My dear friends, Rubenee thanks every one who praised her cooking.
Dev, NOV anneh, Selviem, Suvai, Lathz , Rose, Gulabjamun and Roshan.
We do not allow her much in the kitchen as she is preparing for her,
Form five examinations. She hopes to become a good doctor and a good cook.:-D
She asks for all your blessings for her coming exams.

Well all are normal dishes, nothing new, except for the payasam,
I add jack fruit pieces, and the aroma was so great.
Menu:
White rice, ghee paruppu kadayal.
Rasam , tayir, pusini sambar.
Payasam, appalam urad and channa dal vadais.
carrot tayir patchadi, mint togayal mango chutney.
murugai keerai poriyal, cabbage kutoo, vendi motchai mandi,
snake gourd kurma, potato spicy halwa.

Friends, yesterday my aunt wanted me to make gobi manchurian and I was literally blinking I had no tomato sauce or soy sauce. She told me that she has a method which eliminates using of store brought sauces. I tried her procedure and it turned yummy.
Here is the recipe
Gobi manchurian with home made sauce.
Table (A)
Cornflour - 2 tbsp
Maida flour - 5tbsp
Rice flour - 1 tbsp
Water as required.
Salt as required.
Pepper powder - 1 tsp
Ginger garlic paste - 1 tbsp
green chillies - 2 finely chopped
Cauliflower florets - 1 medium size
Table (B)
Oil
Onion - 1 medium
Tomato - 2 medium
Spring onions
Garlic pods - 8
Chilly powder - 2 tsp
curry leaves - few springs
Method:
1) Add all the ingredients in table (A) and make a dipping consistency sauce. Deep fry the cauliflowe florets and keep aside
2) Add oil in a kadai. When it is hot. Add the chopped onions and garlic and saute until brown
3) Put the tomatoes and the remaining garlic in blender make a smooth paste. Add chilly powder to the smooth paste. This is the basic home made sauce
4) Pour the sauce into the kadai and cook for few minutes
5) Now toss in the deep fried cauliflower and cook and it absorbs in the sauce.
6) Garnish with spring onions.

Dev, I know one can get Brussel sprouts in U.S.
Do you get it in India.?
It is sooo expensive in Malaysia, that too you can get it in one or two
supermarkets here.
I am posting a simple dish with Brussel sprouts.

STIR FRIED BRUSSEL SPROUTS
Ingredients:
1 tbs oil
½ tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
1 onion finely chopped
2 pips garlic finely minced
½ inch ginger finely minced
½ tsp tumeric powder
2 tsp chillie powder
1 ripe tomato finely chopped
1 tsp tamarind paste
Salt to taste
10 brussel sprouts, cut into quarters
Pepper powder to taste
2 tbs cut coriander leaves.
Method:
Trim the stems of the brussel sprouts.
Remove one or two of the outer leaves.
Cut the brussel sprouts into quarters. Keep them aside.
Heat the oil in a non-stick wok, add in the mustard and cumin seeds.
Let them splutter, add in the curry leaves.
Now add the onion and saute until lightly brown.
Add in the ginger and garlic, saute well.
Now add in the tumeric, and chillie powder.
Stir fry, add in the tomatoes, tamarind paste and salt to taste.
Cook untill the tomato turns mushy,
Add in the brussel sprouts, give a cood stir.
Sprinkle little water, mix well, cover and cook on low sim.
Stir in between, see that the brussel sprouts are cooked.
And covered with the gravy. Add in the pepper powder.
Give a stir, garnish with the cut coriander leaves.

Brussels sprouts are extremley healthy(highi in Iron and Anti oxidents), we just boil them and eat it over here, didn't know you can make curry with it :roll:

No probs, Broccoli / Spinach/Parsley are also extremely high in Iron. I suggest you boil broccoli / sprouts and eat (for healthy reasons) rather than making a curry as most of the vitamins and ant oxidants will be destroyed when you cook them!
Boiled Brussels do taste bitter, if you don’t like that, add some black pepper and some salt (not too much as excessive salt can dehydrate you, increase blood pressure and cause dizziness)

K, we do get brussel sprouts attimes here ...they call it kilai kose...I've tried a simple stir fry with it but din't quite like it...so ippolam vaangurathu illai...

K, eat dates everyday...also gooseberry if u can...I made a batch of gooseberries in brine today... :)
u can also try chawanprash but I'm not sure if u can get good chawanprash there... commercial ones are not tht pure/original... if u can get one from ayurveda medical store, it'll be better...

What I meant was curries, they are hardly healthy :) Except green chillies are supoosed to be good for burning fat :)

Steam cook the brussel sprouts. Make the gravy as usual.
Lastly add in the brussel sprouts, stir fry and remove at once.

You know my problem, I read somewhere that young coconut water is good.
I started taking 1 coconut daily. Recently when I went for my blood test.
The doctor asked me, why is your potassium high? took bananas lot?
I told him, no only young coconut water, he chided me and asked me to stop.
So I feel very scared to take anything now. Everything contains potassium:banghead:

Well friends kara kulambus are also simple matter.
But my relative added a twist to it to make it more tasty.
It was truly yummy. Added cooked moong dal a little in the paste.
Try it out friends, you can make it with vendi also.
Kugan.
BRINJAL KARA KULAMBU
Ingredients:
To Stir Fry And Grind To Paste:
1 tbs gingelly oil
1 big onion sliced
1 tomato cut into big pieces
1 tbs grated coconut
1 tbs sambar powder
½ tsp chillie powder
2 tbs cooked moong dal
1 tbs gingelly oil
½ tsp mustard seeds
1 tbs channa dal
2 red chillies broken
1 sprig curry leaves
½ tsp funugreek seeds
10 shallots cut into halves
2 big brinjals cut into cubes
½ tsp tumeric powder
1 lime size tamarind, make 3 cups of juice
Salt to taste
Method:
Heat the oil in a pan. Add in the onions and saute till translucent.
Add in the tomato pieces, fry till it mashes well.
Add in the grated coconut, sambar powder, chillie powder and moong dal.
Stir fry well and remove. Cool and grind to a paste. Keep aside.
Now heat the 1 tbs oil in a wok, add in the mustard seeds, let it crackle.
Now add in the channa dal, red chillies, curry leaves, funugreek seeds,
and the cut shallots, fry well. add in the cut brinjals and tumeric powder.
Stir fry in the oil till the oil coats the brinjals well.
Now add in the tamarind juice and salt, let it boil in sim, till the brinjals are cooked.
Now mix a cup of water to the ground paste and add it to the gravy.
Let it boil in sim for about 5 minutes. The gravy should be little thick.
Remove and serve with rice or roti.

