hello dev...ohhh wow...medicinal value...ulla keerai...apadi puthar maathri valarnthu irukaa....adengappa...k's recipe try pannitu sollunga....does it have a bitter taste? does it cook easily? india ponaa intha keeraiya epadiyaavathu vaangi saapidanum one of the things to do list la pottukaren :noteeth:
i want to try k's seeyali....the recipe is very different from what i had searched on the net too.;-)

Kugan, wow, so many recipes. I have to cook 5-6 meals a day to try them all:):) waiting to make idlies to try the seeyali recipe.

Suvai, even if u get a single stick of karisilanganni, u can plant it and it'll grow like a weed...tastewise-it's not bitter but has some kaaram...I read in a mooligai book that the kaaram in the keerai can be reduced by sauteeing it in oil(which I din't do). It also has a unique smell which was a bit too strong for us...maybe I should try reducing the qty of keerai in the kootu next time... also, mash pannamal just chop panni senju paarkanum next time... The mooligai book says it's very valuable as a cure for jaundice...also good  for constipation..bayangara laxativenga... so alava saapidanum... ;) good for eyes n hair growth aswell...

appadi serving size ellam podalai... depends on how much ur body can accept... Kootuna maybe around 3-4 tbsp saapidalaamnu ninaikiren... I ate almost double tht qty and... you guess what happened!!!...:lol:
Powe cut- 10 hrs/day... edho UPS punniyathil thappichittu irukkom... attimes, even the UPS runs out of charge...:(

Thanks  friends  for  all  your  concerns  and  wishes.
It  was  nothing  you  know,  it's  just  sometimes,  your  body  will  refuse  to  co operate  with  you.
I  was  feeling  very  tired  and exhausted ,   just  felt  like  sleeping  the  whole  day.
Did  not  want  to  be  disturbed,  even  for  food  or  anything.
You  get  irritated  even  if  someone  wants  to  talk  to  you.  That  sort  of  feeling.
Well  I  was  a  bit  better,  and  yesterday    was  a  hectic  day  again.
I had  to  cook  for  about  50  people  as  it  was  my  F-I-Law's  thithi.
Of  course  my  maid  helped  me.  I  was  so  tired  even  to  take  pictures.
Here  is  the  list:

Dear  Dev,  a  cooling  salad  for  you.  Kugan
   CUCUMBER  AND  MINT  SALAD
Ingredients:
  3   ripe   red  tomatoes 
  1   cucumber (medium sized) 
  1  onion -  (small)
2  tbs fresh lime juice  to taste
2  tbs  Virgin olive oil 
1  small   bunch  fresh mint  or  to taste
Salt - to taste
Black pepper - to taste
Method:
Wash and peel cucumbers & onion.Wash tomatoes and mint. Chop cucumbers, tomatoes, and onion very finely, and mix. 
Now add the finely chopped mint.Add fresh lime juice,salt,and black pepper. Dribble in olive oil.
Cut  a  lime  and  put  at  the  side
Serve chilled

K, super salad recipe... apt for the weather here... veyilai samalikka- I use a hair oil from an ayurveda hospi which helps cool down the body... adhai potitu dailyum hair wash pannitaale podhum... veyil avalo kodumaiya theriyuradhillai...atleast maththavanga complain pannura alavukku enakku kashttama theriyuradhillai... aprom UPS iruke... adhu varum konjam neram...atleast night time thaakku pidikudhu... day timela irukkave irukku namma veppam maramum visiriyum...:lol:

Dear  Aarthi,  thanks  for  your  nice  post.
Well  everything  comes  with  practice, when  I  first  came  to  Malaysia,
I  did  not  know  how  to  cook  even  a  simple  dish.
This  is  all  my  M-I-Law's  training.  Let  me  explain  how  I  go  about  it.
My  dear  friends  cooking  for  thithi  for  50  people  is  nothing  great.
My  maid  will  wash  the  kitchen ,  stove and  everything  by  10 p.m.
I  will  have  my  head  bath  and  prayers  by  midnight.
First  we  will  start  cutting  all  the  veges  and  put  them  in  seperate  containers.
The  next  will  be  cutting  of  onions,  ginger    green  chillies   garlic   and  things.
Followed  by  roasting  ingredients  for  making  into  powders,  roasting  things,
for  payasam  and  so  on.  Then  grinding  of  urad  dal  for  vadai.
By  3.30  a.m    dal  will  be  boiling    for  sambar.  Once  the  dal  is  cooked,
we  will  begin  our  other  cookings.
by  8.00  a.m   I  have  to  finish  the  cooking,  since  the  priest  will  come
about  9.am  in  the  morning. Usually  vadai,  appalam   and  rice  will  be  the  last  items,
to  be  cooked.  I  will  have  to  bathe  again,  my  prayers  and   be  ready  for  the  priest
by  9.a.m.  I  will  usually  be  exhausted  by  3.pm  when  all  the  guests  leave.

I  love  this  Chinese  vegetable  called  Bok  Choy.
Today  I  will  post  a  simple  recipe,  as  to  how  to  stir  fry  the  vegetable.
Tomorrow  will  be  an  Indianised   version:-D   Kugan.
STIR  FRIED  BOK  CHOY
Ingredients:
300  grms  fresh  bok  choy
3  pips  garlic  smashed
1  small  piece  of  ginger   finely  chopped
1  small  onion  sliced
1  green  chillie  chopped
1  tsp  sesame  oil
Little  pepper  powder
A  tiny  pinch  of  sugar
Salt  to  taste
Method:
Wash  the  bok  choy  and  cut  the  leafy  portion  and  stems  seperately.
The  stems  should  be  about   ½  an  inch  thick.
Heat  oil  in  a  pan,  add  in  the  smashed  garlic  and  saute  well.
There  should  be  a  nice  aroma,  add  in  the  ginger,  onions  and  the  chillie.
Stir  fry  well,  add  in   cut  stems  and  fry  for  a  few  seconds.
Now  add  in  the  green  part  of  the  vege,  saute  for  few  seconds.
Add  in  the  salt,  tiny  pinch  of  sugar   and  the  pepper  powder.
Saute  well  and  remove.  Serve  still  warm  with  rice  or  roti.
NOTE:  If  you  want  little  sauce,  add  in  1  tsp  of  corn  flour  mixed  with  little  water.
Add  in  the   pan,  stir  fry  and  remove.
This  is  how  the  Bok  Choy  looks:

