Friends usually the end of March and beginning of April are
very busy days for me. Have to bake many cakes and cook for prayers.
31st March was my co-sister's wedding anniversary.
Had to bake a fruit cake as she likes it.
1st April prayer day, had to cook and for tea made chocolate cake curry puffs and jelly.
3rd April is Aishu's birthday she wants a cake with barbie doll image.
4th April is Kugan's birthday, and my worker's birthday.
So still baking and icing is not over yet.:roll:
I will post the fruit cake and chocolate cake first.

EGGLESS FRUIT CAKE
Ingredients:
2 cups self rising flour
1 tsp mixed spices powder from a bottle
¼ tsp nutmeg powder
1 cup butter
1 cup mixed dried fruits
½ cup light brown sugar
14 tbs hot water
½ tsp bicarbonate soda
1 tsp brandy essence or vanilla essence
¼ cup almond chips or flakes
Method:
Preheat an oven for 10 minutes at 180 degreesC
Grease a cake pan and line with parchment paper.
In a pan add in the mixed fruits, mixed spice, nutmeg, sugar,
butter and the hot water.
Place the pan on medium heat and stir the mixture.
Stir until the butter has melted and the sugar has dissolved.
Bring to a slow boil and simmer for 2 minutes.
Remove and let it cool well.
Sieve the the flour and the bicarbonate soda twice.
In a bowl, pour in the fruit mixture, and the essence.
Also add in the almond chips or flakes.
Add in the flour little by little and mix all the ingredients well.
Pour the mixture into the greased tin.
Smooth the top of the mixture.
Bake in the middle shelf of the oven for about 1 ¼ hour,
or till the cake is cooked.
Cool well before slicing

EGGLESS CHOCOLATE CAKE
Ingredients:
1 ½ cups of plain flour
¼ cup cocoa powder
2 tsp baking powder
1 tsp sodium bicarbonate
400 grms condensed milk
150 grm melted butter
2 tsp vanilla essence
150 ml water
The Chocolate Icing:
225 grms cooking chocolate
100 grms unsalted butter
Method:
Preheat the oven for 10 minutes at 150 degrees C
Grease and line a 9 inch cake pan with parchment paper.
Sieve the flour, cocoa powder, baking powder and baking soda,
about 3 times. Put them in a bowl.
In the same bowl, add in the condensed milk, melted cooled butter,
vanilla essence and the water.
Use a electric hand mix and whisk for about 1 minute.
The mixture should be uniform and smooth.
Be careful not to OVER BEAT.
Pour the mixture into the prepared tin and bake for about 1 hour.
Or till the cake is cooked. Remove and cool for 10 minutes,
before over turning into a rack to cool.
The Chocolate Icing:
Break the chocolate into chunks, melt it slowly in a bowl over a
pan of hot water. (Double boiler)
mix in the butter and stir until the icing has the consistency
of thick pouring cream. Place the cake on a cake plate.
Pour the icing over the cake, smooth the top and the sides,
with a palette knife. Use a zigzag knife to make pattern.
Allow to set.
NOTE: I made two measurements of the cake.

Friends, have we ever thought of making chutney with green chillies?
A aunty who came to my house for the prayer brought this chutney.
It was awesome. Try it out. Thanks, Kugan98
PATCHA MILLAGAI CHUTNEY
Ingredients:
½ cup chopped onions
¼ cup roasted peanuts
20 green chillies sliced
1 tsp jiggery
½ tsp tamarind paste
¼ tsp cumin seeds
1 pip garlic sliced
1 tsp chopped ginger
3 strands of coriander leaves
4 curry leaves
Salt to taste
Oil
Method:
Heat about 1 tbs of oil in a pan.
Add in the green chillies and fry till they wilt.
Remove the green chillies, in the same pan, add in the curry leaves,
onion, garlic, ginger and fry till the onions turn translucent.
Remove and cool them.
Now add in all the other ingredients to the fried ingredients.
Grind all the ingredients without adding any water.
Remove and temper with mustard seeds if you want.
Serve with iddli , dosai, chapathi or rice.
Keeps well for few days in a fridge.

Please do not mistake that I will be making a cake that will look like a barbie doll. I will be buy a ready made edible image of barbie doll and place it on the cake.
For Kugan my nephew, he wanted the image of Ben 10.

and little butter icing.
I bought the two edible images from a cake shop.
It's very easy once you know the know how of doing it.

Dev, may be your India chillies if hot, reduce the number. You will not regret making it.

Dear friends, we always like to avoid this vegetable because of its bitterness.
I normally cook this at least twice a week in my house.
Here is a simple recipe, but the taste will be yummy.
Try it friends, Kugan98
PAVAKKAI MASALA (BITTER GOURD )
Ingredients:
250 grms pavakkai cut into slices
½ tsp turmeric powder
Little salt
½ tsp cumin seeds
3 red chillies broken
1 sprig curry leaves
1 tsp oil
To Roast In Oil And Grind:
3 onions sliced
5 tomatoes sliced
4 green chillies sliced
3 pips garlic sliced
¼ inch ginger sliced
¼ cup coriander leaves
To Roast And Powder:
2 tsp kas- kas
1 tbs sesame seeds
Method:
Boil the pavakkai with the turmeric powder, and salt.
Once cooked, NOT OVERCOOKED , drain and keep aside.
Heat oil in a pan, add in the cumin seeds, dry red chillies
and the curry leaves. Sauté a bit.
Now pour in the ground ingredients, and fry till the raw smell goes.
Add in little water to make little gravy. Let it boil well.
Now add in the boiled pavakkai and mix well.
Let it come to a boil. Lastly add in the ground powders.
Mix well and remove.

green chutney was awesome, we had it with idli. everybody likes it. thanks kugan.
Kugan, I went to a party, and we were served thick noodle soup.
The thing was the noodles were fried crisp and thick sauce was poured on top. The sauce had sliced carrots, beans cabbage and things.
The soup tasted a bit sour, sweet and hot.
Do you know the recipe for this dish. Sorry I did not catch the name, but it sounded like suey or something.:confused2: Sorry Kugan, but I really loved the dish.

We cook this dish in our house.
Before I used to add chicken strips in the dish.
Now is completely vegetarian:-D