K, chawanprash is an ayurvedic prep which has some 45 ingre in it...amla is one mail ingre...other being sandalwood,honey, kunkumapoo etc... I guess u'll have to get the approval of an ayurvedic pratictioner before u can take it coz of ur health issues... for a healthy person, it's absolutely safe and a great health tonic...Triphala is also good and it's said that if a person takes it for one whole yr, his health will become so good that he'll live for 100 yrs...one needs to take a diet rich in fat/ghee while taking triphala... If u r interested, just get a copy of this book Sanatan Kriya The Ageless Dimension... it has some indepth analysis on health and ageing... buy it only if u r really really interested... illana u might find it a bit hard to even read thru the book... it's not a light read...
If u can take amla, u can get amla in honey in most medical shops...try it...it's good... I prefer the one in brine...so I prepare my own these days... and I take atleast one a day with curd rice...:slurp:
Thanks for the paal ice tip K... yes, adhu oru azhagiya nila kaalam...;) As it's peak sumemr here, I make one or the other ice candy using fruit juices for the lil one... I've promised paal ice and rose milk ice(her fav) this week... If u have an easy, fool-proof ice-cream recipe, let me know K... with all the power cut problems here and my inexper making ice creams, I an scared of making it...so I take the safer and easier route- kuchchi ice...;)

Friends, this brown sugar sooji cake was made by my relative from India.
O.K the taste was good. Try it out friends. Kugan
BROWN SUGAR SOOJI CAKE
Ingredients:
200 grms sooji , roasted on medium heat.
1 tsp baking powder
2 tbs almond silvers
1 1/4 cups of milk
120 grms dark brown sugar
100 grms blended banana
2 tbs oil
2 tbs ghee
1 tsp vanilla essence
Method:
Preheat the oven to 180 degrees C.
Grease and flour a 9 inch cake tin.
Mix the sooji, baking powder, and 1 tbs of the almond silvers.
In a bowl, add in the milk, brown sugar, banana, oil,
ghee and the essence. Mix every thing well.
Now add the milk mixture to the sooji mixture.
Mix well all the ingredients, pour into the greased tin.
Keep aside for about 15 minutes. Sprinkle the 1 tbs of almonds on top.
Now bake the cake for about 40 minutes or till cooked.
Allow to cool before cutting.
NOTE: keeping the mixture aside for 15 minutes is very important.

You can omit the coconut if you do not like.
The moong dal gives the kulambu a very creamy taste.
With nice tamarind taste and karam it is yummy with rice or bread.

You know my problem, I read somewhere that young coconut water is good.
I started taking 1 coconut daily. Recently when I went for my blood test.
The doctor asked me, why is your potassium high? took bananas lot?
I told him, no only young coconut water, he chided me and asked me to stop.
So I feel very scared to take anything now.
High intake of potassium is not a good idea, esp when there is no excercise is involved. An average size banana has around 100 Calories, so unless you are not working out in a GYM, it is better to stay away from such fruits. :)

Dev I too do not like raw eggs in any dish.
This ice cream, the egg yolks are cooked like custard:yes:
So my NOV anneh , Roshan and why not , you too can enjoy.
One more tip, if you can use gelatine, dissolve a 1/4 tsp into the milk.
This keeps the ice cream from melting soooo fast.
Mine will melt very fast, no gelatine.
Also you can use full cream evaporated milk, instead of normal milk.
Chilled evaporated milk when whisked, gives you the volume.
LAST TIP:
Pour the contents in a plastic container and place in the freezer.
Remove the container when you see it is frozen at the edges.
Beat with an electric beater, re- freeze.
Repeat this process two more times.
you have to follow this step strictly to get smooth ice cream

Ingredients:
4 cups full cream milk, chilled
400 grms sweetened condensed milk chilled
2 tbs vanilla extract
Method:
Use a whisk and whisk the 3 ingredients well.
Pour the contents in a plastic container and place in the freezer.
Remove the container when you see it is frozen at the edges.
Beat with an electric beater, re- freeze.
Repeat this process two more times
Then your ice cream is ready.
ICE CREAM WITH EGG YOLKS
Ingredients:
300 ml thick cream
300 ml milk
1 tbs vanilla extract
4 egg yolks
175 grms sugar
Method:
Pour the milk and thick cream in a pan.
Bring to a boil, turn off the heat, keep aside.
Put the egg yolks, sugar and vanilla extract in a bowl.
Use a electric mixer , beat until pale.
Carefully pour the yolk mixture into the pan of milk.
Now cook the mixture over low heat stirring for about 5 minutes,
or until it is slightly thickened, and coats the back of a wooden spoon.
Remove and set aside to to cool, then refrigerate for about 30 minutes.
Pour the contents in a plastic container and place in the freezer.
Remove the container when you see it is frozen at the edges.
Beat with an electric beater, re- freeze.
Repeat this process two more times.
Then your ice cream is ready.
NOTE: You can add cocoa and call it chocolate ice cream.
The same way, any fruit puree, strawberry, and things.
It is up to your imagination, just change the essence according to things added.

I know what you mean :| but try to include 20mins exercise a day, like push ups, sit ups, skipping. Not only is exercise good for your body, it is also good for your mind, as the brain produces a hormone called "Endorphin" which makes you feel good and improves your alertness.

Thanks a lot for the simple icecream recipe and all those tips K... will try it n give u the feedback...I need to buy condensed milk first...we don't use it much and so it's never stocked in the pantry...will have to try the sg/malaysian style tea with condensed milk when I but it this time... the ice cream pic looks perfect k... I have stopped drinking coffee with condensed milk.
I only use little creamer, otherwise I cannot drink coffee:-D
Dev you can even drizzle chocolate syrup on the vanilla ice cream.
Dev, if the ice cream melts, it will become milk again.
If you just freeze it like that, your ice cream will not be creamy.
You have to semi freeze and whisk again.
Then your ice cream will be creamy.

Here is the snake gourd kurma that you requested. Thanks. Kugan
SNAKE GOURD KURMA
Ingredients:
(A)
1 tbs oil
1 inch cinnamon sticks
2 cloves
2 cardamom pods
1 bay leaf
½ tsp aniseeds
1 sprig curry leaves.
2 onions finely chopped
1 tsp ginger paste
1 tsp garlic paste
2 green chillies, chopped
2 tomatoes finely chopped
2 tsp chillie powder
2 tsp coriander powder
¼ tsp tumeric powder
1 tsp kas kas powder
2 tbs finely ground coconut paste
½ cup water
300 grms young snake gourd, cut into semi circles
Salt to taste
Little lime juice
Little chopped coriander leaves, for garnishing
Method:
Heat a wok with the oil, add in (A) the seasonings.
Let them crackle for a minute.
Now add in the chopped onions and saute well for a minute.
Add in the garlic and ginger pastes, green chillies , stir fry for a second.
Add in the tomatoes and cook till mushy.
Now add in the chillie, coriander tumeric, kas-kas,
and coconut paste, stir well for a second.
Add in the ½ cup of water, and enough salt.
Add in also the cut snake gourd pieces.
let it simmer till the veges are cooked.
Remove and add in the lime juice, garnish with the cut coriander leaves.
This dish will be semi thick.

