[tscii]What do you do, when you have a little bit of this and that.?
Make it into a mixed vege stew
MIXED VEGE STEW
Ingredients:
½ cup boiled , cubed potatoes
¼ cup cubed carrots
¼ cup boiled chick peas
¼ cup pumpkin cubes
2 big onions chopped
3 pips garlic chopped
2 cups of vege stock
½ cup low fat milk or coconut milk
1 tsp cumin powder
2 tsp red chillie powder
3 tbs lime juice
2 tbs chopped coriander leaves
2 tbs oil
2 one inch cinnamon sticks
3 cardamom pods
4 cloves
Salt to taste.
Method:
Heat oil in a wok, add in the cinnamon, cardamom and cloves.
When they splutter, add in the chopped garlic, sauté for a moment
Add in the onions, and sauté till they turn golden brown.
Add in the chillie powder, and cumin powders.
Stir once well, add in the vegetable stock and salt.
Allow it to boil for few minutes.
Add in the potatoes, pumpkin, carrots and chick peas.
Simmer covered for about 10 minutes, until the veges are tender.
Add in the milk, and let it boil once.
Remove from the stove, add in the lime juice.
Garnish with the coriander leaves.
Serve hot with rice or chapathi.
