the steamed vegetables, let it cook for few minutes, then add soya granules, sprinkle little water cover and cook for 2 to 3 minutes, then add 2 tblsp each of finely chopped coriander, pudhina leaves.
add mashed tomato , mix nicely, then add bread (squeezed) and keep it for 2 minutes. switch off the stove and add lime juice according to our taste.

this masala can be stored for 2 days.

For patties:
--------------

take a lime size ball of this stuffing, shape like vada, dip in corn flour batter, and roll it in bread crumbs and shallow fry/deep fry and serve with tomato ketchup.


bread stuffing:
------------------

take 2 slices of bread, apply some butter inside and keep the filling and keep the bread in the sandwich maker.


tawa toast:
-------------

take 2 slices of bread, apply some butter, keep the filling inside and place it in the tawa, press the top of the bread with potato masher , so that the bottom of the bread will be toast nicely, carefully turn the otherside of the bread and repeat the same. sothat both the sides will be toasted.

rolls:
----

make a roll of the stuffing (like sausages), shallow fry in the tawa , keep inside chapathi and give kids as chapathi roll.

stuffed chapathi:
-----------------------

like aloo paratha, we can keep this stuffind and roll out chapathi.

All these will be filling and healthy. we can pack this for the box.

2) snacks to go with drinks- pakoda/samosa baked/almonds & raisins mixed.

3)main menu:

you can make: 4 poriyals - two vegies / two non vegies ( cauliflr & potato / muttaikose with green peas / beetroot carrot salad/ or cucumber tomato salad or both(two salad will look colorful/ non veg yr choice...;-)

Kootu or avial/more kuzhambu with masala or without masala/ two non veg gravies

pulao/plain rice/ konjam coconut rice (kids love it) or Birinji or biriyani (non veg)

or different types of rice...to make the spread look bigger ;-) puli sadam/ellu sadam/elumichai/coconut/ plain pulao

u can make thakaali rasam or poondu rasam to go with plain rice.

appalam ofcourse..;-)

two sweet - payatham parupu paayasam/paal payasam/ badam kheer/

or

cake/fruit salad/ or icecream with fruits


u can cut or add more items to it...;-) etho ennaalaana menu for u.....hope u can take items from kugan/mine/yr own as well as others opinions & jamaaichi thallidunga......

starters: onion pakoda, corn crunchy salad

in my salad i add little sprouts, kidney beans, coloured capsicums, corns, salad onions, chick peas, olives, jalpenos, cucumber, raw mangoes, garnished with black grapes. seasoning i do with noodles masala, rainbow pepper, drop of olive oil. keep in the fridge.

main course:

chapathi, idiyappam plain and idiyappam bryani

hydrebadi veg bryani, curd rice

side dish

aloo gobi
mutter panner
mutton kofta curry
palak chicken thokku
mixed raitha

dessert

cake - choclate cake
aloo carrot kheer

u r correct suvai, all my friends enjoy my salad, mostly everybody will go for atleast 2 servings. instead of starters, everybody enjoys salad.

now only i remember, i have somepeople whose in lent now, during this period they have veges, so i have to give some non veg effect in vegeterian. so i am planning to prepare mushroom dish as well as some soyal chunks receipes.

starters i am including soya granules patties too.

finally i will finalised with my menu on thursday evening.

i will post the list after that.

My mom made a simple cucumber + tomato salad which was yummy. it goes well if you have curries or briyani - we had it with vege briyani.

Its just a simple mix of cubed cucumber, chopped onions, chopped green/red chillies plus cubed tomatoes. mix all of these together and add a squeeze of lime and garnish with chopped coriander leaves .. yumm! Add to your taste - the chillies plus a pinch of salt just before serving.

Another one that's great is pumpkin salad - cold.
Cook pumpkin in a bit of water until its soft and tender. Mash them up. Add a bit of fresh or evaporated milk. Mix together. Add a pinch of salt. Serve chilled. You can also serve it hot/warm by adding sauteed chopped onions, curry leaves and mustard seeds.

