Hi guys, haven't been coming here for quite some time. How's everyone? Just noticed the huge amount of recipes posted since the last time I came here. The pictures look really tempting :slurp: How I wish we have the technology as in Charlie & the Chocolate factory- where you can just grab the food from the screen and eat them too
K sis, the carrot cake and tomato subji look super yummy and easy. I'll try out the carrot cake this weekend and let you know the results :-D Btw, if I need to put the eggs, when and how many do I have to put in the batter?

Well my friends a little tips to check your cakes:-D
TIPS TO CHECK FOR CAKES.
Set a timer for 5 minutes less than the time given in the recipe.
If the cake is not done return to the oven to finish baking.
WHEN THE CAKE IS DONE:
A fully baked cake will spring back when touched in the center.
The cake also draws away from the side of the pan.
A cake tester or a toothpick inserted in the center comes out clean.
The fresh aroma of butter and sugar wafting out of the oven, signals
you to check the cake, so trust your nose.
When you remove the cake from the oven, the structure is set.
But the structure will be fragile. So let the cake stand in the pan
on a rack for about 10 to 15 minutes.
Then run a knife around the edge of the cake.
Then place the rack over the pan and invert cake onto the rack.
Let the cake cool completely.

Friends, there are many ways to cook brinjals. This is the Malaysian style.
You can even cook chicken this way. Only thing is that, you have to marinate the chicken in ginger and garlic paste, then deep fry it before , doing it the way the brinjals are done. Thanks, Kugan98.
BRINJALS IN SOY SAUCE
Ingredients:
500 grms long purple brinjals
50 grms big onions sliced
20 grms garlic sliced
10 grms ginger cut into match sticks
3 green chillies, slit 4 and cut across
2 red chillies, slit 4 and cut across
2 tsp soy sauce
1 tsp thick soy sauce
1 tsp vinegar
¼ cup water
  A pinch of sugar
A pinch of salt
Oil
Method:
Slit the brinjal into 4, then cut into 6cm in length.
Heat oil in a non-stick pan and shallow fry the cut brinjals.
Remove when the brinjals are light brown in colour.
Heat little oil in the same pan, add in the onions, garlic,
ginger, green and red chillies. Sauté well.
Now add in the thick soy sauce, thin soy sauce, vinegar, salt
sugar, and the 1/4 cup of water. Let it come to a boil.
Now add in the fried brinjals and mix well.
Remove and serve with rice.

Thanks Dev, for your nice post. Glad that you enjoyed the jigar thanda.
Why did you not tell me that you do not get sabja seeds in India?:banghead:
I could have brought for you some.
Dev, as for the brinjal ka salan and tomato ka salan.
I normally will cut the long brinjal into thick strips.
The correct method is to slit into 4 a small brinjal. I feel the gravy will not go into the brinjal to make it tasty. Anyway I have done both methods.
I will post the recipe for you soon, also the tomato ka salan.
Thanks and take care, Kugan98

There are many ways to do this dish. This is how I do.
You can use whole small brinjals, cut into four but with the stalk intact.
I usually make the gravy a bit thinner when I use whole brinjals.
I am posting both the pictures for you to see. Thanks, Kugan98
BRINJAL KA SALAN
250 grms brinjals cut into thick strips
2 onions chopped
1 tsp ginger paste
1 tsp garlic paste
1 tsp chillie powder
1 sprig curry leaves
1 green chillie cut into strips
½ cup thick tamarind juice from lime sized ball.
To Temper:
3 tbs oil
½ tsp fenugreek seeds
¼ tsp cumin seeds
¼ tsp mustard seeds
¼ tsp aniseeds
A pinch of ajwain seeds
To Roast And Grind:
1 tsp coriander seeds
1 tsp sesame seeds
2 tbs grated coconut
1 tbs of ground nuts.
Method:
Cut the brinjals into thick strips. Deep fry for about 5 minutes.
Remove and keep aside.
Heat oil in a wok, add in the tempering one by one.
Fry them for a minute, add in the curry leaves.
Now add in the chopped onions and sauté well.
When the onions turn limp, add in the ginger, garlic paste.
Add also the salt and chillie powder, green chillie and fry well.
Now add in the tamarind juice and cook well till the raw smell goes.
Add in the ground paste and fry for about 4 minutes.
Now add in the fried brinjals, and little water to form thick gravy.
Simmer for about 5 minutes, remove and serve.