Imm yummy nice snake gourd recipe. I used only to make poriyal and kutoo.
Now this is a new way of cooking snake gourd. I am sure it will be good with chapatti and also rice.

You can have it with chapatti or rice.
Dev you can make shorbert with fruit juices for your little one.
I make mango , watermelon,strawberry, orange type of Popsicles for the children.

Here is the tomato mint chutney. Enjoy, Kugan
TOMATO MINT CHUTNEY
1 tbs oil
½ tbs channa dal
3 dry red chillies cut into pieces
2 shallots cut into pieces
1 small piece of ginger chopped
¼ cup coriander leaves, chopped
¼ cup mint leaves
2 tbs grated coconut (optional )
Salt to taste
4 big red , tomatoes sliced
1 tsp tamarind paste
To Season:
1 tsp oil
½ tsp mustard seeds
½ tsp urad dal
A pinch of asafoetida powder
1 red chillie cut into pieces
1 sprig curry leaves
Method:
Heat the oil in a non-stick pan, add in the channa dal, red chillies and shallots.
Saute nicely, add in the ginger, coriander leaves, mint leaves, and coconut.
Add in enough salt and stir fry for about 2 minutes. Remove.
In the same pan, add in the cut tomatoes, tamarind paste, and cook till it becomes mushy.
Remove when there is no raw smell. Let both cool.
Now first grind the coriander, mint mixture nicely.
Then add in the tomato mixture and grind coarsely.
You can add 2 tbs of water if needed.
Heat the oil in a pan, add in all the seasonings in order.
Pour over the ground chutney. Serve with steaming idlis or dosais.

TOMATO PARUPPU
Ingredients:
1 tbs oil or ghee
½ tsp mustard seeds
½ tsp cumin seeds
¼ tsp asafoetida powder
1 onion chopped
4 pips garlic smashed
½ inch ginger, chopped fine
3 green chillies, slit into 4 and cut across
2 dried red chillies cut into pieces
1 sprig curry leaves
2 big tomatoes cut into chunks
½ tsp coriander powder
¼ tsp cumin powder
¼ tsp tumeric powder
Salt to taste
1 cup toor dal, soaked , cooked and mashed well.
1 cup of water
Little cut coriander leaves, for garnishing
Method:
Heat the ghee or oil in a wok, add in the mustard, cumin and asafoetida.
Now add in the onions, garlic, ginger, green chillies, red chillies and curry leaves.
Stir fry nicely for a minute. Now add in the tomatoes.
Give a good stir, add in coriander, cumin , tumeric and salt.
Fry for about 5 minutes, add in the cooked and mashed dal.
Add in the 1 cup of water, cook on low heat for about 10 minutes.
Remove and garnish with the cut coriander leaves.
Goes well with rice or roti.

Zuchinni always brings Suvai into my mind.:sad:
ZUCCHINI VINDALOO
Ingredients:
To Grind To A Paste:
(A)
2 big onion chopped
1 big tomato chopped
2 tbs grated ginger
2 tbs minced garlic
2 tsp cumin seeds
4 dry red chillies broken into pieces
2 tsp black pepper
1 tsp mustard seeds
½ tsp funugreek seeds
1 cardamom, only seeds
1 small stick of cinnamon
4 tbs vinegar
3 tbs of oil
2 tsp of sugar or to taste
Salt to taste
2 cups of zuchinni split into 4 and cut into slices.
Method:
Grind all the ingredients in (A)
Heat the oil in a non-stick pan.
Add in the ground masala, stir fry well.
Add in the sugar and salt, fry till oil seperates.
Add in the cut zuchinni, stir fry, the zuchinni will leave water.
Do not over cook the zucchini, remove and serve with any pulao.

Only here it is very expensive.
Suvai, you can use lemon juice instead of vinegar.
Vindaloo naale vinegar thaan. You can use with cauliflower, broccoli, or even carrot.
Yes, I too love the tomato mint chutney, it goes well with iddli and dosai.
Suvai, oneh-ondeh is a Malaysian kuih, where we use glutinous flour, or sticky rice flour.
I think I have posted the recipe before. Anyway I will post the picture for you.

Suvai, I had a relative from India last week, you give her any vege and she will cook it in Indian style.
You know the water convolvulus, or we call it the kangkong keerai.
Normally the style is to cook it as a poriyal.
Or the Malaysians cook it with shrimp paste, a very famous Chinese dish.
My relative made it into a kutoo:smokesmirk:

amaaam k....zuchinni inga very cheap....i always felt it had no taste what so every lol....except after making yr recipes it changed my views....i guess....it needs a lot more coaxing with spices & karam....to make it stand out as a vegetable....i like very tender ones that we can use raw in salads...;-)

Suvai here is the pulao recipe for you.

SIMPLE VEGETABLE PULAO
Ingredients:
2 tsp ghee
2 tsp oil
1 inch cinnamon stick
1 cardamom pod
1 bay leaf
2 cloves
1 onion sliced
1 tsp ginger paste
1 tsp garlic paste
1 red tomato puree it
2 green chillies slit across
MIXED VEGES:
5 beans cut into 1 ½ inches in length
1 potato cut into sticks
5 cauliflower florets
½ a carrot cut into sticks
2 tbs of fresh green peas
A pinch of tumeric powder
1 tsp chillie powder
2 tbs mint leaves
Salt to taste
1 cup basmati rice soaked for 10 minutes and drained
2 cups of hot water
2 tsp lemon juice
Little coriander leaves chopped
Method:
Heat the oil and ghee in a wok, add in the cinnamon, cardamom, bay leaf and cloves.
Let them crackle, add in the onions and saute till it turns limp.
Add in the gingerr garlic paste, saute for another minute. Add in the tomato puree.
Add also the green chillies, the mixed vegetables, tumeric, chillie powder,
Mint leaves, salt to taste and the drained basmati rice.
Saute for a minit gently.
Now in a rice cooker, pour 2 cups of boiling hot water.
Add in the sauteed vegetables and rice, cover and cook for 10 minutes.
After it is half cooked, add in the lemon juice, stir the contents gently.
Close and cook till the light goes off.
Your hot steaming pulao is ready. Garnish with coriander leaves.
Serve with zucchini vindaloo