[tscii]There are many ways the roasted brinjal is cooked.
We normally will make patchadi out of the roasted brinjal.
A friend showed me how to make roasted brinjal masala.
I will post both the recipes.
Its always best to use 1 big brinjal, as the flesh will be soft.



ROASTED BRINJAL MASALA

Ingredients:
500 grms brinjal choose 1 big one
2 onions chopped fine
2 big tomatoes chopped fine
1 tbs garlic chopped fine
1 tbs ginger grated fine
2 green chillies chopped
½ tsp coriander powder
½ tsp cumin powder
½ tsp red chillie powder
½ tsp garam masala powder
1 tsp sugar
Little lime juice
Salt to taste

½ tsp cumin seeds
2 tbs oil
2 tbs chopped coriander leaves

Method:
Apply oil all over the brinjal . Insert a skewer through the brinjal .
Roast on a gas top, keeping the flame very very low.
Keep rotating the brinjal . The skin on the brinjal should be charred. When you touch the brinjal will feel very soft.
Remove it to a plate. When cool peel off the charred skin.
Mash the cooked brinjal and keep aside.

Heat a wok with the oil, add in the cumin seeds.
When it splutters, add in the onions and sauté till they turn
lightly brown. Add in the garlic and ginger and fry for a minute.
Add in the tomatoes, and green chillies.
Stir nicely and cook, add in all the powdered spices.
Keep stirring so that it does not stick to the wok.
Sprinkle some water if needed.

Add in the cooked mashed brinjal , salt and keep on stirring.
The brinjal should be nicely mixed with the spices.
Add in the sugar and lime juice. Add in the chopped coriander leaves.
Stir nicely and remove.

This is how we cook roasted brinjal patchadi.


ROASTED BRINJAL PATCHADI

Ingredients:
500 grms brinjal choose 1 big one
1 big onion chopped
1 tomato remove seeds chopped
2 green chillies chopped
5 pips garlic chopped fine
1 tbs finely chopped ginger
2 tbs of thick coconut milk
2 tbs chopped coriander leaves
Little lime juice
Salt to taste

Method:

Roast the brinjal and remove the charred skin.
Mash it nicely with a spoon.

Now mix all the above ingredients in a bowl, except the coconut milk.
Add in the cooked mashed brinjal with the ingredients.

Keep it in the fridge. Add the coconut milk at the time of serving.
A very tasty patchadi. Try it once.

SIMPLE TOMATO CURRY

Ingredients:

2 big tomatoes chop fine
1 big onion chopped fine
1 tsp garlic paste
1 tsp ginger paste
2 tsp chillie powder
½ tsp garam masala powder
1 cup coconut milk or low fat milk
Little coriander leaves chopped
Salt to taste
1 tsp oil

Method:
Heat oil in a wok, add in the chopped onions.
Sauté well, add in the ginger and garlic paste.
Sauté till the raw smell goes.
Now add in the chopped tomatoes and salt.
Stir and cover and simmer for 5 minutes.

Add in the chillie powder and garam masala powder.
Stir and cook till the tomatoes are mushy, and oil separates.
Add in the thick milk, simmer for 5 minutes.
Once the gravy is thick, remove and garnish with
cut coriander leaves.
A quick curry for dosais and idlis.

selvika,idiyappa biryani is my husband's favourite one.His BIL used to buy that one for him whenever we go to their house.It is a very famous recipe in night stalls in tirunelveli i guess.So plz do post the recipe once wen u r absolutely free.

as u said salad is a super meal, u try this with soup, u will feel heavy. only thing we have to give slight variation every time. we r having this type of salad for past 3 years in the night. afternoon is full of greens. so we dont feel bored.

this will taste like badam kheer.

here is the aloo-carrot kheer:
-----------------------------

potato - 1,small size, peel and cut in to cubes
carrot - 1, small size, cut into cubes

pressure cook both for 1 whistles.

once it comes to room temperature grind it in the mixie nicely. this will come like urad dhal, keep grinding u will get more quantity. make sure there should be no lumps.

blanch 5 - 10 almonds, 5 - 10 cashews and grind to a fine paste. now mix both the paste (veg and nuts)

in a heavy bottom vessel add 1 ltr of full cream milk (whole milk) and allow it to boil.

