[tscii] VEGETARIAN CURRY MEE
Ingredients:
500 grms yellow noddles washed and drained
1 cup vegetarian curry paste
1 can vegetarian mushroom soup
2 sprigs curry leaves
2 stalks lemon grass smashed
1 liter water or more
¼ liter thick coconut milk
½ tsp sugar
¼ cup oil
Salt to taste
Garnishing:
100 grms cucumber shredded
100 grms long beans cut into 1 inch length and blanched
50 grms bean sprouts blanched
50 potatoes boiled and diced
100 grms tofu puffs sliced
Vegetarian curry paste:
50 grms fresh red chillies
10 grms dry red chillies
1 tbs meat curry powder
25 grms candle nuts
15 grms coriander seeds
5 grms fresh tumeric root
5 small onions
10 grms galangal
2 sprigs curry leaves
2 stalks lemon grass
Method:
Combine all the ingredients for the paste in a blender.
Blend to a fine paste, adding little water if necessary.
Remove and keep aside.
Heat a wok with the oil, add in the lemon grass and curry leaves.
Add in the curry paste and sauté well till the oil separates.
Mix the mushroom soup with the water and add to the chillie paste
Add salt and let it come to a boil and simmer on medium flame for about 20 minutes.
Add in the sugar and the thick coconut milk.
Let it boil once and remove.
To serve, assemble individual portions of noddles
About 100 grms in a bowl, top with the various garnishes.
Then scoop enough hot curry over it.
Serve it piping hot.
Note: You can use all coconut milk instead of the mushroom soup.
FOR NON_VEGETARIANS:
You can serve wedges of boiled eggs and boiled shredded chicken.
You can use chicken broth and coconut milk instead of water.

150g wholemeal flour
150g plain flour
2 tsps baking powder
1½ tsps bicarbonate of soda
1tsp fine salt
2 tsps ground cinnamon
½ tsp ground ginger
260g soft brown sugar
290ml corn oil
4 medium eggs, lightly beaten
300g grated carrot
80g walnuts, chopped
80g raisins
Grated rind of 1 lemon
Method
1. Sift together the first seven ingredients
2. Preheat oven to 1800 C/3500F/Gas 4
3. Grease and line a loaf tin
4. Put all sifted ingredients into a bowl. Add in sugar, oil and beaten eggs.
5. Beat well. Add the remaining ingredients and mix well.
6. Pour batter into a loaf tin and bake for 80 mins our until a skewer comes out clean
7. Leave cake to cool thoroughly before icing (optional)
Lemon Cheese Icing
125g cream cheese at room temperature
1 tbsp lemon juice
Grated rind of 1 lemon
250g icing sugar, sifted
60g butter
Beat all ingredients together until smooth and slather over cake.

So I just thought of posting something sweet.

SWEET BOLI
Ingredients:
1 ½ cups of all purpose flour
1 ½ cups of water
Little yellow colour
A pinch of salt
1 cup Bengal gram dal
¾ cup of grated coconut
1 cup of powdered sugar
¼ tsp cardamom powder
A pinch of salt
5 tbs of ghee
Method:
Mix the flour, water, salt and yellow colour.
Mix it to a soft dough, add little oil on the surface.
Keep it aside.
Soak the dal for about 2 hours.
Then cook the dal in water till soft, but not mushy.
Drain the water completely,
Grind the dal along with the coconut and sugar to a fine paste.
Heat up a non-stick pan and add this mixture with
The salt and cardamom powder. Stir over a medium heat
Till the mixture is solid. Let it cool.
With the mixture make it into lime sized balls.
Take a little of the dough, cover the dal ball with the dough.
Take a plastic sheet and flatten out the dough with your fingers.
Apply little ghee or oil to your fingers when you flatten.
Heat up a dosa kal, when it is hot place the boli and pour
A tsp of ghee all around and cook.
Turn and cook on the other side until little brown spots ap

very tempting sweet u made. my favourite sweet is boli, but i am lazy to prepare. our boli will also looks like urs. yesterday only my parents left, i was so busy for past one month, but i keep visiting the thread everyday. now we are going for vacation for a month. After i come back i will join u.
