Avasara Onion Kulambu (kugan)
[tscii]Well my new found friend has a treasure of recipes.
I will try my best to extract all from her.
She is a busy lawyer, so she has no time for our forum.
At least she has agreed to give her recipes.
Here is her avasara onion kulambu.
AVASARA ONION KULAMBU
Ingredients:
2 big onions sliced lengthwise a bit thick.
1 lime sizes tamarind soaked in 1 cup of water
3 tsp red chillie powder
¼ tsp tumeric powder
2 pips of garlic chopped fine
1 tsp ginger chopped fine
½ tsp mustard seeds
2 tbs oil
1 tsp sugar
Salt to taste.
Method:
Squeeze out the tamarind juice and keep aside.
Heat oil in a wok, add in the mustard seeds.
Let them splutter, add in the garlic and ginger.
Sauté well, add in the sliced onions, add salt.
Fry till the onions are limp, add in the tamarind juice.
Add also the chillie powder, and tumeric powder
Let the mixture cook for about 10 minutes.
There will not be the raw smell of the tamarind.
The oil will float on top. Add in the sugar, mix well.
Serve hot with rotis , dosai or idli.