Unga cooking sessionai padikum podhe enakku thalaiyay suththudhu... we are so used to caterers that we just couldn't imagine someone cooking so many dishes for so many people!!!... even for prayers, we just cook for padayal and caterers for guests... But I have to agree with u that it all comes with practice... Younger daysla I've seen the ladies in our house cook for small functions(like for 100-150 ppl) with the help of friends n relatives... enga generation aalungalukku thaan 10 perukku melaina alavu kuda theriyaradhu illai...:oops:

UPS-enakku exactaa solla theriyalai...but it's something like this... an electrical device with batteries(1 or more) conencted to it... when there is power, the batteries gets charged and where there is a power-cut, there will be near-instantaneous  power supply from these batteries...UPS-uninterrupted power supply...they also call it an inverter... It is not a generator...we also have a small household generator for those power shut-down days...;) 
Solar based UPS is also in the market these days...

Remainder  food   can  be  given  to  an  orphanage    or  old  folks  home.
I  asked  an  orphanage   manager,  that  I  would  like  to  contribute  one  day's  lunch
to  the  children  there.  You  know  what  he  told  me,  madam  the  children  are  fed  up
of  eating  sambar  daily,  can  you  contribute  few   buckets   of  kentucky   fried  chicken?:roll:

Well  I  promised  to  post  the  Indianised  version  of  the  bok  choy.
Dev,  do  you  get  this  vege  in  India?  If  you  get  try  it.
Kugan.
INDIAN  STYLE  BOK  CHOY
Ingredients:
2  tbs  oil
6  shallots   sliced
To  Grind   Into  Smooth   Paste:
1  tbs  grated  coconut
1  inch  ginger
4  pips  garlic
1  tsp  kas- kas  seeds,  (soaked  in  water  for  10  minutes)
6  cashew  nuts
2  tsp  chillie  powder
¼  tsp  tumeric  powder
300  grms  bok  choy  cut  into  ½  inch  in  length
1  tbs  lime  juice
Salt  to  taste
Method:
Heat  oil  in  a  pan,  add  in  the  sliced  shallots.
Saute  for  a  minute,  add  in  the  ground  paste.
Fry   till  fragrant  and   oil  seperates.
Add  in  the  chillie  and  tumeric  powder.
Stir  fry  for  a  minute,  add  in  the  cut  bok  choy,
Stir  fry   for  a  second,  add  in  the  salt  and  lime   juice.
The  bok  choy  will  ooze  out  some  liquid  and  will  soften.
Stir  to  coat  the  bok  choy  with  all  the  ingredients.
Remove  and  serve  with  rice.

K, ingayum these days many orphanages don't accept remainder food n all... some ask in the form of money, some say kids get sick eating outside food, some say we've to give advance notice... Food wastage during functions is a real pain and a real crime K... I felt that during the house-warming function...

Dev,  I  think  you  can  try  the  dish  with  mustard  greens,
or  even   thandu  keerai.
Oh!  rambutans  are  so  expensive   in  India.
I  think  in  Malaysia  they  do  have  canned  rambutans.
That  might  be  cheaper:-D

Ingredients:
(A)
100  grms  rice  flour
1 tsp  chillie  powder
¼  tsp  tumeric  powder
150  ml  tamarind  water
Salt  to  taste
(B)
2  tsp  oil
Little  asafoetida
¼  tsp  mustard  seeds
1  tsp  urad  dal
1  sprig  curry  leaves
1  red  chillie  cut  into  pieces
2  tbs  onion  finely  chopped
2  tbs  grated  coconut   (  optional )
Method:
Mix  all  the  ingredients  in  (A)  to  a  soft  paste.
Heat  oil  in  a  non  stick  pan,  add  in  the  ingredients  (B),  accordingly.
Once  the  onions  are  golden  brown,  add  in  the  mixed  rice  paste.
Stir  it  continuosly  till  the  flour  is  fully  cooked.
The  rice  paste  will  scramble  if  it  is  fully  cooked.
Keep  breaking  in  pieces  with  your  spoon  till  it  resembles  uthi  uthir.
You  know  how  we  do  kothu  parota,  the  same  way.
Garnish  with  the  grated  coconut  and  serve  warm.

dev/kugan i also do the same type of above salad.....here is another version for only carrots...the issue is u have to cut carrots into thin strips....not shred....the crunch irukanum carrot ku.;-)
shallots a little / pachai milagai / kothamali / salt & lemon....u mix all this....with hand...to completely blend the flavors in...ithai konjam kaarama panninaa nalla irukum......goes well with chapathi too...adikadi pannuven intha salad..:-)

Dev,  I  think  you  can  try  the  dish  with  mustard  greens,
or  even   thandu  keerai.
Oh!  rambutans  are  so  expensive   in  India.
I  think  in  Malaysia  they  do  have  canned  rambutans.
That  might  be  cheaper:-D

You  can  try  the  puli  upma,  it's  nice  to  eat.
Only  lot  of  work,  nowadays  children  will  complain  with  these  types  of  dishes.
They  say   we   serve   them   carbs  in  many  forms.
Idli,  thosai,  puttu,  idiyappam  aapam  upma  and  so  on.
They  prefer,  cereals ,  sandwiches  and  more  of  healthy  breakfast.
I  am  going  on  a  spree  to  find  out  all  about  crack  wheat  cooking.
Then  I  will  be  serving    crack wheat,  idli,  thosai,  puttu,  upma  and  even  different  types  of  pulaos:-D
Till  they  come  begging  to  change  into  carbs  again:-D

My  relatives  have  started  using  atukkal  and  ammi.
That  is  a  good  sign.:-D
I  was  very  surprised,  when  I  was  in  US  last  time.
We  get  all  the  things,  that  even  in  Malaysia,  we  do  not  get.
Be  it  Indian,  Chinese,  Korean  or  Malaysian.
Dev,  try  the  dish  with  another  keerai,  it  will  turn  out  well.

