u can increase or decrease tamarind according to ur taste...
in this recipe there is no garam masala..
but if u are making a khorma type, with ginger garlic paste, u can add garam masala...then u can also cut off the tamarind and add a little more coconut paste...

the title is easy chicken, but i thought i wud post all chicken recipes i know :)
ACHARI MURGH
a spicy pickled chicken served with rotis
chicken - 1, cut into small pieces (boneless is good too)
oil - 1/2 cup
mustard seeds - 1 tsp
cumin seeds - 1 tsp
methi seeds - 1 tsp
fennel - 1 tsp
kalonji (onion seeds) - 1 tsp
whole pepper corns - 2 tsp
dry roast and powder 2 cardamoms, 1 stick cinnamon and 4 cloves
dry whole red chilli - 3
curry leaves - a few
garlic paste - 1 tbsp
ginger paste - 1 tbsp
red chilli powder - 2 tsp
salt
juice of 1 lemon
1. heat oil and add all the seeds.
2. add chicken and fry till brown, when seeds splutter.
3. add the rest of the things except lemon juice.
4. after frying add water and cook till done.
5. drizzle lemon juice and serve.
the same method can be used to make lamb/mutton also
paneer can be made this way
try with cauliflower too :)

Just wanted to know if you had any recipie for basic chicken kuzhambu. I got some chicken yesterday and marinated it in a basic marinade of ginger garlic paste,turmeric,salt,chilli powder and a little bit of lemon.I changed my mind and now wantto do a kuzhambu with that chicken. Can you post the recipie for the same.

Chicken kozhambu
1 big onion sliced into fine strips
1 big tomato
1 tablespoon of ginger garlic paste
1 cup of yogurt
2 table spoon of coriander poder
1/2 tablespoon of cumin powder
1 teaspoon of aniseed powder(peruncheeragam)
5 clove buds
chopped coriander leaves
chicken marinade (you did not give the qty so I give for 1/2 kilo)
Heat oil and put the cloves fry a bit and add the onions fry until translucent, add the chopped tomato fry well adding a bit of water, add the ginger garlic paste, when the water evaporates add the spice powder and 1/2 a cup of water and fry the paste well at low heat until the pachai smell goes away then add the chicken marinade curd and 1 cup water and simmer let cook. when cooked add chopped coriander leaves and serve with rice.
Ayeshe give your type of kozambu too please I would like to know how you make the kozhambu.

Is the chicken marinade ready made marinade or the usual marinade with lemon juice,chilli powder etc etc.Also you have not added chilli powder and I suppose you add it when you are adding the spice powder rite?

Thought might share my chicken kuzhambu recipe (actually its my MIL's). This is a very easy recipe.
Grind onions and coconut together (if using shallots it tastes even better).
Heat oil in the pan and when hot, add the chicken and salt (yep frying in oil and sealing the chicken keeps it nice and moist). Add sambhar powder (if not using sambhar powder, then add equal amts of chilli and coriander powder) and turmeric powder. Fry for some time and then add the ground mixture. The kuzhambu thickness can be adjusted as required. Just before removing from the stove temper the kuzhambu with mustard seeds and curry leaves.
