Sudha's milagootal recipe:
step 1: Pressure cook 100 gms thoor dal or pasi paruppu.
step 2:cook 1 bunch of thandhu keerai or mulai keerai or 1 banglore kathrikai(chow chow), 1 pudalai or cabbage. that separately with little salt and little turmeric and perungayam powder.
step 3:In a kadai pour little oil and fry ulundha paruppu 2 table spoon, one dry chilli and one tbl spoon of milagu. add little perungayam also in the oil. add little seerakamand dry grind the fried stuffs. After it is powdered add quarter coconut-shredded, little water and grind, to make a masala.
step 4:Now in a kadai put one spoon oil, kadugu, ulundu and pour the pudalai which is cooked, with the water. Add the paruppu also and mix. Then add the masala and salt. Give it a good boil until it becomes think(kootu consistency). Add malli thazhai.
Serve with rice or chapathi or dosai...:slurp:

LEMON RASAM
Ingredients:
100 grms toor dal
A pinch of tumeric powder
1 small tomato chopped fine
½ a lemon juice or more
1 tbs coriander leaves chopped
2 tsp ghee
1 sprig curry leaves
½ tsp cumin seeds
½ tsp mustard seeds
A pinch of asafetida
Salt to taste
To grind coarsely:
2 dry red chillie
2 pips garlic
1 tbs coriander seeds
1 tsp black pepper
1 tsp cumin seeds
Method:
Cook the toor dal with the tumeric powder in 5 cups of water.
See that the dal is well mashed.
Heat a wok, add in the ghee, add in the mustard seeds,
Cumin seeds and curry leaves. Stir well.
Now add the chopped tomatoes and sauté well.
Add in the asafoetida powder , the toor dal water 3 cups,
And the coarsely ground powder and salt.
Let it boil for about 5 minutes or more.
Remove and add the lemon juice to taste.
Garnish with the cut coriander leaves.
Serve with steaming rice.

Thank you for the lovely recipes. All of the gang is very active and I couldn’t cope with trying everything. Reading the fascinating recipes are a pleasure as well. Thank you all.
Picture of the Maa vilaku is very nice. I have never seen maavilaku like this but have tasted it. Do you leave the vilaku until all the ghee is used up? I tried the cluster beans poriyal and vengaya pulli curry. Both lovely. We call it venthaya kulambu as well. Masala podi is very useful for any curry. I am going to make rava idly and thengai chutney today and let you know.

Here is my mil's recipe for channa- koNdaikadalai- suNdal:
Soak channa overnight.
Pressure cook the soaked channa.
Heat oil in kadai and add chopped small onion and curry leaves and cooked channa and salt. Add to this a paste of these ingredients (prepared grinding in the mixie):
dhaniya seeds -2 tsp
cumin seeds -1/2 tsp
red chilli -2
Saute in slow fire till the gravy(paste) dries. Add coconut flakes and it is ready now to eat. A different, spicy favourite in our family.

CUCUMBER MASALA
Ingredients:
200 grms old cucumber cut into ½ inch pieces
2 green chillies slit 4 and cut across
1 sprig curry leaves
1 tsp tamarind paste or a little more
1 small tomato chopped fine
1 tbs coconut scrapings
1 tsp coriander powder
1 tsp chillie powder
¼ tsp tumeric powder
Little asafeotida powder
½ tsp cumin seeds
½ tsp mustard seeds
1 tbs oil
1 tbs cut coriander leaves
Salt to taste
Method:
Mix the 3 powders in 1 cup of water, keep aside
Heat oil in a wok, add the mustard seeds and cumin seeds.
Add in the curry leaves, stir nicely.add in the green chillies
Tomatoes, sauté nicely, add in the tamarind paste and the
Mixed 3 powders. Stir nicely let it simmer for some time.
Add in the cut cucumber and salt. Let it simmer again.
The cucumber must be cooked, but still firm.
Add in the coconut scrapings and stir well.
The dish should be semi dry. Remove and garnish
With the cut coriander leaves. Serve as a side dish.

EGGLESS CARROT CAKE
Ingredients:
¾ cup of water
1 cup sugar
125 grms of butter
1 tsp soda bicarbonate
2 cups self – rising flour
½ cup fresh milk
1 cup grated carrot
1 tsp vanilla essence
Method:
Boil the water , sugar and butter till the butter melts.
Let it cool nicely, add in the tsp of soda bicarbonate.
Slowly add in the flour milk and carrot.
Add in the essence. Bake for an hour at 180 degrees C
Or till a skewer comes out clean.
Note: You can use 1 cup of mixed fruits,
Or 1 cup of mashed bananas with little lime juice.
Add essence according to ingredients used.