Here  Suvai,  try  out  the  dish.
Very  simple  and  tasty,  a  nice  change  from  routine   idli  sambar.
Kugan.
CORIANDER  IDLI
Ingredients:
1  tbs  oil
¼  tsp  mustard  seeds
½  tsp  urad  dal
1  medium  onion   sliced
Salt  to  taste
To  Grind  To  A  coarse  Paste:
6  sprigs  of  coriander  leaves
2  tsp  of  grated  coconut
1  tsp  of  roasted  channa  dal
1  red  chillie
1  pip  of  garlic
4  idli    cut  into  cubes.
Method:
Heat  the  oil  add  in  the  mustard  and  urad  dal.
Let  it  splutter  well,  add  in  the  onions,  and  little  salt.
Once  the  onion  becomes  translucent,  add  in  the  ground  paste.
Stir  fry,  till  the  raw  smell  goes.
Now  add  in  the  cubed  idlis  ,  more  salt  and  toss  nicely.
Remove  and  serve  while  still  warm.

O.K  friends,  I  had  extra  valakkai  after  the  thithi.
 I  made  it  into  this  valakkai  curry.
Need  not  remove  much  of  the  skin.  It  will  be  very  tasty.

VALAKKAI  CURRY
Ingredients:
5  tbs  oil
1  tsp  mustard  seeds
½  tsp  aniseeds
1  tsp  urad  dal
1  tbs  channa  dal
2  dry  red  chillies  broken
4  pips  garlic  smashed
1  sprig  curry  leaves
2  onions  chopped
½  tsp  tumeric  powder
Little  salt
1  tsp  ginger
1  tsp  garlic
2  tsp  chillie  powder
4  tomatoes  chopped
Salt  as  needed
2  green  valakkai,  slit  into  4  and  cut  into  cubes,  with  skin.
¼  cup  water
1  sprig  curry  leaves  torn  with  hands
Method:
Heat  oil  in  a  wok,  add  in  the  mustard  seeds  and  let  them  splutter  well.
Add  in  the  aniseeds,  urad  dal,  channa  dal,  and  the  red  chillies.
Stir  fry  till  the  dals  turn  lightly  brown.  Add  in  the  smashed  garlic.
Add  also  the  curry  leaves  and  fry  till  the  garlic  turns  golden  brown.
Add  in  the  chopped  onions,  tumeric  powder  and  little  salt.
When  the  onions  turn  limp,  add  in  the  garlic  and  ginger.
Fry  for  about  2  minutes,  add  in  the  chillie  powder  and  tomatoes.
Add  salt  and  cook  till  they  turn  mushy.
Add  in  the  cut  valakkai,  and  stir  fry  well.
Add  in  the  water,  mix  well,  cover  and  cook  on  sim  for  10  minutes.
Stir  the  contents   occasionally.  The  valakkai  should  be  cooked.
Garnish  with  curry  leaves  and  remove  from  the  stove.
Goes  well  as  a  side  dish.

My  dear  friends,  have  you  all  heard  what  is  tempeh?
We  get  it  here  in  Malaysia,  also  in  US.  Korean  stores,  Suvai.
Actually  you  must  an  acquired  taste  for  it.
I  normally  will  cut  into  small  pieces  fry,  than  make  it  into  soy  sauce  stir  fried.
Recently  I  had  it  in  a  curry  form  in  a  friend's  house.
The  taste  was  super.  O.K  this  post,  just  see  how  the  tempeh  looks,
and  the  properties  of  tempeh.  I  will  post  the  recipe  in  the  next  post:mrgreen:

What is tempeh!? Tempeh, like tofu, is made from soybeans – but it actually has a higher nutritional content than tofu. It uses the whole soybean, and a fermentation process causes the tempeh to maintain a higher and more easily digestible protein content than tofu. The soybeans are packed into a cake that’s easy to slice and cook with, and the high protein content makes it afantastic alternative to meat (and it has no cholesterol).
Tempeh also contains a high amount of essential fatty acids, fiber, vitamins and minerals.The fact that tempeh keeps the whole soybean intact and is less processed than tofu makes it a more nutritious choice.

Also  you  have  given   us  ideas  how  to  use  up  old  Iddlis.  Kugan   one  request,  when  you fly  in  a  plane,  they  give  you  a  bun  with  your  meals.

Here  Suvai  the  tempeh  curry  for  you.  Kugan
TEMPEH  CURRY
Ingredients:
To  Marinate  And  Fry:
300  grms  tempeh  cut  into  squares.
1  tsp  chillie  powder
Little  tumeric  powder
Little  salt
Little  sugar
1  tbs  oil
1  large  pip  of  garlic  chopped
1  small  bay  leaf
4  cardamom  pods
3  cloves
2  small  cinnamom  sticks
5  tbs  of  ground  onions
¼  tsp  sugar
2  tsp  ginger  paste
1  big  tomato  pureed
2  tsp  red  chillie  powder
¼  tsp  tumeric  powder
300  ml  coconut  milk
100  ml  water
3  green  chillies,  slit  into  4  and  cut  across
Salt  to  taste
Method:
Marinate  the  tempeh  with  the  chillie,  tumeric,  salt  and  sugar.
Keep  aside  for  ½  an  hour.  Then  deep  fry till  golden.  Keep  aside.
Heat  oil  in  a  pan,  add  in  the  chopped  garlic,  followed  by  the  dry  spices.
Let  them   crackle,  then  add  in  the  onion  paste  and  the  sugar.
Stir  fry  till   the  paste  turns  brown  in  colour,  or  oil  separates.
Add  in  the  ginger  garlic  paste,  tomato  puree,  chillie  and  tumeric  powders.
Stir  fry  till  all  the  spices  are  blended  well.
Add  in  the  coconut  milk,  water,  the  slit  green  chillies  and  salt.
Mix  well  and  let  the  gravy  come  to  a  boil.
When  you  see  the  gravy  bubbling,  add  in  the  fried  tempeh  pieces.
Cook  on  low  flame  till  the  gravy  thickens.  Taste  for  salt.
Remove  and  serve  with  white  rice   or  roti.
It  goes  well  with  plain  ghee  rice  too.

