1 cup fresh milk

Soak the sago for about 10 minutes.
Boil the sago in lots of water till cooked.
Drain the water in strainer and wash the sago under running tap water
to wash out the excess starch.
Chop the mango into small pieces. Reserve little for garnishing.
Now blend the rest of the mango pieces, with the condensed milk,
fresh milk, sugar and essence to a smooth paste.
Now transfer the blended paste to a bowl. Add in the cooked sago.
Mix well, add little more fresh milk if needed.
Now pour it into small containers, top it with the mango bits.
Chill well before serving.

Brinjal Vathakkal (Kugan)
[tscii]Please try out this simple brinjal vathakkal.
It goes well with rice or bread.
BRINJAL VATHAKKAL
Ingredients:
250 grms brinjal sliced into wedges.
100 grms onion chopped
4 pips garlic chopped
¼ tsp ginger paste
2 green chillies chopped
1 tsp coriander powder
1 tsp chillie powder
¼ tsp turmeric powder
½ tsp coarsely ground pepper powder
1 tsp aniseeds
1 sprig curry leaves
1 tbs oil
Salt to taste
Method:
Heat oil in a wok, add in the aniseeds and curry leaves.
Add in the onions and sauté until lightly brown.
Add in the cut brinjals, salt and stir and cook on medium heat.
Let the brinjals cook in the oil, add in the turmeric, chillie,
and coriander powders. Keep stirring, add in ginger and garlic.
Sprinkle little water and keep on stirring slowly.
So that the masala sticks to the brinjal pieces.
Lastly add in the ground pepper.
Give a good turn over and remove.
Garnish with cut coriander if wished.