Add 1 grated carrot to the boiling milk. let it boil for 5 minutes.

now add sugar, according to our taste. (instead of using full sugar we can even use condensed milk and little sugar). let it boil for 5 minutes.

Add ground pastes and allow it to boil nicely. little elachi powder, coarsely ground cashews - 2 tblsp.

let it boil for 5 minutes, cool it and store in the refrigerator.

we can make this previous day and refrigerate. this should be served cold.

when we drink in between we will bite carrot, nuts. It is very easy to make and very tasty too.

try this and let me know.

Idiyappa bryani:
----------------

idiyappam - big size 4, separate it uthir-uthir

potato - 1 medium size, boiled , peeled and cut into tiny pieces.

green peas - 1/4 cup boiled

coconut milk - 1/2 cup , thick

onion - 2 big, finely chopped
green chilly - 1 finely chopped
ginger garlic paste - 1 tsp
tomato - 1 finely chopped
turmeric powder - 1/4 tsp
red chilli powder - 1/2 tsp

seasoning:
---------

oil - 2 tsp
ghee - 2 tsp
cloves - 3
cinnamon - 1" 2
cardamom - 2
curry leaves - few
coriander, pudhina leaves - 2 tblsp finely chopped

in a heavy bottom pan add oil, put cinnamon, cloves, cardamom once it pops up add curry leaves, pudhina leaves

then add onions, saute for 2 to 3 mins, then add ginger garlic paste and let it cook so that the raw should go out of it.

then tomato, turmeric , redchilly powder stir nicely for 2 to 3 mins. then add potato, green peas, salt cover and cook so that uppu karam elllam vege should absorb. then add coconut milk , when it slightly boils, switch off the fire and add idiyappam to it. so that the idiyappam should coat nicely with the gravy. on the top add ghee and coriander leaves. serve hot.

I have found a great way to make briyani :) - well everyone who ate it said so .. :)

Make your normal curry-base with meat, chickend or vege with the briyani masala with a bit of yoghurt but lots of onions.

As for the rice, you need to soak for 1/2 hour and then boil it separately until it is about 90% cooked. Drain the water - i use a strainer which is effective.

While the rice and the curry are cooking, cut more onions and prepare some frozen peas.
Fry onions and then the peas separately in ghee (it smells and tastes good!!).

Chop some coriander leaves for garnishing.

In the pot containing the briyani paste/curry, transfer a good layer of rice, add a layer of onions and peas and then layer again with the rice, onions, peas and continue until you have layed all the prepared stuff. It is best to do this when the curry is still hot and the rice a bit cool so that the rice doesn't get soaked or overcook.

Garnish with coriander.

Leave it for about 1-2 hours.

Mix the rice and curry together - you should get rice that looks as though it is coated with the curry paste yet quite dry and oily. :).

Yummy!

(For your info i cheat using Shan Briyani mix :) - i have not tried doing briyani masala on my own, will try that using mrs Kugan's recipe for sure!). :slurp: :slurp:

Selvika,made soya patties.Actually i have prepared the soya patties mixture and i have stored it.am planning to make it for tomorrow's breakfast.The mixture itself is too good selvika.I tasted it.such a nice taste selvika. :D

selvi ngo i also made bitter gourd masala ...it came out perfectly yummyyyilu....

i think all the recipes on here are keepers for sure...not one have i gone wrong with so far....awesome!!

dev i also tried yr puli sadam without puli kaachal....oh my....very simple & very tasteyoo taste.....sudha was right in saying....one would want to make this dish more than often....