K, ice cream ready aagitte irukku...S had a taste of it just now and said it tastes like arun icecream...;) I made vanilla and chocolate... nalla smootha vanthirukku after whipping it 3 times... Innoru thadavai whip pannalaamnu irukken... S was a very smooth n creamy icecream like the ones we get at boomerang...so next time milk bathila fresh cream use panna poren... Guests who came to my house too always praise the chutney.
Suvai, ondeh-ondeh is a Malay word,which actually means urundai-urundai in Tamil.
It is a sweet vegetarian Malaysian delicacies.
The ingredients are, sticky rice flour, pandan leaves juice, palm sugar and grated coconut.
I have bought the sticky rice flour in the Korean supermarkets in Virginia, or Lottee supermarkets.
I am sure you can get them in Canada. Very simple to make and very tasty.
You can use green colour if you do not get the leaves there.
Also our Indian vellam, instead of the palm sugar.

does this palm sugar have coconut taste? ...i remember....we used to get this sugar that had coconut taste...& they called it palm sugar....not sure if its the one & the same...anyways....try pannaren this urundai the next time i venture out to the korean area...:-)

K, ur pulav looks so good... we make biriyani the same way...we crush/powder the masala stuffs n add... no lemon juice used and we sue seeraga samba rice... our biriyani is very mildly spiced that u'll actually call it pulav n not biriyani...;)

Yes Suvai the palm sugar is from the palm tree.
You can even use karuppati if you can get.
I think vellam would be very close.

You can omit the lime juice if you do not like it.
Dev, here we not get seeraga samba arisi.
I used to buy back about 2 kilos every time I come to India.
Do not worry Dev, sticky rice flour and palm sugar will come to your house.

ONDEH-ONDEH
Ingredients:
For the dough
200 gm glutinous rice flour
50 ml pandan juice
90 ml - 110 ml warm water
few drops of green colouring
For the filling
150 gms palm sugar, cut into tiny pieces (the size of tamarind seeds)
For the coating
200 grms grated coconut , lightly salted and steamed for about 2 to 3 minutes
Method:
In a bowl, add in the pandan juice, glutinous rice flour, little green colour.
Now add in the warm. water little by little, and mix the dough.
You should be able to pinch the soft dough and form small balls. That’s the consistency.
Take about 10 grms of the dough and make into a ball.
Using your index finger, create a well and place 1 piece of the palm sugar.
Now close the well and gently form it into a ball.
Bring a pot of water to boil. Now drop the ball into a pot of boiling water.
The ball will sink to the bottom. After a while the ball will rise up to the surface.
When the rice balls float to the surface, remove them with a slotted spoon.
Shake off the excess water. Coat the rice balls with the grated coconut.
Serve it with a cup of steaming tea.
NOTE: To make pandan juice, blend about 4 pandan leaves with about 100 ml water.
strain the juice through a sieve.

K, actually it was a lemongrass plant... it survived a couple of yrs only... but we made good use of it as long as it was there...now we get dried lemongrass here...so tht's not a prob...:)

K, we got a huge jackfruit from a friend but we had to cut it open when it was semi ripe as it started rotting pn one part which I guess adupattufied while in transit... Wht can I do with this semi ripe jackfruit...I made poriyal today and it was good... halwa seiyalaama?... chips konjam try panninen...it came out okay.,..wht else can I do with this very mildly sweet semi- ripe JF?

MUTTON VARUVAL (SOMA)
Ingredients:
(A)
1 kg mock mutton
2 onion chopped fine
2 tsp ginger paste
2 tsp garlic paste
2 tsp kas-kas powder
½ tsp tumeric powder
½ tsp aniseed powder
1 tbs chillie powder (more or less to taste)
2 red tomatoes very finely chopped
½ cup thick curds
Salt to taste
(B)
2 tbs ghee or oil
1 tsp aniseeds
2 small pieces of cinnamon stick
2 cardamom pods
4 cloves
1 bay leaf
1 sprig curry leaves
1 onion sliced
(C)
Little lime juice
10 cashew nuts roasted in ghee
1 sprig curry leaves
Method:
Clean the mock mutton.
Now mix all the ingredients in (A) nicely
Marinate the mock mutton in the mixed ingredients for an hour.
Do not use any water.
Heat the ghee or oil in a heavy bottomed wok, or non - stick wok.
Add in all the spices in (B) one by one.
Saute well till the onions are light golden in colour.
Now add in the marinated mock mutton with all the juices.
Give a good stir, and let it cook till the juices dry up.
You have to check always to see that it does not get burned.
Keep on stirring gently till the mutton is really dry.
Now sprinkle the lime juice, and garnish with the curry leaves
and the roasted cashew nuts. Your dry mutton varuval is ready.
NOTE: the same method can be used for normal mutton.
But you have to use water to cook the mutton mixture, as the mutton takes long time to cook.

Now they are very strict with the plants in the flight.

Dev, you can make halwa, jam, payasam, poriyal, chips and curry with semi ripe jack fruits.
Dev, I know the bean paste, normally here they stuff the steamed pau with that.
Well we can put them into the ondeh-ondeh and do also.
I know the powder they use for the cut fruits.
It is sold in packets, that's the craze in India now.
My aunt will request for it every time I go to India.

Friends, this cake cuts very well into neat slices.
A very good cake for icings. Try it out friends. Kugan
EGGLESS CASHEW NUT HONEY CAKE:
Ingredients:
3 cups all purpose flour
2 tsp baking powder
1 ½ tsp baking soda
12 tbs castor sugar
1 cup chopped cashew nuts
6 tbs honey
1 cup melted butter
1 cup milk
2 tbs orange juice
2 tsp vanilla essence
Method:
Preheat the oven to 180 degrees C
Grease and dust a 8 inch square cake pan.
Sieve the flour, baking powder and baking soda.
Put them in a bowl, add in the castor sugar and the chopped nuts.
Mix well and keep aside.
In another bowl, add in the honey, butter, milk, orange juice and essence.
Mix them well, now pour the mixture into the dry ingredients.
Use a spatula and cream the mixture in a folding manner.
Pour into the cake pan and bake for about 35 to 40 minutes,
Or until a cake tester inserted in the centre comes out clean.
Cool in pan for 5 minutes and turn out on to plate or wire rack.
You can dust some powdered sugar or can ice the cake.

U can mix it with anything tht's lukewarm but not hot... and that's one reason y honey shouldn't be taken when once has fever...even that raised body temp will make it toxic they say...
Also, is this a dense cake or light n fluffy?... no eggs/no condensed milk...adhaan kaeten...

