For dinner, you can offer some light tiffins, some thing exotic that you cant get at restaurants. Like mint parata, roti jala, badhura, etc.
For roti jala, use white flour, add water and mix well. Then add evaporated milk, yellow colouring & salt put it into a blender and blend well. Check the thickness of the batter.
When you make the roti jala on the pan, add some ghee with some pandan leaves. avalOthAn.
Serve with tomato and potato curry.

The roti came out very well.
Have to ask Suvai about the boiled rice flour.

Normally I will use egg for the batter.
I did not think about trying without the egg.

[tscii]Selviem here is a nice dish for childrens party.
CHICKEN LOLLIPOP
Ingredients:
8 chicken wings with skin
6 green chillies ground
¼ tsp pepper powder
¼ tsp gram masala powder
1 tsp ginger paste
1 tsp garlic paste
½ tsp chillie sauce
½ tsp soya sauce
1 tbs worchestershire sauce
1 egg
50 grms all purpose flour
1 tbs corn floursalt to taste
oil for frying
a tinge of red colour
Method:
Break each chicken wing into two parts at the joint.
Take each part and pull back the meat from one
end of the bone to the other carefully.
Make sure that you do not pull the meat completely out.
Put all the chicken lollipops in a bowl.
Add all the ingredients except the oil.
Mix the ingredients to the chicken and let it marinate for 2 hours.
The longer the better.
Heat oil in a flat saucepan.
Deep fry the chicken lollipops in the hot oil by holding the tip of the bone and placing the meaty section in oil.
Drain and serve with chillie sauce.

kugan chicken lollipop is my kids favourite. i have to try, can i grill with the same marination. coz i dont want to deep fry.

Sprout & carrot salad...This is just a variation of Karnataka's famous salad 'Kosambari'...
Sprout green moong dhal- 1 handful or less
Carrots-2 medium sized(shredded)
Salad cucumber-1/2(shredded)
Lemon-to taste
Coriander leaves-a few(chopped)
Green chillies(chopped) or chilli powder-to taste
Salt- to taste
Mix all the above & serve it a bit cool... Sprouts can be added to taste... Depends on how much of the 'thuvarpu' taste u can stand...
Variation: Can add yellow moong dhal (soaked overnight) instead of sprouts...

[tscii]Selviem as I promised you earlier I am posting a simplier
version of the kootu, which is normally cooked in our house.
CHOW CHOW KOOTU
Ingredients:
2 cups chow chow cut into small cubes
¼ cup channa dal or toor dal boiled well
Little tumeric powder
¼ tsp cumin powder
5 green chillies sliced
Salt to taste
To Season:
½ tsp mustard seeds
½ tsp urad dal
½ tsp cumin seeds
1 sprig of curry leaves
Little asafetida powder
2 tsp oil
1 tbs chopped coriander leaves
Method:
Heat a wok with oil, add in the mustard seeds, urad dal, cumin seeds,
curry leaves and the sasfoetida powder. Saute well.
Add in the green chillies, tumeric powder, cumin powder and the chow chow. Stir fry well for a minute.
Add little water, the boiled dal, and salt.
Cover and cook for about 5 minutes till the chow chow is cooked.
The consistency should be thick.
At this stage if you like you can add in about 3 tbs of low fat milk or
coconut milk. ( I did not use any)
Garnish with coriander leaves and remove.
Serve as a side dish.
This method can be used for veges like, snake gourd, cabbage,
Sorakkai, beans, ridgegourd , radish and many more.

CHICK PEAS SALAD.
1 cup of boiled chick peas.
1/2 cup of shredded salad leaves or cabbage
1/2 cup of shredded carrot
1 onion sliced
2 green chillies sliced finely
3 tbs thick curds
2 tbs of vegetarian mayonise ( or normal one)
2 tsp of olive oil
1/4 tsp pepper powder
a pinch of sugar
salt to taste.
Chill the veges and the sauce.
Mix as soon as the guests arrive.

When I run out of dosai batter, this is what I will do.
Make godamba dosais.
Godamba Dosai.
Ingredients:
2 cups of wheat flour
1/2 cup all purpose flour
salt to taste
water as required
1/4 cup oil or ghee.
Method:
Mix all the ingredients to a smooth dosa like batter.
Cover and let the batter rest for half an hour.
Then cook as you will the dosai.
Drizzle little sesame oil all around the dosai..
See that is lightly brown and a bit crisp, flip it over.
cook this side also.
Serve it warm with a good chutney, or gravy.

