Lauki kheer:

lauki - 500 g peel of the skin and grate it. no need to remove the seeds. i use to select the tender vegetable.
in a vessel put the grated vegetable cover and cook for 10 mins in the slow fire. also u can microwave it. the raw smell should go from the vegetable.
in a heavy bottom vessel, add 1 litre of whole milk, when it comes to boil, add sugar 2 cups of sugar and allow it boil, it should reduce little.
now add the cooked vegetable with the water (water may come from vegetable). allow it to boil for five minutes
blanch 2 tblsp of pistas(remove skin), 5 cashews, 5 almonds (remove skin), grind to a paste, add this to milk mixture. let it boil for 3 mins.
soak 1/2 cup of basmati rice for 1/2 hour and grind to a coarse paste. add this paste to the milk mixture.
allow it to boil for 5 to 10 mins, now the mixture will become little thick.
once it comes to the room temp, add little rose water or rose essence and mix thoroughly.
now pour this mixture in a serving tray, garnish with (blanch another 2 tblsp of pistas, remove skins and sliced) pistas, saffron.
keep this in the refrigerator, for a day and serve.
it u want like pudding, add more of rice, if u want it to be semisolid, my measurement will be correct.
sugar will be not like payasam. this dish will not be very sweet. mild sweet it will be.
