My dear friends, I feel very proud and happy to announce
another new thread in Kugan's Kitchen.
This would not be possible without the co-operations of all my dear friends.
And also our very helpful and understanding moderator, our dear NOV anneh.
Thanks every one, Kugan clasps both hands and says :ty::ty:

O.K now lets every one enjoy the sweet cracked wheat payasam.



CRACKED WHEAT PAYASAM

Ingredients:

1 cup cracked wheat.
1 cup brown sugar
1 cup sugar
2 cups thin coconut milk
1 cup thick coconut milk
3 crushed cardamom pods
1 tbs cashew nuts
1 tbs raisins
2 tbs ghee
A pinch of salt.

Method:

Wash the cracked wheat nicely. Add about 3 cups of water and cook it till soft.
Now add in the 2 cups of thin coconut milk, let it boil.
Add in the brown and white sugars. Give a good stir.
Add in 1 tbs of the ghee, and the crushed caradamom pods.
Keep on stirring, add little water if the mixture is very thick.
Now add in the thick coconut milk, simmer for 2 minutes, do not allow to boil.
Remove from the stove.
In a small pan, fry the cashew nuts and raisins in 1 tbs of ghee.
Add this to the payasam and mix. Serve while warm.

Another dish that I tasted in Singapore.



KUNG PAU NOODLES

Ingredients:

2 tbs vegetable oil
2 pips garlic minced
1 big onion chopped
1 green chillie sliced
¼ cup sliced mushrooms
¼ cup snow peas

1 ½ cups of cooked spaghetti noodles
2 firm tofu, cubed and fried
¼ cup of bean sprouts

Kung Pau Sauce:
3 tbs of water
2 tbs soy sauce
2 tbs dark soy sauce
2 tbs rice vinegar
1 tsp sugar
½ tsp red chillie flakes
1 tsp corn flour

2 tbs of roasted peanuts
Little lime juice (optional )

Method:

Fry the tofu and keep aside. Mix the kung pau sauce and keep aside.

Heat the 2 tbs of oil in a wok,add in the garlic, let it brown with a nice aroma.
Add in the onions and the green chillies. Stir fry nicely.
Add in the snow peas and the mushrooms, stir fry again.

Now add in the cooked spaghetti, beans sprout and the fried tofu.
On high heat stir fry, till the oil mixes with the noodles.
Now add in the kung pau sauce and stir fry till the sauce mixes nicely with the noodles.

The noodles should not be very dry, add in the lime juice.
Garnish with the roasted peanuts, and serve steaming hot.

Madhu anneh, thanks for all your wishes.
Wishes from great people like you are great inspirations for me.

Madhu anneh, every family has their own way of making Vishu Kanji and chakka puzhukku.
Some only cook the rice with cumin seeds and add grated coconut and make the kanji.
Some add pluses, and coconut milk to the kanji to make it more nutritious.
Some even make it very thick, pour into a container and cut into squares when it is cold.

The same is done for the chakka puzhukku.
I will post how it was taught to us by our grandmother.

How can a tangai forget her anneh.
You were always in my mind, but I understand that you are a new father.
Anneh, I know, you must be enjoying every minute with the baby.
Good anneh, jot down her first smile, her first turn over, her first crawling and so on.
Take pictures and make it into an album. The child will be very happy to see it once it has grown up.
I have even kept a tiny bundle of the first hair, of my children when the head was shaved.

Well my dear friends, the few days had been very hectic for me.
A very old friend of ours came from India. (summer holidays in India)
They wanted to come for tea on the 12th, eve of new year.
I could not say no, also it was their small son's birthday.
They requested for few kuihs, so I had no choice but to do it.
Also made a simple cheese cake for the boy.
They wanted simple agar2, cincau agar2, custard, curry puffs, onion pakoda,
sandwiches, fried mee, iddli, sambar, popia

Madu anneh, here is our version of Vishu Kanji.
Hope you like it. Kugan


VISHU KANJI

Ingredients:

½ cup of raw rice or par-boiled rice
1 tbs whole green gram dal, dry roasted
1 tbs mochai payaru dry roasted
½ tsp cumin seeds
2 cups of water
1 cup of thick coconut milk
Salt to taste

Method:
Grind to a very coarse powder the green gram and mochai payaru.
In a pot add in the washed rice, the coarse powders, cumin seeds,
Water and salt to taste. Cook till they become thick porridge.
Add in the thick coconut milk, cook till it comes to one boil.
Remove and serve with chakka puzhukku.

Here is the chakka puzuhukku. Kugan


CHAKKA PUZHUKKU

Ingredients

(A)
300 grms young raw jack fruit, pitted and roughly chopped
¼ tsp tumeric powder
2 tsp chillie powder
Little salt
Enough water to boil till well cooked

(B)
To Grind To A coarse Paste:
2 tbs coconut
½ tsp cumin seeds
5 shallots

(C)
3 pips garlic crushed

(D)
2 tsp coconut oil
½ tsp mustard seeds
1 sprig curry leaves
1 long dry red chillie cut into pieces

Method:
In a pan add all ingredients in (A). Cook till they are mushy.
You can smash it with the back of a spoon.

Now add in the ground ingredients in (B).
Add also the crushed garlic, cook for about 4 minutes.
Finally in a pan temper the ingredients in (D) and add to the chakka puzhukku
Serve it with Vishu Kanji.

A dear friend of mine, went to her village and came back with 10
of these banana flowers.
Today I made kutoo with 2 of them, I can make vadai with them.
Tayir pachadi, stir fry with greens, tugayal.
Any more ideas my friends. I know I cannot keep them for very long.
My neighbour refused to accept , saying that too much of work:banghead:

This year I made laddu with green and yellow color combination.
I also made apple rasam for lunch. Other than that, all are normal food only.

PUSINI RAAVANGI

Ingredients:

2 cups of pusini cut into 1 inch cubes
¼ tsp tumeric powder
1 sprig curry leaves
Salt as needed
Water to just cover the veges

1 tbs thick tamarind juice

To dry roast and coarserly powder:
1 tbs coriander seeds
1 ½ tbs urad dal
5 red chillies
¼ tsp asafoetida powder

2 tbs grated coconut ground to a fine paste

2 tsp coconut oil
½ tsp mustard seeds
½ tsp urad dal
1 sprig curry leaves

Method:

In a pot, add in the pusini cubes, tumeric powder, curry leaves,
salt as needed and enough water to cover the vege.
Cook till soft, add in the tamarind juice, cook for a minute.
Now add in the coarsely ground spice powder. Boil it for a minute.