Kugan, pls post the thai salad recipes...:) Tasteless/less sour oranges are a good substitute for pomelo salad I guess...
For the godumai dosai: Try this variation.... instead of maida, add a lil white rava...adding rava helps make the dosa lil crispy & it's much easier to spread the batter too...

my salad will not have any dressing. thats why i am not posting, we take ice berg lettuce, cucumber with some unsalted, no oil olives in the afternoon. Also sometimes , we have steamed broccoli with diced tomatoes.
In the night, i do with some sprouts (moong dhal, chick peas (black or white) kidney beans, kollu,etc ) either one of these with shredded cabbage, red,orange,green, yellow bell peppers, little white onion, little tomato, little olives, little corn. this also without salt and no dressing.
we started this habit for past 3 years, still now by god's grace we are eating. But if say suggest to some friends, they are making fun of me. Actually it will be difficult for first week, then u will be used to it. but it is very good for health and filling too. u try it kugan.

Chickpea salad: U can add green chutney instead of the sauce... green chutney is nothing but cori, mint, g.chilly, baby onions, garlic/ginger(any or both),salt & lemon juice ground to a paste... adding boiled cubed potatoes to the chickpea salad adds to the taste in this case...

kugan i make wheat dosa like this.
wheat flour - 1 cup
powdered oats - 1 cup
rice flour - 1/2cup
besan (kadalai maavu) - 1 1/2 tblsp
grated carrot - 1/4 cup
then crushed ginger - 1 tsp
pepper, jeera - coarsely ground - 1 tsp
green chilly - 1 finely chopped
curry leaves - 1 tblsp finely chopped
coriander leaves - 2 tblsp finely chopped
mix with reqd salt and make like rawa dosa, it will be very crispy and very tasty.
same can done with ragi flour instead of wheat flour.
Also for rawa dosa also u can add oats powder. so it is very healthy.

Try this Sambar saatham, not so healthy, neither too quick to cook.
You can cook this once in a way, for any potluck.

SAMBAR SAATHAM
1 cup rice
1 cup toor dal
1 small lime size ball of tamarind
3 teaspoons salt
2 teaspoons oil
2 teaspoons ghee
12 red chili peppers
4 green chili peppers
1 teaspoon fenugreek seeds
1 tablespoon coriander seeds
2 teaspoon mustard seeds
12 cashew nuts
1/4 cup grated coconut
Turmeric powder
Curry leaves
Asafoetida
Fry coriander seeds and 6 red chilies fenugreek seeds, and coconut in 2 teaspoons of oil. Cool and powder.
In a large pot bring 2 cups of water to boil. Wash and clean dal and add to the water along with a pinch of turmeric. Wash and drain rice. When the dal is half cooked, add
Vegetables such as , drumsticks carrots, potatoes, chow chow, brinjal etc may be added.
Add 2 to 3 cups of boiling water to the pot and stir in rice. Keep stirring to prevent scorching. Prepare tamarind water by soaking the tamarind in a cup of water. When rice and dal is cooked and most of the water is absorbed, add the tamarind water to the pot along with salt and stir. Cook until most of the water is absorbed. Remove from stove.
(. Add tamarind only after the vegetables have cooked. )
Heat a frying pan and add oil. Season with mustard seeds, red chilies. Add green chilies and curry leaves. Add this to the cooked rice and dal. Fry cashew nuts in ghee, add the powdered masala and stir this into the rice and dal mixture. Dissolve asafoetida in a tablespoon of water and add to the pot. Stir and mix well. Let it cook for a couple of minutes. Remove from stove. Add coriander leaves. When cooled, the dish will attain required consistency.

ok fine kugan. today afternoon salad in our house is , one layer of iceberg lettuce(7 big leaves, remove the center part and tear it with hands), on top 2 diced cucumbers, next comes the baby pink radish slices (7 pcs). This will salad will be crunchy and nice to eat. no salt and no dressing. Sometimes my husband will have this with salsa or chilli garlic sauce as a dip.

thanks a lot. ofcourse wheat dosa is healthy and tasty. nobody knows that i added powdered oats in that. Also i prepare chappathi, 1cup whole wheat, 1/3 cup of powdered oats, 1 tsp flax seeds powder mix it with warm water, 1 tblsp of skimmed milk. Chapathi will come very soft. Here i dont add salt.Finally after the dough is ready i add 2 to 3 drops of oil. keep this for 1/2 hour and make chapathi. It will come very nice.