Suvai,  I  think  you  should  not  take  the  risk.  Please  try  it  with  tofu  or  panner.
The  gravy  is  really  yummy.  My  friend  actually  made  a    coarse  powder  of  the  spices.
I  felt  that  the  smell  was  a  bit  strong  of  the  spices,  so  I  just  added  in  whole  spices.
I  am  glad  that  you  likes  the  seeyali.
It  is  nice  for  a  change  instead  of  the  same  idli  and  sambar.
You  can  try  many  ways,  tomato  idli,  masala  idli  and  so  on.
Suvai,  I  still  use  the  ammi  to  grind  kettai  chutney.
Also  use  the  atukal  for  urad  dal  vadai,  seeni  vadai  and  so  on.
Ennaku,  araika  nalla  varum,  for  my  maid  does  not  know  how  to  use  it.

Nowadays seldom people make this curry vadagam.
Its easier to buy than to make. I make my own so that I use all clean ingredients and make it clean. I do it 6 months once.
My aunt makes a very tasty chutney using the ridgegourd skin and the vadagam. I will get the recipe soon.
vadagams are used for seasoning in the gravy, poriyal,
kutoo and chutneys. vadagams give a special aroma and flavour for the dishes.
The dal are raw and ground into coarse powder.
Suvai nga when we want to cook a gravy, normally we will pour oil in the pot, then break up the vadagam into pieces, and use little or more according to the amount of gravy or poriyal you want to do. 
these vadagams are only seasonings.
CURRY VADAGAM
Ingredients:
250 grms small red onions
200 grms garlic pips
125 grms toor dal
20 grms urad dal
20 grms cumin seeds
20 grms mustard seeds
20 grms curry leaves
15 grms tumeric powder
¼ cup of oil
2 tbs of salt
Method:
Skin the onions and garlic, wipe them dry.
Chop both the onions and garlic into fine pieces
Chop also the curry leaves also into fine pieces
Grind the toor dal and urad dal into coarse powder.
Add all the other ingredients except the oil.
Crush them lightly so that they can be moulded into balls.
Dry them in the hot sun.
In the evening break all of them, add half of the oil and mix well.
Make them into balls again. Next morning dry them in the sun again.
Again in the evening do the same process using the other half portion of the oil. 
Now dry the balls in the hot sun for about 15 days, till it becomes hard.
Store them in a air tight container.
NOTE: Normally castor oil is used. Since this oil is banned in Malaysia,
I use gingelly oil.

VADU  MANGGA
Ingredients:
25 tender young green mangoes  (vadu mangga  )
2 tbs gingelly oil (normally they use castor oil)
¼ cup salt
¾ cup red chillie powder
¼ cup mustard seeds powdered
Method:
Wash the mangoes and dry well.
Leave about quarter inch of stem intact.
Cut off the remaining stem.
Put the mangoes in a glass jar, pour the oil and shake
the jar so that the mangoes are coated with oil.
Now sprinkle the salt and do the same.
Now cover the jar tightly and set aside for four to five days.
Open the jar daily and stir the mangoes with a dry spoon.
After five days the mangoes would have absorbed the salt 
and shrunk in size.
Mix the chillie and mustard powder and sprinkle over the mangoes.
Cover well and allow the pickle to absorb all the seasonings 
for at least two weeks.
Serve with tayir saatham.

ENNA  MANGGA
  
Ingredients:
3 firm green mangoes medium size
Sesame oil for frying
2 tbs chillie powder
1 tbs fenugreek seeds dry roasted and powdered
1 tbs salt
Method:
Wash and wipe the mangoes. Cut them up into thin
Long pieces.
Heat the oil and fry the mango pieces until crispy.
Remove them from the oil and drain.
Combine the chillie powder and fenugreek powder.
Spread the mango pieces in a ceramic or glass jar.
Sprinkle with salt and mix well.
Now sprinkle the chillie, fenugreek powder and mix well.
Now pour about 3 tbs sesame oil on the top.
Once its cooled, put the lid and cover tightly.
It takes about 10 days for the mango pieces to absorb the
Salt and spices and become tender.
Note: If your mango is very fleshy, you can dry the pieces in the sun for a day before frying.

RICE VADAGAM
Ingredients:
500 grms cooked rice, preferably yesterday’s rice
5 green chillies more if you like
1 tsp cumin seeds
¼ tsp asafetida powder
1 sprig curry leaves (optional)
Salt to taste
Method:
Mix every thing together and blend in a mixie.
Do not add water, if needed sprinkle little.
Spread a clean thick plastic sheet in the sunlight.
Use a murukku press with “one star hole plate.
Fill the ground dough into the press.
Press straight lines on the plastic sheet.
Finish all the dough.
Allow to dry in the hot sun for the whole day.
In the evening you can gather and break into desired lengths.
Dry it for a another day if not fully dried.
Another way is to make a hole in a piece of cloth.
Put in the dough and press dots on the plastic sheet.
Or use your hands to dish out small small rounds.
Note: modern times, I have seen people cooking the rice
flour with water and all the ground ingredients into a kool.
Then they press it on the sheet to dry.

