Just saw this recipe on Podhigai channel.
Tomato accordion:
Slit a firm but ripe tomato lengthwise(3 slits). keep the base(top side of the tomato is the base here) intact. Remove the seeds,pulp inside.
Mix together hung curd, sweet corn(boiled), cucummber, capsicum, salt, pepper, chaat masala.
Part the slits of the tomato sgently & stuff it with the mixture. The resultant dish will look like accordion(musical instrument).
Serve with chapathi or eat as such.
Note: The same recipe can be made using eggs instead of tomato. remove the yolk in that case.
U can also use baby tomatoes. Cut into half, remove seeds,pulp & place the stuffing. This will be easier to eat.

cabbage, carrot, cucumber,capsicum salad yesterday night. awesome, salad. i made with different colours of capsicum. very nice.
we named as 4c salad.

SPINACH WITH TOFU OR PANNER
Ingredients:
(A)
3 cups finely chopped spinach
1 tbs lime juice
1 tomato blanched and pureed
2 shallots minced
4 garlic pips crushed
¼ inch ginger crushed
½ tsp chillie powder
Little tumeric powder
Salt to taste
(B)
1 tsp flour
250 grms tofu or panner cut into pieces
Method:
Put all the ingredients in ( A ) into a pot.
Cook without adding water till soft.
Remove and mash into a paste.
Add in 1 cup of water and mix well.
Reheat and add the flour, keep stirring till the
Mixture turns little thick.
Add in the tofu or the panner, cook for another 5 minutes.
Remove and serve hot with chapathis.