Now add in the finely ground coconut paste.
Boil again for a minute, now temper the ingredients in a separate pan.
Pour it over the pusini, give a good stir.
Remove and serve with rice or roti.

Super spreads kugan...:) U can make vazhaipoo kuzhambu... basic kuzhambu with vazhaipoo in it... add lil jaggery towards the end... enga veetil vaazhaipoona kuzhambu comes first...:)

I just asked my aunt for different recipes using valai poo.
She at once drrrrrrrrrr mailed me so many titles:confused:

Valaipoo vadai, valaipoo kutoo, valaipoo poriyal, valaipoo urundai kulambu,
valaipoo pagoda, valaipoo thugayal, valaipoo bajii, valaipoo kulambu, valaipoo usli,
valaipoo mixed with greens, valaipoo snack.
Suvai, endaa ketamnu pochi.

I will post the apple rasam soon.

Suvai, thanks for your hilarious post. Really enjoyed it.
Suvai, my aunt is about 82 years old, still very active.
Came here last month to witness the head shaving and ear piericing,
ceremony of her great grand son in Batu Caves.
She has about 20 great children:-D

Suvai, she gave me tongue lashing, for being very forgetful.:banghead:
She said that I have posted most of the valaipoo recipes from her.
She asked me to go through all my old threads.

Suvai, true, Kugan's Kitchen 5, I have posted,
Valaipoo baji kulambu in page 25.

Valaipoo snack in page 26
Valaipoo usli in page 28

Valaipoo with greens in page 29
Valaipoo masiyal in page 30.

Suvai I remember posting valaipoo kutoo, valaipoo vadai,
Valaipoo thugayal, do not know the thread or pages.

Let me go through them slowly.
I will post for you the valaipoo, kulambu, Valaipoo urundai kulambu soon.

Acho Tamby, oothappam is so easy.
You can even do it with 2 days old dosa batter, or iddli batter.


Here is the recipe for you. I have posted it long time ago.

ONION OOTHAPPAM

Ingredients:

1 cup idli rice
1 cup pulungal rice
1 cup broken rice
1 cup ulundhu
Salt to taste

Method:
Soak all the ingredients for about 3 hours.
Grind the soaked ingredients to a smooth batter.
Oothappam batter should be little more thicker than dosai batter.
Add salt and beat nicely with your hands for 5 minutes.
Keep in a warm place to ferment for about 8 to 10 hours.

The Toppings:
Ingredients:
1 onion chopped fine
1 tomato seeds and chopped
1 fresh chillie chopped
1 tsp ginger minced well
2 tbs coriander leaves chopped
2 tbs grated carrot

Method:
Mix all the chopped vegetables together.
Heat the dosai kal.
Pour a ladle full of batter, and spread to make a thick oothappam
See that the oothappam is not very big.

Sprinkle little of the vegetable all over the oothappam
Press slightly with the help of the spatula.
Drizzle gingelly oil over and along the oothappam

Lowe the flame and cover the oothappam.
Let it cook for a minute, flip to cook the other side.
Serve hot with chutney or sambar.

NOTE: The topping is our own wish.
You can add anything you want.
You can just add onions only and call it onion oothappam.

APPLE RASAM

Ingredients:

1 tsp of oil
½ tsp asafoetida powder
½ tsp mustard seeds
½ tsp urad dal
1 sprig curry leaves
3 pips garlic smashed
1 green chillie sliced

1 tsp cumin powder
½ tsp black pepper powder
¼ tsp tumeric powder
1 tsp coriander powder

1 cup of tamarind juice from 1 marble sized tamarind
1 cup of apple puree
1 ½ cup of water
Salt to taste
1 cup of toor dal water, boiled with 1 tbs of toor dal, nicely smashed.
Little coriander leaves to garnish
1 tbs apple pieces.

Method:
Heat oil in a pot, add in the asafoetida powder.
Add in the mustard seeds, urad dal, let it splutter.
Add in the curry leaves, smashed garlic and green chillies.

Saute well, add in the cumin powder, black pepper powder,
tumeric powder and the coriander powder.
Give a good stir, add in the apple puree, 1 cup of tamarind juice ,
1 ½ cups of water and salt.

Let it come to a nice boil, lastly add in the toor dal water.
Do not let it to boil, remove as soon as you see that it foams up.
Garnish with the cut coriander leaves, cut apples and serve.

They do this when they have left over dosai or iddli flour.
Mostly the oothappams will be little sour.

Hi Friends,
Learnt a new dish from the muslim aunty - my neighbor ..Good accompliment for mutton biriyani.. here is the recipe



Muslim Style Brinjal salna

Ingredients
Brinjal - 8 (smaller the better)
Note: Slit each brinjal into 4 without breaking into piece. Just slit them
onions - 1 big ( Sliced not chopped)
tomatoes - 2(small) chopped
Groundnuts -(Roasted) - 3 handful
Jeeraga powder - 1/2 tsp
turmeric -1/2 tsp
Chilly powder - 1 tbsp (Depending on spice level)
Garlic pods - 2 to 3
curry leaves - few springs
Tamarind paste - 1 tsp
Oil - 3 tbsp

To Grind:
Roast the groundnuts
Add the chilly powder and garlic pods and run the mixie to get a coarse - close to smooth mixture

Garnish
Coriander leaves

Method
1) Add oil in a kadai, add the curry leaves, onions,brinjal and saute well.Cover the lid and allow them to cook in medium flame
2) Now add turmeric powder and tomatoes. Cook until tomatoes are soft
3) After this add the jeera powder and followed by the grinded mixture and salt
4) Fry until the masalas blend in like for 2 mins.
5) Add the tamarind. Dont add too much of tamarind, jus add enough to soak in the brinjals
6) Cook the gravy in the tamarind water.
7) After raw smell of tamarind disappers add required water
8) Let the gravy thicken.
9) Remove from Flame and garnish with coriander leaves
10) Serve hot with Mutton Biriyani..Yummmmmmm :D

Variation: Add a some coconut milk if u desire.[ But it wouldn't taste like original]. Helps though while making for a big group

Nithi, try the apple rasam and give us the feed back.
As for bananas, you can mix with flour, sugar, and milk.
Make it into a thick batter, and fry spoonfuls in oil.
Here it is very popular in Malaysia. I have posted the recipe as chokodo.
Or you can steam the same batter in banana leaves. Just fold the leaves into rectangles

Nithi, you can make banana cake, banana bread.
Or with the same batter for chokodo, heat a dosai kal,
spread the batter with your fingers to form a thick chapathi,
drop some ghee around and cook on both sides till little golden.
Or make puttu, and eat with bananas.:-D


Thanks for the brinjal salana recipe.
I too have posted a brinjal salana recipe for biryanis.
I have called it:
BRINJALS IN PEANUT SAUCE (for biriyani)
May be the recipe is a bit different.
Let me try your version too, for every one has their own version of recipes.

