Roat over open flame(medium) one medium sized baingan(purple big fat variety). U need to apply oil all ober the brinjal before roasting. U can use the oven for it but roasting over open flame or charcoal gives a spl flavour.
Once the brinjal is blackened all over,put it in a vessel & close with a lid & let cool.
Alternately u can dip it in water to cool it down.
Now peel off all the skin & mash it roughly or chop into small pieces. Mashing gives a nice texture.
Heat 2 tsp oil. Add 1/4 tsp jeera.saute.
Add 1 medium onion chopped. Let ir become golden.
Add 1 tsp grated gin-garlic. saute till flavourful.
Add chilly pwd, salt, 1 tsp cori pwd, 1/2 tsp garam masala. Saute for few secs.
Add 1 tomato chopped.Saute till pulpy.
Add in the mashed brinjal , very lil water & cook for few mins so that any brinjal pieces tht r not cooked gets cooked well & the bharta becomes thick .
Garnish with coriander leaves.
Serve with rotis.
Can some one tell me how to make 'Chilie Paneer' , please? I tried at home, but the cheese looked and tasted uncooked

PS, the paneer is already cooked in the process of making paneer... so it doesn't need much cooking time... anyway, I'll see if I have any chilly paneer recipe in my file & let u know...