[tscii]I do not know the difference between ponggal and akaravadisal
My cousin volunteered to do the akaravadisal for us.
It was truly mouth watering. The measurements were very correct.
The akarvadisal with cashews and raisins popping out and the ghee was just flowing. It was super sweet.
I think no harm in having 2 tbs of it once in a way. :lol:


AKARAVADISAL

Ingredients:
1 cup raw rice
½ a cup of moong dal
2 cups of milk
3 cups of vellam
100 grms ghee
25 grms cashew nuts
10 grms of raisins
1 tsp cardamom powder
A tiny pinch of pachai karpuram (optional)

Method:
Wash the rice and the moong dal.
Drain well, let it dry a bit.
Then dry roast in a wok till nice aroma comes.
Add 4 cups of water and cook in a pot over low fire
till the mixture is well cooked. Stir once in a way.

In the meantime boil the milk in a separate container.
Let it boil well, then add it to the rice dal mixture,
And let the mixture become soft (kulaiya)

Boil the sugar with little water till kambi patham.
Add this to the rice dal mixture, after this, you have
to keep on stirring or will get burnt at the bottom.

Heat a pan with the ghee and fry the nuts and the raisins.
Add it to the cooking rice dal mixture, add the cardamom powder.
Also add the patchai karpuram if using.
Mix every thing and remove from stove.
A truly delicious akaravadisal

Selviem, again I would like to thank you for the nice

SELVIEM"S POTATO SPICY MASALA


potato spicy masala:


potato - 3 ,boiled peeled and mashed roughly
onion - 4 thin slices
carrot - 1 finely chopped
fresh/frozen green peas - 1/2 cup
green chilly - 1 finely chopped
ginger - 1 1/2 tblsp grated
tomato - 2 medium size, chopped
red chilly powder - 3/4 tsp
turmeric powder - 1/2 tsp
salt - reqd
kadalai maavu - 2 tblsp, mix in water
sauf powder - 1 tblsp coarsely ground

seasoning:

oil - 2 tblsp
mustard seeds - 1 tsp
urad dhal - 1 tsp
kadalai paruppu - 1 tsp
curry leaves - few
coriander leaves - 2 tblsp finely chopped

in a pan, add oil, put mustard seeds, urad dhal, kadalai paruppu when it pops up, add curry leaves saute for a minuted.

now add sliced onions, green chilly, ginger and stir till onion becomes transparent (no need to turn brown) then add carrot , green peas and tomatoes stir for 2 minutes, then add red chilly powder, turmeric powder, salt and stir for a minute.

now add enough water for the vegetables to cook, cover and cook for 2 minutes, then add the potatoes, cover and cook for another 2 minutes.

now add kadalai maavu, stir and allow it to boil for 3 minutes, then add saunf powder, stir nicely and switch off the fire, garnish with coriander leaves.

this is very well goes with chapathi, poori, dosa.

DEV"S SOUP POWDER AND BOTTLE GOURD SOUP:

Soup powder:

Roast the following one by one in a few drops of oil until flavorful and grind to a fine powder. Use as required.

Yellow moong dhal(split) : 2 tbsp
Cori. seeds: 2 tbsp
Jeera: 2 tsp
sombu: 2 tsp
peppercorns:2 tsp
red chllies: 4
Pattai: 2 inch piece
clove: 3-4 pieces

Bottlegourd-carrot soup:

Heat lil ghee. add 1/2 tsp jeera.
Next add in 1/2 a smmall bottlegourd,1 medium carrot, 1 medium tomato roughly chopped. saute for a min.
Add in salt, turmeric pwd.
Add 500 ml water & cook for 2 whistles.

Once cool, grind it along with 1 tsp (more or less to taste) of soup powder. Pass through a sieve if u want to but it's purely optional.

Add more water/salt/pepper powder if req. Bring the mixture to a boil again. skim of any foam. Let boil for 2-3 mins. this soup should be medium thick.

Serve hot.

Selvi, do try it for a lazy meal... soup & bread...:D yes, the soup looks exctly like wht i made...