Does not matter I will do it with coconut olai and show you.

Apuram, I made the valaipoo kulambu, and the valaipoo urundai kulambu.
My better half phoned me to find out what was for lunch.
When I told him, he asked me, when will your valaipoo puranam end:-D

Suvai, here is the recipe. I am sure you can get the valaipoo,
in Korean supermarkets in Canada. I have bought them in Virginia.

VALAIPOO KULAMBU

Ingredients:
1 tbs oil
½ tsp mustard seeds
½ tsp funugreek seeds
½ tsp cumin seeds
1 sprig curry leaves.

3 pips garlic smashed
1 onion ground
1 big tomato chopped
2 tsp chillie powder
3 tsp coriander powder
¼ tsp tumeric powder
½ tsp pepper powder
1 tbs poppy seed powder

½ cup tamarind juice from a marble sized tamarind
2 cups thin coconut milk
2 cups valaipoo cleaned flowers
Salt to taste
¼ cup thick coconut milk


Method:

Heat oil in a pot, add in the seasonings and let it splutter.
Add in smashed garlic, let it brown a bit.
Add in the ground onion paste, saute well, add in the tomato.
Cook till mushy, add in all the powders, and cook till oil separates.

Add in the tamarind juice, and the thin coconut milk.
Add in the valaipoo flowers and enough salt.
Let it simmer till the flowers are cooked.
Add in the the thick coconut milk, let it come to a boil.
Remove and serve with rice.

Friends, all are missing?
O.K this is a Western dish using chicken strips.
I used tofu strips and made it vegetarian.
The method is the same. Enjoy friends. Kugan


TOFU STRIPS WITH SESAME SEEDS

Ingredients:

1 tbs of oil
2 tsp of sesame seeds
2 cups of tofu strips
1 onion sliced
1 tbs soy sauce
1 tbs chillie sauce
¼ tsp pepper powder
Little salt
1 fresh red chillie sliced
1 tbs spring onion chopped

4 leaves of iceburg lettuce, cut into pieces

Method:
Heat oil in a non-stick pan. Add in the sesame seeds.
Let them splutter, add in the tofu strips shallow fry them.
Let the tofu strips become little brown. Add in the onion slices.
Stir fry a little, add in the soy sauce, chillie sauce.

Add in the pepper powder, salt, fresh red chillie , stir fry once.
Add in the spring onions. Make a bed of iceburg lettuce on a plate.
Now pour the cooked tofu on the lettuce and serve hot.

Oh, Selvieam, so sorry to hear that your son is having chickenpox.
Last year this same time Aishu and a Ruben were having chicken pox
It is so difficult when children have them.
Selvieam, I applied calamine lotion on the spots.
Daily bathed them, gave young coconut water,bananas called "pacainadaan"
They will be little greenish and yellowish in color.
Give them neer moru, and also cooling fruit juices
Also you know sago, I boiled them , added curds and gave them.
Food wise, only porridge with verges.
Lined their bed with Veppa ellai. That,s all I know Selvieam.
Do not worry, pray to Amman, everything will be all right.
Ask him not to scratch the spots. Take care Selvieam

Suvai,u can cut the vazhaipoo into 2 or add it whole whilemaking kuzhambu... We make kuzhambu like this...

Heat oil... add in kadalai paruppu(1 tbsp), cori seeds(2 tbsp),jeera(1 tsp),dry red chillies...remove them once golden.
Heat oil again... add like 20 pearl onions, 2-3 garlic and fry till golden brown. you can also add a small tomato now and cook a bit.
Add grated coconut,turmeric, salt and cook for a minute.
grind both these together to a paste.

Add req tamarind extract to the paste and mix well.

This is the basic kuzhambu paste .

Heat oil. splutter mustard and add curry leaves. add chopped onion n saute for a while.
Add the vazhaipoo and saute for few mins.
Add the kuzhambu paste and let it cook till the poo is thorougly cooked.
Add lil jaggery towards the end(optional but we add it for vazhaipoo. bittergourd, sundakkai kuzhambu)

Dear friends, yesterday I had to go to Ipoh for a very close relative's funeral.
She was 82 years old, died of old age.
The beauty was she has 13 children, 88 grand children and 15 great grand children.
The house was filled with their own people. All the grand children crowding around her.

Friends, do try this simple vendi dish. Kugan


SIMPLE VENDI FRY

Ingredients:

1 tsp oil
300 grms vendi cut into strips

2 tsp oil
½ tsp mustard seeds
½ tsp urad dal
¼ tsp asafoetida powder
1 sprig curry leaves
1 onion sliced
2 tsp of sambar powder
½ tsp chillie powder
Salt to taste

Method:
Heat oil in a non stick pan, saute the vendi with little salt.
Remove and keep aside.

Heat the oil in a pan, add in the mustard seeds, urad dal,
asafoetida powder, and curry leaves. Saute well.
Add in the onions, sambar and chillie powder.
Add in the salt and the sauted vendi.
Stir fry nicely and remove, serve as a side dish.

VALAIPOO URUNDAI KULAMBU

Ingredients for valaipoo urundai:

½ cup channa dal soaked for 2 hours
1 cup valaipoo chopped and soaked in mooru
1 onion chopped fine
1 green chillie chopped fine
½ tsp aniseeds
½ tsp ginger chopped fine
Little coriander leaves chopped
Salt to taste.

Method:

In a pan, add few drops of oil, saute the squeezed valaipoo till lightly cooked
Drain and grind the channa dal to a coarse paste.
Now add together, the valaipoo, channa dal, chopped onion.
chopped green chillie, aniseeds, ginger, coriander leaves and salt to taste.

Now mix every thing nicely with your fingers.
Take small portions and shape them into small balls.
Now steam the balls in a steamer till cooked for about 10 minutes.
Remove and add it to the kulambu you are making.

As for the kulambu, I followed Dev,s recipe.
When the kulambu boils, lastly add in the valaipoo urundais.
Cook in simmer for about 10 minutes.
Remove and serve.


