Coconut Oil Bad For You? Hardly
CoconutThere is widespread misconception that coconut oil is bad for you because it is said to raise blood cholesterol and cause heart disease. The only "proof" is one four-decades old study. The study used hydrogenated coconut oil.
It is now known that the process of hydrogenation creates "trans fatty acids" (TFAs), which are toxic entities that enter cell membranes, block utilization of essential fatty acids (EFAs) and impede cell functionality. TFAs also cause a rise in blood cholesterol. These substances are not present in natural coconut oil.
In other words, a study based on hydrogenated coconut oil has no relevance to the non-hydrogenated coconut milk or coconut oil that you eat.
Widespread studies of coconut-consuming populations such as those found in Polynesia and Sri Lanka, show that "dietary coconut oil does not lead to high serum cholesterol nor to high coronary heart disease mortality or morbidity."(See endnote 1.) Other studies show no change in serum cholesterol level from coconut oil. (See endnote 2.) And if it is true that the herpes virus and cytomegalovirus have a causative role in the initial formation of atherosclerotic plaques (See endnote 3.), coconut oil may be beneficial in preventing heart disease. (See Benefits below.)
Coconut Oil as Saturated Fat
Another reason people believe coconut oil must be bad for you is misguided association: it is a saturated fat and "saturated fats are bad for you." Dietary guidelines inevitably fail to distinguish between different kinds of saturated fats and insist that saturated fats (meaning all saturated fats) are harmful.
This is not just misleading. It is bad science. Leading scientists now recognize that just as there is good cholesterol, there are also good saturated fats.
Fats are classified as short-, medium- or long-chain based on the number of carbon molecules they contain. Nearly two-thirds of the saturated fat in coconut oil consists of medium-chain fatty acids.
When we eat long-chain fatty acids, they must be emulsified by bile salts in the small intestine before they can be absorbed into our body. Short- and medium-chain fatty acids, such as those in coconut milk, are absorbed directly through the portal vein to the liver, where they are immediately available to the body.
In other words, most of the saturated fat in coconut oil is easily digestible and converted into quick energy. And these types of fatty acids are less likely to cause obesity because they are immediately used by the body and have no opportunity to be stored.

The sweet sour chillie sauce.
You can use it as a dip for anything.

SWEET SOUR CHILLIE SAUCE
Ingredients:
20 fresh red chillies
6 cloves garlic
¾ cup of water
200 grms sugar
½ cup white vinegar
½ tsp salt
Method:
Deseed the chillies, cut them fine.
Cut also the garlic fine.
Using ½ cup of water, blend all the above ingredients
very fine. Add more water if only necessary to blend.
Using a very coarse sieve rub down the ground ingredients.
This is to get a smooth sauce.
Using a wide based pot boil the mixture on medium heat.
Give it a stir every now and then.
It will take about 7 minutes.
There will be no separation of chilli and liquid if it is boiled to the right consistency. You will be able to know the consistency after few tries.
Cool and pour into clean dry bottle and refrigerate.

THAI AJAAD SALAD
Ingredients:
1 young cucumber
2 shallot sliced
1 fresh red chilli sliced
2 tbs sugar
2 tbs vinegar
Little coriander leaves.
salt
Method:
Quarter the cucumber length wise.
Slice the cucumber crosswise thinly.
Add little salt and keep aside.
In a bowl, add in the vinegar, sliced shallots,
sugar and little salt. Mix well and keep aside.
Now take the cucumber and drain out part
of the liquid.
Now add in the shallot mixture, sliced fresh red chillie,
and the coriander leaves. Mix well.
Taste again for sweet, sour and salt.
The taste improves with keeping longer.
Chill before serving.

I have added dill to masala vadai, mutton and chana dhal and dill fry. Hope you like it Selviem.

