MIXED VEGETABLE MASALA (Kugan)
My dear friends, I think you all remember, me telling about a silent reader who sent me a recipe, and asked me to rewrite it for her.
Well it is a unique dish with vegetables and minced mutton.
I used minced soya mate to replace the minced mutton.:yessir:

MIXED MASALA VEGETABLES
Ingredients:
250 grms, minced soya meal maker
50 grms potatoes cubed
50 grms brinjals cubed
50 grms valakkai cubed
¼ tsp tumeric powder
1 tsp chillie powder
Little salt
2 tbs oil
2 two inch cinnamon sticks
2 big onions sliced
1 tbs ginger garlic paste
1 red tomato chopped
½ tsp garam masala powder
1 tsp chillie powder
¼ cup thick coconut milk
2 tsp lime juice
Little coriander leaves chopped
Salt to taste.
Method:
Boil the soya mate, with smashed garlic, little ginger and salt.
Boil for about 10 minutes, squeeze and wash well.
Mince the soya mate and keep aside.
Apply the tumeric, chillie and salt to the cubed vegetables.
Keep the vegetables separetly and marinate for 1 hour.
Now fry the marinated vegetables separetly and keep aside.
Add oil to a wok, add in the cinnamon sticks, add in the onions.
Saute well, add in the ginger, garlic paste, fry well.
Add in the chopped tomatoes, garam masala and chillie powder.
Stir fry well, add in the minced soya meal maker. Mix well.
Add in the ¼ cup of thick milk, salt mix well again.
Now first add in potato, stir fry well, add in the valakkai,
Stir fry again, lastly add in the fried brinjal cubes.
Mix every thing well together gently.
Sprinkle little water if too dry. Off the stove.
Add in the lime juice to taste, garnish with coriander leaves.
Remove and serve with any simple pulao or steaming rice.