Suda,  suda  out  of  the  oven.  Enjoy.  Kugan
DINNER  ROLLS
Ingredients:
2 ¼  tsp  dry  yeast
¼  cup  warm  water
2  tbs  sugar
1  cup  of  warm  milk
3  tbs  of  melted  butter
¾  tsp  of  salt
3  cups  of  flour   +  little  flour  if  needed
¼  cup  warm  water  if  needed
2  tbs  olive  oil
Method:
Mix  in  the  sugar,  yeast  and  warm  water.  Let  it  froth.
In  a  bowl,  add  in  the  warm  milk,  melted  butter,    and  salt.
Add  in  the  3  cups  of  flour,    add  in  the  yeast  mixture.
Give  a  good  mix  with  a  spatula.
Now  use  your  hands  and  knead  the  dough,  till  it  is  smooth.
Sprinkle  little  flour  if  you  feel  the  dough  a  bit  sticky.
Knead  until  you  have  a  smooth  and  elastic,  but  soft  dough.
Apply  some  olive  oil,  all  over  trhe  dough.  Cover  with  a  moist  cloth.
Allow  it  to  rise  for  about  an  hour.
Now  remove  the  dough     and  punch  down  the  dough  again.
Use  little  flour,  roll  the  dough  and   cut  into  12  pieces.
Take  a  piece  of  dough  and  roll  it  into  a  round  shape  in  your  palm.
Grease  a  tray,  put  the  round   shaped    dough,  about  1  inch  apart.
Let  it    rise  and  double  in  size.
Bake  in  a  preheated  oven  at  200  degrees C  for  about  25  minutes.
Cook  till  they  are  golden  in  colour.  Remove  and  serve  with  butter.

Try  this  coconut  rasam,  very   cooling  for  the  heat:-D

COCONUT  MILK  RASAM
Ingredients:
2  red  tomatoes  chopped  fine
Lime  sized  tamarind  soaked  in  ½    cup  of  water
2  tbs  toor  dal,  cooked    till   very  mushy  in  1  cup  of  water
2  cups  of   thick  and  thin  coconut  milk
3  pips  of  garlic  smashed
½  tsp  pepper  powder
½  tsp  cumin  powder
Salt  to  taste
1  tbs  oil
¼  tsp  asafoetida  powder
½  tsp  mustard  seeds
½  tsp  urad  dal
¼  tsp  funugreek  seeds
¼  tsp  tumeric  powder
2  dry  red  chillies  broken  into  pieces
1  sprig  curry  leaves
Little  coriander  leaves  for  garnishing
Method:
Add  the  chopped  tomatoes  to  the  tamarind  juice.
Crush  it  with  your  hands  to  extract  all  the  juices.
Discard  the  pulp.
Now  in  a  bowl ,  add  in  the  tomato  tamarind  juice.
Add  in  the  toor  dal, coconut  milk,  smashed  garlic,  pepper  powder,
cumin  powder  and  enough  salt  to  taste.
Heat  a  pot   with  the  oil,  add  in  the  spices  in  order.
Let  them  splutter  well,  add  in  the  coconut  milk  mixture.
Cook  on  a  very  low  flame,  do  not  allow  the  the  mixture  to  boil.
The  rasam  will  start  frothing,  add   in  the  coriander  leaves.
Off  the  flame  and  cover  the  rasam  with  a  lid  immediately.
Serve  with  rice  after  10  minutes.

  HERE  IS  WHAT  I  HAVE  WRITTEN:
  Heat a pot with the oil, add in the spices in order.
Let them splutter well, add in the coconut milk mixture.
Cook on a very low flame, do not allow the the mixture to boil.
Thick  and  thin  milk  are  both  added  together.
Try  the  rasam  it  is  a  bit  different  and  at  the  same  time  tasty.
It  is  nice  eaten  with  the  rice.

Madhu  annaa,  here  is  another  rasam  for  you.
It  is  very  good  if  you  have  body  pains,  and  feel  some  what  feverish.
It  has  lot  of  medicinal  values.  Its  botanical  name  is  Piper  Longum.
This  recipe  was  requested  by  one  of  our  hubbers,  hope  she  sees  it.

KANDATHIPPILI     RASAM
Ingredients:
(A)
1  tsp  pepper
3  sticks  of  kandathippli  sticks
2  tsp  toor  dal
1  dry  red  chillie
Little  ghee
(B)
1  lime  sized  tamarind,  extract  about  500   ml  juice
Salt  to  taste
Little  asafoetida  powder
(C)
1  tsp  ghee
½  tsp  mustard  seeds
1  sprig  curry  leaves
Method:
Heat  little  ghee   and   roast  all  the  ingredients  in  (A)
Let  it  cool  and  grind  it  into  a  powder.
In  a  pot,  add  the  tamarind  water,  salt  and  asafoetida  powder.
Let  it  come  to  a  boil  till  the  raw  smell  goes.
Now  add  in  the  powder  and  bring  it  to  boil,  till  it  is  frothy.
Heat  a  small  pan  with  the  ghee,  add  in  the  mustard  seeds  and  let  it  splutter.
Add  in  the  curry  leaves,  stir  for  a  moment  and  pour  it  on  the  rasam.
Remove  and  if  you  like  garnish  it  with  coriander  leaves.
This  is  how  the  kandathippili  looks:

Here  is  a  simple  brinjal  dish  for  the  brinjal  lovers.
Enjoy.  Kugan
  PAN  FRIED  SPICY  BRINJALS
Ingredients:
3  tbs  oil
½  tsp  mustard  seeds
½  tsp  funugreek  seeds
1  big  onion  sliced
½  inch  ginger  cut  into  strips
4  dry  red  chillies,  cut  into  small  pices
300  grms   brinjals ,  slit   into  4  and    cut  into  ½  inch  in  length
1  tomato  chopped
1  tsp  chillie  powder
Salt  to  taste
1  tbs  lime  juice
Little  coriander  leaves  chopped
Method:
Heat  the  oil  in  a  non  -stick  pan.
Add  in  the  mustard  and  funugreek  seeds,  let  them  crackle.
Add  in  the  onions,  ginger  and  the  dry  red  chillies.
Stir  fry  for  a  minute,  add  in  the  cut  brinjals.
Pan  fry   the  brinjals  well  in  the  oil  till  they  are  ¾  cooked.
Add  in  the  tomatoes,  salt    and  the  chillie  powder.
Cook  till  the  tomatoes  are  mushy  and  the  brinja;ls  are  cooked  well.
Off  the  stove ,  and  add  the  lime  juice  to  taste.
Garnish  with  the  cut  coriander  leaves.
Goes  well  with  rice  or  roti.

suvai, The best rasam I have ever tasted in my life is kandathippili rasam. It will not taste bitter at all. My wife's favorite too and I ask her to do frequently. Just the thought of the taste and flavor of it makes our appetite bigger and bigger.