Mango Ice cream recipe ungalluku
Mango Ice cream-using Ice cream maker
2 cups chilled heavy whipping cream
1 cup full fat milk
1 cup sugar
3/4th can of Alphonso mango pulp
1 tsp mango essence
Mix sugar with milk till it dissolves. Add all whipping cream and mix well. Pour into the freezer bowl and turn the machine on. Now slowly add the mango pulp and essence. The mixture will thicken in about 25-30 mins. Transfer to a freezer proof container and freeze for about couple of hours.
Mango Ice cream-2
1 can Condensed Milk
1 and a half cans of Evaporated Milk
8oz Cool Whip
1 small carton of Whipping Cream
Half a can of Mango Pulp
Mix all the ingredients together and freeze.

Shivan, what I am today is all after getting married to this family.
I was noughts in everything (except my degeree)
We are a joint family, all happy.
We have become vegetarians after my F.I.Laws death.
My daughter who is 5 too is very careful as to what she eats.
All the children can recite Siva Puranam by heart, and also all the other mantras.
We donate essential food stuffs to about 5 hard core famalies.
Also anathanam to about 30 poor people every month.
Our principal is not to gossip about others, not to do anything bad to hurt others, not to get angry.
Other than that I am not that well versed in Vedas and things.
We lead a simple life.
I am glad that I found a brother who is so knowledgeable.

KAMBU IDLI
Ingredients:
2 cups kambu
1 cup urad dal
salt
Method:
wash and soak the kambu and urad dal seperatelyover night.
Grind the kambu a bit coarsely.
Grind the urad dal into a smooth frothy paste.
Mix both the mixtures with the salt, and let it ferment
for about 8 hours.
Grease the idli thatu, pour the batter.
steam cook the idlis on medium flame until cooked.
The idlis will be a bit greyish in colour.
Serve with any chutney of your choice.

Suvai nga ellaam ungallukku thaan.
KAMBU DOSAI
Ingredients:
3 cups kambu
1 cup urad dal
3/4 tsp funugreek seeds
salt to taste
Method:
Clean and soak all the ingredients over night.
The next day grind everything to a smooth yet slightly
grainy paste.
Add salt and mix, the consistency should be like a dosai batter.
Ferment it for about 8 hours.
Heat a dosai kal , and do how you would with the dosai batter.
drizzle oil around the dosai. flip and cook the other side.
Its best eaten , as soon as it is made.

Friends how did Shiva rathiri go for everyone.?
I had my morning prayers.
Had to cook for the family, I fasted.
Evening I had milk and fruits, stayed awake the whole night.
Watching Shivan's youthtube about his guru.
Learnt many new things. also recited mantras.
Early morning went to the nearest Sivan temple.
Came home, today is Ammavasai.
Cooked the meals and waiting for the elders to come
for lunch. After they break the fast and feed the crows,
only then everyone in the house can consume food.
While waiting I have come to my p.c to post.

BANGALOOR KATHRIKKAI TOGAYAL
Ingredients:
200 grms chow chow peeled and diced
3 dry red chillies broken into pieces
2 tsp urad dal
1 pip garlic
½ tsp tamarind paste less or more
Salt to taste
Seasoning:
½ tsp mustard seeds
½ tsp urad dal
A pinch of asafetida
1 sprig curry leaves
2 tsp oil
Method:
Heat a tsp of oil, add in the diced chow chow.
Sauté well and cook for few minutes on low flame.
Remove and keep aside.
In the same pan add a little oil, add in the urad dal,
Garlic and the red chillies. Fry for a minute.
Remove and let it cool.
Now add all the ingredients and grind to a paste.
In a small pan heat oil add in the mustard and urad dal.
Let them splutter, add in the curry leaves and asafetida powder.
Stir and add it to the ground paste. Mix well.
Serve with rice, dosai or idli.

Aaahhh...dill... I have tried it only once when in b'lore but din't like it's strong flavour...Only after my diaster with dill, I was told it should be used in small qty only so tht the flavour is not overpowering... but ennavo theriyalai, adhukku aprom I've not tried it so far...
Ellorumm ennanavo pesureenga... enakku edhuvumme theriyalai...:cry: Seriously... all I do is a simple prayer bfore going to bed & on saturdays, I go to perumal temple... Adhukku melai not very religious...But I like reading spiritual books... esp tht of OSHO...:thumbsup:
