I am really overwhelmed by all your love.
So here is the cheese cake.
CHILLED LEMON CHEESE CAKE
Ingredients:
200 grms oreo biscuits or digestive biscuits
100 grms melted unsalted butter
Cheese Fillings:
250 grms cream cheese
150 grms castor sugar
½ tsp vanilla essence
1 tbs lemon juice
1 tsp grated lemon rind
240 ml heavy whipping cream
Method:
Line the base of a 23 cm round spring- form pan with
aluminum foil.
Break biscuits into a food processor and whizz until
crumbly in texture. Add melted butter and mix well.
Press the biscuit mixture firmly onto the base of prepared
pan and chill for about 20 minutes.
In a bowl, beat the cream cheese until smooth.
Add in the sugar and beat until light and fluffy.
Scrape down the sides of the bowl, and beat in the essence,
rind and the lemon juice.
In clean bowl, beat the whipping cream until soft peaks form.
Gradually fold in the whipping cream into the cream cheese.
Pour the filling over the chilled biscuit base.
Smooth the the top, you can make swirls with a fork.
Now refrigerate the cake for 3 to 4 hours.
Its best to leave it over night.
You can decorate with fruits, jam or what ever you fancy.
Note: You can leave out lemon juice if you are not making
a lemon cheese cake.
I placed few biscuits here and there before pouring the other half of the mixture.

Ok... I'll give a sample menu... the standard south Indian menu followed in weddings in our part...
Biriyani with onion or mixed raitha
Plain rice
Dhal with ghee or sambar
vathal kulambu or brinjal puli kulambu or london vatha kulambu(they also serve saiva meen kulambu in some weddings)
Rasam
Curd
poriyal
aviyal or kootu
manchurian- cauliflower/babycorn
varuval-potato or yam or vazhaikai
mudhiri or badam cake or any sweet
payasam- wheat or mixed fruit or ada pradhamam
vadai
appalam
pickle or puli inji
And then they serve banana, ice cream and badam paal or sukku coffee just outside the dining area.

DAL TOMATO CURRY
Ingredients:
(A)
250 grms ripe red tomatoes cut into 4
250 grms green tomatoes cut into 4
100 grms toor dal soaked
1 tsp red chillie powder
1 tsp coriander powder
¼ tsp turmeric powder
½ cup water
Salt for taste
(B)
To Grind To Paste:
2 tbs grated coconut
2 green chillies
1 tsp garlic paste
1 tsp ginger paste
½ tsp cumin seeds.
(C)
To Season:
1 tsp oil
1 big onion chopped
½ tsp mustard seeds
1 sprig curry leaves
2 dry red chillie cut into pieces
Method:
Put all ingredients in (A) into a pressure cooker.
Cook till 3 whistles, remove and let the steam subside.
Add in the ground ingredients to the pressure cooker.
Let it boil well so that the raw smell goes.
Heat a pan, add in the oil, and the ingredients for seasonings.
Sauté well and pour it into the pressure cooker.
Let it boil once and remove.
Goes well with rice, chapathi or idli.

STEAMED MOTHAGAM OR MODAK
Ingredients:
1 cup pan fried broken green peas, boiled and mashed roughly.
1 cup brown sugar
cup grated coconut
2 tbs ghee
a pinch of cardamom powder
cup oil
2 cups rice flour
Method:
Fillings:
Melt the brown sugar with 2 tbs of water
Sieve for dirt. Boil again the syrup,
Add in the ghee, grated coconut, and the boiled green peas.
Cook over medium heat, stirring continuously.
Add in the cardamom powder.
It will thicken and start leaving the sides of the pan as you stir.
Remove and cool.
The Dough:
Heat 2 cups of water in a pan. When it starts bubbling,
Add the oil and the rice flour in a slow stream, stirring
Continuously. When all the water has evaporated and
The dough thickened.Remove and let it cool.
Knead the cooled dough nicely.
Grease the palm of your hand. Take a little dough
And shape it into a cup. Place enough fillings
In the middle of the cup, and shape it like a ball,
with a small cone on the top.
Do this to the rest of the dough.
Steam for about 20 minutes. Serve warm.

Aarthii ma, for a cake you have to use either self raising flour,
or you have to add baking powder to the flour.
Other wise your cake will NEVER rise.
Tips for good cake making:
Sieve the flour 2 to 3 times.
This makes the flour airy.
First cream the butter and sugar until pale and fluffly.
Always beat the butter and sugar in one direction only.
Then add one egg, beat well till it is well mixed.
Then only you add in another egg
You add the eggs only one by one.
If you find the egg, curdling, add in little flour and mix.
Curdling means, the egg will seperate from the butter.
Now fold in the flour little by little by folding method.
Do not beat the mixture or you will drive away all
the air in the mixture.
Your oven should be preheated, when you place in the cake,
it must start cooking straight away.
Also your measurements must be right.
Try again Aarthii, I have posted a moist chock cake before.
Its very easy and tasty. I will post it to your mail.
