Soya Butter Beans Pulao (kugan)
[tscii]Here is the soya butter beans pulao.
SOYA, BUTTER BEANS PULAO
Ingredients:
2 cups of basmati rice, soak for 20 minutes, drain
¼ cup small soya balls, boil nicely, squeeze out the water
¼ cup butter beans, boiled till cooked, drain and keep
2 big onions chopped
4 green chillies grind to a paste
¼ tsp aniseed powder
¼ tsp cumin seed powder
2 tbs curds
1 tsp garlic paste
1 tsp ginger paste
1 cup coconut milk
2 cups water
3 tbs mint leaves
3 tbs coriander leaves
3 tbs of ghee
2 cloves
2 cardamoms
1 “ cinnamon stick
1 bay leaf
6 fried cashew nuts for garnishing
Little coriander leaves for garnishing
1 tsp lime juice
Salt to taste.
Method:
Heat the ghee in a wok, add in the bay leaf, cloves
cinnamon and cardamoms.
Let it splutter, add in the chopped onions.
Sauté well till the onions turn slightly brown.
Add in the ginger garlic paste, sauté well.
Now add in the green chillie paste, cumin powder
aniseed powder and the curds. Sprinkle little water if the
mixture is very dry.
Now add in the squeezed soya small balls and the
butter beans, stir well.
Add in the drained basmati rice and lightly fry it.
Add in the mint and coriander leaves.
Transfer every thing to a rice cooker, add in the coconut
milk and the water. Add in enough salt.
On the cooker and let it cook.
(You can even cook it in a pressure cooker)
Once it is cooked, let it sit for a moment.
Now sprinkle the lime juice, and gently mix the rice.
Garnish with the fried cashew nuts and coriander leaves.
Serve with onion raitha or our Suvai's kurma.

Urulai Kizhangu Masala (kugan)

) Urulai kizhangu masala ( Perumal's recipe ) we had a servant who was an excellent cook.....this is one of his recipe.
Potatoes 4/ onions 2 / Grenn chillies 2 or to your taste/ Garlic Ginger paste accordingly / Tomatoes cut /
In oil add little kadugu/uluthamparupu/ once browned add the cut onions / green chillies/gg paste/ tomatoes....ellaam fry pannunga nallaa/ to this add sambar podi 1/2 to one tsp of it/ add 1/2 cup water let it boil till the water sort of evaporates ( not too dry ) add salt
ithukulla sambar podi pachai vaasanai poidum...now add the boiled cut potatoes & stir fry till its well coated with the masala....
omg kugan nga....ithu romba nalla irukum...with rasam or thayir sadam or even verum saathathila mix panni saapitaaa aahaaa ahaaa thaan..... Mr. Green

Fried Tapioca Balls (kugan)
[tscii]Here is the recipe for the simple tapioca fried balls.
Normally it is served with tea. Kugan98
FRIED TAPIOCA BALLS
Ingredients:
2 cups cooked and mashed tapioca
1 cup grated coconut, white part only
½ cup sugar
A pinch of salt
Oil for frying
Batter:
½ cup all purpose flour
¼ cup corn flour
1 tbs rice flour
1 tsp baking powder
½ tsp salt
180ml water
Method:
Mix nicely the cooked tapioca, coconut, sugar,
and salt well.
Make the mixture into golf size balls. Keep aside
Prepare the batter by mixing all the ingredients together.
Heat a wok with oil.
When the oil is hot, dip the tapioca balls into the batter.
Put the balls into hot oil to deep fry.
Do not crowd the wok with the balls.
When the balls are golden brown, remove and drain
on a kitchen towels.
Serve as a snack with tea.

Chocolate Agar Agar (kugan)
CHOCOLATE AGAR_ AGAR
Ingredients:
25 grms agar-agar strands (china grass)
1000 ml water
400 chocolate milk ( you get it in cartons)
100 grms sugar ( there will be sugar in the choco milk)
few drops of vanilla essence
Method:
Soak the strands of agar-agar in cold water for an hour.
Drain the agar-agar, put them in a pot.
Add 1000ml of water and stir constantly, while bringing
to the boil.
Add the sugar and keep stirring and simmering until all the strands
are completely dissolved.
Add in the chocolate milk and essence.let it boil once.
Remove and pour into a tray that has been rinsed in cold water.
Allow to set, cut into diamond shapes.
This will be a firm jelly.