Dev, I am posting the tomato ka salan recipe for you.
It was taught to me by a North Indian aunty, living near by.
A bit trouble to make, but the taste is yummy.
If you find it troublesome, you can just cut the tomatoes and add.
Any way try it out Dev. Thanks, Kugan98

KEERAI RASAM OR SOUP
Ingredients:
(A)
½ cup too dal soaked
250 grms seeru keerai or molai keerai cut into pieces.
4 garlic pips
6 shallots
2 tomatoes chopped
½ tsp turmeric powder
Little salt to taste
2 green chillies slit into 4
½   tsp  cumin  seeds }
½ tsp black pepper } both ground into coarse powder

1 sprig curry leaves
Lime juice to taste
1 tsp oil
½ tsp cumin seeds
2 pinches of asafoetida powder
Method:
You can either put all the ingredients of (A) and pressure cook for
2 whistles, or boil the toor dall in a pot, add all the other ingredient
and cook the vegetables till done.
When cool, use a mathu and mash it up. Or use the whipper blade
And grind it to a coarse paste. NOT FINE.
Now add the ground ingredients into a pot.
Add enough water to make rasam. Add in the green chillies
salt, the coarsely ground pepper and cumin seeds.
Coriander leaves, and curry leaves. Let it come to a nice boil.
Taste for salt, off the stove and add in lime juice to taste.
Lastly add the oil in a pan, add in the asafoetida powder
and the cumin seeds, let it splutter and pour it on the keerai rasam.

1 tsp coriander powder
1 tsp red chillie powder
A pinch of turmeric powder
1 tsp tamarind paste mixed with ½ cup of water
½ tsp sugar
Salt to taste
To Roast And Grind:
2 tbs sesame seeds
1 tbs of grated coconut

Keep them aside.
Heat oil in a flat non stick pan. Add in the cumin seeds, cloves,

When the spices splutter, add in the chopped onions. Sauté well.

Now add in the turmeric powder, cumin powder, coriander powder
and the red chillie powder. Keep stirring it for about 5 minutes.

Now add in the ground paste, tamarind juice, sugar and salt.
Cook for about 5 minutes stirring all the time.
Once the gravy boils, place the tomato shells in the pan. Fill the tomatoes
with the gravy. Allow the tomatoes to be cooked with the hot gravy.

Brush an 8 inch pan with the 1 tbs butter.
Sprinkle with 1 tbs of Demerara sugar all over it.
In a small bowl, put the custard powder and mix with ¼ cup of milk.

I'll ask around and let u know... hmmmm... there is a small shop in RS puram(D.B road-almost the end) that sells all kinds of arts n crafts stuffs... It's called "Bombay novelties"... if ur friend gets a chance to go there, just ask her to enquire in that shop... they might know better about these classes...

Dear Aarthii, Dev and NM. Thanks for your nice posts.
Friends usually the end of March and beginning of April are
very busy days for me. Have to bake many cakes and cook for prayers.
31st March was my co-sister's wedding anniversary.
Had to bake a fruit cake as she likes it.
1st April prayer day, had to cook and for tea made chocolate cake curry puffs and jelly.
3rd April is Aishu's birthday she wants a cake with barbie doll image.
4th April is Kugan's birthday, and my worker's birthday.
So still baking and icing is not over yet.
I will post the fruit cake and chocolate cake first.

Dear friends, we always like to avoid this vegetable because of its bitterness.
I normally cook this at least twice a week in my house.

Try it friends, Kugan98

1 tsp oil
To Roast In Oil And Grind:
3 onions sliced
5 tomatoes sliced
4 green chillies sliced
3 pips garlic sliced

Kugan, I went to a party, and we were served thick noodle soup.
The thing was the noodles were fried crisp and thick sauce was poured on top. The sauce had sliced carrots, beans cabbage and things.
The soup tasted a bit sour, sweet and hot.
Do you know the recipe for this dish. Sorry I did not catch the name, but it sounded like suey or something.:confused2: Sorry Kugan, but I really loved the dish.

