Friends, I have made set dosai, not heard of set appams.
This is the contribution of Sumi. Tried and it turned out very yummy.
The little sweet taste, and the coconut chutney combo is superb.
Thanks Sumi,:-D good for breakfast or evening tiffin. Kugan98
SET APAMS
Ingredients:
1 cup raw rice
½ cup aval (beaten rice )
1 cup curds
4 tsp jiggery
1 cup of water.
4 tbs grated coconut
Little oil
Salt to taste
Method:
Soak the rice for about 5 hours. Drain
Now add the aval, curds, 1 cup of water, jiggery and salt.
Use a mixer and grind to a thick smooth paste.
Cover and keep over night.
OR you can grind in the morning and cook for the evening.
Now add in the grated coconut, and add water
if the batter is very thick.
Lightly grease a dosai kal. Pour 1 laddle of the batter on the kal.
Do not spread the batter, cover with a lid and cook on medium heat,
till the lower side is light brown. Remove it.
Repeat the same with the rest of the batter.
Serve in a set of two appams with coconut chutney.
The taste is really yummy.
Can be served for breakfast or evening tiffin.

My friends, if we want a dipping chillie sauce, we will buy it at once from the super market. Why not we make our own? May be hard work, or we will think it would not be tasty as the store bought one.
Try this sauce and see. Thanks, Kugan98
GARLIC CHILLIE SWEET SAUCE
Ingredients:
200 grms fresh red chillies
7 cloves of garlic chopped very finely
700 ml water
4 tbs sugar or to taste
1 ½ tsp salt or to taste
2 pieces dried tamarind peel (asam keeping)
OR you can use kokum
Method:
Wash the red chillies, slice them.
Put them in a blender and blend till fine.
Use some water from the 700 ml water.
Mix the finely blended chillie paste, with the water,
chopped garlic, tamarind peel, sugar and salt.
Put the mixture in a pot, and simmer on the stove,
for about 40 minutes on a very slow fire.
Stir from time to time and adjust the seasonings.
Cook till the sauce becomes thick.
Remove and cool, remove the tamarind pieces.
Pour into a glass container.
Store in a fridge and serve as a dipping sauce.
NOTE: If you cannot get the tamarind pieces, use little
vinegar, to your sour taste.
If you want a very smooth sauce, you pour the cooked hot
sauce through a sieve, and then cool and store.

Dear Suvai, thanks for your nice post.
Congrats on the success of your cake.
Well when the cake is still hot, the outer skin will be little crisp.
The next day the the whole cake will be soft.
The measurement for 400ml condensed milk is 1 3/4 cups.
I thought you will get a milk tin with 400 ml condensed milk.
As for the tamarind piece, I am posting the picture.
You might get it in the Asian market, or just use vinegar.
I am sure you know about the kokum we get in Kerala.

One is to use just the idlli flour, add sugar, then steam with the moong dal and coconut.
The other is to grind the iddli flour with little moomg dal, then add sugar and things.
I am posting the second method for you.
Today, I am making cashew nuts banana muffin for the children.
Thanks and take care, Kugan98
Here Suvai, hope this is the recipe you are looking for.
Thanks, Kugan98.

½ cup urad dal
¼ cup moong dal
1 cup jiggery or more to taste
½ tsp cardamom powder
3 tbs roasted moong dal, boil till half cooked, drain.
¼ cup grated coconut
¼ tsp salt
2 tbs ghee
Method:
Soak the rice and two dals over night.
Grind it next morning to a smooth thick batter.

Now dissolve the jiggery in ¼ cup of water, allow to boil.
Filter and add in the cardamom powder.
Now add in the syrup to the fermented batter.