Here  to  you  Aarthii:
Vallarai salad 
vallarai leaves
pineapple
onions
green chillies
vinegar or lime juice
sugar
salt
Method :
cut every thing fine, add enough sugar,salt and lime juice.
Its very tasty eaten as a salad.
You can omit pineapple and add tomatoes if you like.
Vallarai Masiyal
Cook little toor dal, with tumeric and green chillie.
Add the chopped vallarai leaves.
Make a seasoning with little cumin, mustard seeds
and urad dal. Add salt and remove.
Vallarai chappati.
Cut the leaves fine and add to the flour
before you knead. Roll into chapattis
and cook the same way.
Vallarai Drink.
Boil the leaves with rock sugar.
Chill and drink.

Rasam  bittera  irukaathungo,  try  pannunggo.
Suvai,  I  will  use  the  arisi  mandi  for  motchai,  vendi  puli  kulambu.
Also  will  use  for  pumpkin  puli kulambu.
My  grandma  will  use  for  all  kara  kulambus.
I  think  the  thavudu  in  the  rice  gives  a  special  taste  for  the  kulambus.

O.K  my  friends,  one  of  my  worker's  birthday  was  yesterday.
He  is  such  a  gem  of  a  person,  very  humble,  honest  and  very  hard  working.
So  I  cooked  him  a  special  lunch,  and  some  sweets.
For  lunch,  I  cooked,  tomato  pulao,  tofu  rendang,  oil  roast  potato,  and  a  salad.
I  also  made  rava  payasam  for  lunch.
For  tea,  I  made  instant  halwa,  a  cake  and  onion  pakoda.
I  also  presented  him  with  a  T  shirt. He  shed  tears  when  all  our  children  wished  him.
He  was  so  happy,  I  too  felt  very  happy  for  him.

Here the recipe of Kandathippilli Rasam which my wife use to make:
Ingredients:
Kandathippili - 2 sticks
Arisithippili - 3 sticks
Garlic - 6 pods.
Thoor Dal - 1 tsp.
Pepper - 1 tsp
Red Chillis - 3nos.
Coriander seeds - 1/2 tsp.
Tamarind - lemon size.
Tomato - 1 small
Sambar powder - 1/2 tsp.
asafoetida - few sprinkles
ghee - 1 tsp
For Seasoning:
curry leaves - 4-5 leaves
mustard seeds - 1/2 tsp.
cuming seeds - 1/2 tsp.
ghee - 1 tsp
Salt to taste.
Preparation:
1. Heat the pan and fry kandathippili, arisithippili in 1 tsp ghee. Then remove it and take it in another plate.
2. Fry Thoor dal, pepper, red chilli, coriander seeds and garlic pods using  the same ghee above.
3. Grind all the above to thick fine paste with little water.
4. Prepare tamarind pulp (2 cups). Add tomato, salt, asafoetida and sambar powder to the tamarind pulp.
5. Let the mixture boil for 10-12 minutes in medium flame.
6. Add the ground paste (step 3) and boil for a minute.
7. Add some more water and let it come to a froth.
8. Season with mustard, cumin seeds and curry leaves in ghee.
9. Remove it from the flame and the rasam is read to be served.
It is almost same as your recipe except we add tomato, arisithippili, garlic and little sambar powder, but these are optional. Hope you all like it. :smile:
After Saturday/Sunday oil shower, with this rasam, nothing like that. :wink:

Thanks  Suvai,  my  helper  is  from  India.  
We  have  about  10  workers  with  us.
All  stay  in  the  top  floor  of  our  store.
One  more  worker  is  from  Sri  Lanka.
The  rest   are  all  Malaysians, the  beauty  is  only  this  worker  has  become  a  vegetarian  like  us.
So  he  eats  in  our  house.  The  rest  all  will  have  their  meals  out.
We  are  really  gifted  to  have  him  as  our  helper.

Even  though  I  am  from  India,  I  hate  cooking  rice  in  a  pressure  cooker.
Normally  these  types  of  pulao's  are  cooked  in  rice  cooker,  or
I  will  do  like  "kalantha  saatham.
As  for  this  tomato  pulao,  I  cooked    the  rice  and  strained  it.
Then  I   did  the  tomato  goju,  and  mixed  the  rice.

INSTANT  HALWA
Ingredients:
1  cup  corn  flour
3/4  cup  sugar
4  cups  of  water
1  tbs  chopped  roasted  cashew  nuts
2  tbs  ghee
Little  cardamom  powder
Little  food  colouring
Method:
In  a  bowl,  mix  the  corn  flour,  water,  sugar.
See  that  there  are  no  lumps.
Add  in  the  roasted  cashew  nuts,   cardamom  powder  and  food  colouring.
Mix  every  thing  nicely.
Now  pour  the  mixture  in  a  non-stick  pan.
Put  the  pan  on  the  stove,  only  then  you  light  your  stove.
Keep  on  stirring,  on  a  low  flame  till  the  mixture  thickens.
You  can  see  bubbles  at  the  sides  of  the  cooking  pan.
This  halwa,  will  not  leave  the  sides  and  roll  into  ball  like  the  normal  halwa.
Add  in  the  ghee,  you  can  add  a  bit  more  if  you  like.
Pour  the  mixture  into  a  greased  plate.
Let  it  cool  nicely,  or  you  can  keep  it  in  the  fridge  for  some  time.
Now  you  can  slice  it  according  to  your  wish.
Even  though,  this  halwa  cannot  be  equal  to  our origional  halwa.
The  taste  is  good  for  a  quick  halwa.