DEV,S KULAMBU RECIPE:

Well said Kuganka, like aapam you cannot cook with out coconut.
It is up to us to use our own discretion. Like certain poriyals, I do not use coconut,
as a garnishing in the finish. Certain vegetables only taste good with coconut.
So keep posting your simple recipes Kuganka.

Dear friends on the way from Ipoh, we stopped at a Chinese vegetarian shop for food.
We had Chinese fried rice with mushroom hot sauce. (not that hot )
I would have preferred mee curry:wink::wink:
It was tasty, so somehow got the recipe for mushroom sauce.
Try it out friends, for a change. Kugan



CHINESE FRIED RICE

Ingredients:

1 tbs sesame oil
1 tsp garlic chopped
2 shallots sliced
2 green chillies chopped

¼ cup finely chopped beans
¼ cup finely chopped carrots
½ cup sliced green capsicum
¼ tsp pepper powder
Salt to taste

1 cup, cooked and cooled rice
1 tsp soy sauce
1 tsp vinegar
1 tsp chillie sauce
Little spring onion for garnish

Method:

Heat a wok with the oil, add in the garlic, saute till nice aroma comes.
Add in the sliced shallots and the green chillies, stir fry well.
Add in the chopped beans, carrots, capsicum, and stir fry for a minute.
Add in the pepper powder, and salt, stir fry again for a minute.

Now add in the cooked cooled rice, soy sauce, vinegar, and chillie sauce.
Turn the heat high and do a quick stir fry. See that all the ingredients,
are mixed well with the rice. Remove and garnish with the spring onions.
Goes well with mushroom in hot sauce.

Here is the mushroom sauce. Kugan



MUSHROOM IN HOT SAUCE

Ingredients:

The Sauce:

1 cup vegetable stock
1 cup water
1 tsp corn flour
Mix the 3 ingredients and keep aside


1 tbs oil
1 tbs finely chopped garlic
3 fresh red chillie chopped


The Vegetables:
1 cup mushrooms diced
1 cup capsicum diced
Salt to taste


2 tbs tomato sauce
1 tsp soy sauce
½ tsp black pepper powder
½ tsp honey


2 tbs spring onion chopped


Method:

Heat oil in a pan, add in the chopped garlic and saute till nice aroma comes.
Add in the chopped red chillie, and saute for a minute.
Now add in the vegetables , salt and stir fry for a minute

Add in the tomato sauce, soy sauce, black pepper powder and honey.
Stir fry for a minute, add in the vegetable stock mixture.
Stir continously till it boils. Simmer for 2 minutes till gravy thickens.

Remove and garnish with the spring onions.
Serve with fried rice.

Yes, we do still follow our traditions.
No frying no tallipu, all vegetarian food in the house.
No visitors to the house, as a sign, we hang a bunch of vepa illai in the front door.
Bath the children with water kept in the hot sun, mixed with tumeric and vepa illai.
When the child is fully cured, we take them to a Amman temple.
We cook kanji , or kool and distribute to people who come to temple.
I still remember my grandma sitting by my side and singing Amman Taalaatu.
I still try to follow all the traditions of our forefathers.

My daughter too is having chicken pox. Today is the 13th day. She has been missing school for two weeks. With SPM breathing down her neck this year, she is certainly missing a lot. My MIL told me to sing taalaatu song. All i did was put on some amman songs on the players.

Your chinese fried rice looks too nice. Will try it this week. I always wonder how on earth you manage to persuade those people to give their recipes. You must be a very persuasive person.

Oh! Rachudevi, so sad to hear about your daughter. I know SPM is just around the corner.
I know how hard Rubenee is burning her midnight oil. That too science stream.
Her school hours are too long, leaves home at 6.20 a.m and comes home at 4.30 p.m

Rachudevi, you can play Ammam songs. Usually you can buy small booklets in book shops.
They call it Ammam Taalaatu. I am sure your daughter will be alright soon.
Give her lot of cooling stuffs, apply calamine lotion on the spots.
I am sure she will be better soon.


Well Rachudevi, do praise the person who cooked the dish.
Tell them how you enjoyed the dish, and that you like to try it out.
Tell them, " I know it would not be tasty as you cook, but let me try it out."

Friends, try out this simple oats cookies. Kugan



OATS COOKIES

Ingredients:

120 grms butter or margerine
150 grms caster sugar

2 tsp vanilla essence
2 tbs milk, little more if needed

120 grms all purpose flour
120 grms rolled oats
2 tsp baking powder

Method:

Cream the butter and sugar with a wooden spoon.
When the mixture is creamy, add in the essence and milk.

(NON- VEGETARIANS CAN ADD 1 EGG INSTEAD OF THE MILK)

Mix nicely, add in the flour mixed with baking powder and oats.
Use your hands and mix it into a nice dough.
Do not use lot of pressure like chapathi dough.

Make iinto small round balls. Place them in a greased tray.
Place them a little apart as the dough will spread while baking.

Preheat a oven to 160 degrees C.
Bake for about 15 to 20 minutes till cooked.
Remove and cool before storing. You get crisp oats cookies.

Friends tomato with sesame seeds, recipe from a relative from India.
Looks a bit oily, I have reduced the oil in the recipe.

TOMATO SESAME CHUTNEY

Ingredients:

1 tsp oil
1 green chillie chopped
3 dry red chillie broken to pieces
2 shallots sliced
1 cup red tomato chopped
¼ tsp tumeric powder
2 tbs chopped coriander leaves
1 tsp thick tamarind paste
Salt to taste

2 tbs roasted and ground sesame seeds

1 tbs oil
¼ tsp mustard seeds
¼ tsp cumin seeds
¼ tsp urad dal
1 sprig of curry leaves
A pinch of asafoetida powder

Method:

Heat 1 tsp oil, add in all the ingredients one by one in (A).
Cook till the tomatoes turn mushy. Cool
Now add the roasted sesame seeds powder to the mushy tomatoes.
Now grind the mixture to a smooth paste.

Heat 1 tbs of the oil in a pan.
Add in the seasonings, one by one.
Now add in the ground tomato mixture.
Cook for a minute, remove.
The chutney should be thick, serve it with iddli or roti.

Friends this masala idli is very tasty with 3 flavours.
I did not take the picture immediately after cooking.
So the idli has soaked up all the gravy:(

SUPER MASALA IDLI

Ingredients:

1 tbs gingelly oil
1 tsp mustard seeds
2 dry red chillies cut into pieces
1 sprig curry leaves
1 big onion sliced
2 green chillies sliced

2 tsp chillie powder
3 tsp coriander powder
¼ tsp tumeric powder

½ lime size tamarind, take ½ cup juice
1 small piece of vellam
Salt to taste
20 mini idlis or 2 cups of cubed big idlis
1 tbs of chopped coriander leaves

Method:
Heat oil in a non -stick pan, add in the mustard seeds.
Add also the red chillies, curry leaves, sliced onions and green chillies.
Stir fry nicely, add in chillie, coriander and tumeric powders.
Give a good stir, add in the tamarind juice, vellam and salt to taste.