Gulab jamun, here is the recipe that you wanted.
Cook and enjoy. Kugan98
CHOP SUEY NOODLE
Ingredients:
400 grms dried noodles
Little salt
1 tsp oil
Oil for frying
2 tbs corn flour
¼ cup water
2 tbs of oil
1 inch piece ginger chopped
4 pips garlic chopped
1 cup onion sliced
¼ cup green capsicum, cut into thin strips
¼ cup carrots cut into thin strips
¼ cup French beans cut into strips
¼ cup cabbage shredded
¼ cup cauliflower florets
100 grms tofu cut into strips and fried
4 tbs tomato sauce
2 tbs chillie sauce
1 tsp soy sauce
1 tbs vinegar
1 tsp sugar
¼ tsp chillie powder
½ tsp white pepper powder
1 cup vegetable stock
Salt to taste
Method:
In a pot, add sufficient water, little salt and 1 tsp oil.
Bring to a boil on high heat. do not over cook the noodles.
Remove and drain at once and let it cool.
Divide the noodles into 4 parts. Shape them like a nest.
Heat oil in a wok, deep fry until crisp. Remove to a kitchen paper.
Dissolve the corn flour in the ¼ cup of water. Keep aside.
Heat the 2 tbs of oil in a wok, add in the chopped garlic and ginger.
Sauté for a minute, add in the sliced onions, sauté until slightly brown.
Add in all the vegetables except the tofu.
Stir fry for two minutes or until the veges are just cooked.
The vegetables should retain the crispness.
Now add in the pepper powder, salt, and sugar. Add in also all
the sauces, chillie powder. Pour in the vegetable stock.
Bring to a boil, reduce the heat and stir in the cornstarch solution.
Simmer for about 2 minutes until it thickens to a sauce consistency.
Taste for sweet, sour and heat.
Add in the fried tofu, stir well and remove.
Arrange 1 part of the noodle nest in a plate. Pour some prepared
sauce on top of the noodle nest. Serve immediately.
NOTE: Non –Vegetarians can add some boneless chicken strips,
As soon as the onions are slightly brown.
You can use chicken stock instead of vegetable stock.
Even you can add any vegetables of your choice.

Friends, I have made set dosai, not heard of set appams.
This is the contribution of Sumi. Tried and it turned out very yummy.
The little sweet taste, and the coconut chutney combo is superb.
Thanks Sumi,:-D good for breakfast or evening tiffin. Kugan98
SET APAMS
Ingredients:
1 cup raw rice
½ cup aval (beaten rice )
1 cup curds
4 tsp jiggery
1 cup of water.
4 tbs grated coconut
Little oil
Salt to taste
Method:
Soak the rice for about 5 hours. Drain
Now add the aval, curds, 1 cup of water, jiggery and salt.
Use a mixer and grind to a thick smooth paste.
Cover and keep over night.
OR you can grind in the morning and cook for the evening.
Now add in the grated coconut, and add water
if the batter is very thick.
Lightly grease a dosai kal. Pour 1 laddle of the batter on the kal.
Do not spread the batter, cover with a lid and cook on medium heat,
till the lower side is light brown. Remove it.
Repeat the same with the rest of the batter.
Serve in a set of two appams with coconut chutney.
The taste is really yummy.
Can be served for breakfast or evening tiffin.

