I prepared carrot halwa for father's day. My dad was really happy and he told tht it tastes so gud... :redjump:
It turned out so well... :D
My mom used to prepare carrot halwa and I prepared once before tht too with the help of my mom. But this time I prepared myself without my mom's help :swinghead:
I prepared it yesterday morning and kept it in fridge. Served it cold by evening :slurp: very very tasty, yummy. Mashing the carrots is a very gud idea :goodidea: ...
Started to prepare keerai, but power went off? Oh no :cry: have to grind cocunut n other stuff :hammer:
dont worry here is a receipe which can be done without a mixer grinder :D
Mulai keerai(amaranth leaves) mixed with moong dal :slurp:
Ingredients:
moong dal- 3 tbs
1 bunch of Mulai keerai
Asafoetida
Mustard seeds.
Urad dal
Jeera
Cocunut
Red Chillies - 3
Salt to taste
Method:
Wash the keerai and chop it nicely.
In a pot, put this keerai, add water, let it boil.
After ensuring that, keerai has been cooked well, add moong dal and let it cook.
Moong dal should not be over cooked, it should be in an eatable consistency.
Add salt, Scrap the Cocunut, add the cocunut shreds to the keerai content.
Cook for 5 mins, all will come together. By that time, simmer the stove.
Heat a pan, add little oil, add mustard seeds, let it pops up, add urad dal fry till golden brown, add red chillies, jeera, asafoetida powder and put this to the keerai pot.
Mix well, cook for another 2 mins. You are done :thumbsup:
Goes well with Kuzhambu rice/ Saambar rice/ Roti.

Cocunut Podi :redjump:
Ingredients:
Cocunut shreds - (2 cocunuts)
Urad dal (Uluthamparuppu) - 1 cup
Bengal Gram (Kadalai Paruppu) - 1 cup
Red Chillies - 10 (more or less depends upon the spice taste)
Asafoetida
Salt - Depends upon the taste
Method:
Scrap the cocunut and keep the cocunuts shreds aside.
Heat a pan, add oil, add urad dal, bengal gram, red chillies.
Fry till light brown, dont over fry. Add asafoetida powder and keep it aside.
In a mixer grinder, add the above + salt and grind well.
Heat a pan, dont add any oil. Juz add the cocunut shreds directly to the pan, and shallow fry it until the water content is removed from the cocunut. After ensuring that the water content doesnt exist, remove from fire.
Now, add the ground content to the cocunut content, and mix well.
Cocunut podi is ready.
Cocunut podi can be mixed with rice or can be used as a side dish.

Here is a quick recipe...
Paruppu Podi in Less than 5 minutes :redjump:
Ingredients:
Chick peas - 4 tbs
Red chillie powder - 1/2 tbs
Asafoetida
Salt - Depends upon the taste
Method:
In a mixer grinder, add all the above ingredients and grind well.
Paruppu podi is ready. :thumbsup:
Well you can add garlic also to bring out that andhra feel.
Today morning I prepared this (but for only 2 persons :noteeth: ), as it is amavasai today, I cudnt add garlic :D

PRAWN AND QUAIL SAMBAL
Prawns - cleaned n washed
Quail Eggs- washed and drained
A ingredients to be grinded:
1 Big onion- sliced
Ginger and garlic paste
2 Green Chillies
6-9 Dried Chillies -soaked in hot water n remove the seeds
5 small shallots- sliced
1 Lemongrass (Serai)
1/2tsp Shrimp paste (Belachan)
Salt
1tsp Lemon Juice
Corriander leaves- garnishing
Method:
Heat pan with oil, Add in the Lemongrass, Shallots, and stir fry till nice aroma. Add in the A ingredients and keep stirring it well and all red in colour. Add abit of water and let it boil. Add in shrimp paste, salt, prawns, quail eggs and stir it very well and dry. Lastly garnish with corriander leaves n 1tsp lemon juice.