Stir and cook till oil seperates, add in the mini idlis, give a good stir.
The gravy should cover all the idlis.
Remove and garnish with the coriander leaves.
The dish has a nice sweet, sour and hot taste.

Oh, Kugan super two recipes.
I do not have the mould for mini idli. I will cube the big idli and try.
I am sure we do not need any chutney for that.
Even your tomato chutney too looks so super.
Will try that chutney too. You give us so many ideas for new recipes.
I will only do a coconut chutney or a plain tomato chutney.

SPICY PIZZA BREAD

Ingredients:

(A)
1 ½ tsp dry yeast
1 tsp sugar
3 tbs warm water

1 ½ cups all purpose flour
1 tsp chillie flakes
¾ tsp salt
2 tbs pizza sauce, mix with 3 tbs of water
½ tsp pizza seasonings ( like thyme, oregano )
½ cup warm water
1 ½ tbs olive oil

3 medium garlic pods cut into small pieces
100 grms cold mozzarella cheese cut into cubes

1 tsp olive oil
Little pizza seasonings


Method:
Mix all the ingredients in (A), let it stand for about 10 minutes.
When it becomes frothy , keep aside.
In a bowl, add in the flour, chillie flakes, salt, pizza sauce with the water,
and the pizza seasonings. Mix together well.

Now add in the yeast mixture and the ½ cup of warm water.
Knead to a sticky dough using the oil. Mix in the chopped garlic and cheese.
Transfer the dough to a greased tin. Push gently with oiled hands to cover the tin.
Spread some oil lightly over the surface. Let it rise in a warm place for an hour.

Preheat the oven to 190 degrees C. Bake the pizza bread for about 30 to 40 minutes.
After it is baked, remove and cool for about 10 minutes in the tin.
Then remove from the tin and place on the rack and cool further.
Cut into slices , spread butter or anything and enjoy.


NOTE: See that the cheese is not visible.

Well friends, I made Nithsri's Muslim brinjal salana and paneer pulao.
I will post the picture of the brinjal salana now.
In the evening I will post the paneer pulao recipe.
(Very busy, running here and there)

Muslim Style Brinjal salna

Ingredients
Brinjal - 8 (smaller the better)
Note: Slit each brinjal into 4 without breaking into piece. Just slit them
onions - 1 big ( Sliced not chopped)
tomatoes - 2(small) chopped
Groundnuts -(Roasted) - 3 handful
Jeeraga powder - 1/2 tsp
turmeric -1/2 tsp
Chilly powder - 1 tbsp (Depending on spice level)
Garlic pods - 2 to 3
curry leaves - few springs
Tamarind paste - 1 tsp
Oil - 3 tbsp

To Grind:
Roast the groundnuts
Add the chilly powder and garlic pods and run the mixie to get a coarse - close to smooth mixture

Garnish
Coriander leaves

Method
1) Add oil in a kadai, add the curry leaves, onions,brinjal and saute well.Cover the lid and allow them to cook in medium flame
2) Now add turmeric powder and tomatoes. Cook until tomatoes are soft
3) After this add the jeera powder and followed by the grinded mixture and salt
4) Fry until the masalas blend in like for 2 mins.
5) Add the tamarind. Dont add too much of tamarind, jus add enough to soak in the brinjals
6) Cook the gravy in the tamarind water.
7) After raw smell of tamarind disappers add required water
8) Let the gravy thicken.
9) Remove from Flame and garnish with coriander leaves
10) Serve hot with Mutton Biriyani..Yummmmmmm

Variation: Add a some coconut milk if u desire.[ But it wouldn't taste like original]. Helps though while making for a big group

Here is the panner pulao recipe. Kugan.



PANNER PULAO

Ingredients:

(A)
1 cup basmathi rice
2 inch cinnamon stick
1 bay leaf
1 star anise
Salt to taste

(B)
1 tbs oil
2 tbs ghee
½ tsp cumin seeds
1 cup onions sliced
3 green chillies sliced
1 tbs ginger garlic paste
1 tbs biryani masala
1 tsp chillie powder
¼ tsp tumeric powder
2 tsp ground kas kas powder
1 cup tomato puree

(C)
½ cup diced capsicum
1/4 cup peas
¼ cup sweet corn kernals
2 tbs chopped coriander leaves
2 tbs chopped mint leaves
2 tbs curds
1 cup diced panner stir fried in oil

Method:
Cook the rice with all the ingredients in (A).
Cook till ¾ cooked, drain, let it cool in a basin.

Heat the oil and the ghee in a pot.
Add in all the ingredients (B) according to order.
Cook till oil seperates.

Now add in all the ingredients in (C).
Mix nicely and cook for few minutes.
Once the oil seperates, add the cooked rice and mix gently with the gravy.
Garnish with roasted cashew nuts and raisins.
Serve with any raitha or with Nithisri’s salana:-D

The flat rice noodles here is called kuih teow.
Here is the noodles fried with sauce. Kugan


KUIH TEOW WITH SAUCE

Ingredients:

300 grms fresh kuih teow (rice noodles )

1 tbs peanut oil
½ cup tofu cubes, stir fried

2 pips garlic smashed
¼ cup cauliflower florets
¼ cup carrot cut into vertical strips of 2 inches

½ cup of bean sprouts
1 tsp soy sauce
Salt to taste

Little spring onions chopped
Little lime wedges

Peanut Sauce: Grind To A Smooth mixture
½ cup roasted ground nuts
6 dried red chillies
½ tsp salt
½ tsp jaggery
1 cup of water

Ingredients:

Heat the oil in a non-stick pan. Stir fry the tofu and keep aside.
In the same oil add in the smashed garlic, let the nice aroma comes.
Add in the cauliflower florets and the carrots. Stir fry for 5 minutes.
Remove and keep aside.

In the same pan, add in the ground peanut sauce.
Simmer and let it boil a little, stir in between.
Add in the fried tofu, and the vegetables.
Add in the soy sauce little salt and the fresh kuih teow.

Toss every thing well, add in the beans sprouts
Sprinkle little water if the sauce is very thick.
Give a good stir , garnish with the spring onions.
Remove and serve with the lime wedges.

