To start off with, let me tell you that I am the poorest cook in the history of cooks....enakku endha dishum seriya seyya varaadhu.. atleast not without mummy's help.... this dish is the only thing which has ever come out well...its pretty simple and i have no idea of its origins... edho kaila kedachadhellaam pottu oru simple and small item I made without even mummy's advice.....
GOLDEN FRIED BABYCORN....(i guess)
Ingredients
Babycorn - 10 pieces
Oregano - according to taste
Chilly flakes- 1 tsp
Salt - according to taste
Chilly powder - 1/2 tsp
Oil - as required
Method:
Heat oil in a wok(as usual) cut up the babycorn as per desire and add to the heated oil. Let fry for sometime. Add the oregano, chilly powder and salt, mix well and leave it for a little more time. Add the chilly flakes last and stir fry till babycorn turns nice and golden brown.....
[This is just something I made....babycorn goes with just anything so we can add accordingly any kind of herbs or spices according to taste....]

i tried brownie , it came out very nicely. This is very easy to make and everybody at home and friends enjoyed it.
For this we don't need convention oven, normal basic oven is enough. This receipe was given by one of my friend.
Brownies:
=========
Self Raising Flour - 1 cup
(option - if we use maida, then take maida - 1 cup and baking powder - 1/2 tsp.)
egg - 2
Castor sugar - 1 cup (option - make sugar powder at home , 1 cup powder)
butter - unsalted 90 gms
choclate - 100 gms (cooking choclate)
instant coffee powder - 1 tsp
vanilla essence - 1 tsp
walnuts - 1 cup (blanch walnuts remove skin, chop finely or just coarsely grind it in the blender)
Procedure:
---------
1. Melt butter in the microwave.
2. Beat eggs with the spoon and mix it with butter.
3. To the above add powdered sugar and mix.
4. Melt choclate in the microwave and add it above.
5. Now add the self raising flour little by little to the above.
6. Next add instant coffee (can be mixed in 10ml of warm milk ). If we add instant coffee directly lumps of coffee can be seen in the batter. To avoid this, it can be mixed with the warm milk.
7. Add vanilla essence and the chopped walnuts to the batter and mix .
No need to use the beater or mixer to mix all the above ingredients. Everything can be mixed with the spoon.
Now grease a tray with butter, then pour the batter and keep it in the microwave, cover the tray with another plate. (plate should be upside down, this is very important), so that the batter will not raise and come out.
Set it for 7 minutes and cook. After 5 minutes check and continue cooking. The time may vary according to the microwave. In my microwave it took only 7 minutes.
Then it is ready to eat.
Full preparation takes only 20 minutes.

Kuih Koci is a Malaysia desert . I would like to share this easy recipe with all of you.
(A)
Banana leaves cut into 6 in X 4 in pieces (20 pieces) and scald in boiling water. Take out and dry.
(B) - For the filling
1 cup shredded coconut (white only)
1 cup dark brown sugar
2 tabsp sugar
1 cup water
pinch of salt
Boil water, add sugar and salt. When syrup becomes thick add coconut and cook for about 3 minutes until mixture thickens. Dish out and cool.
(C)
300grm Glutinous(Pulut) rice flour
1 1/4 cup thick coconut milk
2 tabsp granulated sugar
1/2 tsp salt
2 tabsp vegetable oil
In a large bowl mix all the ingredients in C until you get a soft dough. If dough is dry, add a little water (only slightly).
Make into 20 equal portions. Spread a little oil on your palm so that dough doesn't stick. Take one portion and flatten it like a saucer. Put in 1 tsp of coconut filling and close the dough back into a ball. Take one piece of banana leave and put the ball on it and join the two ends and fold back. Do the same for all.
Steam over rapidly boiling water for 15 - 20 minutes or until cooked. Served when cool.

how i will forget u. u r always in my heart.
regarding brownies, u can even use choclates without nuts. eg. dairy milk. in this case u have to reduce the measurement of sugar.
actually i dont have idea of oven for the brownies, coz i never made brownies in the oven. u can try with less temperature for more time. keep an eye on it, so that the brownie should not burn in the bottom.
i tried cakes in the oven, it will turn out very nicely.