Well neways akka passed on a nodiyil ready bread soup when i was talking to her this afternoon
Fresh bread soup.
Ingredients
Fresh bread slices - 4
Onion (finely chopped)- 50gms
Garlic pods - 3
Butter
Cilantro to garnish
Salt , oregano and pepper to taste
Boiling water - 1 cup
Method
1.Toss the a slice of butter to the pan , followed by chopped garlic and finely chopped onions.
2.Cut the edges of the bread and make bread crumbs from the fresh bread.Stir it to coat the garlic and onions
3. Now add 1 cup of boiling water
4.Add salt , oregano and pepper finally and garnish with fresh cilantro.
This soup has a smooth texture.
PS: You can add cornflour to add more texture and richness

FISH BRIYANI
Ingredients:
1/2kg Red Snapper - washed and cleaned
6 green chillies )
1tbsp Ginger n Garlic paste) grind into paste
5-6 small onions)
1 tsp cumin powder
1tsp Tumeric powder
2tsp chilli powder
Cashew nuts & Almonds- paste
Bunch of Corriander leaves
Bunch of Mint leaves
1 large screwpine leave- pandan leave
Cinnamon Stick
Cardamons
Cloves
Star aniseed
1 large Tomoto
1 large onion- sliced
1/4 cup water
salt
Method:
In a Pan, add in ghee and let it heat up well. Add in the Spices, Screwpine leave, onions and saute it till golden brown. Add in the grinded paste and stir it well till nice fragrant. Add all the spice powders, corriander & mint leaves. After 5mins later add in the tomatoes and 1/4 cup of water and let it boil. After 5 mins, add in the grinded almond n cashew nut. Add in the fish and salt and let it boil till fish is well cooked and thickend. It has to come into a fine masala paste.
Briyani rice
1 cup of basmati rice - washed n drained
2cups of water
1 screwpine leave
2-3 small onions- sliced
1tsp ginger & garlic paste
cinnamon stick
bayleaves
cloves
1tsp rose water
1tbsp Ghee - clarified butter
sprigs of mint leaves
sprigs of corriander leaves
sliced red chillies
fried onions
saffron colouring- mixed with water
Method:
In a rice cooker pan, add in ghee, spices,screwpine leaves, onions & ginger & garlic paste. saute till golden brown and nice aroma. add in the rice and stir well for 5mins. Add in 2cups of water, rose water, salt and mint leaves. cook the rice in the rice cooker.
Once rice is well cooked. Shift the rice into another bowl. Add in 1st layer of briyani rice. Add in saffron colour ans still the rice add in the fish masala. Cover the fish with 2nd layer rice. Sprinkle the red chillies, corriander and mint leaves. follow the same procedure till rice cooker is full. Put it back into the rice cooker and keep it warm for 30mins.

PINEAPPLE ACHAR
Ingredients:
1 Small Pineapple - cut into cubes - drain the excess water
1tsp Mustard seeds
2 small onions- sliced
1tsp Chilli powder
3tbsp Tamarind Juice
1tbsp Sugar
salt
Sliced red chillies
Method:
In a hot pan of oil, add in the mustard seeds and onions ans saute it lightly. Add in the Pineapples stir fry. Add in the sugar and tamarind juice with a pinch of salt . Stir fry till nice n dry and remove from stove. Garnish with sliced red chillies.

Thats nice to know that u tried the fish briyani.... its a very diff way of making the briyani.
Kugan will soon post another carrot cake recipe but this recipe is with oil n not butter. Usually in US and Australia they bake carrot cake with Oil and not butter for xtra moist.

Try it out , its tasty.
TOMATO CURRY
Ingredients:
5 big ripe red tomatoes
1 big onion chopped
1 tsp chillie powder
2 green chillies chopped
1 tsp rice powder
1 sprig curry leaves
Little tumeric powder
Little asafetida powder
½ tsp mustard seeds
1 tsp urad dal
1 tbs oil
Salt to taste
Little cut coriander leaves.
Method:
Blance the tomatoes and remove the skins.
Mash it nicely to form puree.
Add chillie powder, salt and tumeric powder.
Keep it aside.
Heat oil in a wok, add in the oil, when hot add
The mustard seeds and urad dal. Let it splutter.
Add in the asafetida powder, onions, curry leaves
And the green chillies. Sauté well. Let the onions brown a little.
Add in the mashed tomato and mix well. Let it boil.
When it boils, mix the rice flour with little water.
Add in the curry and mix well. Cook on medium heat for a minute.
Remove and garnish with cut coriander leaves.

