Dev, can you get jack fruit seeds separately in India?
Here you have to buy the whole fruit to get the seeds.
So I will post the recipes without pictures for you.

Here in blore, we used to get the seeds separately... nowin cbe, my sister has a jackfruit tree in her farm... so everytime a jackfruit ripens, we get free supply of both the seeds and fruit... I don't like the fruit... so I'll collect the seeds...;) :lol:

You are very lucky to have a sister who supplies
you with jack fruit. I love jack fruit and it's seeds.
I just love to boil the seeds with salt and start munching:-D
I will post the podimas recipe first.
Have to dig in old files for the recipes.
As we seldom cook these recipes, since we do not get the seeds here.
I should learn a lesson to take snaps of what ever I cook.
It will come handy one day.

Selviem, I have not cooked with arrow root.
My aunt told me that you can stir fry, or make chips.
It will be like our tapioca. Try them Selviem.

Here is the recipe Dev.
JACK FRUIT SEED PODIMAS
Ingredients:
2 cups jack fruit seeds
A pinch of turmeric powder
3 green chillies chopped
1 onion chopped
1 tsp ginger chopped fine
2 tbs grated coconut
Little lime juice
Salt to taste
2 tsp oil
˝ tsp mustard seeds
˝ tsp urad dal
1 tsp channa dal
1 sprig curry leaves
Method:
Soak the seeds for half an hour in water.
Then cut and peel the skins from the seeds.
Boil the seeds with little salt and turmeric powder.
Do not over boil the seeds, they should be firm.
Drain the water, cool it and mash the seeds roughly.
Heat a wok with the oil, add in the seasonings.
Let the seasonings splutter, add in the onions.
Sauté well till the onions are roasted, add in green chillies,
chopped ginger , salt and fry well.
Now add in the mashed jack fruit seeds, and stir fry once.
Add in the grated coconut, and fry till the coconut mixes well.
Add in the lime juice mix well and remove.
