Ennakku simple :lol:
SIMPLE TOMATO RICE
Ingredients:
200 grms rice
2 big onions sliced
250 grms red tomatoes chopped
1 tsp ginger paste
6 pips garlic smashed
2 green chillies chopped
¼ tsp chillie powder
¼ tsp mustard seeds
2 tsp roasted channa dal
2 tsp mint leaves
2 tsp coriander leaves
2 tbs thick coconut milk (optional)
2 tsp ghee or oil
Salt to taste
Method:
Cook the rice in a cooker, and let it cool.
Heat a wok with the ghee.
Add in the mustard seeds, let it splutter.
Now add in the smashed garlic, sauté for a minute.
Now add in the ginger paste, sliced onions.
Sauté well, now add in the roasted channa dal,
tomatoes, chillie powder, chopped green chillies.
Cook well for a moment, add in the coconut milk,
coriander leaves, mint leaves and salt.
The tomatoes must be thick and mushy by now.
Remove and add the cooked rice and mix well.
Your tomato rice is ready.

What you ate in Sudhama's house must be a
potato masala. They named it as potato chops I think
Well Suvai nga has given a recipe.
I too have one given by my North Indian friend.

[tscii]This dish was served in Singapore in my relative's house.
FRIED SPICY BRINJALS
Ingredients:
300 grms long brinjal
4 tsp all purpose flour
2 tsp besan flour
1 tsp red chillie powder
½ tsp turmeric powder
½ tsp garam masala
Salt to taste
Oil for frying
3 green chillies cut into lengths
1 tsp cumin seeds
2 tbs thick curds
½ tsp oil
Method:
Wash and cut the brinjals into long pieces.
In a bowl, mix all the other ingredients, except
the oil. Now add in the cut brinjals.
Sprinkle just enough water to get the flour
Stick to the brinjals.
Heat the oil in a wok, and deep fry the brinjals
till crispy. Remove. (It can be eaten as it is also)
Heat the ½ tsp oil in a pan.
Add in the cumin seeds, when they splutter,
add in the cut green chillies. Sauté well.
Now add in the curds and cook on low flame.
Cook till it thickens, add in the fried brinjals.
Cook till it becomes dry. Remove and serve.
You can cut the green chillies into small slices

SPROUTED GREEN PEAS KULAMBU
Ingredients:
2 cups of sprouted green peas.
To Grind:
½ cup grated coconut
½ cup onions chopped
4 dried chillies cut into pieces
1 tbs coriander seeds
1 tbs oil
½ tsp cumin seeds
½ tsp mustard seeds
A pinch of asafoetida
1 tsp tamarind paste
½ tsp turmeric powder
1 tsp brown sugar
2 tbs oil
Salt to taste
Little coriander leaves chopped
Method:
Heat the oil in a wok, add in the ingredients
“to grind” one by one and roast well.
Grind to a fine paste and keep aside.
In another wok, add the oil, cumin seeds, mustard seeds.
Let them splutter well, add in the asafoetida.
Now add in the ground paste and stir well.
Add in some water, the sprouted green peas,
tamarind paste, turmeric powder, sugar and salt.
Let the kulambu simmer for about 10 minutes.
Taste for salt, sweet and sour taste.
Remove and garnish with the coriander leaves.
Goes well with rice or roti.

K, I din't have lunch at Sudha's place. So ange enna maadhiri chops serve panninnanganu theriyalai. But generalaa inga serve pannura chops is something like sliced potato coated in a strong masala and onion mix. It is usually deep red or brown in color. Recipe therinja podunga. It is not the patties kindof thing.

This was something like senaikizhangu masala curry.
It was thick slices of one inch with masala coated (with onion, garlic and other masalas) in brown colour. This only the caterer calls as potato chops.

i think they will deep fry potato strips which is already marinated with red chilly pdr, garam masala, garlic, rice flour .
then in a pan, pour oil, onions, basic masalas like red chilly pdr, coriander pdr, curry powder and the fried potato strips i think.
this can be done in potato, chenaikilagu, tapico, tender jackfruit.
is it correct gals???

friends, i checked with mom . she gave the receipe for jackfruit chops.(pilakai chops).
remove skin cut into cubes, boil it in water with salt and turmeric powder. once it is cooked strain water and keep aside.
to grind:
coconut - 1/2 cup, grated, pottukadalai - 1 tsp, green chilly -2, red chilly - 2, ginger - 1", garlic - 3 cloves, cashews - 4 . grind this to a fine paste.
now mix this paste to the vegetable.
in a heavy bottom pan, add oil, 4 big onion - finely sliced, fry nicely, add one tomato- fnely chopped fry till oil comes out of it, then add the vege mixture cook in slow fire, this will turn nice brown colour and the masala will be coated in the veges. surula surula varukkavum. this is called chops.
for potato as i said, fry in the oil and mix with the masala and follow the same procedure.
same for chenai and tapico she told.

Some people make it without any onions and garlic.
Some add little rice flour.
This is my method. Try it. Kugan98
SIMPLE VATHAL KULAMBU
Ingredients:
1 tbs kulambu podi
50 grms tamarind soaked in 1 cup of water
2 shallots sliced
5 pips garlic sliced
2 dried red chillies broken into pieces
¼ tsp mustard seeds
¼ tsp fenugreek seeds
1 tsp channa dal
1 sprig curry leaves
1 tbs oil
little vellam (optional)
Little vathals like sundakai, kothavarangkai, vendi.
Salt to taste
Method:
Soak the tamarind in the water.
Squeeze the juice and keep aside.
Wash the vathals and keep aside.
Heat a pot with the oil, add in the mustard seeds,
fenugreek seeds, and channa dal.
After it splutters, add in the sliced onions, garlic,
broken chillies and the washed vathals.
Sauté well till the onions turn lightly brown.
Now add in the tamarind juice , kulambu podi, vellam and salt.
Let it simmer and boil till oil seperates.
Add in the curry leaves and remove.
Roasted appalam is a good combination for this kulambu.