VEGES WITH BLACK EYED BEANS
Ingredients:
100 grms black eyed beans soaked over night
100 grms French beans chopped into ¼ inch pieces
100 grms cabbage sliced
1 big tomato chopped fine
2 tsp of sambar powder
1 tsp of tamarind paste
½ tsp mustard seeds
1 tsp urad dal
1 sprig curry leaves
2 tsp oil
1 tsp lime juice
Salt to taste
Little coriander leaves
Method:
Cook the black eyed beans and mash it a little.
Heat oil in a wok, add in the mustard seeds and urad dal.
Let it splutter and add in the curry leaves and tomatoes.
Add in the sambar powder and cook till the tomatoes are mushy.
Add in the cabbage and beans, add little water and let it boil.
Add in the tamarind paste, asafoetida powder and salt.
When the veges become tender stir well and add the mashed beans.
Stir well until the beans blends well to become a thick gravy.
Remove and add the lime juice and garnish with the coriander leaves.
Serve it with roti or as side dish.

[tscii] VEGETARIAN CURRY MEE
Ingredients:
500 grms yellow noddles washed and drained
1 cup vegetarian curry paste
1 can vegetarian mushroom soup
2 sprigs curry leaves
2 stalks lemon grass smashed
1 liter water or more
¼ liter thick coconut milk
½ tsp sugar
¼ cup oil
Salt to taste
Garnishing:
100 grms cucumber shredded
100 grms long beans cut into 1 inch length and blanched
50 grms bean sprouts blanched
50 potatoes boiled and diced
100 grms tofu puffs sliced
Vegetarian curry paste:
50 grms fresh red chillies
10 grms dry red chillies
1 tbs meat curry powder
25 grms candle nuts
15 grms coriander seeds
5 grms fresh tumeric root
5 small onions
10 grms galangal
2 sprigs curry leaves
2 stalks lemon grass
Method:
Combine all the ingredients for the paste in a blender.
Blend to a fine paste, adding little water if necessary.
Remove and keep aside.
Heat a wok with the oil, add in the lemon grass and curry leaves.
Add in the curry paste and sauté well till the oil separates.
Mix the mushroom soup with the water and add to the chillie paste
Add salt and let it come to a boil and simmer on medium flame for about 20 minutes.
Add in the sugar and the thick coconut milk.
Let it boil once and remove.
To serve, assemble individual portions of noddles
About 100 grms in a bowl, top with the various garnishes.
Then scoop enough hot curry over it.
Serve it piping hot.
Note: You can use all coconut milk instead of the mushroom soup.
FOR NON_VEGETARIANS:
You can serve wedges of boiled eggs and boiled shredded chicken.
You can use chicken broth and coconut milk instead of water.

150g wholemeal flour
150g plain flour
2 tsps baking powder
1½ tsps bicarbonate of soda
1tsp fine salt
2 tsps ground cinnamon
½ tsp ground ginger
260g soft brown sugar
290ml corn oil
4 medium eggs, lightly beaten
300g grated carrot
80g walnuts, chopped
80g raisins
Grated rind of 1 lemon
Method
1. Sift together the first seven ingredients
2. Preheat oven to 1800 C/3500F/Gas 4
3. Grease and line a loaf tin
4. Put all sifted ingredients into a bowl. Add in sugar, oil and beaten eggs.
5. Beat well. Add the remaining ingredients and mix well.
6. Pour batter into a loaf tin and bake for 80 mins our until a skewer comes out clean
7. Leave cake to cool thoroughly before icing (optional)
Lemon Cheese Icing
125g cream cheese at room temperature
1 tbsp lemon juice
Grated rind of 1 lemon
250g icing sugar, sifted
60g butter
Beat all ingredients together until smooth and slather over cake.

SWEET BOLI
Ingredients:
1 ½ cups of all purpose flour
1 ½ cups of water
Little yellow colour
A pinch of salt
1 cup Bengal gram dal
¾ cup of grated coconut
1 cup of powdered sugar
¼ tsp cardamom powder
A pinch of salt
5 tbs of ghee
Method:
Mix the flour, water, salt and yellow colour.
Mix it to a soft dough, add little oil on the surface.
Keep it aside.
Soak the dal for about 2 hours.
Then cook the dal in water till soft, but not mushy.
Drain the water completely,
Grind the dal along with the coconut and sugar to a fine paste.
Heat up a non-stick pan and add this mixture with
The salt and cardamom powder. Stir over a medium heat
Till the mixture is solid. Let it cool.
With the mixture make it into lime sized balls.
Take a little of the dough, cover the dal ball with the dough.
Take a plastic sheet and flatten out the dough with your fingers.
Apply little ghee or oil to your fingers when you flatten.
Heat up a dosa kal, when it is hot place the boli and pour
A tsp of ghee all around and cook.
Turn and cook on the other side until little brown spots ap
