ARISI UPMA
Ingredients:
For Cracked Rice:
Rice – 1 cup
Toor dal – 2 tsp
Peppercorns – 1 tsp
Cumin seeds – 1 tsp
Wash raw rice and dry it in the shade for about 20 minutes.
Add the other ingredients and grind it in a mixie to a coarse
powder. This is rice rava.
5 green chillies sliced
2 tbs fresh coconut (optional )
2 tbs green peas ( optional) I did not use
1 tbs chopped coriander leaves
2 cups water
2 tbs oil or ghee
Salt to taste
For seasonings:
tsp mustard seeds
1 tsp urad dal 2 tsp
1 tsp cumin seeds
2 tsp bengal gram dal
1 pinch of asafotida
1 sprig curry leaves
1 tbs cashew nuts (optional )
1 dried red chillie cut into small pieces.
Method:
Heat a wok, and pour in the oil or ghee.
Add in the seasonings one by one and fry till the dals
turn slightly brown. Add in the sliced chillies .
Stir for a moment, add in the water, and salt.
You can add in the green peas now if you are using.
Bring to a boil, reduce the heat and add in the rava little by little,
while stirring it slowly. Stir well so that all the spices
are mixed well. Close with a lid and let it cook ,
on a very, very slow flame. Stir now and then cook till all the
water is absorbed. Now add in the fresh coconut and stir well.
Remove from the stove and garnish with coriander leaves.
Serve with the chutney of your choice.
I have tomato thokku with the uppuma.

DEV'S Healthy Recipe.
This was our lunch with onion raitha and tofu butter masala.
South Indian style veg Pulao:
Rice- 250 gms or 1 cup
water- 2 to 2 1/4 cups
Mixed veg(carrot, beans, peas, cabbage potatoes etc) - 500 gms. Cut into big pieces(any shape as U wish)
Ginger- an inch piece(chopped)
Garlic- 2 (chopped)
onion- 1/2 (chopped or sliced)
Green chillies- 1 or 2(slit)
turmeric & chilli powder
Methi seeds(venthiyam)- 1/2 tsp or less
salt- to taste
1.Heat 2 tsp oil in the cooker. Add venthiyam & let it turn golden. This will take just a few seconds. Take care not to brown it.
2. Add the onions, gin & garlic, green chillies & fry till onions turn transparent.
3. Add the vegetables, salt, chilli powder & turmeric powder. Mix well.
4. Add water. Let it become hot. Taste for salt & chillies. Add if required.(should taste a bit salty & hot. Only then the end product will have normal salt & chillies)
5. Add the rice. Close the pressure cooker 7 cook for 2 or 3 whistles. I usually allow 3 whistles if rice is not soaked & 2 whistles if rice is soaked.
Serve with the above coriander chutney & curd or pickle, pappad.

Kugan, thanks a lot for trying out & posting th recipes... this pulao is one of my fav... though not much of spices, I love this pulao coz of the mix of veg used & the methi flavour...:)
I'm not sure if I've already posted a rice kitchadi recipe...if not,let me know...I'll pm u...

not at all. any type of receipes are mostly welcome. according to me, ur receipes are helping me a lot. coz i am not breaking my head what to cook for lunch , what for dinner. whenever i browse, i will get an idea and then i will start my work. u continue ur job. i didnot prepare arisi uppma for long time. after ur post, i want to prepare it.
thanks kugan, u r doing a wonderful job, no doubt in that. i am repeating the same thing, everybody's receipe will be different. so why cant we try urs.
