Here is a dish, to welcome Aarthii.
Enjoy the dish Aarthii. Kugan
SOYA MASALA
Ingredients:
(A)
2 cups soya chunks
2 pips garlic smashed
1 small piece ginger smashed
1 small stick of cinnamon
2 cloves smashed
Little milk
Little salt
(B)
For Marination:
2 tsp chillie powder
½ tsp tumeric powder
½ tsp pepper powder
1 tsp garam masala powder
3 tbs corn flour
Salt to taste
(C)
For Masala:
4 tbs oil
1 tsp aniseeds
1 stick cinnamon stick
2 cardamom pods
1 sprig curry leaves
1 big onion sliced
1 green chillie chopped
1 tsp ginger paste
1 tsp garlic pste
2 tsp chillie powder
½ tsp tumeric powder
½ tsp garam masala powder
½ tsp pepper powder
1 tbs lime juice
Salt to taste
Method:
Add all the ingredients in (A) in a pot with water.
Boil everything for about 10 minutes.
Let it cool, drain and wash in lots of water and squeeze.
Cut into halves and keep aside.
Now add all the ingredients in (B) into the soya chunks.
Let it rest for about 10 minutes.
Now heat about 2 tbs of oil in a non-stick pan.
Shallow fry the soya chunks till golden and crisp. Keep aside.
Heat 2 tbs of oil, add in the aniseeds, let it splutter.
Add in the curry leaves , add in the onions, saute till lightly brown.
Add in the ginger garlic paste, stir fry well.
Add in the chillie powder, tumeric, garam masala, and salt.
Add in about a ¼ cup of water, add in the soya chunks.
Mix well and let it simmer for about 10 minutes.
The masala should coat all the soya chunks well, and gravy dry.
Add in lemon juice and remove. Garnish with coriander leaves
