BITTER GOURD IN MASALA
Ingredients:
300 grms bitter gourds cut into small pieces
½ tsp tamarind paste
Salt to taste
Little jaggery to taste
1 tbs oil
1 onion chopped fine
1/2 tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
¼ tsp asafoetida powder
To roast and grind:
2 tbs coconut scrapings
2 tsp coriander seeds
1 tsp cumin seeds
½ tsp pepper corns
2 tsp urad dal
7 red dry chillies
2 tsp channa dal
Little oil
Method:
Roast all the ingredients in “grind” When cool grind to a fine paste.
Heat oil in a wok, add in the mustard seeds, cumin seeds.
When they splutter add in the curry leaves and the onions.
Sauté well, now add in the cut bitter gourds, tamarind paste,
Salt and asafoetida powder. Stir nicely. Cover and cook.
The bitter gourds would be a little tender now.
Add in the ground paste, stir nicely. You can sprinkle little water if needed. Cook over medium heat till the oil separates.
Add in the jaggery, stir well and remove.
Serve as a side dish.

Try this Saaru.
MANATHAKKALI KEERAI SAARU
Ingredients:
250 grm manathakkali keerai only the leaves
150 grms toor dal
2 green chillies sliced
3 garlic pips
tsp tumeric powder
1 tomato chopped
1 onion sliced
tsp mustard seeds
tsp cumin seeds
1 dry chillie cut into pieces
1 tsp tamarind paste diluted
Salt to taste
Oil
cup coconut milk ( optional )
Method:
Boil the dal with the tumeric powder, sliced green chillies,
And garlic.
After the dal is well cooked ,add the keerai.
Do not over cook the keerai. Remove from stove.
The consistency should be a bit watery.
Use a pan, add the oil, then the mustard seeds.
Also add the cumin seeds. Then add the dried chillies,
Chopped onions, and chopped tomatoes.
Let the tomatoes cook well, add in the diluted tamarind.
Let it boil well, pour the contents in the dal, keerai mixture.
Add salt. Add the coconut milk if you are using it.
Let it boil once and remove from stove, and serve.
Note: This keerai is called Black Nightshade in English.
It is supposed to cure stomach ulcers, and mouth ulcers.

SPICY TOMATO SOUP
Ingredients:
4 big red juicy tomatoes (see that the tomatoes are red in colour)
1/4 tsp tamarind paste (if your tomatoes are not sour)
Salt to taste
Roast and grind:
1 tsp coriander seeds
½ tsp cumin seeds
5 funugreek seeds
5 pepper corns
2 dry red chillie
To temper:
1 tsp oil
½ tsp mustard seeds
A few curry leaves
¼ tsp asafoetida powder
Little spring onion or coriander leaves for garnishing
Method:
Steam the tomatoes, cool peel the skin and puree them.
Add 2 cups of water, or to desired consistency.
Add in the salt, and tamarind paste.
Heat a pan with the oil. Add in the tempering things.
Add in the tomato puree and the ground powder.
Stir nicely to a boil. Remove and add the garnishing.
Serve the steaming soup with a bread toast.