Guys, iniku enga paati taught me now to make Kollu parrupu Kolambu ( Horse gram kolalambu)
I would like to share the recipe with you all as well. This kolambu is very nutritious and is definitely a nice one to have during chilly days... Kara sarama nalla irukum. Also patti suggests that if you have this kolambu during days when u r sneezing and coughing, it acts like a medicine. Sapadu dan marundhu :)

Kollu paruppu kolambu
Ingredients
Horse gram -1/4 cup
Sambhar onions - 20
Coriander leaves - 1/4 of a bunch
Red chillies - 2
Curry leaves - 3 leaves

Jeera - 1 tsp
Pepper cprns- 2 tsp
garlic pods - 3 -4
Sambhar powder - 1small tsp

Seasoning
nallennai - 2tbsp
kadugu - 1 tsp
Curry leaves - few


Method
1) In a cooker, add a tsp of oil, horsegram and salt and pressure cook it until 3-4 whistles. Dont throw away the water as it can be used for the kolambu and for kollu rasam as
well.
2)Meanwhile, take a kadai and add 2 tsp of oil, sambar onions, coriander leaves and fry well until the raw smell goes away
3)Add red chillies, jeera, pepper corns, garlic and fry for some more time. When the garlic and jeera turns its colour to light brown, switch off the gas and let it cool down
4)Remove the kollu from the pressure cooker and extract the water using the filter.
5)Grind together the horse gram and the fried mixture from 2) and 3) along with the water that we preserved from the pressure cooker
6)Grind to a Smooth paste and transfer the contents to a kadai and add sambhar powder.
7)Add more water and let the kolambu boil for few minutes
8)Season the kolambu by heating nallennai, kadugu until it splutters and curry leaves.

Note: The kolambu might be a bit spicy as we have added pepper, red chillies and sambhar powder. So do not forget to add nallenai while u serve.

You know we make similar curry with pithukku motchai.
Only thing is that we do not use rice flour as thickening.

Another dish that we cook is potato preattal with pithukku motchai.
Lastly, we just use the pithukku motchai and make a preattal on it's own.

Another simple recipe from guests.

Relatives brought from India. Try it friends.



AVAL CHIVDA

(A)
2 tbs oil or ghee
¼ cup cashew nuts
¼ cup groundnuts
¼ cup raisins
1 sprig curry leaves

(B)
1 cup thick poha microwave for 2 minutes, keep aside

¼ cup pottu kadalai or roasted gram dal
¼ cup pori or puffed rice

(C)
1 ½ tsp red chillie powder
¼ tsp asafoetida powder
¼ tsp tumeric powder
A pinch of sugar
Fine salt to taste

Heat the ghee or oil and fry the ingredients in (A)
one by one and keep aside. Let it cool.

Now mix all the ingredients in (C) in a big bowl.
Add in all the ingredients, (A) and (B)

Toss well and adjust the ingredients according to taste.
Store in air tight container and enjoy with hot tea or coffee.

Horse gram is legume basically used similar to moong dhal or toor dhal. Here is the wikipedia explanation.

Horse Gram (Macrotyloma uniflorum) is one of the lesser known beans. The whole seeds of horse gram are generally utilized as cattle feed. However, it is consumed as a whole seed, as sprouts, or as whole meal by a large population in rural areas of southern India. Medical uses of these legumes have been discussed. It is mostly used in South Indian states.

MOONG DAL IDLI SAMBAR

Ingredients:

(A)
To Roast And Grind To Paste:
2 tbs coriander seeds
1 tbs channa dal
4 dry red chillies
1 tsp funugreek seeds
¼ tsp tumeric powder

(B)
1 cup moong dal soaked for 15 minutes
1 big onion chopped
2 tomatoes chopped
1 big potato cubed
2 green chillies slit

(C)
1 tbs tamarind paste
2 tsp jaggery
Salt to taste

(D)
2 tbs oil or ghee
¼ tsp asafoetida powder
1 tsp mustard seeds
1 tsp cumin seeds
1 sprig curry leaves
2 red chillies broken
1 onion sliced

(E)
Little coriander leaves gor garnishing

Method:
Dry roast all the ingredients in (A) till golden
Cool and grind to a smooth puree by adding little water.
Keep aside.

Add all the ingredients in (B) with enough water.
Boil till the moong dal and all the veges are cooked well.
Or you can cook in a pressure cooker for 3 whistles.

Now add the ground masala (A) to the cooked dal.
Add enough water and simmer for 10 minutes.
Add in (C) jaggery, salt and tamarind paste.
Mix well and simmer for another 10 minutes.

Heat a non - stick pan, add ingredients (D) one by one.
Saute well and pour this seasonings over the sambar.
Mix well, garnish with coriander leaves.
Enjoy with your idli or dosai.

Thanks for the tips on nellikai juice... the health consicious me tried adding honey to the juice and din't like the taste but gulped it...;) when I spoke to my cousin's cook yday, she gave some tips and said it'll taste good only if we add LOTS of sugar...she also recommended adding few mint leaves or ginger or cardamom for added taste n flavor...I tried it with mint n sugar and just loved it...she also said we can make kalandha saadham with it just like how we make lemon rice...yet to try it...

Moong dhal sambar super easyaa irukku... will try it... I heard from one of my friend that they never add tamarind to sambar made for tiffin items... only for rice-sambar they add puli... :roll: we have never made sambar without puli,be it for rice or tiffin... have u tried without puli for tiffin items n does it taste good???!!!...

CRISPY DOSAI

Ingredients:

2 cups of raw rice
½ cup whole skinless urad dal
2 tbs channa dal
1 tsp funugreek seeds

2 tbs poha
Salt to taste

Method:

Wash the rice, urad dal, channa dal and funugreek seeds well.
Now soak all the ingredients with the poha for about 6 to 7 hours.
Then grind the mixture to a smooth batter using the soaked water.
Add the salt, beat well with your hands.
Add water to make it into a pouring consistency.
Let it ferment for about 7 hours. The batter should have risen
to twice its volume.
Heat a dosai kal and make thin crisp dosais.

K, I made nelikkai juice today for some guests adding cardamom pwd to it... noone could makeout what juice it was...superaa irundhichu...give it a try if u can find nellikai juice there...maybe U can find it in health food stores... Finally, I'm so happy that the litre of nellikkai juice won't go waste...:) nellikai is very good for health and it is one main ingredient in chawanprash...

