Potato Kuruma
Required Items:
Potatoes - 3 to 4
Tomato - 2
Onion - 1 Big
Chilli powder - 1 to 1 1/2 tsp
Coriander powder - 1/2 tsp
Tamarind juice : 1 to 2 tbsp
For Grinding :
Garlic - 5 gloves
Ginger - 1/2 inch
Coconut - 1/2 cup
Fennel seeds - 1 tbsp
For Seasoning :
Cinnamon sticks (pattai) - 2 inch
Oil - 3 tsp
Curry leaves
Method:
Chop the onion into fine thin strips
Chop the Tomato into small pieces.
Peel the outer skin of the potatoes.
Chop the potatoes into medium sized pieces and pressure it for 1 whistle. It has to be boiled well. But the shape should be retained.
Grind Garlic, Ginger, Fennel seeds & coconut into a fine paste.
In a pan, pour the oil and add the cinnamon sticks and fry for few seconds.
Now add the finely sliced onions and fry it until it is translucent.
Now add the tomato pieces and fry for about 1 to 2 minutes..
Add the coconut paste now and allow it to boil in a low flame.
After 1 minute add the boiled potato pieces and mix well.
Now pour 1 1/2 cups of water and add Chilli powder, coriander powder and salt.
After mixing everything well, close the pan with a lid and let it cook for about 5 minutes.
Now open the lid and add the tamarind juice mix it well and allow it to boil for 2-3 minutes.
This kuruma has a nice taste.As well it has a nice aroma also.
Goes well with Chappati,Aappam & Poori

Here is Annis Special thenga saadham
Ingredients
Rice - 1 cup
Ghee - 2 tbsp
Bay leaves , cinnamon sticks , cloves , cardamom --1 each
garlic pods - 6 (be generous)
pudina - 1 bunch or less
green chilly - 2
Mixed veggie(peas - carrot -mushroom) -
100gm
Salt to taste
Thenga paal (Thick)- 1 cup
water - 3/4 cup
Method
Put 2 tbsp ghee in the rice cooker , wait until it melts add garam masala items listed above.
Fry whole garlic pods depending on ur liking and put mint leaves and fry it until the aroma oozes out.
Now add the veggies(half cooked will speed the process)
Add 1 cup coconut milk and 3/4 cup water and allow it to boil .
Add the salt at this stage and check if it is correct.
Now add rice and close the rice cooker. Let stand for 5 minutes after the Thenga paal saadham is done
PS : Chilly convention : 1 cup rice ku 2 green chilly
Coconut milk alavu - 1 cup rice - 1 cup coconut milk and 3/4 water
so 2 cup rice - 2 cup coconut milk and 1 3/4th cup water and so on
