Dev, try using corn flour and rice flour.
Just sprinkle water, very very little. Just for the flour to stick to the pavakkai. Then you fry, see it stays crisp longer.

CHINESE VEGETABLE FRIED RICE
Ingredients
3 cups cold cooked rice.
1 tbs of oil
1 tsp minced fresh ginger
1 onion diced
¼ cup green peas
½ red capsicum diced
2 tsp soy sauce
1 tsp vegetarian oyster sauce
Black pepper to taste
1 spring onion chopped
Method:
Heat oil in a wok, add in the ginger, stir fry until fragrant.
Add in the onions, stir fry for about 2 minutes.
Push the onion to the side of the wok, add in the green peas.
Stir fry for a minute, push to the side, add in the red capsicum
stir fry for a minute. Now remove all the things to a plate.
Now in the same pan, add in the rice, use a spatula to turn
and move the rice around.
Stir until the rice is heated through.
Add in the stir fried vegetables. Add in the sauces and pepper powder.
Give it a good stir, remove and garnish with the spring onions.
NOTE: You can use any vege of your choice.
You can also use little dark soy sauce if you need colour for the rice.

EGG FRIED RICE
Ingredients:
350 grms cooked rice (refrigerated)
2 eggs beaten
2 tbs shredded carrots
4 tbs thawed peas
2 tbs soy sauce
2 tbs oyster sauce
1 spring onion sliced
2 pips garlic minced
2 tbs oil
Little white pepper
Salt to taste
Method:
Heat a wok with 1 tbs of oil. pour the egg and stir rapidly
to break it up.
Push the egg to the side, pour in the other tbs of oil.
Add in the minced garlic, sauté until it gives a nice aroma.
Add in the cold rice, push back the fried egg.
Stir well until it is mixed thoroughly.
Now add in the carrots, peas and spring onions.
Mix thoroughly, add in the soy sauce, oyster sauce and pepper.
Toss it all together and remove from heat.
NOTE: When the rice is chilled, the grains do not tend to stick together.
This makes it perfect for fried rice dishes.
You can add in cooked shredded meat if preferred.

Dev the reason for the smokey taste is the hot wok. One of the reasons that restaurant-made fried rice has that smoky flavour is the high temperatures and the seasoned carbon steel woks that they use. .
The soy sauce will make the rice wet instead of caramelising and the rice too will not get heated all the way through. Now, to get a nice, smoky, fried rice flavor, you have to stir-fry everything on a very high heat, and quickly.
Heat your wok on high, add the cooking oil then stir fry all the ingredients on high heat .
Here at times you can see the flames in the wok.
The soy sauce will sizzle and give out an aroma.
For Chinese fried rice the sesame oil will make the difference.

CAULIFLOWER MUSHROOM CURRY
Ingredients:
200 grms mushroom quartered
100 grms carrot diced
100 grms cauliflower florets
50 grms green peas
3 tbs tomato paste
1 tsp chillie powder
1 tsp coriander powder
¾ tsp garam masala powder
2 cups of water
½ cup whisked curds
4 tbs finely cut coriander leaves
2 tbs oil
Salt to taste
To grind fine:
1 large onion chopped
4 tbs cashew nuts
½ tsp cumin seeds
3 dry chillies
1 inch ginger
2 birds eye chillie
Method:
Heat oil in a wok, add in the ground paste.
On low heat cook the paste until the raw smell goes.
Keep stirring to prevent burning.
Add in the tomato paste, garam masala, coriander, and chillie.
Stir fry for 2 to 3 minutes.
Add 1 cup of water, add in the cauliflower and carrot.
Cook for about 4 minutes, add in the cut mushrooms.
Add little more water if needed.
Lastly add in the green peas and salt.
Remove from heat, when the gravy is slightly thick and the veges cooked.
Now add in the well beaten curds, mix well.
Garnish with the cut coriander leaves.
Goes well with rice roti and even pulao.

A very simple way cooked in my aunts house.