EGGLESS  CUSTARD  CAKE
Ingredients:
1 ½  cups  of  all  purpose  flour
1 ¾  tsp  baking  powder
¼  tsp  baking  soda
1 ½  cup  of  milk
¾  cup  of  caster  sugar
1/3  cup  of  custard  flour
100  grms  of  softened   butter
1  tsp  vanilla  essence
½  cup  chopped  almonds
Method:
Grease  a   7  inch  baking  pan,  line  with  a  parchment  paper.
Heat  oven  to  150  degrees  C.
Sieve   together  the  flour,  baking  powder  and  baking  soda  into  a  mixing  bowl.
Heat  the  milk,  in  a   pan,  when  it  is  hot  enough,  add  in  the  sugar.
Once  the  sugar  is  dissolved,  remove  and  allow  to  cool  to   room  temperature.
Add  in  the  custard  powder  and  mix  well.
Now  add  in  the  butter,  and  mix  do  not  worry  if  the  mixture  is  lumpy.
Now  add  the  milk  mixture  to  the  flour  mixture,  and  mix  well.
Do  not  over  beat  the  mixture,  add  in  the  vanilla  essence,  and  nuts.
Just  fold  the  mixture  and  pour  it  into  the  greased  baking  pan.
Bake  for  about  40  minutes  or  till  a  cake  tester  comes  out  clean.
Or  till  the  cake  is  cooked.  Remove  and  rest  for  10  minutes,
Before  removing  the  greased  paper,  cool  on  a  rack  till  well  cooled.
You  can  ice  the  cake,  or  just  have  it  like  that.

MUSHROOM SOUP
Ingredients:
500 grms of any fresh white mushroom, (like button mushroom) sliced.
1 tbs lemon juice
2 tbs minced small onions
1 tbs butter
1 tsp dried thyme
1 tsp salt
½ tsp ground pepper
1 bay leaf
2 cups heavy cream
1 ½ cups vegetable broth
1 tsp cornstarch dissolved in 1 tbs water
Minced coriander for garnishing.
Method:
In a food processor coarsely chop mushrooms and lemon juice.
Melt butter in a pot, add in the small onions and sauté.
Add in the mushrooms, thyme and bay leaf.
Sauté over medium heat for about 10 minutes.
Add salt, pepper, cream and vegetable stock.
Bring to boil and simmer for about 20 minutes
Add cornstarch and simmer for another 10 minutes.
Stir constantly, check for seasoning, add more lemon juice if needed.
Remove and serve with little coriander leaves.

Here's my all time fav soup,Aarthii... Hope u like it...:)
Cream of mushroom soup:
1. Heat a tsp butter/oil. Add in 2 cloves of garlic crushed & saute for few secs. Don't let it brown.
2. Add in 1 packet(200gmms) of button mushrooms roughly chopped,salt,pepper pwd. saute for 2-3 mins.
3.Add 500 ml water and cook for 1 whistle or 7-8mins if not using pressure cooker. 
4. Reserve  some mushroom pieces for garnishing. let cool   & puree the rest.
5.Add the puree back to the pan. Adjust salt, pepper. Add some milk(50 ml or more) & heat it through. Do not let come to a boil.
6. Garnish with reserved mushrooms and serve hot with garlic bread
Note: U can add a tsp of wheat flour or maida after sauteeing the garlic. Keep frying on low flame till flavourful & then add the mushrooms. u can add lil more water in this case but still get thicker soup. I add wheat flour attimes...
If u want a mushroom clear soup,stop at step 3. Add some spring onion greens or coriander for garnish and serve hot.

Well  for  a  change,  why  not  try  this  simple  cookie.  Kugan.
SUGARED  COFFEE  COOKIES
Ingredients:
3  tbs  instant  coffee  powder
2  tbs  hot  water
4  cups  of  all  purpose  flour
½  tsp  baking  powder
½  tsp  baking  soda
¼  tsp  salt
2/3  cups  of  soft  butter
¾  cup  of  light  brown  sugar
1  tbs  flaxseed  powder  +  3  tbs  water
2  tbs  milk
2  tsp  vanilla  essence
Little  granulated  sugar
Method:
Grease  a  cookie  sheet,  preheat  the  oven  tp  200 degrees C.
Mix  the  instand  coffee  with  the  hot  water,  keep  aside.
Sieve  the  flour,  baking  powder,  baking  soda  and  salt.  Keep  aside.
Cream  the  butter  and  sugar  till  creamy.
Add  in  the  flaxseed  mixture  and  mix  well.
Add  in  the  milk,  vanilla  essence  and  the  coffee  mixture.
Add  in  the  flour  and  mix  it  to  a  nice  dough.
Add  little  milk  if  your  dough  is  very  stiff.
Make  small  balls  with  the  dough.  Dip  it  in  the  sugar.
Place  it  on  the  greased  tray,  press  down  with  a  fork.
Do  same  to  the  rest  of  the  dough.
Bake  for  about  15  to  20  minutes.
Transfer  to  a  cooling  rack,  after  cooled,  store  in  an  airtight  container.

nice cookies.  tried instant halwa yesterday. came out very nicely. nobody knew that it was made out of cornflour. texture was too good. very easy to prepare. name is exactly perfect. In 5 min u can prepare. ghee is also very less. thanks for sharing a nice receipe kugan.

It's a very spongy cake and very tasty without any icing... adhaan try pannalaamnu ninaichen... google gave me some results... but adhellam namma KK recipes pola foolproofaa irukumanu theriyalai... BTW, I'm not sure what the bakery has named it but I've decoded it to be a cake made using some orange fizzy drink... anna says it's orange cake... my tastebuds say it's fanta cake...;)

Milk cake  without eggs
 
 Dev ,neenga ethir pakara cake idhuvanu ennkau theriyala.But this cake is really very yummy without icing as well as it has a very nice orange flavour
Ingredients 
     2 1/2 cups all-purpose flour
     2 teaspoons baking powder
     1 teaspoon baking soda     
     1 can sweetened condensed milk    (400 ml)  
     1 cup orange juice     (Fresh)
     2 teaspoons vanilla extract
     1 cup melted butter
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. 
Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan. 
Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. 
I have tired this several times,and it was a hit always.Try and see !