Like golden treacle, maple syrup and things.
The taste will not differ, simple cake to make. Very easy to put together too.
The good part of the cake is that it will slice nicely ones it cools well.

I'm not sure if u know this... it's not advisable to mix milk n curd(like in curd rice or whatever) and also milk shouldn't be added to sour fruits... like if a mango is sour, u shouldn't add milk to it... but if the mango is sweet, no harm in adding milk to it... These are some of the mistakes I've done unknowingly...but not any more...:)
Eating fruits- eat only one fruit at a time and eat it atleast 1 hr from a meal. Mixed fruit salad is a bad bad bad idea. Fruits are better taken during morning hours.

My father-in-law used to tell us not to serve fruits after a lunch.
You know that is a trend to serve dessert after meals.
He used to tell that the fruits get digested fast, and lunch takes long time.
so if you take your lunch first than the fruits, the fruits get fermented in your stomach,
before the food is digested, this will cause lot of problem. Yaar ketta avar sollvathai

Simple paal curry. Any takers? :-D Kugan
PAAL CURRY
Ingredients:
2 tsp oil
1 inch cinnamon stick
2 cloves
2 pips garlic minced
1 onion sliced
2 green chillies sliced
1 tomato cut into pieces
A tinge of tumeric powder
Salt to taste
2 medium potatoes, boiled and cut into cubes
1/3 cup fresh green peas
To Grind Into Paste:
2 tbs coconut grated
½ tsp aniseeds
½ cup of water
Little coriander leaves to garnish
Little lime juice (optional )
Method:
Heat the oil in a wok, add in the cinnamon, and cloves.
Let them splutter, add in the minced garlic and let the nice aroma come.
Add in the onions, and green chillies, stir fry for a minute.
Now add in the tumeric, tomato and salt. Cook for 5 minutes.
Now add in the boiled potatoes and the green peas.
Stir fry nicely, add in the ground coconut and the water.
Mix nicely and let it cook for about 5 minutes.
The gravy should be little thick. Remove and add the lime juice.
Garnish with the coriander leaves.

Bitter Gourd is one of my most favourite vegetables. I like to try different recipes with bitter gourd . At home we even make raw bitter gourd sambal with Chinese type ones. Unforunately I dont get the Chinese variety here in Kabul.

Friends , a friend of mine, send me an eggless sponge cake,
which she said she found in the newspaper.
I tried it and it was a total flop. My daughter was standing and watching,
me remove the cake which was like a rock.
At once she laughed and said, amma ungga cake oothikitcha?
I was stunned by her language.
She continued to sing a song using the tune from the film Ayan.
Palapalakira pagala nee
Pathaam kelas faila nee
Engga vuttula biriyani
Saapida variya nee
I just grabbed her and asked her from where she learned that song.
She told me that it was taught by the guests children who came to our house for holidays from India.
Even though this is a small matter, we have to keep an eye on our children,
as to what they talk and do, when we have guests staying with us.
Well as for the sponge cake, let me try out on my own and see how the cake turns out.

Dear Aarthii, somehow I have tried my best to write the recipe.
A little bit of hard work and time doing this recipe.
Any way try it out. Thanks, Kugan.
CROISSANTS:
Ingredients:
500 grms all purpose flour
1 tablespoon active dry yeast
90g, superfine sugar
1 tablespoon salt
300ml, cup warm milk
340g, butter, at room temperature
1 egg, beaten with 2 tbsp water for egg wash, or use milk as egg wash.
some extra flour
Method:
Put the flour into a big bowl.. Add the salt, sugar, milk and yeast. Mix well and knead until it has a smooth elastic consistency.
Cover the bowl with the towel and let it rise until it doubles in size. This should take 1½ to 2 hours.
While dough is rising, put a sheet of plastic wrap onto your work surface. Place the butter on top and cover it with a second sheet of plastic wrap.
Flatten it with your hands.
Roll it into a rectangle about (20 X 25 cm) with your rolling pin and place it into the fridge to chill.
Wait until the dough has doubled in size , about 90 minutes , sprinkle it with a little bit of flour. Punch out the air with your knuckles and place it onto a floured work surface.
Dust the dough with flour and roll it out into a large rectangle that is big enough to wrap around the sheet of chilled butter in thirds (about 25 x 60 cm). Lift the dough off the table and dust the surface with flour before putting it down again.
Unwrap the chilled butter and place it onto the upper part of dough. Fold the dough around the butter in thirds to enclose it completely. Lift the dough and sprinkle the table with flour.
Rotate the rectangle of dough so that you can hold a roller parallel to the open edges, . Roll it into another long rectangle, as done earlier.
Fold the dough into thirds, brushing off the excess flour . This completes the first turn.
Now wrap it in plastic wrap and place it into the fridge for a minimum of 30 minutes.
Wait until the end of the 30 minutes, sprinkle your working surface with flour. Unwrap the dough and place it onto the work surface. . Dust it with a sprinkling of flour and roll it into another long rectangle, as done earlier. Fold, brush and wrap, exactly as before. This now completes the second turn.
Place it back into the fridge for another 30 minutes.
Remove, roll and fold for the third and final turn. Make sure that the dough is well wrapped before placing into the fridge once more to chill.
Once chilled, cut the unwrapped dough in half on a floured surface. You can chill one half, while shaping the other half.
Dust the dough with some flour and roll one half of the dough into a rectangle. Re-flour the surface when necessary and continue to roll until the dough is roughly less than (5 mm) thick.
Flour the surface and trim the edges of the dough neatly.
Cut it into triangle shapes
Take the bottom of the triangle at its widest part and, using your hands, tightly roll it up into a croissant shape
Place the croissants onto a greased baking tray.
Cover them with a clean plastic cling and leave to double in size. Set the oven to 190 degrees C.
Once the croissants have risen, remove the plastic cling. Very gently brush them all over with the egg wash, if using or milk wash.
Place them into the center of the oven. Bake them for about 15 minutes.
Wait until they are a golden brown then remove them from the oven. Your croissants are now ready to serve!

Thanks for all the info Dev, So good of you to share what ever you know with others.
My father-in-law used to tell us not to serve fruits after a lunch.
You know that is a trend to serve dessert after meals.
He used to tell that the fruits get digested fast, and lunch takes long time.
so if you take your lunch first than the fruits, the fruits get fermented in your stomach,
before the food is digested, this will cause lot of problem. Yaar ketta avar sollvathai

ur FIL was very correct... that is exactly y they say we souldn't mix cooked n uncooked food... they take diff time to digest...also sweet is best taken at the start of the meal as the digestive fire is very high then... so it's easy to digest even heavy food...