I tried it in mixed veg soup today & it was good. Veg mix I used- bottlegourd, cabbage, cauliflower, peas, tomato, garlic. I want to try spinach,potato,tomato,garlic combo with this pwd. I have a gut feeling tht it'll taste very good.

[tscii]Friends, I saw this recipe for the mushy patties
and mushy brinjal dip in our local newspaper.
Thanks NST for the recipes.
I tried out the patties first.
Here is the recipe:

MUSHY SAVOURY PATTIES

Ingredients:
(A)
200 grms carrots chopped
200 grms cauliflower cleaned, chopped
300 grms potato skinned chopped
Salt

(B)
2 tbs coriander leaves
1 fresh red chillie chopped
Little salt
Little pepper powder

(C)
Little flour if needed
Some chopped spring onions
Bread crumbs for coating
Little oil for pan frying

Method:
Put all the ingredients A in a pot, add little water.
Boil till all are cooked. Cool and drain.

Add all the cooked ingredients into a blender.
Add in all the ingredients from B
Blend until it’s a chunky mush, or you can
use a masher to to mash it.

Add the chopped spring onion and little flour.
Make it into a 1.5cm thick patties.
When it is done , dap the patties onto the bread crumbs.
Heat a pan with about 2 tsp of oil, and pan fry
the patties until golden brown.
Serve with a mixture of sour cream and finely chopped chives,
or a sweet chillie sauce from a bottle.

[tscii]This is a simple Kerala dish.
Thanks to my akka for the recipe.


RIPE MANGO PATCHADI

Ingredients:

2 ripe mangoes
Salt to taste
¼ tsp tumeric powder
¼ cup freshly grated coconut
4 fresh green chillies
½ tsp mustard seeds
½ a cup yogurt

1 sprig curry leaves
1 tbs coconut oil

Method:
Peel the mangoes, cut them into cubes.
Put them in a pan with the salt, tumeric powder
and 1 cup of water. Boil over low heat for 5 minutes.

Grind the coconut, green chillies, and mustard seeds.
to a smooth thick puree.
Stir the puree into the cooking mangoes, and simmer for 5 minutes.
Beat the yogurt with a large spoon to make a smooth thick liquid.
Pour these over the mangoes.
Remove the pot when the gravy starts bubbling.
Pour the oil into the patchadi and garnish with curry leaves.
Stir gently and cover and keep aside for 10 minutes.
Serve as a side dish with plain rice.

hello nga kugan...........iniki mango & kathirikai mix onga recipe vegu vegu super in taste........very different combo & it came out veryyyyy well!! ;-) super hit nga inga ;-) thank u!

also made selvi's sevai biriyaani ......athuvum another biggggg hit........very simple to make & the suvai is abaaram....thanks to both u & selvi...for another great dish!

here is a simple salad: ( sliced thin lengthwise - can use a grater that grates thinly)

beet root....lesa steamed...venthum irukanum at the same time lesa cruchyaa irukanum...cut it also thin lengthwise

carrot....cut thin lengthwise as the above but raw

raw mango - (or maangaai inji )- 1/4 quantity of the above put together....cut this also thin lengthwise

kothamalli little finely chopped

green chillies finely chopped

green onion (vengaya thaaL) chopped

little lemon & salt to taste...

the same u can also thalichify with kadugu/ulantham parupu/vara milagai/ perungayam little... ipadi pannitu pachadiyum seiyalaam.... :mrgreen:

Vaangga Suvai nga, I too was thinking as to why
NOV anneh has not told you, what he had for breakfast.
That would give me a chance to cook and post it.

Vareva, nasi lemakva?

Suvai nga , I think I have given the vegetarian version of the nasi lemak. Let me go through the index.

Actually, its the rice cooked with coconut milk.
The pandan leaf added while cooking gives a very good fragrance.
Then comes the sambal , made with anchovies.
Fried peanuts, sliced cucumber, and boiled egg
This is is the original recipe.

