Bread flour is a high-protein flour, specially formulated for making yeast breads. The combination of extra protein, a tiny bit of malted barley to help the yeast, and vitamin C or potassium bromate to help the formation of the gluten, helps the dough rise and retain gasses as it bakes, resulting in greater volume and better texture.
You can certainly substitute all-purpose flour in a recipe, but the results will be less spectacular"
Aarthii, if I am not mistaken I have posted the recipes for rava kitchadi and vengaya kulambu.
Let me go through first the index and inform you.

mushroom biryani (kugan)
[tscii]I owe this recipe to Dev.
Since today is sunday, I decided to make it for lunch.
I served with cucumber raitha and soya prettal.
MUSHROOM BIRYANI
Ingredients:
300 grms button mushrooms quartered
3 cups of basmati rice soaked for 30 minutes. drain
1 big onion chopped
2 tomatoes chopped
2 potatoes cut into cubes and fried
5 green chillies slit
1 tbs garlic paste
1 tbs ginger paste
1 tsp coriander powder
1 tsp chillie powder
½ tsp garam masala powder
¼ tsp tumeric powder
2 tbs fresh curds
2 tbs ground cashew nuts
2 tsp lime juice
3 tbs ghee
3 tbs chopped coriander leaves
10 cashew nuts and 10 raisins fried in ghee
Deep fried onion crisps
Seasonings:
2 cinnamon stick, 3 cardamom pods, 2 bay leaves.
1 sprig curry leaves.
Method:
Heat a heavy bottomed pot with the ghee.
Add in the seasonings, and curry leaves.
Add in the chopped onions and sauté well
Now add in the ginger garlic paste, and green chillies.
Stir nicely, add in the chillie, coriander, tumeric powders.
Mix nicely, add in the tomatoes and cook till they turn mushy.
Add in the garam masala, fresh curds, and cashew nuts paste.
Mix well so that you have a thick gravy.
Add in the mushrooms, salt and lime juice..
Stir well so that the mushrooms are well coated with the masala.
Add in the soaked rice, fried potatoes add about 3 ½ cups of water.
Close with a very tight lid. Keep the flame very very low.
Let it cook on a sim till the water is fully absorbed
and the rice is cooked. Keep it close for some time.
Later fluff up the rice and garnish with the coriander leaves,
Cashew nuts, raisins and deep fried onion crisps

vangibath upma (kugan)
[tscii]I have made masala upma, vegetable upma also plain upma.
This vangi bath upma was served in my friends house.
Give it a try, for a change. Kugan98
VANGIBATH UPMA
Ingredients:
1 cup roasted rava
2 big brinjals cut into cubes
1 big onion sliced
2 tbs vangibath powder
10 cashew nuts roasted in ghee
3 tbs chopped coriander leaves
little coconut scrappings (optional)
2 tsp lime juice
A pinch of sugar
A pinch of tumeric powder
Salt to taste
To Season:
2 tbs ghee
½ tsp mustard seeds
1 tsp urad dal
1 tbs channa dal
1 red chillie broken
1 sprig curry leaves
Method:
Heat the ghee in a wok, add all the seasonings.
Sauté well, now add in the sliced onions with a pinch of sugar.
Sauté till the onions turn pink, add in the brinjal pieces.
Stir and cook, till the brinjals are a bit soft.
Add in the tumeric powder, salt and vangibath powder.
Stir well, add in 2 ½ cups of water, let it come to a boil.
Low the flame, add in the roasted rava, give a good stir.
Close with a lid and let it cook on its steam.
Open the lid in few minutes and stir the upma well.
Add in the roasted cashew nuts, lime juice, coconut scrappings and the coriander leaves.
Give it a good stir and remove.
Serve it hot with chips or raitha.
VANGIBATH POWDER
Ingredients:
1 tbs coriander seeds
1 tbs channa dal
1 tbs urad dal
½ tsp kas- kas
1 tsp sesame seeds
4 dry red chillies
1 sprig curry leaves
2 tbs coconut scrapings
½ an inch cinnamon stick
2 cloves
A small piece of asafetida
1 tsp oil
Method:
Heat a tsp of oil, roast all the ingredients well
till they give off a nice aroma.
Cool and powder coarsely.
You can keep this powder in a tightly closed container
in the fridge for about 3 months.
