PASTA SALAD
cooked penne pasta - 1/2 cup
green bell pepper - 1, cut into strips, stir fry for less than a minute
red bell pepper - 1, cut into strips, stir fry for less than a minute
minced garlic - 1 clove
sweet corn kernels - 1/4 cup, cooked/raw
feta cheese cubes - 1/4 cup (optional)
any beans or a mix of beans (chick peas, red kidney beans, etc) - 1/2 cup, cooked
a handful of torn spinach and / rocket leaves
olives - 1/4 cup, pitted
finely chopped parsley - 2 tbsp
juice of 1/2 a lemon
olive oil
chilli powder , pepper powder and salt
Toss all together.
serve warm.
ROASTED VEGGIE SALAD
Heat the oven to 200 degree C.
Take 2 bell peppers, 2 carrots, 2 onions, 1 brinjal, 2 zucchinis, a few sticks celery, 2 turnips and 4 baby potatoes. (add any veggie of ur choice)
Peel where necessary and cut all the vegetables into 5cm chunks.
Cut the potatoes in half.
Drizzle over 5-6 tbsp extra virgin olive oil and 2 tbsp balsamic vinegar. Season with salt and freshly ground black pepper.
Bake until tender - about 30 to 45 minutes.
Mix in some chopped lettuce with the roasted vegetables and drizzle over with all the cooking juices.
serve warm.

Thanks, Dev. Will get some salad recipes from my wife and post them here. But there is so little activity here!! People are not interested in salads, I guess!
my favourite salad is
olives, baby tomatoes (optional), lettuce, cucumber, spring onions, feta cheese, peppers (capsicum) - any colour with salt and pepper - you can always add salad dressing if you want!
Aah! Anu, you have stolen the very recipe I wanted to post here! But, to add to your recipe, a bit of olive oil goes a long way!!

My friend adds her own salad dressing which is a mixture of olive oil, vinegar, a pinch of salt, a pinch of sugar and some crushed garlic to this salad :)