Suvai, thanks thanks for your beautiful comments and compliments.
Its so nice to read your comments, just like I had a full meal.
I am soooo happy that your cake turned out well.:pink::pink:
Suvai, I am not good at browsing like our Dev. ( Neengalum browse pannrathil oru kilaadi thaan.) I do not have the time for that.
I asked my Malay friend as we have a Malay kuih called bengkang.
She was the one who told me about this Phlipino dessert.
Well I sent an SOS to my aunt and got the answer for your veeveekam: Not the same name, but the same product.
Will be posting the recipes soon. Since I called her she gave me a bottle gourd kutoo made with urad dal. Ithu eppadi irukku?
Thanks Suvai, you really make my day. Thanks for the enjoyment that you give me. Thanks and take care, Kugan98

My friends, if we want a dipping chillie sauce, we will buy it at once from the super market. Why not we make our own? May be hard work, or we will think it would not be tasty as the store bought one.
Try this sauce and see. Thanks, Kugan98
GARLIC CHILLIE SWEET SAUCE
Ingredients:
200 grms fresh red chillies
7 cloves of garlic chopped very finely
700 ml water
4 tbs sugar or to taste
1 ½ tsp salt or to taste
2 pieces dried tamarind peel (asam keeping)
OR you can use kokum
Method:
Wash the red chillies, slice them.
Put them in a blender and blend till fine.
Use some water from the 700 ml water.
Mix the finely blended chillie paste, with the water,
chopped garlic, tamarind peel, sugar and salt.
Put the mixture in a pot, and simmer on the stove,
for about 40 minutes on a very slow fire.
Stir from time to time and adjust the seasonings.
Cook till the sauce becomes thick.
Remove and cool, remove the tamarind pieces.
Pour into a glass container.
Store in a fridge and serve as a dipping sauce.
NOTE: If you cannot get the tamarind pieces, use little
vinegar, to your sour taste.
If you want a very smooth sauce, you pour the cooked hot
sauce through a sieve, and then cool and store.

Dear Suvai, thanks for your nice post.
Congrats on the success of your cake.
Well when the cake is still hot, the outer skin will be little crisp.
The next day the the whole cake will be soft.
The measurement for 400ml condensed milk is 1 3/4 cups.
I thought you will get a milk tin with 400 ml condensed milk.
As for the tamarind piece, I am posting the picture.
You might get it in the Asian market, or just use vinegar.
I am sure you know about the kokum we get in Kerala.

Hi Kugan sis,

I was planning to bake the carrot cake last weekend. But the moment I saw your chocolate cake recipe, I was totally tempted to try it. Managed to bake the chocolate cake last Sunday. The cake turned out to be pretty good! The only mistake I did was to put a thick chocolate icing on top of the cake. The cake became too sweet. But once I left the cake in the room temperature, the icing began to melt and everyone started eating the icing instead of the cake

I'm still a disaster when it comes to cooking but at least I'm gaining confidence in the baking department now. I'm planning to try out the carrot cake this weekend. Will let you know the results soon :-D

I baked this eggless cashew nut banana muffins for the kids.
CASHEW NUT BANANA MUFFIN
Ingredients:
¾ cup all purpose flour
¼ cup chopped cashew nuts
½ cup sugar
¼ cup vegetable oil
2 big bananas
½ tsp baking powder
½ tsp baking soda
½ tsp vanilla essence
Method:
Preheat the oven to 160 degrees C for 10 minutes
Peel the bananas and mash them nicely with a masher.
Add oil, sugar, vanilla essence to the mashed banana.
Sieve together the flour, baking powder and baking soda.
Put the flour mixture in a bowl, make a dent and pour in
the banana mixture. Fold gently the flour, do not over mix.
Now add in ¾ of the chopped cashew into the mixture.
Reserve the ¼ for sprinkling on the top.
Now line a tray with muffin cups.
Spoon the batter in it up to ¾ of the cup.
Must leave room for the muffins to rise.
Sprinkle some cashew nuts over it.
Bake for about 30 minutes or until the cake tester inserted
comes out clean, and the top turns golden.
Remove and enjoy.

