Dear friends, crispy onion rings are a favourite
fast food item. We can do it in our house.
This is a long outstanding recipe.

CRISPY ONION RINGS
Ingredients:
2 large yellow sweet onions
75 grms all purpose flour.
2 tbs corn flour
½ tsp baking powder
A pinch of chillie powder
½ tsp sugar
120 ml milk
Salt to taste
Pepper to taste
Oil for frying.
1 EGG FOR NON_VEGETRIANS
Method:
Cut the onions into circular slices, about 1 cm thick.
Now separate them into rings and put them in a tray.
Now in a bowl, add in the flour, corn flour, chillie powder,
Sugar, salt and pepper powder.
Use a whisk and mix all the ingredient well.
IF USING EGG, WHISK IT WITH THE MILK
Other wise, now add the milk to the dry ingredients.
Whisk it nicely, so that there are no lumps.
The consistency of the batter will be lightly thicker
than our dosai batter.
Heat the oil in a wok.
To check that the oil is hot enough, drop little batter
into the oil. The oil should fry it lightly and take time
to brown it. This way the onion will be cooked through,
and the onion rings will be super crispy
Now gently dip some of the onion into the batter and coat well.
Now you place them into the hot oil using a fork.
Let them cook in small batches, so that they won’t stick together.
When they are fried on one side, turn them on the other side.
It will take about 3 minutes to brown the onion rings.
When they lightly golden, remove and place them on
a tray lined with paper towels to drain.
You can sprinkle little fine salt mixed with pepper
powder before serving.

even for veges i will grind coconut- 1 tsp with red chilly little jeera without water and mix to veges (lady's finger, keerai, cluster beans, broad beans, chennai kilangu) it will be nice.

STEAMED TOFU
Ingredients:
100 grms soft tofu, make a cross on top
100 grms green peas
200 grms carrot cut into cubes
½ inch ginger shredded fine
1 pip garlic smashed
½ tsp oil
5 grms of white pepper powder
5 ml dark soya sauce
200 ml water
Sugar to taste
Salt to taste
Little spring onion for garnishing
Method:
In a heat resistant bowl, put in the cubed carrots,
and the green peas.
Now put the tofu in the bowl.
Heat a pan with the oil, add in the smashed garlic,
and the ginger. Saute until you get a good aroma.
Add in the water, white pepper powder, salt, sugar and the soya sauce.
Let it come to one boil. Now pour this over the tofu.
Steam it in a steamer for about 15 minutes.
Remove and garnish with the spring onions.
NOTE: You can add little cauliflower, capsicum if you like.
or any vege of your choice.

The Malays will make fresh red chillie sauce.
Dip the four angled bean in the sauce to eat.
I will post the recipe for the chillie sauce.
I made a simple spicy dish.
This is also a Malay style.
SPICY FOUR ANGLED BEAN
Ingredients:
250 grms four angled beans sliced
3 shallots
2 pips garlic
3 fresh red chillies chopped
Little lime juice
2 tsp oil
Salt to taste.
Method:
Clean and cut the four angled bean.
In a pestle and mortar , add in the shallots,
garlic and the chopped fresh red chillies.
Pound to a coarse paste.
Heat the wok with the oil.
Add in the pounded paste.
Sauté till there is no more raw smell.
Add in the four angled beans, salt and stir fry.
Sprinkle little water and cook for a minute.
Add in the lime juice and remove.
Serve hot.

Ingredients:
8 fresh red chillies
1 slice of ginger
4 pips garlic
1 tbs lime juice
1/4 cup vinegar
1 tsp sesame oil
3 tbs warm water
sugar to taste
salt to taste
Method:
Blend all the ingredients till smooth.
Your fresh chillie sauce is ready.
NON VEGETARIANS CAN ADD 3 TBS OF CHICKEN BROTH
INSTEAD OF THE WARM WATER.

Dear friends,sundals can be made from motchai, green gram dal, channa dal, peanut, cow gram, dried green peas, white chick peas, black chick peas, and even corn.
there is a basic method to do the sundal.
Other than that, there are spicy recipes with additionl ingredients.
First I will give the simple method:
Basic Recipe:
1 cup of white chick peas, soak for 8 hours.
1 sprig curry leaves
2 long dry red chillies cut into small pieces.
1 tbs of coconut scrappings
little lime juice or little grated mango (optional)
1 tsp oil
1/2 tsp mustard seeds
1 tsp urad dal
little asafoetida
salt to taste.
Method:
Pressure cook the chick peas with little salt. drain the water.
Heat the oil in a wok, add in the mustard seeds, when it splutters, add in the urad dal, curry leaves and the asafoetida powder., stir fry for a second. add in the boiled chick peas and the coconut scrappings. Stir once more and remove. you can add the grated mango or the lime juice, mix and serve.
Note: If making green gram dal, you need to soak only 2 hours, then boil it in a pot, not pressure cooker.
If doing with channa dal or moong dal, you need not soak it. wash and boil and see that they are not over cooked.
I will post later, the recipes for spicy sundals.

SPICY BLACK CHICKPEAS SUNDAL
Ingredients:
1 cup of black chickpeas soaked for about 8 hours.
2 dry red chillies cut into small pieces
1 sprig curry leaves
½ tsp lime juice (optional)
2 tsp oil
1 tsp urad dal
¼ tsp mustard seeds
Little coriander leaves for garnishing
Salt to taste
To Grind Into A Coarse Paste:
1 tbs scrapped coconut
2 green chillies
½ inch ginger
Method:
Pressure cook the black chickpeas. Strain the water.
In a wok, add in the oil. Add also the urad dal and mustard seeds.
Add also the cut red chillie. Sauté for a second.
Add in the boiled black chickpeas, stir fry for 4 minutes.
Now add in the salt, and the ground paste.
Stir fry for a second, add in the curry leaves .
Add in the lime juice, remove and garnish with the cut coriander.
