as u said salad is a super meal, u try this with soup, u will feel heavy. only thing we have to give slight variation every time. we r having this type of salad for past 3 years in the night. afternoon is full of greens. so we dont feel bored.

this will taste like badam kheer.
here is the aloo-carrot kheer:

potato - 1,small size, peel and cut in to cubes
carrot - 1, small size, cut into cubes
pressure cook both for 1 whistles.
once it comes to room temperature grind it in the mixie nicely. this will come like urad dhal, keep grinding u will get more quantity. make sure there should be no lumps.
blanch 5 - 10 almonds, 5 - 10 cashews and grind to a fine paste. now mix both the paste (veg and nuts)
in a heavy bottom vessel add 1 ltr of full cream milk (whole milk) and allow it to boil.
Add 1 grated carrot to the boiling milk. let it boil for 5 minutes.
now add sugar, according to our taste. (instead of using full sugar we can even use condensed milk and little sugar). let it boil for 5 minutes.
Add ground pastes and allow it to boil nicely. little elachi powder, coarsely ground cashews - 2 tblsp.
let it boil for 5 minutes, cool it and store in the refrigerator.
we can make this previous day and refrigerate. this should be served cold.
when we drink in between we will bite carrot, nuts. It is very easy to make and very tasty too.
try this and let me know.
Idiyappa bryani:

idiyappam - big size 4, separate it uthir-uthir
potato - 1 medium size, boiled , peeled and cut into tiny pieces.
green peas - 1/4 cup boiled
coconut milk - 1/2 cup , thick
onion - 2 big, finely chopped
green chilly - 1 finely chopped
ginger garlic paste - 1 tsp
tomato - 1 finely chopped
turmeric powder - 1/4 tsp
red chilli powder - 1/2 tsp
seasoning:
---------
oil - 2 tsp
ghee - 2 tsp
cloves - 3
cinnamon - 1" 2
cardamom - 2
curry leaves - few
coriander, pudhina leaves - 2 tblsp finely chopped
in a heavy bottom pan add oil, put cinnamon, cloves, cardamom once it pops up add curry leaves, pudhina leaves
then add onions, saute for 2 to 3 mins, then add ginger garlic paste and let it cook so that the raw should go out of it.
then tomato, turmeric , redchilly powder stir nicely for 2 to 3 mins. then add potato, green peas, salt cover and cook so that uppu karam elllam vege should absorb. then add coconut milk , when it slightly boils, switch off the fire and add idiyappam to it. so that the idiyappam should coat nicely with the gravy. on the top add ghee and coriander leaves. serve hot.

I have found a great way to make briyani :) - well everyone who ate it said so .. :)
Make your normal curry-base with meat, chickend or vege with the briyani masala with a bit of yoghurt but lots of onions.
As for the rice, you need to soak for 1/2 hour and then boil it separately until it is about 90% cooked. Drain the water - i use a strainer which is effective.
While the rice and the curry are cooking, cut more onions and prepare some frozen peas.
Fry onions and then the peas separately in ghee (it smells and tastes good!!).
Chop some coriander leaves for garnishing.
In the pot containing the briyani paste/curry, transfer a good layer of rice, add a layer of onions and peas and then layer again with the rice, onions, peas and continue until you have layed all the prepared stuff. It is best to do this when the curry is still hot and the rice a bit cool so that the rice doesn't get soaked or overcook.
Garnish with coriander.
Leave it for about 1-2 hours.
Mix the rice and curry together - you should get rice that looks as though it is coated with the curry paste yet quite dry and oily. :).

My cousin volunteered to do the akaravadisal for us.
It was truly mouth watering. The measurements were very correct.
The akarvadisal with cashews and raisins popping out and the ghee was just flowing. It was super sweet.
I think no harm in having 2 tbs of it once in a way. :lol:
AKARAVADISAL
Ingredients:
1 cup raw rice
½ a cup of moong dal
2 cups of milk
3 cups of vellam
100 grms ghee
25 grms cashew nuts
10 grms of raisins
1 tsp cardamom powder
A tiny pinch of pachai karpuram (optional)
Method:
Wash the rice and the moong dal.
Drain well, let it dry a bit.
Then dry roast in a wok till nice aroma comes.
Add 4 cups of water and cook in a pot over low fire
till the mixture is well cooked. Stir once in a way.
In the meantime boil the milk in a separate container.
Let it boil well, then add it to the rice dal mixture,
And let the mixture become soft (kulaiya)
Boil the sugar with little water till kambi patham.
Add this to the rice dal mixture, after this, you have
to keep on stirring or will get burnt at the bottom.
Heat a pan with the ghee and fry the nuts and the raisins.
Add it to the cooking rice dal mixture, add the cardamom powder.
Also add the patchai karpuram if using.
Mix every thing and remove from stove.
A truly delicious akaravadisal

SELVIEM"S POTATO SPICY MASALA
potato spicy masala:
potato - 3 ,boiled peeled and mashed roughly
onion - 4 thin slices
carrot - 1 finely chopped
fresh/frozen green peas - 1/2 cup
green chilly - 1 finely chopped
ginger - 1 1/2 tblsp grated
tomato - 2 medium size, chopped
red chilly powder - 3/4 tsp
turmeric powder - 1/2 tsp
salt - reqd
kadalai maavu - 2 tblsp, mix in water
sauf powder - 1 tblsp coarsely ground
seasoning:
oil - 2 tblsp
mustard seeds - 1 tsp
urad dhal - 1 tsp
kadalai paruppu - 1 tsp
curry leaves - few
coriander leaves - 2 tblsp finely chopped
in a pan, add oil, put mustard seeds, urad dhal, kadalai paruppu when it pops up, add curry leaves saute for a minuted.
now add sliced onions, green chilly, ginger and stir till onion becomes transparent (no need to turn brown) then add carrot , green peas and tomatoes stir for 2 minutes, then add red chilly powder, turmeric powder, salt and stir for a minute.
now add enough water for the vegetables to cook, cover and cook for 2 minutes, then add the potatoes, cover and cook for another 2 minutes.
now add kadalai maavu, stir and allow it to boil for 3 minutes, then add saunf powder, stir nicely and switch off the fire, garnish with coriander leaves.
this is very well goes with chapathi, poori, dosa.

DEV"S SOUP POWDER AND BOTTLE GOURD SOUP:
Soup powder:
Roast the following one by one in a few drops of oil until flavorful and grind to a fine powder. Use as required.
Yellow moong dhal(split) : 2 tbsp
Cori. seeds: 2 tbsp
Jeera: 2 tsp
sombu: 2 tsp
peppercorns:2 tsp
red chllies: 4
Pattai: 2 inch piece
clove: 3-4 pieces
Bottlegourd-carrot soup:
Heat lil ghee. add 1/2 tsp jeera.
Next add in 1/2 a smmall bottlegourd,1 medium carrot, 1 medium tomato roughly chopped. saute for a min.
Add in salt, turmeric pwd.
Add 500 ml water & cook for 2 whistles.
Once cool, grind it along with 1 tsp (more or less to taste) of soup powder. Pass through a sieve if u want to but it's purely optional.
Add more water/salt/pepper powder if req. Bring the mixture to a boil again. skim of any foam. Let boil for 2-3 mins. this soup should be medium thick.
Serve hot.