Now a days they add in all kinds of chicken sambal, squid sambal and so on.

Suvai nga I always make this dish in my house, the children simply love it. Of course vegetarian style :lol:

kugan here is my mom's version of AKKARAVADASAL

raw rice - 1 cup
yellow moon dhal - 1/4 cup
(dry fry dhal till nice smell comes out of it)
now add dhal and rice in a pressure pan add 2 3/4 water or 3 cups of water and allow it to cook for 2 whistles.
mash it roughly.

now in a separate pan add sugar - 1 1/4 cup
water - 3 1/2 cup and make syrup like gulab jamun, add little pachai karpuram, kesari colour to it. transfer this syrup to the cooked rice and dhal mix it nicely.

now in a pan, add 2 tsp of ghee, add cashews, grapes fry nicely and add to the rice mixture. add a pinch of salt to enhance the taste. garnish with some more ghee and serve hot.

[tscii]I went to a Chinese dinner, these savoury pancakes were served as a starter. Since they are non-vegetarians, egg and steamed chopped prawns were added in the savoury pancakes.
They used chopsticks to pick up the pancake and dip in the sauce.
We can use forks or even our fingers.
I have made this into a vegetarian version.



SAVOURY PAN CAKE

Ingredients:
1 cup of self rising flour
1 tbs rice flour
2 scallions cut into small rounds
2 tbs grated carrots
2 tbs capsicum chopped fine
2 tbs mushroom chopped
¼ tsp pepper powder
Salt to taste

Method:
Mix to gether the flours and salt with cold water.
The consistency should be like thin pancake batter.

Now add in the pepper powder, scallions, carrots,
capsicum, and mushroom.

Heat up a dosai kal or non stick pan.
Rub with a little oil, pour a tablespoon of the batter.
Do not disturb the batter, it will form a small round.
Cook for about 3 minutes, flip it over.
Cook on both sides until little brown.

Serve it with chillie sauce, or with the sauce given below.

Dipping Sauce:
¼ cup soy sauce
½ tbs vinegar
1 stalk scallion minced
1 pip garlic minced
½ tsp dry chillie flakes
½ tsp sugar
1 tsp sesame oil

Method:
Mix all the ingredients together.

Those days it was only like lime, mango, lemon
nellikai and so on. Nowadys its fish, chicken,
prawns, anchovies and so on. I too used to make all that before :lol:

Well this vadu mangga recipe is specially dedicated to DEV.

VADU MANGGA

Ingredients:
25 tender young green mangoes
2 tbs gingelly oil (normally they use castor oil)
¼ cup salt
¾ cup red chillie powder
¼ cup mustard seeds powdered

Method:
Wash the mangoes and dry well.
Leave about quarter inch of stem intact.
Cut off the remaining stem.

Put the mangoes in a glass jar, pour the oil and shake
the jar so that the mangoes are coated with oil.
Now sprinkle the salt and do the same.
Now cover the jar tightly and set aside for four to five days.
Open the jar daily and stir the mangoes with a dry spoon.

After five days the mangoes would have absorbed the salt
and shrunk in size.
Mix the chillie and mustard powder and sprinkle over the mangoes.
Cover well and allow the pickle to absorb all the seasonings
for at least two weeks.
Serve with tayir saatham.

Here is a sweet mango pickle.
This recipe is by my friend Rushina. Thanks Rushina.
I have tweaked a little to suit me.
I love this pickle, its like jam.


CHUNDA

Ingredients:
250 grms of peeled and grated raw mango
375 grms of sugar
2 tbs salt
1 tsp tumeric powder
2 tbs chillie powder
1 tbs ground cumin seeds

Method:
Mix the grated mango, salt and tumeric powder and
Leave it for half an hour.
Now take a muslin cloth put the grated mango
And squeeze gently.
Now put the plup in a glass container, add the sugar
And mix well.
Tie a piece of muslin cloth over the mouth of the vessel
And place in the sun for a full 21 days.
That means it goes out every morning (after a stir) and
Comes in every evening.
You will know the pickle is done when the sugar has melted
To a syrup and reaches 1.5 string consistency.
When done add the chillie powder and cumin powder.
This pickle will resemble like orange marmalade.
If well sunned this pickle will keep for a year without refrigeration.
It goes well with chapatti , rice or as a sandwich spread.