Friends , a friend of mine, send me an eggless sponge cake,
which she said she found in the newspaper.
I tried it and it was a total flop. My daughter was standing and watching,
me remove the cake which was like a rock.
At once she laughed and said, amma ungga cake oothikitcha?
I was stunned by her language.
She continued to sing a song using the tune from the film Ayan.
Palapalakira pagala nee
Pathaam kelas faila nee
Engga vuttula biriyani
Saapida variya nee
I just grabbed her and asked her from where she learned that song.
She told me that it was taught by the guests children who came to our house for holidays from India.
Even though this is a small matter, we have to keep an eye on our children,
as to what they talk and do, when we have guests staying with us.
Well as for the sponge cake, let me try out on my own and see how the cake turns out.

Try this simple spicy vendi stir fried. This recipe too from the friend,
who gave the flop cake recipe.:-D This recipe turned out super.
Kugan
SPICY VENDI STiR FRIED
Ingredients:
1 tbs oil
1 tsp mustard seeds
20 young fresh vendi
Little salt
(B)
2 tbs oil
2 ½ tbs besan flour (kadalai maavoo)
2 tsp coriander powder
2 tsp chillie powder
1 tsp cumin powder
¼ tsp tumeric powder
4 pips garlic paste
1 tsp ginger paste
Salt to taste
1 tbs lime juice
Method:
Wash and clean the vendi, wipe dry with a kitchen towel.
Remove the head and tail, slit it horizontally. Cut across. Keep aside.
Now mix all the ingredients in (B). Stir fry for a minute in a non-stick pan.
Remove and keep aside.
Heat a non-stick wok with the 1 tbs of oil, add in the mustard seeds.
Let them splutter, add in the cut vendi and little salt.
Cook the vendi on low heat, stirring slowly often.
Now sprinkle (B) mixture and stir into the vendi.
Cook on really low heat, gently turn the vendi after 5 minutes.
Young vendi cooks fast, remove and sprinkle the lime juice.
Serve with rice or roti.

Hi friends,
I am back again with another recipe from my grand mom
Here it goes.
Pulachai keerai thogayal(gongura thogayal)
Ingredients
small onions( chinna vengayam is what i meant) - 15(chopped)
Red chillies - 4
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1 tsp
tamarind pulp - 1/2 tsp
Pullacha keerai(Gongura leaves) - 1bunch
gingelly oil - 3 tsp
Salt as required
Method
1.Wash the pullacha keerai and chop them.
2.Boil the leaves in water until the leaves change colour and turn brown. Check it is cooked and drain out all the water. Make sure to drain all the water. Very important
3.Now take a electric blender and blend the leaves after cooling them down. Paati used mathu in order to mash up the leaves to a fine paste.
4.In a kadai add one tsp of gingelly oil and roast the fenugreek seeds along with 2 red chillies and mustard seeds. Allow to cool and grind it
5.Now in the same kadai add another 2 tsp of oil and fry the small onions and 2 red chillies.Add salt as required.
6.When the small onions are slight pink to brown colour add the dry roast powder and the blended pulacha keerai in the same order.
7.Cook for few minutes and add tamaring pulp. Cook for another 2-3 minutes.
8.Serve with steam rice. Add a tsp of ghee in the rice before mixing it with the thogayal.
Nutritional facts:. Gongura is a very rich source of Iron, vitamins, folic acid and anti-oxidants essential for human nutrition.
Gongura greens relieve indigestion, cold and cough. It cleanses the intestines. It also helps in removing infections as well.
They even relieve symptons of fever.

Nithisri, I think I have posted two types of gonggura recipes.
One is the gonggura thokku, and another is gonggura kadayal.
Nithi, what I will do is, take young gonggura leaves, clean and remove the veins.
Add little oil and saute the leaves well.
The leaves will cook well in the oil and become mushy.
You need not boil the leaves.
My grandma will boil the old leaves, the water she will soak all her bronze things.
When washed will shine like gold.

You give her any vegetable and she will modify it into a Indian dish.

WATER CONVOLVULUS KUTOO
Ingredients:
½ cup mysore dal, cooked till little mushy
1 tsp oil
1 tsp cumin seeds
2 pips garlic chopped
1 medium onion chopped
2 green chillies chopped
1 tomato chopped
¼ tsp tumeric powder
Salt to taste
300 grms convolvulus keerai cut with the stems.
Method:
Heat the oil in a wok, add in the cumin seeds. Let them crackle
Add in the chopped garlic, saute for a second.
Now add in the chopped onions and let it brown a bit.
Add in the green chillies, tomato, tumeric powder. Saute well.
Add in the cut keerai and salt, saute till the keerai wilts a bit.
Add in the cooked mysore dal, with ¼ cup of water, cook till the keerai is cooked.
Remove and serve with rice or roti.
You can add a squeeze of lime juice if you prefer.

I can try it only when I get back home. I dont get kangkung in Kabul. The only green variety we get here is spinach. I miss the keerais that we get in Sri Lanka :(

Friends, here is a unique combination, also by my guest.
Try and see. Kugan
MURUNGA KEERAI WITH BOTTLE GOURD
Ingredients:
To Roast Till Golden And Grind To Powder;
2 tbs coriander seeds
1 tsp funugreek seeds
1 tsp cumin seeds
1 tsp pepper corns
2 red dry chillies
2 tbs grated coconut.
1 tbs oil
1 tsp mustard seeds
2 dry red chillies cut into pieces
¼ tsp asafoetida powder
2 green chillies sliced
1 tsp ginger chopped
¼ tsp tumeric powder
1 cup bottle gourd cubed
½ cup murungai leaves
1 cup cooked pasi paruppu.
2 cups water
Salt to taste
Method:
Heat oil in a wok, add in all the spices and the tumeric powder.
Give a good stir, add in the bottle gourd, murungai leaves, cooked dal,
water and salt. Mix nicely , cover and cook on low flame.
Cook till the veges are cooked, add in the ground powder.
Add little more water if needed, the dish will be little thick.
Taste for salt and remove. Goes well with rice or roti.

I go almost every 8-10 weeks. So dont feel much about missing Sri Lankan stuff. But keerai is something that I miss quite a bit, 'cause in SL keerai is part of our daily lunch.
What type of foods do you get in Kabul?

