Dear friends, I am Rubenee, K's niece.
I was asked by her to inform you all about Aishu.
Aishu became very sick on monday night and was rushed to hospital.
She was admitted and put on drips.
She still has the vomiting, purging and fever.
She is on antibiotics and other medicines.
She completely refuses food, as she throws out the moment
she takes anything.
Doctors have said that it will take some time for here to recover.
She has lost lot of weight.
K will write as soon as she comes home.
She hopes you all will keep the thread going till she comes.
She has asked me to mail Aishu's pictures for those
she knows their ID.

Aishu came home today afternoon.
She is much better, though lost lot of weight.
The doctors say viral infection.
We are all very grateful for all your wishes, blessings, and prayers.
She got better because of all your prayers.
She really made us all very frighten with her constant vomiting.
I too became sick of staying by her bedside for the past 8 days.
No sleep and no rest.
Now she takes little porridge. Very poor eater.
Very bad with medicines, everything was through intravenous.
She will throw out the moment medicine is put into her mouth.
A real very bad experince for me.
I would like to thank from the bottom of my heart,

Friends, I think you all remember about the menu, my nephew gave for his birthday.
Well I managed to make the cake on the 1st of feb.,
That night I went to hospital.
I have got a super maid who requested to me that she has seen me icing the cake, and that if I allowed she will ice the cake for him.
Not only that she will cook everything in the menu, while I am away.
I told my nephew to take pictures of the food.
I will be posting my nephew's birthday menu here one by one.

The birthday cake
EGGLESS MILK CAKE
Ingredients:
300 grms self rising flour
2 tsp baking powder
1 tsp baking soda
240 ml evaporated milk
200 grms butter
180 grms castor sugar
1 tsp vanilla essence
Method:
Sift flour with baking soda, baking powder 3 times
Beat butter with the castor sugar until creamy and fluffy.
Pour evaporated milk little by little, while whisking.
Add in the vanilla essence.
Fold in the flour until the batter is well mixed.
Pour into a greased tray.
Bake for 1 hour or until the cake is cooked at 170 degrees C,
In a preheated oven.
Butter Icing:
250 grms soft butter
300 grms icing sugar
100 ml evaporated milk
½ tsp vanilla essence.
Method:
Beat together the ingredients, add preferred colour.
Design as you like.

[tscii] The Soya Bean Milk Jelly.
She did not arrange the nata de coco in a nice pattern
SOYA BEAN JELLY
Ingredients:
1 litre soya bean milk
250 grms rock sugar
30 grms agar agar strips soaked
1 litre water
¼ cup evaporated milk.
Little nata de coco for decoration
Method:
Soak the agar –agar strips in water for 30 minutes.
Squeeze out the water.
Boil 1 litre of water, add in the soaked agar-agar strips.
Bring to boil in a low fire. Cook till it dissolves completely.
Add in the rock sugar, evaporated milk and soya milk.
Boil once, pour the mixture into cups, or in a tray.
Sprinkle the nata de coco here and there.
Leave to set, and chill well before serving.
You can even use mixed fruits to decorate instead of the nata de coco.

Is nata de coco & coconut jelly the same?... I'mm not sure of the namem...but it's a chewy jelly tht's kept in water(or some liq)... usually sold in big plastic containers... I've tasted it once in a friend's place in malaysia & liked it...it was white/transparent... Never happened to buy it coz it was always sold in big containers in Sg & it was too much for a single person(hubby is not a fan of it)...

[tscii]This is a very simple biryani.
We did it with mock chicken.
People who take non-vege can do it with chicken.
ONE POT VEGETARIAN CHICKEN (MOCK) BIRYANI
Ingredients:
2 cups basmati rice soaked for 5 minutes and toasted
2 cups light coconut milk
1 ½ cups of boiling water
(B)
To Mix Everything And Keep Aside
1 tsp ginger paste
1 tsp garlic paste
1 tbs green chillie paste
1 tsp coriander powder
2 tsp chillie powder
1 tbs curds
1 tsp lime juice
A pinch of tumeric
1 tbs mint leaves
500 grms chicken pieces ( I used mock chicken)
2 tbs of ghee
Salt to taste
¾ cups of sliced onions
½ cups of sliced red tomatoes
3 cloves
4 cardamom pods
2 inch cinnamom sticks
2 bay leaves
Little coriander leaves for garnishing.
Method:
Mix all the ingredients in (B) and keep aside for 30 minutes.
Heat ghee in a wok , add in all the whole spices.
Let them splutter, now add in the onions .
Fry till it turns turns brownish.
Add in the chicken pieces along with the marinade.
Fry for about 4 minutes, add the tomato pieces,
and fry gently for few more minutes.
Cover the wok and cook for about 10 minutes.
The chicken should have been ¾ cooked in its own juice
Now add the cooked chicken into a rice cooker.
Add in the toasted rice.
Now pour in the coconut milk and water, add enough salt.
Mix well and cover and let it cook.
Leave it as it is for about 15 minutes.
Remove the cover stir gently, garnish with the coriander leaves.
Serve hot. You can serve with cold raita.
We served with pajeri nanas.