Aarthii, thanks a lot for the recipe... senju paarkiren for sure... I make an orange cake using whole orange(with skin n all)... but adhu with egg version...will try ur version of orange cake too...:)

Dev, Aarthi and others...on the same lines I have loved PIneapple cake that is available in Nilgiris in Bangalore. I love it a lot. Can anyone of you post the recipe for Pineapple cake. That will be great.
The one that I have had ..has a nice juicy taste as it melts into the mouth.

nithishri, pineapple enga veetu pakkam etti kuda paarkadhu as I'm allergic to tht fruit... even a tiny bite will spoil my whole day... so pineapple recipes edhum theriyaadhu...sorry...

Aarthii, forgot to mention in the soup recipe... If u are not making a cream of mushroom soup, u can add some corn-flour mixed in water to the cooked mushroom soup and let boil for a few mins... u can omit this step if u want a light,clear soup...

Well  I  got  a  recipe  from  my  friend  for  the  pineapple  cake.
We  it  has  to  be  a  vegetarian  for  I  have  to  try it  before  giving  you  the  recipe.
Well  I  tried  and  it  came  out  nice,  but  not  that  smooth,  but  very  tasty.
I  will  post  the  recipe  with  pictures.

Well  you  can  add  milo,  cocoa    or  any  strong  flavouring.
You  can  even  add  little  ginger  juice,  little  ginger  paste  and  make  it  into  ginger  cookies.

  EGGLESS    PINEAPPLE  CAKE
Ingredients:
½  cup  butter
¾  cup  sugar
¾  cup  milk
2  cups  all purpose  flour
2  tsp  baking  powder
1  tsp  baking  soda
¼  tsp  salt
1  cup  finely  chopped  pineapple  pieces
1  tsp  pineapple   essence
2  tbs  pineapple  juice
Method:
Preheat  the  oven  to  160 degrees  C.
Grease  a  cake  pan  and  line  with  parchment  paper.
Sieve  together  the  flour,  baking  powder,  soda  and  salt.
In  a  bowl,  whisk  together  the  butter  and  sugar  till  creamy.
Now  add  in  the  milk  and  whish  again.
Now  add in  the  flour  and  gently  fold  in  everything.
Lastly  add  in  the  pineapple  essence  and  the  pineapple  pieces.
Fold  again,  now  pour  the  mixture  into  the  greased  tin.
Bake  for  about  30  minutes,  or  when  fully  cooked.
Cool  for  few  minutes,  transfer  the  cake  on  to  a  plate.
Brush  the  top  of  the  cake  with  the  pineapple  juice,  while  still  hot.
Let  it  cool  before  slicing  the  cake.

O.K  friends,  while  in  Singapore  we  had  iddli  for  breakfast.
The  sambar  was  so  super,  when  we  asked  he  said  "this  is  our  udipi  sambar"
I  bribed  the  waiter  and  got  the  recipe  from  him.  Here  is  the  recipe.  Kugan
  SINGAPORE   UDIPI  SAMBAR
Ingredients:
1  tbs  oil
Little  asafoetida 
1  tsp  mustard  seeds
1  tsp  urad  dal
1  green  chillie,  slit  into  4  and  cut  across
2  sprigs  curry  leaves
10  shallots  peeled,  whole
2  drumsticks,  cut  into  3 inches  in  length
¼  tsp  tumeric  powder
½  cup  of  water
1  lime  sized  ball  of  tamarind,  soaked  in  1  cup  of  water
1  tsp  jaggery
Salt  to  taste
1 ½  cups  of  water
½  cup  toor  dal  cooked  in  3  cups  of  water  and  mashed  well.
Roast    and  grind to a  paste:
1  tsp  oil
1 ½  tsp  coriander  seeds
6  dried  red  chillies
½  tsp  fenugreek  seeds
½  tsp  urad  dal
2  tbs  coconut  grated
1  sprig  curry  leaves
Little  cut  coriander  leaves.
Method:
Heat  a  pot  with  the  oil,  add  in  the  tempering  ingredients.
Add  in  the  whole  shallots,  saute  for  a  minute,  add  in  the  drumsticks.
Add  in  the  water,  tumeric  powder   and  cook  till  just  tender.
Pour  in  the  tamarind   pulp,  salt  to  taste  and  jaggery.
Add  in  the  water,  lower  the  flame  and  simmer  for  about  10  minutes.
Add  in  the  cooked  mashed  toor  dal,  and  the   masala  paste.
Simmer  for  another  5  minutes.  Add  more  water  if  you  find  the  sambar  very  thick.
Boil  for  few  minutes  and  remove.  Garnish  with  cut  coriander  leaves.

yes K...fanta cake from madurai jayaram bakery... cylindrical shapela butter paperla roll panni irukkum andha cake...  There is also another yummy cake from the same bakery... it's a banana cake with some nut(in a coarse powder form) in it I guess... adhu textureye diffaa irukkum... not like our usual banana cake... they bake it directly it in small aluminium foil containers... I love both the cakes and it's a standing instruction from me to buy those whenever anna passes thru madurai...;) I always thought the orange cake is with some orange essence or maaza juice but indha murai thaan I felt there is fanta in it...I'm making a version of fanta cake tonight(hopefully)...fanta illai...I've maaza on hand...

Suvai-nga.. neenga ozhunga andha recipe post pannunga.. athai vittu ippadi sonnal thirupathi poravanga ellam thiruchanur pogaama vandhuduvaanga :)  ( he he.. andha laddu konjam maavaa irukkudhu.. boondhi-yai mai pola araichu senjirupangalo ? )
