[tscii] The Soya Bean Milk Jelly.
She did not arrange the nata de coco in a nice pattern
SOYA BEAN JELLY
Ingredients:
1 litre soya bean milk
250 grms rock sugar
30 grms agar agar strips soaked
1 litre water
¼ cup evaporated milk.
Little nata de coco for decoration
Method:
Soak the agar –agar strips in water for 30 minutes.
Squeeze out the water.
Boil 1 litre of water, add in the soaked agar-agar strips.
Bring to boil in a low fire. Cook till it dissolves completely.
Add in the rock sugar, evaporated milk and soya milk.
Boil once, pour the mixture into cups, or in a tray.
Sprinkle the nata de coco here and there.
Leave to set, and chill well before serving.
You can even use mixed fruits to decorate instead of the nata de coco.

Is nata de coco & coconut jelly the same?... I'mm not sure of the namem...but it's a chewy jelly tht's kept in water(or some liq)... usually sold in big plastic containers... I've tasted it once in a friend's place in malaysia & liked it...it was white/transparent... Never happened to buy it coz it was always sold in big containers in Sg & it was too much for a single person(hubby is not a fan of it)...

Beside the original flavor, there are other taste in a mixture of various fruit/flower juices like mango, lychee, pineapple, kiwi, orange, syrup and rose

and different flavours.

[tscii]This is a very simple biryani.
We did it with mock chicken.
People who take non-vege can do it with chicken.
ONE POT VEGETARIAN CHICKEN (MOCK) BIRYANI
Ingredients:
2 cups basmati rice soaked for 5 minutes and toasted
2 cups light coconut milk
1 ½ cups of boiling water
(B)
To Mix Everything And Keep Aside
1 tsp ginger paste
1 tsp garlic paste
1 tbs green chillie paste
1 tsp coriander powder
2 tsp chillie powder
1 tbs curds
1 tsp lime juice
A pinch of tumeric
1 tbs mint leaves
500 grms chicken pieces ( I used mock chicken)
2 tbs of ghee
Salt to taste
¾ cups of sliced onions
½ cups of sliced red tomatoes
3 cloves
4 cardamom pods
2 inch cinnamom sticks
2 bay leaves
Little coriander leaves for garnishing.
Method:
Mix all the ingredients in (B) and keep aside for 30 minutes.
Heat ghee in a wok , add in all the whole spices.
Let them splutter, now add in the onions .
Fry till it turns turns brownish.
Add in the chicken pieces along with the marinade.
Fry for about 4 minutes, add the tomato pieces,
and fry gently for few more minutes.
Cover the wok and cook for about 10 minutes.
The chicken should have been ¾ cooked in its own juice
Now add the cooked chicken into a rice cooker.
Add in the toasted rice.
Now pour in the coconut milk and water, add enough salt.
Mix well and cover and let it cook.
Leave it as it is for about 15 minutes.
Remove the cover stir gently, garnish with the coriander leaves.
Serve hot. You can serve with cold raita.
We served with pajeri nanas.