Vegetables we only get all the western varieties such as carrot, beetroot, cabbage. I dont get those naattu vegetables like murungai, pulangai, peerkangai, vaazhaippoo, tender jackfruit etc. No greens except Spinach. No coconut and curry leaves available here. Rest we get.
Fruits, we dont get good mangoes except one particular variety imported from Pakistan during summer. Pine apple, they have the green variety, imported again, not as sweet as what we get in SL and one tiny pine apple would cost more than USD 10. And my favourite fruit Avacado is also not available. No papayas, Sapotas,Custard Apple, Rambutan, Gauva, Mangustin at all. But apple, grapes, peach, kiwi fruit, various kind of mellons, cherries, berries, apricots, all available and they are very cheap (these are grown here mostly). Almonds, pistas, wallnuts and various other nut varieties are also cheap as they grow them here. You get all kind of spices but the chilly powder we get here is not hot enough so I bring it from Sri Lanka.

SABUDANA (SAGO) KITCHADI
Ingredients:
2 cups sabudana
¼ cup green peas ( optional)
¼ cup dry roasted pea nuts (chopped roughly)
2 green chillies slit into 4 and cut across
1 big potato cut into small cubes and fried
2 tbs grated coconut
2 tbs oil
½ tsp cumin seeds
½ tsp mustard seeds
1 sprig curry leaves
¼ tsp turmeric powder
1 tbs lime juice
Little coriander leaves chopped
Salt to taste
Method:
Wash the sabudana and soak it for 3 hours.
After 3 hours drain in a colander and keep aside.
Heat oil in a non-stick pan.
Add in the mustard seeds and cumin seedsand curry leaves.
When they crackle, add in the green chillies and green peas.
Stir for a second, add in the turmeric powder.
Now add in the soaked sabudana and salt.
Fry on a medium heat, stirring gently until the sabudana
becomes translucence. It will be about 5 to 6 minutes.
Now add in the grated coconut, fried potato cubes,
roasted peanuts, and the lime juice.
Give every thing a very gentle stir.
Remove and garnish with the coriander leaves.
Serve hot, taste will be very yummy.

Dear friends, I am posting the recipe for calzone.
A calzone is an Italian dish which originates from Naples.
Calzones have become quite popular all over Italy and in many other parts of the word.
A calzone is a stuffed pizza , made with an outer crust of pizza dough and an inner filling that typically includes an assortment of cheeses, meats, and vegetables.
The pillowy savory pastries are , served at many Italian restaurants.
CALZONE
Ingredients:
Base:
3 cups all purpose flour
1 ½ tsp instant yeast
¼ tsp sugar
½ tsp salt
2 tbs olive oil
Water to make the dough.
Fillings:
1 tbs olive oil
½ cup onion chopped
1 cup brinjal cubed
½ cup capsicum cubed
1 cup mushroom sliced
½ cup carrots cubed small
1 tsp mixed curry powder
Little pepper powder
Salt to taste.
1 cup pizza sauce
Cheese as needed
Method:
Mix together all the ingredients for the base.
Add in water little by little to form a dough.
The dough would be little sticky. Cover with a clotha and let it double in size.
Heat a wok, add in the oil and the onions, saute well.
Now add in the cubed brinjals, stir fry and cook for a minute.
Now add in the capsicum, mushroom, carrots, curry powder, pepper and salt.
Sprinkle little water, stir fry and cook till the veges are cooked and dry.
Remove and let them cool.
Punch down the dough, divide into equal balls, about 8.
Take each ball and roll into a circle about 6 inches in diameter.
Apply pizza sauce on one half. Add in the little of the cooked veges.
Add in the cheese. Bring the other side and close, using water to seal the edges.
Use a fork to press pattern on the edges. Make 2 slits on top.
Brush with olive oil, bake in a preheated 200 degrees C oven.
Bake for about 20 minutes or until lightly browned.
Remove and let it cool for about 10 minutes. Slice and serve.

Nithisri, I think I have posted two types of gonggura recipes.
One is the gonggura thokku, and another is gonggura kadayal.
Nithi, what I will do is, take young gonggura leaves, clean and remove the veins.
Add little oil and saute the leaves well.
The leaves will cook well in the oil and become mushy.
You need not boil the leaves.
My grandma will boil the old leaves, the water she will soak all her bronze things.
When washed will shine like gold.

Calzone - stuffed pizza is definitely another must try .
It reminded me of Italian chicken croissant from Kolache factory ( A poland based restaurant)
Italian chicken croissant tasted very similar to the egg puffs made in India except the filling was basically small chopped chicken chunks and lightly spices.

Also the filling of the calzone is up to ones wish.
I have Indianised a bit by adding brinjal pieces and curry powder.
The only important ingredient one should not miss, is the sauce and cheese.
They give a very good taste to the calzone.
Normally the calzones will be big in size, they will slice them after baking.

Dear Rose, here is the recipe for the kangkong belacan.

KANGKONG BELACAN
Ingredients:
2 tsp oil
To Grind Into Paste:
1 tbs dried shrimp, soaked in hot water and drained.
3 fresh red chillies
3 shallots peeled
1 tsp shrimp paste (belacan )
300 grms kangkong cleaned and cut
A pinch of msg
Little salt to taste
Method:
Heat the oil in a wok, add the ground paste and cook for 4 minutes.
There will be a nice fragrant, add in the cut kangkong.
Stir fry at high heat untill well mixed.
Add in msg and salt if needed.
Do not over cook the kangkong.
Serve hot over steaming rice.

BOK CHOY WITH OYSTER SAUCE
Ingredients:
3 pips garlic minced
1 tbs oil
300 grms baby bok choy, clean and remove each leaf.
½ tsp oil
A pot of water
2 tbs oyster sauce
2 tbs water
½ tsp corn flour
¼ tsp cooking oil
1/2 tsp sugar
Little white pepper
Method:
Heat a pan with the 1 tbs of oil.
Add in the minced garlic, saute till they turn light brown.
Dish out and keep aside. This is garlic oil.
Heat the pot of water with the oil.
Drop your baby bok choy into the boiling water.
Quickly blanch them for about 30 seconds.
As soon as they turn slightly wilted, remove from the pot.
Drain the water and arrange the vegetables on a plate.
In a wok, heat up the oil, add in the oyster sauce,
Water mixed with the corn flour, sugar and white pepper.
As soon as the sauce heats up and blends well, pour it
over the blanched vegetables. Top the vegetables with the garlic oil.
Serve immedieately.

I cooked it for dinner. My family really enjoyed the dish. It is cheap to cook it in the house as well as clean.