A warning to those who try nellikai juice: Though it's very tasty, drink only in moderation (unless u don't mind an one-way ticket to the loo :rotfl: ) as gooseberry is a strong laxative...

i do make moongdhal sambar, for tiffons i.e. pongal, idli, dosa and idiyappam. we add little tamarind and lots of tomatoes.
will try ur version too.
regarding cripy dosa, it sounds interesting, should we soak dhal and rice together and grind? please clear this kugan.

Selviem, you have to soak everything together.
First wash all the ingredients, without adding the poha.
Lastly add the poha and soak everything together.
Use the soaked water to grind the batter.
Do the doasi, after fermenting.

Dear P.S Tamby, I remember you asking for a quiche recipe long ago.
I hope I am right. I forgot all about it.
My relative from India was talking about quiche.
She gave me the recipe, here is the dish for you. Kugan.




SPINACH TOFU QUICHE

Ingredients:

300 grms soft tofu, squeeze out the water.
1/3 cup or little more milk
½ tsp fresh coarse pepper powder
Salt to taste

1 tsp oil
1 tsp minced garlic
¼ cup chopped onions
300 grms spinach, only leaves chopped

2/3 cups shredded chedder cheese
½ cup mozarella cheese

1 unbaked 9 inch pie crust

Preheat oven to 180 degrees C.
Use a potato masher and mash the tofu until smooth.
Add in the milk, pepper powder and salt. Mix well, keep aside.

Heat oil in a pan, add in the minced garlic, saute well.
Add in the onions and stir fry. Add in the spinach, squeeze out the water well.
Stir fry little till the raw smell goes. Remove, cool.

Now in a bowl, add in the tofu mixture, spinach mixture and the cheeses.
Mix them all well, pour in the pie crust.
Bake in the oven for about 30 minutes or until golden brown.
Let it cool for about 10 minutes before cutting.

Suvai a simple recipe for you.:smokesmile:
Enjoy, Kugan


DAL WITH BOK CHOY

½ cup toor soaked for 15 minutes
¼ tsp tumeric powder

2 tsp oil
¼ tsp mustard seeds
¼ tsp urad dal
¼ tsp asafoetida powder
2 dried chillies broken

1 onion chopped
1 tomato chopped
3 green chillies sliced
Salt to taste

3 cups of bok choy chopped
A pinch of sugar

Little lime juice
1 sprig curry leaves

Method:

Cook the toor dal with the tumeric powder.
Do not over cook the dal with lot of water, remove and keep aside.

Heat a pan with the oil, add in the mustard and urad dal.
Let them crackle, add in the asofoetida powder and red chillie.
Stir for a moment, add in the chopped onions.
Saute well, add in tomato green chillies and salt.

Stir fry well, add in the chopped bok choy and sugar.
Stir fry for a moment, add in the cooked dal.
Let everything cook well for 10 minutes.
Add in the lime juice and curry leaves. Remove and serve.

Hi K, stevia is a natural sweetner...not the usual chemical laden sugar substitutes...just add the powdered leaves of stevia plant to sweeten stuffs... but it takes few secs for us to feel the taste unlike the normal sugar where we can sense the taste the moment it hits the tongue... I bought some stevia sug tabs 2 days back and we use 50-50 of stevia n sug... I did some research on google and found that it's widely used in Japan and few otehr countries...in japan it occupies 40% of the sweetener market...there are no known side effects even if it's consumed everyday they say... they say it's even good for diabetics as it enhances insulin secretion... so dhairiyama use pannalaamnu ninaikiren...

Anneh, the normal ikan bilis sambal cannot be kept for a long time.
Since we add onions, and at times santan.

Anneh I have a super ikan bilis sambal, not the Malay type.
This you can keep and scoop as you like.
This is a nyonya type of ikan bilis pickle.
I used to love this when I was a non- vegetarian..
Try it once and see, if you like it.

Pickled Anchovies.

200 grms fine anchovies
60 grms finely sliced ginger
60 grms finely sliced garlic
30 grms chillie powder (more or less)
1 tbs mustard seeds
1 tbs cummin seeds
1 tbs aniseeds
sugar to taste
vinegar as needed
salt to taste
oil

Method:
Fry the anchovies 3/4 cooked. Remove.
Grind the 3 spices roughly using vinegar.
Heat a wok, add oil, fry the garlic and ginger.
Till a bit brown. Add the spices and chillie powder.
Fry well, add little vinegar as needed.
Add sugar to taste, and salt.
Add the fried anchovies and mix well.
Dish out. Bottle when cooled.
It keeps well if you use a dry spoon.

Friends try this simple dish. Kugan


KUNG PAU TOFU

Ingredients:

400 grms firm tofu cut into cubes
2 tbs oil

100 grms button mushroom sliced
100 grms cauliflower cut into florets
100 grms capsicum cubed
100 grms tomato, remove seeds and cubed
100 grms snow peas, stringed
Little salt
Little pepper powder

1 tbs oil
1 big onion sliced
2 pips garlic smashed

½ cup water
1/3 cup soy sauce
2 tbs rice vinegar
1 tbs chillie sauce
1 tbs cornstarch

¼ cup roasted peanuts

Method:

Heat oil in a non-stick pan, pan fry the tofu pieces and remove.
In the same oil, add in all the veges, salt and pepper powder.
Saute untill the veges are half cooked. Remove and keep aside.

Now heat the oil in a pan, add in smashed garlic and onions.
Saute well, now mix the water, soy sauce, vinegar, chillie sauce and corn starch.
Pour into the pan, add in the fried tofu and the vegetables.

On high heat cook for a moment until the sauce thickens.
Add in the roasted peanuts and remove.
Serve with steaming rice, or you can have it as a dish.


NOTE:

you can add cut red chillies, while sauteeing the onions.

Oh Neththili Karuvaadaa? we call it sprats in Sri Lanka (Haal Messoa in Sinhalese and Neththili Karuvaadu in Tamil). A very common item in our meals. We do make a couple of dishes with this, including Sambal, but the recipe is a bit different. We get bottled instant Neththili Karuvaadu Sambal in super markets. They taste really good.

What we usually do at home is almost as same as your version without dried shrimp paste. But I think it should taste better with it. We use dried shrimp paste/powder in various other dishes like Murungai keerai/agathi keerai poriyal/sundal, peerkangai curry, coconut sambal, capsicum curry, onion sambol etc but not for sprats. There's another version with tomatoes, onions/shallots, garlic, curry leaves, chilli powder and tomatoes with 1/2 or 3/4 fried karuvaadu. We also make a hot curry with coconut milk. I must try your version with dried shrimps paste. It usually gives a very nice and tempting flavour.