Tamil Puthandu Vazthukal

The month of Chittrai (April - May) embarks the time of festivities in Tamil Nadu. Tamil's New Year Day " Puthandu" is celebrated on April 13 or 14 every year (according to the Gregorian Calender). People greet each other "Puthandu Vazthukal" which means Happy New Year. This auspicious day is also popular as Varusha Pirappuv. As per the Hindu mthyical legends, Lord Brahma started creation of the universe.
Highlights of the Festival
New Year's day is a gala time for all Tamils. The main focus is on the food eaten on the day. 'Maanga Pachadi' is the pulse of the festival. It is a dish made of raw mangoes, jaggery, neem flowers which tastes sweet, salt, sour and bitter. This entails different colors of life. It depicts that life has to face everything from success to defeat. At the time of New Year festivities, a grand Car Festival also takes place at Tiruvadamarudur near Kumbakonam. At some places, Chitthirai festival is also celebrated. It is said on this day, Goddess Meenakshi got married to Lord Sundareswarar.
Puthandu Rituals
In Tamil Nadu, people follow some strict rituals in a belief to ensure well-being and prosperity of their families. The most popular tradition is to view Kanni at dawn with a hope to bring good luck. People start the day by watching some auspicious items like gold and silver jewelery, betel leaves, nuts, fruits and vegetables, flowers, raw rice and coconuts. Following the rituals, Tamils take bath, wear fresh clothes and visit the temples to pray for success in life. After this, Panchangam (almanac) is read.
Many people get their houses painted to mark the renewal of life. Ladies adorn their houses with fresh mango leaves and Kolam (rangoli)designs. Sometimes, a decorated lamp kuthuvillakku is placed in the center of colorful Kolam to bring light to the house.
People in the advent of merrymaking and feasting exchange gifts with each other. Children are highly excited at the time of Puthandu as they receive small gifts or cash from their parents and relatives.

P.S Tamby, Vazhai Pazha Paniyaram in our country is called Kuih Kodok.
It is a very common paniyaram in our country
In our country we do not add cardamom powder,
I will give you the recipe as per Indian style:-D
Thanks and take care, Kugan98
VAAZHAI PAZHA PANIYARAM
Ingredients:
1 ½ cups all purpose flour
1 big banana
½ cup sugar
¼ cup water
¼ tsp baking powder
A pinch of cardamom powder
Oil for deep frying
Method:
Sieve the flour with the baking powder.
Now put the flour, sugar, cardamom powder in a bowl.
Mash the banana gently with your hand to a coarse texture.
Now add the mashed banana to the flour.
Now add the water little by little and mix to get a thick batter.
The batter should be like idlli batter.
Now heat the oil in a pan.
Now drop spoonfuls of the batter into the oil.
Cook on medium heat so that the paniyarm is cooked through.
Flip them once and cook on both sides.
Remove and place them on paper towel.
Serve with hot steaming tea.

inge kg classes fees + transportation+ 1 snack will come to around 40-50k P.A... from 1st it'll be around 85-95k(incl tuition, bus, lunch n snacks, sports n arts, yoga etc) ... for KG section they don't teach swimming, yoga...( they do have otehr sports, music n dance etc...)also no lunch, timing kammi... so fees konjam kammi...This is the fee structure in the new CBSE schools in our locality... but I heard there are also good skols(cbse) which charge 1/2 of this fee and a small amt as one-time donation...... those are too far off from our place... so never bothered to enquire abt those... There are also some international skols which charge 1 lakh+ per annum from KG... they follow International Baccalaureate (IB) programme, and/or Cambridge curriculum...so the premium...
skol timing is usually 8.30 or 9 to 12 or 12.30 for KG ... some skols till 2 pm but heard they are also changing timings from this yr... maththa classes will be until 3 or 3.30pm... Most skols offer to take care of KG kids until 3 or 4 pm...no extra charge... great for working parents...also in the skol we have put Sahana in, saturdays also they work... but it's a whole day playday... no books, nothing... most other skols , saturdays are off for KG classes...

Selviem this is how you cook basic couscous.
1 cup couscous
1/4 tsp ghee or oil
1 1/4 cups of water
a pinch of salt.
Method;
Heat water in a small pan, when it comes to boil,
add the salt and ghee.
add also the couscous and cook on a very slow fire
for few minutes.
Turn off the heat, cover the pan nicely, let it stand to
cool slightly.
Fluff up the couscous and spread on a plate.
Selviem now you can add grated carrots, thinly cut capscium,
sliced onions, chopped zucchini, chopped coriander leaves,
lemon juice, and any vege of your choice and make a salad.
For kitchadi you add the necessary things and cook like upma.