Dear friends,
I have come up a new recipe which is a quite breakfast. This is made at my home from childhood whenever there is old rice remaining. Amma is a expert in Masala saadham and we just love it
Simple Masala rice
Ingredients
Palaya saadham ( Old cooked rice) - 1/2 cup
Tamarind pulp - gooseberry size
Turmeric powder -1/2 tsp
Oil - 2 tbsp
Curry leaves - few springs
Urad dhal - 1tsp
mustard seeds - 1tsp
Ginger garlic paste - 1tsp
onion -1/2 small
green chilies - 2
chilly powder -1/2tsp
Salt to taste
Method
1. Take old rice in a bowl and add 1/2 tsp of turmeric powder and tamarind pulp and mix well with ur hand adding some salt. Allow it to soak overnight
2. In the morning take a kadai and heat oil. Add curry leaves, urad dhal and mustard seeds.
3. When mustard splutters, add the onions and saute them well.
4. When the onions are slight pink add the ginger garlic paste, green chillies slitted and saute until the raw smell goes away.
5. Add chilly powder and this point and cook for few minutes.
6. Now add the old rice mixture which is been soaking until the morning and give a nice stir
7. Cook for few minutes until all masalas blend into the rice
8. This serves as a nice breakfast or tea time snack and is a break from the normal tiffin varities like idli and dosa. Also people who are on diet can have this in the morning. As it is quite filling, lunch can be altered with a salad and u can still be active without hunger. Great way to start a day.

THAI RED CURRY PASTE
Ingredients:
3 red fresh chillies sliced
3 small onions sliced
3 pips of garlic sliced
1 stalk lemon grass ( only the white part sliced)
½ inch galangal sliced
1 kaffir lime leaf sliced fine
2 tbs chillie powder
1 tbs coriander powder
½ tsp tumeric powder
2 tbs light soy sauce
1 tsp brown sugar
¼ tsp white pepper powder
¼ tsp dark soy sauce
Little water or coconut milk to blend
Method:
To make paste, place all the ingredients in a blender.
Add little water or coconut milk, and blend into a fine paste.
Note: If you are making large amount, use water to blend.
Then stir fry in oil till fragrant. Cool, and freeze in small,

THAI VEGETARIAN RED CURRY
Ingredients:
1/2 cup small cauliflower florets
1 cup tofu cubed and slightly fried
½ cup carrots cubed
½ cup potatoes cubed
10 whole cherry tomatoes or 2 big tomatoes sliced
3 kaffir lime leaves
½ yellow pepper cut into squares
¼ cup fresh thai basil leaves
750 ml coconut milk
3 tbs oil
Salt to taste
6 tbs of the red curry paste
Method:
Heat oil in a wok. On medium heat add the red curry paste and stir fry till fragrant.
Add in the cauliflower florets, potatoes and carrots.
Add the tomatoes if you are using big sliced tomatoes.
Stir nicely, add in the 750ml coconut milk and the kaffir lime leaves.
Simmer, stirring occasionally for about 10 minutes.
Add bell pepper and the fried tofu and cook for another few minutes.
( add in the cherry tomatoes if you are using)
Taste for salt, add in the fresh Thai basil leaves.
Stir and remove and serve with Thai fragrant rice.
Note: You can use any vegetable of your choice.

I prepared this spinach rice, it is quick, easy and tasty. Have a try. Not sure if this has been already shared here, I just thought of sharing.
These measurements is for 2 people.
Quick spinach rice:
Spinach - 4 cups
Garlic pods - 5 or 6 depends on the size
Jeera - 1/2 teaspoon
Urad dal
Turmeric powder
Green chilli - 4 if big, 6 if small.
Chilli powder - depends upon ur taste
Salt for taste
Oil - 3 spoon.
Method fo preparation:
Cut spinach and keep aside.
Cut the garlic horizontally, now crush the pieces gently, i use my knife the handling part to crush it.
Heat the pan, pour oil. Once it is hot enough, put urad dal, jeera.
Put garlic, greenchilli. Once the garlic pieces are slightly turning brown, put turmeric powder, salt, chilli powder and give a mix.
Put the spinach leaves and cook for about 3 - 4 minutes. Cover and switch off the stove.
Now put the rice in the pan and give a good mix. Spinach rice is ready to eat. Serve with hot tomato chutney.

It tasted like pizza, every one enjoyed the puff. I know it is not like our local curry puff.

Dear Ramya, I am posting a spicy Thai fried rice.
I do not know if this is the recipe that you want.
I have given the original recipe with chicken and eggs.
I have used tofu instead of chicken and scrambled tofu instead of eggs.
Also I did not use fish sauce. :smokesmile: This recipe was given by my best friend who is a Thai.

THAI CHICKEN FRIED RICE
Ingredients:
1 tbs vegetable oil
200 grms chicken breast cut into ½ inch by ¼ inch pieces
½ tbs fish sauce
1 tbs vegetable oil
1 pip garlic smashed
2 cups cooked cold rice
1 tsp light soy sauce
½ tsp fish sauce
1 egg lightly beaten ½ tsp of water
¼ tsp white pepper
A pinch of sugar
Little cucumber slices
Little scallions
1 lime wedge
Little fresh red chillies
Method:
Heat 1 tbs of oil, over medium heat.
Add in the chicken pieces, cook until just cooked.
Add in the ½ tbs of fish sauce, as you are stirring the chicken meat.
Remove and keep aside.
Heat the 1 tbs oil in the same wok, add in the smashed garlic.
Cook till nice aroma comes. Add in the cooked rice.
Breaking it up with a wooden spoon. Add in the cooked chicken.
Toss together the rice and the chicken, gently.
Add in the soy sauce and the fish sauce.
Increase the flame, add in the beaten egg, pepper and sugar.
Continue to stir fry until heated through and grains are seperated.
Taste and adjust seasonings.
Remove and garnish with cucumber, scallions, lime wedge and fresh chillies.

Dear Kugan, I also made your crispy pacha arisi dosai again this weekend. It was a hit with our kids' friends; came out so good! I get many requests for it from my friends also.

Thanx kugan...rice looks delicious..but I want the basil spicy fried rice..The one from the restaurant had basil,carrot,babycorn,red and green pepper,lots of basil and the rice was slightly brown from the sauce used..
Donna what they used in sauce,but could find lots a garlic,red chilli flakes...please post the recipe..

You know we can take to office as one pot meal.
All are very simple and healthy.

My mom gave me a recipe that she saw in T.V.

Sorry for not coming over to the hub these days... konja busy, got married, it has been a year, but came to uk for an official assignment, 8 monthsaa inga than irukken,
august i wil lbe returning back to chennai :) anyhwo now am bck to hub :lol2: recipes potidaren, summa thaniyaa thaan irukken, so trying lots of dishes... :P
btw, :shock: ivlo seekiram spinach rice senju paatheengalaaa :D... hope u like it and thanks for trying :bow:
Picture looks good :) and as u said, it is healthy as it is just the spinach and nothing else is added.

Well I asked my Thai friend for chicken fried rice:banghead:
That's why she gave me that recipe. I have requested and she has posted,
the basil fried rice, as well two more tofu recipes.