There they use fried chicken, chicken broth, prawn paste and anchovies.
I have substituted every thing with vegetarian items.

NASI AYAM PENYET VEGETARIAN
The Rice:
2 cups rice washed and drained
3 pips of garlic
1 one inch cinnamon stick
2 cardamom pods
2 star anise
1 tbs butter
4 cups of vegetable broth
Salt to taste
The Sambal:
3 tbs chillie paste
3 birds eye chillie pounded
3 big red onions sliced
3 pips garlic smashed
3 ripe tomatoes chopped
1 tbs tamarind paste
Sugar to taste
Salt to taste
Fried Tofu:
4 firm tofu, prick holes with a fork
¼ tsp cumin seeds powder
¼ tsp aniseed powder
½ tsp coriander powder
Little turmeric powder
Little white pepper powder
½ tsp ginger paste
¼ tsp garlic paste
Salt as per taste
Oil for frying
Little water
For Sup:
2 cups of vegetable broth
Cinnamon stick
Star anise
2 pips garlic smashed
Pepper powder
Little turmeric powder
Salt
Coriander leaves
Spring onion leaves
Oil
To Garnish:
Cucumber slices
Salad leaves
Method:
RICE:
Heat a rice cooker with the butter,
Add in all the spices, add in the smashed garlic.
Sauté for a minute, add in the drained rice, vegetable broth,
and salt. Cover and cook the rice.
SAMBAL:
Heat a wok with the oil, add in the smashed garlic.
When the nice aroma comes add in the sliced onions.
Sauté till the the onions browns a little.
Add in the chillie paste and the birds eye chillie.
Stir and cook till oil seperates, add in the chopped tomatoes,
And the tamarind paste, cook till the tomatoes are mashed.
Add little water, salt and sugar and cook till the sambal
is thick and cooked. Remove.
FRIED TOFU:
Add all the ingredients for the tofu and marinate for
about 30 minutes. Deep fry and slice them.
FOR SOUP:
Heat a pot with the oil, add in the garlic and the spices.
Add in the vegetable broth, white pepper, turmeric powder.
Let it boil nicely, add in salt and remove.
Garnish with the coriander leaves and spring onions.
Now put some rice in a plate, add in the sambal.
Arrange some tofu slices, and cucumber slices.
Also some salad leaves. Serve with a bowl of soup.
Note: I did not have the salad leaves.

Dear friends, for some time, I have stopped using all kinds of MOCK mutton , prawns, chicken and so on.
So during the bajan cooking, I wanted to make a hot sambal to go with chapathi, idli or even idiappam.
I used mushroom stems that resemble anchovies.
Would you all believe, that was the HOTTEST dish of the day.
Many asked if they can take home some, and all wanted the recipe. This shows that the people of this world are not
ready to become vegetarians yet :roll:

Yes, Dev, since they have everything to replace non-veg items, anchovies is made with mushroom stems.
It is called mock anchovies.
They make sambal with it.

Dev, this dried mushroom stems are fried like anchovies, then added to the sambal.
If fresh mushroom stems, I do not know how it will be.
You can try little and see.
As you have stayed in Singapore, you know they make sambal, with chicken, prawns, fish, squids , eggs, can sardines and even mutton.
You can get all these items in vegetarian stuffs.
Dev, i do empty sambal, that is I cut the big onions into chunks, and make the sambal.
You can even make sambal with tofu, it will taste great.

Add in the ground chillie paste, sauté well till oil seperates.
Add in the blended onion and the tomatoes.
Stir well, this forms the bulk for the sambal
Add in the tamarind juice, salt and sugar.
Cook stirring occasionally until the gravy thickens.
Add in the fried mushroom stems, stir well.
Remove and serve with steaming hot rice or chapathi.
NOTE: This forms the base for many sambals.
You can boil eggs, and add and call the egg sambal.
You can semi fry chicken with turmeric and salt,
Add in to the sambal, after adding the tamarind juice.
This becomes chicken sambal.
So it goes for fish and prawns. Thanks. Kugan98
