Egg(white) omlette curry:
Beat 5 egg whites with salt & pepper(u can add green chillies instead),chopped onions,tomatoes chopped,capsicum chopped. Those not on diet can add whole eggs.
Heat a pan & grease it with oil.
Pour in the egg mixture-cook-flip & cook till done. The omlette shoud be lil thick.So use the right sized pan.
Take it on a plate & cut it into desired shape(sq,strips,diamond...whatever).I usually cut it into strips.
Heat 1 tbsp oil in the same pan.

Add 1/4 tsp turmeric,chilli pwd,1 tsp coriander pwd. mix.

Add in the egg slices,a pinch of sugar(optional). Mix gently.
Serve with chapathis or rice.
Note: U can use the same base to make hard-boiled egg white curry.
Brinjal kosthu:

Brinjal - 2 cups, finely chopped
carrot - 1 medium sized , finely chopped.
in a pressure cooker, add a tsp of cooking oil, kadukku,urad dhal and 2 tblsp of kadalai paruppu, when it pops up add one red chilly, curry leaves, 2 cups of big onion chopped, 2 green chillies (roughly chopped), fry for 2 to 3 mins(frying is optional), add reqd salt, turmeric powder, add water according to the vegetables. close the cooker and allow for 2 whistles.
once the pressure is released, mix it with spoon, add tamarind extract(from small lemon size), allow it to boil.
in a pan dry fry 4 red chillies, 1 tblsp kadalai paruppu, 1 tblsp of coriander seeds, 2 tblsp of pottukadalai. grind this to a fine powder , add this to the cooked veges. let it boil for 2 to 3 min, now add a tsp of sugar, 2 to 3 tblsp of idli batter and let it boil for 2 to 3 mins.
garnish with coriander leaves. tastes is very good. It goes very well with idli, dosa, chapathi etc.
