How r u all? I am here to give my presence....I used to check the thread in my Office. But they blocked the forum from today...I am very sad b'cas of this...Anyway they have given a machine for checking personal mail and in that machine i am able to access the forum...So i will be able to check the forum daily at lunch time only....I am going to miss the thread very much....

CHINESE NYONYA VEGETYABLE CURRY (Kugan)
Friends since Rose was talking about Baba Nyonya dishes.
I thought of posting this curry recipe. I know it is difficult to get some ingredients in India. Maybe you can get in US in the Asian market.

CHINESE NYONYA MIXED VEGE CURRY
Ingredients:
100 grms zucchini cut into 1 inch length
100 grms carrot cut into 1 inch length
100 grms long beans cut into 1 inch length
100 grms cabbage cut into thick strips
1 red capsicum cut into strips
2 potatoes peel and cut into cubes
6 fried bean curds cut into halves
2 cups of thin coconut milk
½ cup thick coconut milk
2 tbs oil
2 tbs meat curry powder, mixed with 3 tbs water
1 vegetable cube
Salt to taste
Little sugar to taste
Blend into paste:
2 stalks of lemongrass
1 cm galangal
½ inch fresh turmeric
6 shallots
4 garlic
2 piece candlenuts
2 tbs chillie paste
Method:
Heat the oil in a pan. Stir fry the blended ingredients until fragrant.
Add in the curry powder, continue to stir fry.
Add in little of the thin coconut milk.
Continue to fry until you see oil separates.
Add in the rest of thin coconut milk and the vegetable cube.
Bring to boil, add in the carrots and potatoes.
Cover and let it cook for 5 minutes. Add in the rest of the vegetables.
Cook on medium heat until the vegetables are cooked.
Add in the bean curd, simmer for another 5 minutes.
Add in the thick coconut milk, season with salt and sugar.
Heat for a minute and remove. Serve warm.

SPICY KAARA BISCUIT (Kugan)
This is a simple biscuit for tea time or with coffee.

SPICY KAARA BISCUIT
Ingredients:
500 grms all purpose flour
50 grms rava
50 grms atta flour
10 grms chillie powder little more if you like.
10 grms salt
10 grms aniseeds
25 grms sugar
50 grms sesame seeds
250 grms margarine
¼ litre water, little less or more
Method:
Preheat your oven to 180 degrees C for 10 minutes.
Grease baking trays with butter.
Mix the three flours nicely.
Now add in all the other ingredients in the second part.
Mix nicely so that all the ingredients are mixed well.
Now add in the soft margarine, and mix well with your finger tips.
They will be like bread crumbs.
Now add the water slowly and mix to a soft dough.
The dough should not be sticky.
Now take a handful of the dough.
Put it in between a plastic paper.
Use a chapathi roller and roll into thin chapathi.
Use a biscuit cutter and cut into shapes.
Put the cut biscuits in a greased tray.
Bake for about 20 minutes at 180 degrees C.
Remove and let it cool before transferring to a plate.
When fully cooled put in an air tight container.
A very good snack for tea or coffee.

Butter cookies ( sumithra senthil )
Try out this simple biscuit. It can be made in a jiffy:-D
BUTTER COOKIES
Ingredients:
3 cups all purpose flour.
2 cups of butter
1 cup castor sugar
1 tsp baking powder
½ tsp baking soda
Method:
Preheat the oven to 180 degrees C.
Grease baking trays with melted butter.
Sieve the flour, baking powder and baking soda once.
Cream the butter and sugar until it becomes fluffy.
Now add the sieved flour slowly into the butter mixture.
Mix well till it becomes a smooth dough.
It should not be sticky or too dry.
Now take little dough, the size of a big marble.
Roll it into round balls. Then flatten a little with your palms.
Arrange the cookies in the tray, leaving a gap in between.
Bake for about 20 minutes on 180 degrees C.
Once cooked, remove the trays, and let it rest for about 5 minutes,
before transferring to a container.
Let it cool well before storing in an airtight container.

Nyonya garlic pickle (kugan)
Dear friends, Rose requested for this pickle.
All my elderly aunties love this pickle. They always ask me to prepare for them. I think they love garlic for its goodness.
Here is the recipe. Kugan98
NYONYA GARLIC PICKLE
Ingredients:
300 grms small garlic pips skinned whole.
Little sugar
Little salt
Enough vinegar to soak all the garlic.
3 tbs red chillie paste
4 tbs shallot paste
2 tbs oil, or little more
Little sugar
Little salt
Little vinegar.
Method:
Peel the garlic pips and leave them whole.
Dry the garlic well, put them in a dry bottle.
Add in the salt, sugar and fill the container with vinegar
to cover the garlic. Leave it aside for 3 days.
After 3 days, drain all the vinegar. Discard the vinegar.
Heat a wok with the oil. add in the chillie paste and shallot paste.
Cook on medium heat till the raw smell goes and oil seperates.
Now add in the drained garlic pips. Give a good stir.
Add in little salt and sugar to taste.
Add in also new vinegar. Stir nicely, do not allow the garlic to cook.
The garlic pips should be still crunchy.
Remove, let it cool nicely. Store in glass bottle.
NOTE: You can less the chillie paste and onion paste if you want less sambal in the pickle.