This is another type of mango pickle.

Ennamaanga

Ingredients:
3 firm green mangoes medium size
Sesame oil for frying
2 tbs chillie powder
1 tbs fenugreek seeds dry roasted and powdered
1 tbs salt

Method:
Wash and wipe the mangoes. Cut them up into thin
Long pieces.
Heat the oil and fry the mango pieces until crispy.
Remove them from the oil and drain.
Combine the chillie powder and fenugreek powder.
Spread the mango pieces in a ceramic or glass jar.
Sprinkle with salt and mix well.
Now sprinkle the chillie, fenugreek powder and mix well.
Now pour about 3 tbs sesame oil on the top.
Once its cooled, put the lid and cover tightly.
It takes about 10 days for the mango pieces to absorb the
Salt and spices and become tender.

Note: If your mango is very fleshy, you can dry the pieces in the sun for a day before frying.

Selviem thanks , for giving me an idea for something for tea.
Sooji appam is quite forgotten because of the frying.
Diamond biscuits are all time favourite.

Selviem, there are many methods to do this both items.
Soojii appam can also be cooked on dosai kal, just like boli.
The normal method is to fry it in oil.

The diamond biscuits are also made in many methods.
You can fry the biscuits and sprinkle castor sugar, or add sugar
to the dough and fry it.
There is also a savoury version of this biscuit.

I will show you, how I make.
If it is not as what you expected, I am sorry Selviem.

Suvai nga, if you do not have the sun, you only cannot make the chunda.
You can add little vinegar to other pickles to keep them from going bad.
I have few more recipes of pickles.
We also always have "uppil ooriya lime, and mangoes"
So when ever we want pickle, we do it instantly.

DIAMOND BISCUITS

Ingredients:

1 cup all purpose flour
3 tbs sugar
¼ tsp salt
2 tsps of ghee or oil
½ cup of warm water ( use only as much as needed)
A tiny pinch of cooking soda (optional)
Oil for frying

Method:

Mix the flour, salt, sugar and ghee.
Mix all the ingredients well.
Now add the water slowly and knead it into
a not so soft dough.

Roll out the dough to a circle. Not very thin.
Make a vertical cut first, and then a horizontal cut.
This forms diamond shapes.
(I have cut them small, you can cut how big you want.)
Now deep fry them in oil. You get crisp biscuits.
When cool, store them in air tight containers.

SOOJII APPAM

Ingredients:

1 ½ cups of all purpose flour
Little salt
Water as needed

1 cup roasted soojii
1 ¼ cups of sugar
2 tbs of ghee
1 ¾ cups of water
1 tbs chopped cashew nuts roasted
A pinch of cardamom powder
A pinch of salt
Oil for frying

Method:
Mix the flour with the salt, add water little by
little and knead it into a soft dough.
Like what we do for boli.
Keep it covered for ½ an hour.

Add the sugar and water in a wok, cook until the sugar
is dissolved. Add 1 tbs of ghee, and cardamom powder
and allow to boil once.
Slow the flame, add in the roasted sooji, little by little.
Stir well till it is cooked and forms into a ball.
Add in the other tbs of ghee, mix well and remove.
Add in the roasted cashew nuts, mix well and let it cool.

When cool shape the soojii mixture into lime sized balls.
Take a little kneaded all purpose flour mixture.
Cover the soojii ball with the kneaded flour.
Take a plastic paper, apply little oil on it.
Now put the prepared ball and pat it into a round disc.
See that it is not very thick.

Now heat the oil on medium flame.
Fry each appam on both sides till cooked.
Drain them on oil paper.
Serve for tea.