SPECIAL POTATO THOKKU
Ingredients:
500 grms potato ¾ cooked
1 tsp pepper
1 tsp cumin
200 grms small onion chopped
1 sprig curry leaves
1 tbs ginger garlic paste
¼ tsp turmeric powder
2 tsp chillie powder
2 tbs oil
1 tbs special masala powder
¼ cup coconut, ¼ cup cashew nuts, ground fine
Little lime juice
Salt to taste
Special masala powder:
100 grms coriander seeds
1 tbs par boiled rice
1 sprig curry leaves.
Dry roast everything and grind to powder
Method:
Cube the potatoes and deep fry them in oil. Keep aside.
Heat oil in a wok, add in the black pepper and the cumin seeds.
Let them splutter, add in the curry leaves, and onions.
Sauté well till light brown in colour.
Add in the ginger and garlic paste. Stir well.
Add in the turmeric and chillie powder.
Add in also the special masala powder. Mix well.
Now add in the fried potatoes and salt. Fry well again.
Lastly add in the coconut and cashew nut paste.
Give a good stir so that the potato is well mixed.
Cook for a minute and remove. Sprinkle little lime juice.
Garnish with the cut coriander leaves.

I too did the same in my house.
I did not think of asking her about the boiling.

They will use, sweet sauce and fish sauce, plus lots of non vege items to their fried rice. Poduren.

You can add in any vegetables, meat and things to make it a wholesome meal. I do not add aji no motto in our fried rice.

KUGAN”S STYLE FRIED RICE
Ingredients:
3 cups cooked cold long grained rice
¼ cup cut carrots
¼ cup cauliflower florets cut small
¼ cup beans cut in lengths
¼ cup soaked soya mate sliced
¼ cup soaked dried mushroom sliced
2 tbs chillie paste
3 pips garlic smashed
1 onion sliced
2 tsp soy sauce
2 tsp vinegar
½ tsp white pepper
1 tbs tomato sauce
2 tbs oil
Salt to taste
Spring onion chopped to garnish
Method:
Heat the oil in a wok, add in the smashed garlic.
Sauté till nice aroma comes. Add in the sliced onions.
Sauté till the onions are a bit brown.
Add in the chillie paste, and cook till the oil rises.
Now add in the sliced soya mate and the mushroom.
Stir fry nicely, add in the vegetables, sprinkle little water.
Stir fry till the veges are cooked, but crisp.
Now add all the seasonings, give a good stir.
Lastly add in the rice and toss well, so that the rice
Is mixed well with the spices. Taste for salt.
Sprinkle the spring onion and give a final mix.
Remove and serve.

I bought a pack of something called Ragi Huri Hittu... any idea what it can be used for... The packet instruction says mix it with milk n sugar and drink... or add jaggery syrup and cardamom and make it into a ball... no cooking instructions given... I guess it's something like read to eat stuff... but I just want to confirm it... Huri in kannada means roasted/puffed I guess... so is it something like flour made from ragi pori?...

My Malay friend told me, just have some cold rice.
Slice some onions, smash some garlic, have some anchovies.
Little fresh red chillies sliced. Heat oil add in the garlic, onions, anchovies, saute well, the aroma will be so nice.
add in the red chillies, add in the rice and some soy sauce.
stir well, your fried rice is ready, so simple.

Ragi means our kevur.
Huri means roasted
Hittu means flour
So it is roasted ragi flour.
You can make a healthy drink by adding milk and sugar.
You can make ragi sweet balls, or anything that you can make with roasted ragi flour.

Method:
Heat a wok with the oil, add in the mustard seeds and cumin.
Let it splutter, add in the onions and sauté for a while.
Now add in the garlic, ginger, green chillies, and curry leaves.
Add in the turmeric powder and chillie powder.
Sauté well, add in the tomato and stir well.
Now add in the cut snake gourd pieces, salt and fry for few minutes.
Add in the cooked dal, with its little water.
Cover and cook over medium heat.
When the snake gourd is cooked and moisture absorbed,
Add in the asafoetida powder, stir well and remove.
Garnish with the cut coriander leaves.

To Be Roasted Ground To Paste:
5 red chillies
2 tsp urad dal

½ tsp cumin seeds
¼ tsp turmeric powder
1 tbs coconut grated
¼ tsp cumin seeds
½ tsp mustard seeds
¼ tsp urad dal
1 sprig curry leaves
Little asafoetida powder
1 tbs oil or ghee
Salt to taste
Method:
Heat a wok with the oil, add in the mustard seeds and cumin.
followed by urad dal and curry leaves. Let them splutter.
Add in the cut snake gourd pieces.
Stir them nicely, add in the ground paste.
Add salt and asafoetida powder, stir well.
Let the snake gourd cook on low heat.
Stir once in a way.
Lastly add in the cooked moong dal.
Stir well and cook for about 5 minutes.
Remove and serve.
