VALAIPOO URUNDAI KULAMBU
Ingredients for valaipoo urundai:
½ cup channa dal soaked for 2 hours
1 cup valaipoo chopped and soaked in mooru
1 onion chopped fine
1 green chillie chopped fine
½ tsp aniseeds
½ tsp ginger chopped fine
Little coriander leaves chopped
Salt to taste.
Method:
In a pan, add few drops of oil, saute the squeezed valaipoo till lightly cooked
Drain and grind the channa dal to a coarse paste.
Now add together, the valaipoo, channa dal, chopped onion.
chopped green chillie, aniseeds, ginger, coriander leaves and salt to taste.
Now mix every thing nicely with your fingers.
Take small portions and shape them into small balls.
Now steam the balls in a steamer till cooked for about 10 minutes.
Remove and add it to the kulambu you are making.
As for the kulambu, I followed Dev,s recipe.
When the kulambu boils, lastly add in the valaipoo urundais.
Cook in simmer for about 10 minutes.
Remove and serve.
DEV,S KULAMBU RECIPE:
Heat oil... add in kadalai paruppu(1 tbsp), cori seeds(32 tbsp),jeera(1 tsp),dry red chillies...remove them once golden.
Heat oil again... add like 20 pearl onions, 2-3 garlic and fry till golden brown. you can also add a small tomato now and cook a bit.
Add grated coconut,turmeric, salt and cook for a minute.
grind both these together to a paste.
Add req tamarind extract to the paste and mix well.
This is the basic kuzhambu paste .
Heat oil. splutter mustard and add curry leaves. add chopped onion n saute for a while.
Add the vazhaipoo and saute for few mins.
Add the kuzhambu paste and let it cook till the poo is thorougly cooked.
Add lil jaggery towards the end(optional but we add it for vazhaipoo. bittergourd, sundakkai kuzhambu)

CHINESE FRIED RICE ( Kugan)
Dear friends on the way from Ipoh, we stopped at a Chinese vegetarian shop for food.
We had Chinese fried rice with mushroom hot sauce. (not that hot )
I would have preferred mee curry:wink::wink:
It was tasty, so somehow got the recipe for mushroom sauce.
Try it out friends, for a change. Kugan
CHINESE FRIED RICE
Ingredients:
1 tbs sesame oil
1 tsp garlic chopped
2 shallots sliced
2 green chillies chopped
¼ cup finely chopped beans
¼ cup finely chopped carrots
½ cup sliced green capsicum
¼ tsp pepper powder
Salt to taste
1 cup, cooked and cooled rice
1 tsp soy sauce
1 tsp vinegar
1 tsp chillie sauce
Little spring onion for garnish
Method:
Heat a wok with the oil, add in the garlic, saute till nice aroma comes.
Add in the sliced shallots and the green chillies, stir fry well.
Add in the chopped beans, carrots, capsicum, and stir fry for a minute.
Add in the pepper powder, and salt, stir fry again for a minute.
Now add in the cooked cooled rice, soy sauce, vinegar, and chillie sauce.
Turn the heat high and do a quick stir fry. See that all the ingredients,
are mixed well with the rice. Remove and garnish with the spring onions.
Goes well with mushroom in hot sauce.

MUSHROOM IN HOT SAUCE (Kugan )
Here is the mushroom sauce. Kugan
MUSHROOM IN HOT SAUCE
Ingredients:
The Sauce:
1 cup vegetable stock
1 cup water
1 tsp corn flour
Mix the 3 ingredients and keep aside
1 tbs oil
1 tbs finely chopped garlic
3 fresh red chillie chopped
The Vegetables:
1 cup mushrooms diced
1 cup capsicum diced
Salt to taste
2 tbs tomato sauce
1 tsp soy sauce
½ tsp black pepper powder
½ tsp honey
2 tbs spring onion chopped
Method:
Heat oil in a pan, add in the chopped garlic and saute till nice aroma comes.
Add in the chopped red chillie, and saute for a minute.
Now add in the vegetables , salt and stir fry for a minute
Add in the tomato sauce, soy sauce, black pepper powder and honey.
Stir fry for a minute, add in the vegetable stock mixture.
Stir continously till it boils. Simmer for 2 minutes till gravy thickens.
Remove and garnish with the spring onions.
Serve with fried rice.