HEALTHY VEGE ADAI

Ingredients:

1 cup moong dal
¼ cup urad dal

3 tbs sliced cabbage
3 tbs grated carrots
3 tbs chopped spinach
2 green chillies chopped
1 big onion chopped
1 tsp cumin seeds
½ tsp tumeric powder
1 tbs chopped coriander leaves.
Salt to taste
2 tsp oil

Method:
Soak the 2 dals for about 3 hours.
Then grind it to a smooth thick pouring consistency
Keep it aside.

Heat a wok with the oil, add in the cumin seeds.
Let it splutter, then add in the chopped onions and chillies.
Stir a little, add in the spinach. cabbage, carrots,
tumeric powder and salt. Sauté for a minute and remove.

Add this veges to the ground batter , add in the chopped coriander leaves, add salt if needed. Mix well.

Heat a dosai kal on medium heat. Spread 1 ladle full of batter
on the dosai kal. Pour 1 tsp of oil around the spread batter.
Let it cook for a minute, flip it over and cook.
The adai must be cooked till a bit brown and crisp.
Serve with tomato chutney or coconut chutney.

[tscii]Lime Pickle

Ingredients:
6 limes
¼ cup sesame oil
1 tsp tumeric powder
Salt to taste
1/4 tsp mustard seeds
1 tsp mustard seeds slightly roasted and powdered,
2 tbs chillie powder
1 tsp fenugreek seeds ,slightly toasted and powdered
¼ tsp asafetida powder
Little curry leaves

Method:
Wash and dry the limes. Heat a pot of water and boil the limes
For about 5 minutes. Remove and cool. Wipe the limes well.
Cut the limes into small pieces and discard the seeds.
Sprinkle tumeric and salt over the lime slices
Heat oil in a pan and add the mustard seeds, then add the
Curry leaves and fry for a minute.
Add the lime pieces, fenugreek powder, chillie powder,mustard powder
And asafetida powder, mix well and remove from stove.
Cool to room temperature and store in a jar.
It takes 2 or 3 days to absorb the spices.
Use a dry spoon and sun the pickle for a few days.

thanks aarthi, for trying out the receipe. so feeling sad with out parents. what to do that is life. take care of pranay, coz he is the most affected one without grand parents. he cannot express his feelings.

page 24. Its ponnangani keerai.

I am posting a nellikkai pickle recipe for you.

NELLIKKAI PICKLE

Ingredients:

½ kg small Indian nellikkai
1 ¼ tbs of gingelly oil
1 ¼ tbs of red chillie powder
½ tsp mustard seeds
½ tsp dry roasted powdered fenugreek seeds
2 sprigs curry leaves
A pinch of asafetida powder
Salt to taste

Method:
Wash and dry the nellikkai.
Heat ½ a tbs of oil in a heavy pan. Pan fry the nellikkai on medium heat.
( You can also steam cook this nellikkai if you like)
After about 10 minutes, remove from the stove.
Let it cool to room temperature.
Then cut the nellikkai and remove the seeds in the middle.

Then mix the nellikkai, salt and chillie powder.
Set aside for about half an hour for the spices to blend.
Heat the remaining oil and fry the mustard seeds.
When they splutter, add fenugreek powder, asafetida
powder and curry leaves to the oil.
Remove it from the stove and after a minute, pour it over
the nellikkai. Mix thoroughly. Let it cool well.
Cover and store in the fridge. It will be ready to serve
in two days.

hello nga kugan....super aah iruku onga diamond cuts / sooji appam......selvi ipadi konjam engalukum oru plate anupunga of the diamond cuts u made.

iniki tried yr healthy veg adai nga kugan...& the taste is abaaram......very delicious i have to add. thanks for a lovely recipe.

Try them when you are free.

In our house we will soak limes in salt with little lime juice.
Shake them daily and will sun them.
After sometime the limes will become soft and the juice look
like honey. we can just have it like that, or season it with all
the ingredients for pickle and make pickle.

We do the same with mangoes too.
