Easy Baked Berrylicious Oatmeal!!!
Ingredients:
1/4 cup quick oats or a Quaker Oats Instant Medley Cup
1 egg
Handful blueberries, raspberries or strawberries
Sprinkle brown sugar or Stevia
1 tablespoon plain soy or almond milk or even 2 % milk
Directions:
Take a little less than a quarter cup of quick oats, one egg, a small handful of blueberries and some brown sugar or Stevia if you like things sweet, and mix it all up in a coffee mug. If you want your muffin a little moist, add a tablespoon of plain soy milk or almond milk.
Place mixture in the microwave for 1 minute. Watch it carefully since this could overflow.
If the muffin top does not look firm, place back in the microwave 30 seconds at a time.
Once ready, flip mug upside down onto a plate and slice some fresh fruit to decorate.

Curry Leaf Podi
http://www.thestar.com.my/~/media/Im...&h=413&crop=1&
Ingredients
1½ cups firmly packed curry leaves (stems removed)
1 tsp oil
1 tsp mustard seeds
1 tsp asafoetida powder
2 tbsp black gram (urad) dhall, rinsed and drained
3-5 dried chillies, soaked to soften and drained
1 piece dried tamarind (assam gelugor)
Salt to taste
Method
Wash the curry leaves and drain well to remove as much water as possible. Dab with a kitchen towel. In a dry frying pan over medium low heat, toss the curry leaves until they are dry and slightly crisp. Set aside.
Heat the oil in a frying pan over a low flame. Add mustard seeds and sauté until they start to sputter. Add the asafoetida and dhall. Fry until the dhall turns reddish brown, about two minutes.
Add the dried chillies (use to taste and tolerance to heat) and tamarind. Stir until chillies start to colour and become crisp, one to two minutes.
Add curry leaves and toss together, one minute.
Take mixture off the heat and grind to a powder in a mini blender or food processor (how fine is up to individual taste). Add salt to taste. Cool and store in an air-tight jar.

Hi.. Thanks for the recipe I have a doubt.. How about replacing Mint leaves with Coriander leaves ??..
Sangeetha, thank you very much for all the recipes that you have posted. We miss our Kuganka a lot. You and Nov are posting recipes. I am sure Kuganka would feel very happy when she comes back.
I feel very bad when some one asks for recipe, Kuganka would have given the next day itself. I remember one Petston asking for mushroom recipe. I am not a good cook, I learnt my cooking all from Kugan's Kitchen. I asked all around and one friend gave me this mushroom recipe. Sorry I have no time to cook and take photo. I am posting the recipe as how my friend gave me.