From what ever the recipies posted by K, I should say there are a lot of similarities between Malaysian style and Sri Lankan style of cooking. Even South Indian style is not very much similar to Sri Lankan. That's why I find KL a better place for food and like in SL you get plenty of varieties in Malaysia.

K, I'm not sure if U'll get in medical shops... maybe U should try in health food stores... I bought mine from an organics store... Stevia usually comes in 3 forms- just the leaves dried and powdered, stevia drops and stevia tablets. I bought the tablets as I was not sure how we'll like it and the others were in larger quantites n expensive... but next time I'll try the leaves...

As for the tabs, I use it in tea and juices...the sweetness from stevia is diff from normal sugar and needs some getting used to... I use 1 tab of stevia and 1 tsp of sugar for a big cup of tea...I add it once we take the tea off the stove...for juices I use the same 50:50 ratio...1 stevia tab equals 1 tsp of sugar... Gradually we can reduce sugar and increase stevia if we start liking the taste...

They say we can prepare sweets using stevia but I din't try it yet... maybe we can use in kesari,payasam kind of stuffs but for those that need sugar syrups, I doubt if it'll be good as stevia doesn't thicken like sugar...I mean it will not become pisu pisu kind of...I'll let u know if I try sweets with it...

Gurocho anneh, I have an idea.
grind your chillie paste with shrimp paste , shallots and garlic
heat oil and cook the chillie paste till oil seperates.

now use this chillie paste and make your anchovies sambal.
do not use tamarind, use vinegar instead.
No water at all, in that way, you can keep and scoop your sambal.
That too I think, may be a week, not months.
Sorry, I cannot try it out because of the anchovies.

My family is sambal crazy.
We make brinjal sambal, bitter gourd sambal, onion sambal,
tofu sambal, long beans sambal and so on.
Our children will demand rice cooker, cooked rice when sambals are made.
Otherwise it is par boiled, brown rice only:-D

Friends morkulambu is nothing new to every one.
My relative made a small twist in this morkulambu.
It was very tasty, try it out friends, Kugan.







ASHGOURD MORKULAMBU

Ingredients:

(A)
1 tsp oil
½ tsp mustard seeds
½ tsp cumin seeds
5 dried chillies cut into pieces
1 sprig curry leaves
250 grms ashgourd cut into slightly big cubes
¼ tsp tumeric powder
1 cup of water
Salt to taste

(B)
Masala To Grind:
¼ cup of grated coconut
1 tbs raw rice
1 tbs cumin seeds
2 green chillies

(C)
3 green chillies slit
1 tbs roasted urad dal powder
2 cups well beaten sour curds

(D)
2 tbs cut coriander leaves
1 ½ tsp of coconut oil

Method:

Heat a pan and add in oil, mustard seeds, cumin seeds curry leaves and dried chillies.
Saute well, now add in the ashgourd, tumeric powder and stir well.
Add in the water and salt and let it cook.

Now add in the ground masala and the slit green chillies.
Cook well again for about 5 minutes. It should boil well.
Add in the roasted urad dal flour, give a good stir.

Add in the beaten curds, and boil well for 5 minutes.
Lastly add in the cut coriander leaves, remove.
Pour in the coconut oil lastly on top of the gravy.
The gravy should be a little thick.

My friends how did Mothers Day go for every one?

Well Rubenee and my maid banned Indera and myself from the kitchen.

For breakfast she made, baked spicy potatoes, French toast, vegetarian Chilla,
Spicy iddli fried, baked beans and orange juice.
Enna breakfast O:roll:


Lunch was mint pulao, brinjal raitha, brocooli steamed, keerai prettal and salad.
Enna combination O:yessir:


Tea was cake, spring rolls, jelly, halwa, and parppu vadai
I made shotbread cookies for them.

No one had any space for dinner, even though she made dosai and tomato mint chutney.

I will post the pictures soon.

Roshan, I do not know how I missed this recipe.
Except for the curd and rice, other ingredients vary from person to person.
This is how I make for the house, if giving for people, I will add carrots and cucumber grated.
Try it out Roshan. Kugan



CURD RICE

Ingredients:

1 cup rice, cooked till soft.
Salt to taste
1 tbs butter (optional )
1 cup of thick fresh curds or more as needed
½ cup milk

For Tempering:
1 tsp oil
¼ tsp asafoetida powder
½ tsp mustard seeds
½ tsp urad dal
1 dry red chillie cut into pieces
1 inch ginger chopped finely
2 green chillies chopped fine
1 sprig curry leaves


1 tsp finely chopped coriander leaves

Method:
Cook the rice with salt to a mushy consistency.
Add in the butter if using. Let the rice cool well.
Now add in the curds and milk, mix well and keep aside.

Heat a pan with the oil, add in the asafoetida powder.
Followed by the mustard seeds, urad dal and red chillie.
Saute for a second, now add in the ginger, green chillies and curry leaves.

Just stir for a moment, and add it to the curd rice.
Mix well, add in also the coriander leaves.
Serve the curd rice chill, or as it is , serve it with pickle or fried mor milagai.
Spicy potato subji, or even paruppu thogayal would be nice.
You can add more curd if your curd rice thickens.

NOTE: You can add freshly chopped fine onions if you like.
Also you can add in grated and squeezed cucumber.
Some even add grated carrot,small chopped mango, for a difference.

Gurocho anneh, I have an idea.
grind your chillie paste with shrimp paste , shallots and garlic
heat oil and cook the chillie paste till oil seperates.

now use this chillie paste and make your anchovies sambal.
do not use tamarind, use vinegar instead.
No water at all, in that way, you can keep and scoop your sambal.
That too I think, may be a week, not months.
Sorry, I cannot try it out because of the anchovies.

My family is sambal crazy.
We make brinjal sambal, bitter gourd sambal, onion sambal,
tofu sambal, long beans sambal and so on.
Our children will demand rice cooker, cooked rice when sambals are made.
Otherwise it is par boiled, brown rice only:-D

Here is a simple but yummy cabbage rice we make on those lazy days...

Soak rice for 15-30 mins...
Grind together pattai, krambu, yelakki, sombu, coconut(very lil), ginger, garlic and green chillies to a paste...

Heat oil... Add some kadalai paruppu and fry till golden.
Add sliced onions and saute till transparent.
Add the paste and fry till flavourful.No need to brown.
Add very roughly chopped cabbage and mix well.
Add req salt, rice and water and cook for 2-3 whistles or for 10 mins on sim after the first whistle.
Serve with onion raitha.