F ew pips of smashed garlic.
    Florets of cauliflower and broccoli.
In a baking dish, I spread out the veges.
I drizzled 1 tbs of olive oil.
sprinkled with pepper power, and fine salt.
    Also sprinkled little oregano.
Grilled for about 15 minutes, till lightly brown.
Removed and sprinkled with coriander leaves.
    Served hot to the children.
I should not have used the sliced tomatoes.
Cherry tomatoes would have been better.

Toasted Vegetarian Paninis (kugan)
Here is a recipe, which my sis-in-law used to do in US.
Sorry I do not have a panini maker.
    GRILLED VEGETARIAN PANINIS
    INGREDIENTS:
    Balsamic vinaigrette
1 long eggplant, sliced lengthwise into 1/4″ strips
1 zucchini, sliced lengthwise into 1/4″ strips
1 yellow onion, sliced into 1/4″ rings
    Extra-virgin olive oil
    4 slices of bread
    Hummus
    2 roasted red peppers
    4 slices cheese
    Salt and pepper
    DIRECTIONS:
Place eggplant and zucchini in a plastic bag with enough balsamic vinaigrette to coat the vegetables. Seal and marinate in the refrigerator for 1 hour.
Preheat panini grill to medium-high heat (375 degrees). Brush olive oil on both sides of onions, season with salt and pepper and place on the grill. Remove eggplant and zucchini from marinade (discard remaining marinade) and place onto the grill as well. Close the lid and grill vegetables for 3-4 minutes until cooked through.
Brush olive oil onto the outer sides of each slice of the bread. On the bottom bread slices (oil side down), spread a layer of hummus. Top with slices of zucchini, eggplant, red pepper, onion, cheese and top bread slice (oil side up).
Grill 3-4 minutes until cheese is melted and golden grill marks appear. Serve immediately and enjoy!

Dev, you are great, posted so many recipes of Kugan. I am sure Kugan will be very happy when she comes back.
Yes Dev, so difficult to trace any recipes that we want. Kugan takes so much of trouble to cook and post with pictures. I do not know why the admin people are not doing anything. Please Dev, do something.
Kugan, they serve dal in big hotels with rotis, do you know how to make?
Also I tasted a mushroom vermicillie soup in a hotel. Please post the recipes if you have. Thanks and come back soon. We all miss you. Gulabjamun.

GJ, here's a dhal recipe which u might like...
Here is a Parsi dish called dhansak which is a very healthy & tasty curry tht goes well with rotis as well as rice...
Dhansak
1. cook 1/2 cup thuvar dhal+ 1/4 cup yellow moong + 1/4 cup channa dhal + 1/4 kg yellow pumpkin cut into big pieces + asafoetida+turmeric pwd for 3-4 whistles...
2. Grind 7 red chillies,1 tsp pepper, 1" cinnamon, 2 cardamom pods, 1 tsp each cumin & coriander seeds , 6-7 pods garlic & 1' ginger to a paste. In case u want to simplify the process, u can make a dry masala by grinding the dry masalas alone & gin-gar paste can be made when req. Increase the dry spice measures in that case.
3. Heat oil in a pan. Add 1 onion chopped & fry till brownish. Add in the ground paste & fry till raw smell diappears & the masala becomes flavourful... Add 2 chopped tomatoes & a small bunch of clean greens(u can use any one or a mix of these- mulai keerai, kaatu keerai, arai keerai, siru keerai, spinach , methi). If u r using methi, u neednt chop it. cook till the tomato breaksup & becomes mushy.
4. Add in the dhal mixture, salt & let it boil for 3-4 mins. Add water if req. The consistency of the dhal will be bit thick. Dosa batter consistency. Done.
Variation: u can use a mix of tomato & tamarind fr sourness or even tamarind alone. But i like mine with only tomatoes.
U can use masoor dhal or green moong or any of ur fav dhal tht'll cook within 3-4 whistles.
U can use any combination of vegs u like. brinjal, potato, carrot, raw mango etc can be used. But I ike the pumpkin dhansak...

Some more dhals that go well with rotis...
Dhal tadka:
Yellow moong dhal(roasted until slightly golden) and cooked just until done. make sure it is not all mashedup... just 1 whstle in thw cooker will do.
Heat oil. add jeera, green chillies and chopped onion. saute until golden.
Add gin-gar(paste or chopped very fine). saute well.
Add in chilly pwd, turmeric pwd and kitchen king masala. Saute for few secs. Don't burn the masala.
Add in tomatoes. Saute until pulpy.
Add the dhal, salt and let it come to a boil. this dish should be thick.
Garnish with cori leaves.
Methi dhal tadka:
Use dried methi leaves aka kasuri methi(crushed) -abt 2 tbsp for a cup of dhal. Add it along with tomatoes.
Garnish with ginger strips for this dhal.
Veg dhal:
In a pressure cooker, put any 1 veg(of choice-usually carrot, pumpkin, bottlegourd, greens are used) , y.moong dhal, onion n tomatoes chopped,gin-gar chopped, turmeric pwd, chilly pwd and cook till done(1 whistle). Let the steam settle and then mash the mixture roughly.
Make a tadka using jeera, chillies, curry leaves. take off flame and add KK masala. mix and pour into the dhal. Add salt and water(if req) and let it boil once. Done!!! IMO,this dhal tastes good only with KK masala.
Note:
Use garam masala if u don't have kitch king masala. But KK masala gives a flavour close to the restaurant ones.
U can use masoor dhal insted of moong or use a combi of both.
Use ghee instead of oil.

Well I told about the urad dal keerai recipe, before I left for India.
It is a very healthy recipe, as you need not use oil at all.
This recipe was given to me by my aunt.
Thanks and take care, Kugan98
KEERAI WITH URAD DAL
Ingredients:
300 grms spinach washed and chopped
100 grms small onions peeled whole
3 tomatoes cut into slices
5 green chillies sliced
Salt to taste
1 cup tamarind juice, from a lime sized tamarind
2 cups of water
2 tbs urad dal podi
To make the urad dal podi:
3 tbs whole urad dal
¼ tsp black pepper
1 sprig curry leaves.
Dry roast the 3 ingredients and grind into powder
Method:
Put a pot on the fire, add in 3 cups of the water.
Add in the urad dal podi and mix well.
Add in the sliced green chillies, the small onions.
Also add in the tamarind water. Let it boil well.

Moreover she has a family to look after.

Aarthii, I think you have asked for zucchini kurma.
Here is the recipe, Thanks, Kugan98
CREAMY ZUCCHINI KURMA
Ingredients:
1 zucchini, slit across and cut into thick pieces
5 cashew nuts ground to paste
1 cup coconut milk
2 tbs thick curds, well beaten
2 onions chopped
1 red tomato chopped
3 green chillies slit across
½ tsp red chillie powder
2 tsp coriander powder
¼ tsp turmeric powder
½ tsp ginger paste
½ tsp garlic paste
¼ tsp pepper powder
½ cup of water
Salt to taste
3 tbs ghee or oil
¼ tsp cumin seeds
¼ tsp aniseeds
1 bay leaf
1 stick cinnamon
2 cardamom pods
1 sprig curry leaves
Little coriander leaves
Little lime juice
Method:
Heat a pot with the ghee, add in the seasonings.
Let them splutter, add in the chopped onions.
Sauté well till it browns a bit. Add in the green chillies.
Mix well, now add in the ginger garlic paste.
Sauté well, add in the chopped tomatoes and cook well till mushy.
Now add in the zucchini pieces with turmeric powder.
Cover and cook on low flame for about 5 minutes.
Now add in the chillie , coriander powder and salt.
Fry for a minute.
Now add in the curds mixed with the cashew paste.
Also add in the coconut milk and simmer for 5 minutes.
If the gravy is very thick, add little water to dilute the gravy.
Add in the pepper powder, mix well. Remove from the stove.
Add little lime juice to taste, garnish with the coriander leaves.
Serve with rice, or chapathi.
